WIAW: Photo Dump

Wow, it’s been sooooo long since I’ve done a WIAW! I’ve really missed it, but I had to do what was right for me and for a while, I was trying to get away from focusing on food so much. Now that I’ve found a way of eating that’s working for me, I want to start participating in the best party of the week more often.

Basically, I have a LOT of food/random photos to share so let’s get to it!

I can’t remember where I first saw the latest additions to the Larabar family, but I knew I had to find them. Luckily, Natural Grocers seems to always have bar flavors other stores don’t have, so when I spotted a few of their new Uber varieties, I had to snag one. I got baklava since it sounded the tastiest, and it was pretty good, with the signature spices of baklava. I still like the bananas foster Uber the best out of that line!

Breakfast for dinner! These pancakes incorporated a few new products, namely stevia-sweetened chocolate chips (um, yes PLEASE!) and sacha inchi powder. The powder has great stats (40 calories and 6 grams protein per tablespoon) but I don’t love the flavor on its own. It worked great in these pancakes with the flavors of pumpkin and buckwheat!

My family visited me a couple of weekends ago and we took a little walk around the trial gardens on a nice, sunny day. Flowers always make me happy and it was great to see them one last time–probably the last time I’ll see them before I graduate!

I made my weekly grocery trip on Sunday. Unfortunately for my wallet, it was one of those stock-up trips…meaning I spent a lot more than I wanted to. But I got a lot of things I needed, like produce to refill my fridge, coconut oil and protein powder that will both last awhile and some other pantry staples.

That chocolate bar in the front is perfect for true chocolate lovers–it’s literally just made of cacao beans! It’s a bit too bitter for me so I drizzle a little local honey on it and it’s perfection.

My mom and I did a little shopping while I was home this past weekend. I’ve been looking for a professional-looking dress I can wear to school, for doing the weather for the campus TV station and hopefully to wear at my first big girl job. It’s a lot harder than it seems! I can’t buy anything blue or green (because of the green/blue screen I have to stand in front of), I can’t get dresses that are sleeveless unless I want to wear a blazer over them and of course, they have to fit and look right. I can’t even tell you how many stores we went to and left empty-handed. Finally, we went to Forever 21 and hit the jackpot. I only got one of these dresses (the last one pictured) but I actually loved them all. The top one was a bit too big in the chest area (#ACupProblems) and my mom didn’t like the cutouts on the second one but the third one we both agreed was cute and professional. I can’t wait to wear it on TV this week! Oh, and I’m for sure putting the other two dresses on my Christmas wishlist 😉

If I had a vice, it would be seasonal food products. Seriously. I have a big problem. I immediately want to buy them, even if I don’t really need them. Luckily, this week I did need to stock up on protein powder (and this one was on a 3 day sale at Whole Foods, score!) and I wanted to buy some sprouted tortilla chips to make nachos. I want to do some kind of review post soon on the products I’ve tried recently but for now, I have to say I love and recommend both of these. The Amazing Meal has the perfect mix of chocolate and peppermint, and I love the vitamins and minerals in all their products. And the chips are a little sweet and a little salty and great for dipping.

The last thing my wallet needs right now is the Whole Foods salad bar, but I haven’t had it in at least 2 months, so I was desperate for my favorite takeout. I got some usuals and tried a few of their Indian dishes. It was SO much food, but it was worth the price for sure. At least it’s a rare indulgence, amiright?

While I was at home, my dad and I saw some short films at a film festival downtown. The movies were fun, but the best part was trying out a newish vegan place nearby for lunch. My dad is definitely NOT a vegan but he’s so accepting of my lifestyle (as is my mom) and he’s always willing to try vegan restaurants and food, plus he’s really into eating foods without artificial ingredients, so that’s a plus. The restaurant we went to is mostly a smoothie and cold-pressed juice place but they had some tasty food options as well. My salad was small but really delicious, especially with their homemade dressing. The frappuccino was perfect–a lot less sweet than frapps from Starbucks, and made with matcha tea, almond milk and a bit of agave. And the PB blondie was incredible–I had it for dessert that night and it was even better warmed in the microwave. I love that they are completely gluten free and vegan (with a lot of grain free options) and that they make all their stuff in-store or buy it locally. Definitely my kind of place!

WIAW: Food Fails & Fashion Talk

I like trying out new recipes, and just new things in general, but unfortunately, they don’t always work out in my favor. I bookmark recipes with high hopes that they’ll be amazing and sometimes they’re not but that’s okay! That’s why I like to throw some new things into the mix but keep some old favorites so I’m never totally disappointed.

This isn’t really a fail, but more like a weird thing I’ve been doing lately. I used to be able to blend my banana softserve with just bananas, and it would turn out smooth and creamy every time. Now that I’ve been doing add-ins everyday, I’ve needed to add in a splash of coconut milk to get things moving. Not necessarily a bad thing, but sometimes the softserve turns out more like a thick soup than ice cream. Trial and error!

I’ve been trying to perfect the homemade salad dressing. I love cashew based dressings, but they are sometimes chunkier than I’d like them to be. I just can’t get the smooth consistency down, even though I soak the raw cashews beforehand. At least they taste good, right?

Snack plates are never a fail! You just can’t go wrong combining different tastes, textures and macros all in one plate. Like I’ve said before, I’m indecisive when it comes to snacks, and I like having a little bit of everything.

I had high hopes for my first raw veggie burger, but sadly it wasn’t that great. I think I just don’t like the consistency of portobello mushrooms if they aren’t cooked well enough or at least drained of their excess water. I found a few recipes for raw portobello burgers but they all called for the portobello to be in the dehydrator for at least an hour. I was running short on time and wanted to eat NOW so I set it in there for only half and hour and it wasn’t so tasty. The toppings definitely made up for it though! I’ll definitely try it again when I have more time to let it sit in the dehydrator.

The only fail about this was that I ran out of Sunwarrior a week or so ago and had to wait for my order to come in from Amazon before I could start whipping up raw protein-packed desserts. I used to like the Garden of Life RAW protein powders but they’re really chalky and only taste ok in some things, like banana softserve. Lesson learned: Sunwarrior is the best raw protein powder I’ve found so far!

I raved about this bar on Instagram the other day. Such a delicious raw treat, but at $5 per bar (and these bars are about half the size of a normal chocolate bar), it’s a once-a-week purchase that I make last for a whole week. I could easily demolish the whole small bar in one day, but that would be a total wallet fail. Maybe I’ll try to make a version of it at home with the lucuma powder I have, coconut oil, cacao and dates. I gotta say though, as much as I like making things from scratch, some things are better storebought. Like this chocolate. And the Living Intentions raw flavored nut mixes I love.

I feel like my style is really evolving lately, and I like it. Both the tank and shorts are recent purchases (bought within the last 3 months) and prior to this year, I would have never bought either. The tank is the first black thing I’ve ever owned as casual wear and though I’m still not a huge fan of black, I think it works well in small doses and paired with pink or white/black patterned things. The shorts are high-waisted, which I never thought I could pull off–they generally work well on curvier girls and I am…not curvy. They may not be as fitted as they’re supposed to be but I really like them and I think they look great with tucked in shirts or cropped tops.

As I’m getting closer to college graduation, I’m reevaluating my closet. As much as I still like most of it (and the rest I gave away to charity–one good thing that came out of the fires was that I was able to donate some of my summer clothes to fire victims!), some of it screams high school, or at least college. I may or may not donate those things, but I know that they’ll probably be more casual and weekend wear for me. I would like to focus on building a more adult casual wardrobe, but especially focus on finding career wear. I have a few things that I got last year when I started with the campus TV station that are definitely work-appropriate, but I need a LOT more (or maybe just want a lot more…). Before this year, I didn’t have a need for a ton of dressy clothes, and while I never wore the typical college kid yoga pants and sweatshirts, my school clothes are a bit too trendy for the workplace. On-air dress code is generally business casual to business (blazers with pencil skirts, solid sheath dresses, etc.) and I’ve never really had a need for those clothes before, so it’ll definitely be a learning experience for me. Luckily, I don’t mind dressing up as long as I can make my outfits fun with a pop of color and such, so I’m excited for what’s ahead fashion-wise.

Hi guys, long time no see huh? It’s getting to be that time of the year again…back-to-school time! So I’ve been pretty busy the past few days getting everything packed and ready for second semester. I’m actually really excited to go back–my classes seem interesting, I’m ready to do weather anchoring again and I can’t wait to be back in my apartment so I can do whatever the heck I want. Don’t get me wrong, I love my family to pieces, but I need my alone time sometimes and having my own kitchen again will be nice.

Since life’s been cray over here, I’m gonna borrow a little survey I spotted on Amanda’s blog the other day so enjoy…and I’ll be back next week with some updates!

Current Books: Erm…uh…I’m actually not a big book reader (please don’t hate me!). I do have some books I love, like Dave Barry (he is hilarious!) and the Sisterhood of the Traveling Pants series, but I haven‘t actually read them in awhile. I am loving Veganomicon though–so many delicious vegan recipes I need to try out.

Current Music: Anything by Foster the People. Love them. I just added their station to Pandora and I’m addicted. Right now I can’t get Houdini out of my head.

Current Guilty Pleasure: Lotions from Bath & Body Works. Seriously, can I just buy them all?! They smell so delicious…

Current Nail Color: OPI’s Giftcards for Everyone. Oh, and Sally Hansen’s Posh Plum on my ring fingers. I got the OPI color as a mini giftset for Christmas and the colors are perfect for winter.

Current Drink: I can’t go without my (almost) daily ACV morning cocktail. 1 tbsp unfiltered apple cider vinegar, English toffee stevia drops to taste, cinnamon and water to dilute. It tastes like a sour apple pie.

Current Food: I’m loving the sweet potato+sunflower butter+peanut flour paste+raisins+chocolate chips combo, as I mentioned on WIAW. Sounds weird, tastes heavenly and never gets old.

Current Favorite Show:  I heard the new season of WNTW (What Not to Wear) is on so I really need to start watching that again, I really missed my Clinton & Stacy fix. Other than that, I think 1600 Penn is hilarious and I love Chopped on the Food Network.

Current Wishlist: I would love some Starbucks and iTunes gift cards because I’m cheap and don’t want to pay for my own coffee and music #collegeproblems

Current Needs: Not sure if this is more of a need or a want, but dumbbells. I really want more muscle and bodyweight training alone isn’t cutting it. I’m really wanting to start a strength training routine so I’m planning on hitting up Target soon to pick up some cute and colorful weights.

Current Bane of My Existence: The fact that everyone is coming down with the flu, and I reaaaaaaallllly don’t want to get it. No such thing as hand sanitizer overload during flu season.

Friday Faves (August 24)

Well, I can’t believe I finally (almost) made it through my first week of my junior year of college! I can already tell this semester will be busy and challenging, but I wouldn’t have it any other way. I’ve been getting used to a lot of big changes, like the daily commute to classes (which usually takes way longer than it should) and keeping my apartment clean but I’m starting to feel like an adult and it feels so good!

After my first day of classes on Monday, I treated myself to a passion iced tea from Starbucks (much needed, that’s for sure!) and I promised myself last weekend that if I made it through a whole week of classes and extracurriculars, I could treat myself to some Whole Foods salad bar goodies. So you better believe I’m doing that tonight for dinner 😀

Favorite Recipe Redux: Peppermint Super Brownie Bites

Not the most appetizing picture, but I can guarantee it tastes amazing!

I’ve been doing some recipe experimenting here and there when I’ve had time after classes. I made a few things that turned out delicious but not quite perfect. Then I stumbled upon an idea, combining both my raw brownie recipe and Angela’s no bake peppermint patty bars (which are fab, BTW). I wanted something small, cute, chocolate-y and minty without being too overwhelming. That’s where the super brownie bites come in! They’re almond and walnut based, like my raw brownies, so they add a protein and healthy fat punch and are grain-free. I added in a packet of chocolate Amazing Grass, which adds 10 grams of protein, along with tons of greens.  They’re sweetened with a few dates and just a little real maple syrup, so they’re perfectly sweet. The chocolate icing on top is made from dark chocolate chips and coconut oil, both healthy fats. But the result is a delicious, minty brownie bite that tastes almost unhealthy!

Peppermint Super Brownie Bites (vegan, gluten-free)

2 packages 100 calorie almonds and walnuts

1 packet chocolate-flavored Amazing Grass protein powder

3 small Medjool dates

1 tbsp dark cocoa powder

1 tbsp maple syrup

1/2 tsp peppermint extract

3 tbsp vegan chocolate chips

1/2 tsp coconut oil

In a food processor, process nuts, Amazing Grass, dates and cocoa powder until crumbly. Add in maple syrup and 1/4 tsp peppermint extract until mixture sticks together. Roll brownie batter into small balls and place in mini muffin tin or on foil. Meanwhile, in a small pot over low heat, stir together remaining peppermint extract, chocolate chips and coconut oil until chocolate gets melty. Spoon icing over each bite and stick muffin tin or foil in freezer to set. Makes 8 bites.

I hate to brag and pretend like I’m super awesome, because that’s just not who I am, but I’ve been working on owning my accomplishments and being more confident, so being complimented for how I handled my first night as a weather anchor at my campus TV station was thrilling for me. It was a practice run through, so it wasn’t aired, but I completely ad-libbed for about a minute, not even knowing much about the weather forecast, and my producer and fellow anchors congratulated me afterwards for how well I did and how they couldn’t imagine ad-libbing for an entire segment. It gave me so much confidence for the semester to come!

Favorite Thing I’m Looking Forward To: Whole Foods salad bar

It’s a little lame, but I get really excited for grocery shopping, particularly at Whole Foods. I could live there and be totally happy! When I first discovered the salad bars a year ago, I became hooked and even though I didn’t get it again for another 6 months, I couldn’t get it out of my mind. This summer, I went a little more frequently and tried to switch it up every time. The Whole Foods in my hometown (well, one of them) has a great selection of items at the hot and cold bars and I’m hoping the one in my college town does too!

Favorite Time of Day: Driving to class

Don’t get me wrong, it is stressful trying to get to class on time while also avoiding cyclists, pedestrians and other cars that are going wayyyyyy too fast and also trying to find parking that isn’t miles away. But it also makes me happy, because I haven’t driven regularly since senior year of high school. In fact, before this summer and my internship, I barely ever drove in the past 2 1/2 years. I actually really love driving alone, because I can blast my music, sing along and just get ready for the day ahead. I feel so much more independent and responsible–Alejandro is my baby and I want to keep him safe 😉
