WIAW: Photo Dump

Wow, it’s been sooooo long since I’ve done a WIAW! I’ve really missed it, but I had to do what was right for me and for a while, I was trying to get away from focusing on food so much. Now that I’ve found a way of eating that’s working for me, I want to start participating in the best party of the week more often.

Basically, I have a LOT of food/random photos to share so let’s get to it!

One of the newest Larabar flavors.

One of the newest Larabar flavors.

I can’t remember where I first saw the latest additions to the Larabar family, but I knew I had to find them. Luckily, Natural Grocers seems to always have bar flavors other stores don’t have, so when I spotted a few of their new Uber varieties, I had to snag one. I got baklava since it sounded the tastiest, and it was pretty good, with the signature spices of baklava. I still like the bananas foster Uber the best out of that line!

Breakfast for dinner! These pancakes incorporated a few new products, namely stevia-sweetened chocolate chips (um, yes PLEASE!) and sacha inchi powder. The powder has great stats (40 calories and 6 grams protein per tablespoon) but I don’t love the flavor on its own. It worked great in these pancakes with the flavors of pumpkin and buckwheat!

My family visited me a couple of weekends ago and we took a little walk around the trial gardens on a nice, sunny day. Flowers always make me happy and it was great to see them one last time–probably the last time I’ll see them before I graduate!

Lots o' produce!

Lots o’ produce!

I made my weekly grocery trip on Sunday. Unfortunately for my wallet, it was one of those stock-up trips…meaning I spent a lot more than I wanted to. But I got a lot of things I needed, like produce to refill my fridge, coconut oil and protein powder that will both last awhile and some other pantry staples.

That chocolate bar in the front is perfect for true chocolate lovers–it’s literally just made of cacao beans! It’s a bit too bitter for me so I drizzle a little local honey on it and it’s perfection.

My mom and I did a little shopping while I was home this past weekend. I’ve been looking for a professional-looking dress I can wear to school, for doing the weather for the campus TV station and hopefully to wear at my first big girl job. It’s a lot harder than it seems! I can’t buy anything blue or green (because of the green/blue screen I have to stand in front of), I can’t get dresses that are sleeveless unless I want to wear a blazer over them and of course, they have to fit and look right. I can’t even tell you how many stores we went to and left empty-handed. Finally, we went to Forever 21 and hit the jackpot. I only got one of these dresses (the last one pictured) but I actually loved them all. The top one was a bit too big in the chest area (#ACupProblems) and my mom didn’t like the cutouts on the second one but the third one we both agreed was cute and professional. I can’t wait to wear it on TV this week! Oh, and I’m for sure putting the other two dresses on my Christmas wishlist 😉

I love seasonal food items!

I love seasonal food items!

If I had a vice, it would be seasonal food products. Seriously. I have a big problem. I immediately want to buy them, even if I don’t really need them. Luckily, this week I did need to stock up on protein powder (and this one was on a 3 day sale at Whole Foods, score!) and I wanted to buy some sprouted tortilla chips to make nachos. I want to do some kind of review post soon on the products I’ve tried recently but for now, I have to say I love and recommend both of these. The Amazing Meal has the perfect mix of chocolate and peppermint, and I love the vitamins and minerals in all their products. And the chips are a little sweet and a little salty and great for dipping.

The last thing my wallet needs right now is the Whole Foods salad bar, but I haven’t had it in at least 2 months, so I was desperate for my favorite takeout. I got some usuals and tried a few of their Indian dishes. It was SO much food, but it was worth the price for sure. At least it’s a rare indulgence, amiright?

While I was at home, my dad and I saw some short films at a film festival downtown. The movies were fun, but the best part was trying out a newish vegan place nearby for lunch. My dad is definitely NOT a vegan but he’s so accepting of my lifestyle (as is my mom) and he’s always willing to try vegan restaurants and food, plus he’s really into eating foods without artificial ingredients, so that’s a plus. The restaurant we went to is mostly a smoothie and cold-pressed juice place but they had some tasty food options as well. My salad was small but really delicious, especially with their homemade dressing. The frappuccino was perfect–a lot less sweet than frapps from Starbucks, and made with matcha tea, almond milk and a bit of agave. And the PB blondie was incredible–I had it for dessert that night and it was even better warmed in the microwave. I love that they are completely gluten free and vegan (with a lot of grain free options) and that they make all their stuff in-store or buy it locally. Definitely my kind of place!

What have you been eating and doing lately?

WIAW & ABCs

You guys already know how much I love surveys so I always get really excited when I see a new one floating around the blog world. This one’s a little more focused on life in general rather than food+fitness but I’ll still be including some WIAW-worthy pictures throughout!

Addictions: yoga, nori sheets (gotta love that seaweed-y flavor), sunshine & warm days, colored shorts, nut butter-stuffed dates, sleeping in, dark chocolate+mint combo, Larabars…etc.!

Recent lunch: nori 'burrito' (filled with cashew butter, coconut aminos, raw kraut, kelp noodles and spinach), dry roasted edamame, dried apples.

Bed size: Full. Prior to college, I always had a twin bed, then in the dorms they had twin XL but finally I’m in an apartment with a bigger bed and plenty of space for it!

Chore you hate: Cleaning the bathroom, or pulling weeds. We used to have the worst weeds at our previous house, and some of them were kinda scary to pull up (imagine 3-4 foot tall spiky green plants)!

Dogs or cats: I don’t have either, but I’d love to have one of each someday, preferably an Italian Greyhound and an orange tabby.

Essential start to your day: My now-daily ACV drink. I got into the trend a few months ago after reading all about it on blogs and while I haven’t noticed too many changes (I do tend to have less acne around that time of the month, though) I’ve come to enjoy the sweet and sour combo of ACV+vanilla stevia+cinnamon.

My daily 'cocktail'.

My daily ‘cocktail’.

Favorite color: Pink is #1, but orange is a close second.

Gold or silver: I prefer silver for jewelry, but I love the look of gold sparkly shoes! I currently own two pairs and want more.

Height: 5’1 and 1/2. Yes, that extra half inch really counts when you’re this tiny!

Instruments you play (or have played): I’ve played the clarinet, tenor and alto saxophones (my favorite to play!), piano and electric guitar. I’m not sure I could play any of them well now though.

Job titles you’ve had: people & academics editor, managing editor and weather anchor. I’ve actually never had a job outside my field of study (journalism) before and hopefully it’ll stay that way, though I wouldn’t mind working at Whole Foods for a summer!

Kids: Um…not right now, I’m only 20 (almost 21!) but it’s crazy how many people my age are getting married and having kids already. I want to have kids someday, hopefully twin girls.

Live: Both northern (for college) and southern (where I grew up) Colorado.

Mom’s name: Tammy, but I still call her Mommy!

Nickname: Usually just Ash, but my sister sometimes calls me Ashie.

Overnight hospital stays: None, I’ve actually never been to the hospital for anything other than when I was born.

Pet peeves: People smoking right by me, people showing up really late (like more than half an hour late with no explanation), rude drivers.

Quote from a movie: “She doesn’t even go here!” Name that movie, it’s one of my faves!

Right-handed or left-handed: Right-handed.

Siblings: Just my younger sister. I can’t believe she’ll be turning 18 in December!

Time you wake up: Mondays and Wednesdays at 8:30 (I know, college life is rough), Tuesdays and Thursdays at 7 and weekends between 8:30 and 9:30. I definitely need to get in at least 8 hours of sleep each night.

Underwear: Yes, I wear it. And my underwear store of choice is Victoria’s Secret PINK, they have the cutest stuff there.

Veggies you dislike: Spaghetti squash, tomatoes and beets.

One of my favorite veggies (sweet potato) for dinner.

What makes you run late: finishing up a workout, getting together all my stuff for the day.

X-rays you’ve had done: teeth, right ankle and foot, left wrist.

Yummy food you make: Raw desserts, kelp noodle stir-frys, waffles, banana bread and eggplant muffulettas.

A very delicious waffle-for-dinner I made last week: cornbread (organic cornmeal+buckwheat flour) waffle topped with spinach, homemade chili and nooch.

Zoo animal: I love flamingos! I just think it’s so cool that they’re pink.

One of the last times I enjoyed pretzels...oh it's been way too long!

One of the last times I enjoyed pretzels…oh it’s been way too long!

Thanks to an Instagram reminder from Kat, I realized I haven’t enjoyed pretzels in over a year. I remember how much I used to love the Annie’s bunny pretzels dipped in almond butter and jelly, but I gave them up because they were too ‘processed’ or whatever. Even though I don’t eat much gluten nowadays, I can still enjoy some fairly clean and GF pretzel sticks from Mary’s Gone Crackers with some of my favorite sweet+salty combos.

One of the best French toast combos ever: dark chocolate+coconut.

One of the best French toast combos ever: dark chocolate+coconut.

I have a confession to make. This delicious-looking French toast pictured above is NOT vegan! I know right?! I’m not giving up veganism by any means, but I was really curious about this frozen ‘Paleo bread’ I saw at a health store (mostly because it was made of coconut flour, which I love, but I can’t deny that the high fiber+protein and low calorie count also drew me in) and though it’s made with egg whites, I wanted to give it a try. I haven’t knowingly eaten egg products in forever, mostly because I’ve always hated eggs, but I though egg whites in a baked thing would be fine. For those of you wondering, the bread has only a slight coconut flavor and is kinda spongy but it works really well as French toast. I wouldn’t buy it again because it isn’t vegan but mostly because it cost almost $10 for a loaf, yikes! I’m still on the hunt for a totally vegan and gluten free bread that tastes great and isn’t too pricey…

Snow...in April?!

Snow…in April?!

I wish this were a (late) April Fool’s trick, but sadly, Colorado is known for bad April snowstorms. However, they predicted a blizzard, with high wind gusts and up to a foot of snow, and that (thankfully) didn’t happen! I was dreading having to take the bus to classes, but the streets stayed snow and ice free. Since it’s been so warm otherwise, I’m hoping the rest of it will melt soon too.

The best kraut I've ever had!

The best kraut I’ve ever had!

This stuff is seriously addicting! I’ve been looking for the local brand of kimchi that Whole Foods stores around here sell and they’ve been out for weeks, but this smoked jalapeno kraut is an amazing substitute. I’m seriously putting this on everything, from salads to nori burritos to kelp noodle stir-frys and even just eating straight up. This brand isn’t quite local, but I’ve heard most real krauts are only sold within the region they’re made in, so if you’re from California (where it’s made) or anywhere in the western U.S. you might be able to find this brand!

Share some of your ABCs here! Do you like kraut or kimchi?

It’s Okay…

Hey guys! I want to take a little bit of a different approach with this post, so I hope you enjoy (and relate)!

It’s okay…that I prefer almond butter to peanut butter–hands down!

Sorry, PB, you aren’t it for this girl!

It’s okay…that I like to mostly eat healthy foods, even supposedly disordered “diet food” like veggies and nonfat yogurt. Just because I’m in recovery doesn’t mean I can’t enjoy these things.

I love salads (even without dressing)…no shame!

It’s okay…to eat a mostly-vegan diet but still have Greek yogurt (a lot!) and froyo/gelato every so often.

You can’t say that doesn’t look delicious…

It’s okay…that I can’t live without Whole Foods. I’d probably be broke if I was spending my own money 😉

I love the salad bars especially! This delicious mess was Asian kale salad, curried tofu, roasted sweet potato and curried quinoa pilaf.

It’s okay…that I’ve never made oats on the stove. Overnight oats are where it’s at for me!

One of my favorite overnighters combos to date: PB&J remix oats, topped with black grapes and PB Puffins.

It’s okay…that I LOVE carbs!

Nothing beats cereal and dried fruit!

It’s okay…that this is my lunch when I’m on-the-go–and I love it!

Quick, easy & good: Pink Lady and Clif Mojo bar!

It’s okay…to sometimes have breakfast for dinner–with some squash on the side.

I love breakfast so much…so why not?

It’s okay…that I’ve never had a Lara bar. Because I love Pure bars instead!

They’re almost as simple as Lara bars, but they’ve got way more protein!

It’s okay…that I can take way better pictures at home than I can at school.

This is one of my favorite pics ever, I actually got a pretty good closeup of this salad. Compare this to my lame photos now with crap lighting.
