WIAW: Easter Weekend

It seems like Easter was weeks ago, but nope, it was just a couple of days ago! Obviously I’m great at procrastinating on posting about it 😉 But seriously though, it’s getting to be that busy time of the semester, when everything is just starting to pile up so apologies if I go missing around here for a few days!

Easter weekend was one of the best weekends I’ve had in awhile. I really needed the long weekend after a rough post-spring break week back at school, so the fun and rest was much appreciated. I’ll break it all down for you in some pics I snapped over the weekend.

Thursday started out with morning classes, and then my mom drove up to bring me back home. She got up to my apartment around noon so we stopped for lunch before hitting the road. We went to Wahoo’s, one of our old favorites that we now can’t get back home since all the locations shut down. Luckily my college town still has one–Wahoo’s has the best guac, hands down. I got a surprisingly amazing salad topped with guac, salsa and roasted veggies.

Fast forward a couple of hours. My parents were both in a Holy Week play at our church so my sister and I went to go watch them. For not having many rehearsals, everybody was really good and a lot of the monologues were very emotional.

Friday morning I got to sleep in a little, and then after lunch my mom and I went out to find birthday presents for my dad. Shhhh, don’t tell him I told you but he’s turning the big 5-0 today! Anyways, we also hit up Whole Foods as per usual so I could pick up groceries for the week ahead. I got a few new things as usual too–the Sunwarrior chocolate was ordered by my dad off Amazon, but everything else was bought by me. So far, I loved the sweet potato apple fruit strip–it was delicious and only a couple of grams of sugar–the nori sheets (perfect for raw wraps) and the kale chips. Seriously, the Kale Krunch brand is the best, I’ve loved all their flavors I’ve tried.

This may seem weird as a clean eating vegan, but I LOVE pizza! By pizza, I don’t mean mass-produced Domino’s or frozen pizza with greasy cheese and no veggies. I love good quality, hand tossed pizza from authentic restaurants topped with classic Mediterranean toppings like olives and artichokes and thin crispy crust. And of course, no cheese! Even when places offer vegan cheese, I never order it because I like to keep my pizzas focused on the veggies. We ate dinner pretty late since we went to the Good Friday service at our church before (always a very moving service) but surprisingly, I wasn’t too freaked out about eating dinner around 9. I even ate 4 out of 6 of the slices…and had two leftover for a great dinner on Saturday!

Who needs to dye eggs when you can accessorize them? At my house, we’ve decorated Easter eggs since I was little and I can’t imagine not doing it. This year, I convinced my mom to buy the diva decorating kit from Target rather than the usual glitter and dye kits. Yes, I’m still 5 years old 😀 My sister and I had a blast glamming out our eggs to be rocker chicks on Saturday night. Easter eggs have never been this cool!

What’s better than homemade pancakes on Easter morning? Ok, for me, waffles would win, but my waffle maker lives at my apartment while I’m at school so sadly I couldn’t make them. But I settled for carrot cake pancakes, made with almond and buckwheat flours (so technically grain free, since buckwheat is a seed, like quinoa), shredded carrot, raisins and topped with peanut flour paste and cashew butter and more raisins, dipped in real maple syrup. If only I could make pancakes every morning!

I didn’t realize it until looking at my photos from last year, but I wore the same dress last Easter. Oh well, I’m sure no one but me noticed. Easter is usually snowy and cold here for some reason (April is one of our snowiest months, go figure) but this year we had no snow at all and it was actually sunny and in the 60s. So I could wear a dress without bundling up in a coat and sweater too!

Sprouts is my savior…first they had the ALT Larabars, now they have strawberry Zevia. And unlike the grape, which I only sorta liked, this one was delicious and almost tasted like watermelon (always a good thing). And I just love the light pink can color!

Another Easter tradition that never gets old? Hiding Easter baskets! My mom hid one for me, my sister and dad this year and I still loved searching all over the house for it. And I was pleasantly surprised to find that she had filled it with my favorite nail polish color, great smelling lotion and vegan candy from Whole Foods. Now, to be 100% honest, I’m still a little wary about this candy–it’s healthier than most but it still doesn’t have completely ‘clean’ ingredients up to my ridiculous standards. However, I know she wanted me to be able to enjoy some candy, so I’ll try to get over my fear and enjoy a little of it every day. It’s not even that unhealthy, to be honest, just another issue I’m still dealing with.

Easter dessert was something I haven’t had in awhile–ice cream! I love coconut milk ice cream, but again, it was something I pushed aside because it wasn’t totally ‘clean’. However, I really like the no sugar added kind by So Delicious and it’s really not that processed so I enjoyed a small bowl of the vanilla with blueberries and a homemade chocolate PB bunny on the side (recipe to come).

Easter weekend was extra long because I didn’t head back up to school until early Monday morning. Once back at my apartment after classes, I whipped up another batch of the homemade chocolate PB bunnies (this time I made ‘eggs’) and also experimented with making a carrot cake inspired version. Both kinds turned out amazing, so look for those recipes very soon! Both recipes have no added sugar, and are super easy to whip up.

College Vegan on a Budget: New Finds

A series of posts on one college girl’s trials and errors in budgeting her grocery money and still eating well.

I can’t believe it’s been almost a month since my last CVB post! Don’t worry, I’ve definitely still been buying groceries since then, I just haven’t had too many exciting purchases. Until this week, that is.

As I mentioned in my WIAW post this week, I’ve been enjoying a lot of new-to-me products this week. Other than the ones I already mentioned, I just got my latest iHerb order in the mail and other than my usual peanut flour and Alter Eco dark chocolate bar, I also gave in and finally bought the blogger favorite–coconut butter. I’ve heard so many raves about it that I had to give it a try, even at $11 a jar (yes, I bought the Artisana kind). And…I love it! I know a year ago, it would have been a waste of money since I both disliked and feared coconut anything, but now that I’m pretty much obsessed with all things coconut (oil! flour! milk! shredded! bars!) I hoped I would like it. Coconut butter is amazing as a nut butter substitute, especially stuffed in dates. I can’t wait to try it out in recipes!

You know me, always on the lookout for new, clean, vegan bars that I can try out as snacks and quick meals. I first spotted the new Larabar ALT variety on their website towards the beginning of the year, but I never saw them in stores until I shopped at a new Sprouts last Sunday. My college town has two Sprouts stores (kinda crazy considering my hometown of half a million only has one, but my tiny college town of only 150,000 has two) but I’d only been to one of them before. I was disappointed in that location’s selection of bars so I decided to check out the other Sprouts. This one is closer to me, bigger and seems to have a much better selection of everything…they even had the strawberry Zevia I’ve been looking all over for! Anyways, they also happened to carry all 4 flavors of the ALT bar so I snatched up all but the cinnamon apple crisp (I’m not a huge fan of apple-flavored things). So far, I love the pumpkin flavor and I really like that they offer 10 grams of pea protein.

As for my other new buys, I picked up the carrot cake Larabar, an organic raw foods bar, my second flavor of Vega One bars (I love these because they’re just the right amount of sweet and chocolate and have 15 grams of protein + greens in a 250 calorie bar, which is perfect for a quick lunch!), grape Zevia, Pure Via (I’ve heard some negative things about my favorite Truvia so I wanted to try a cleaner brand), Bob’s Red Mill coconut flour in bulk (only $3.99 per pound which is much cheaper than buying prepackaged), a champagne mango (better than regular mangoes!), tricolored carrots and baked apple chips (I know you love these, Amanda!)

I like trying new things because then I can find things I love, and figure out what things I don’t like so I don’t end up wasting more money on them in the future. That’s why I like when I can find single-serve things (like the bars and Zevia) that aren’t so expensive, so if I hate them, I didn’t waste that much money. Luckily this time around, I’ve really liked everything I’ve tried so far!

WIAW: New & News

Before I get to the best party of every week, I wanted to share a little news with you guys. I’ll be doing a couple reviews (with a possible giveaway) within the next week so look forward to that! I love entering giveaways and reading reviews so I’m really happy that companies have started to reach out to me to share their products with my readers.

Now onto the eats! I’ve been eating a lot of “new-to-me” stuff lately which I always love. I’m not really a creature of habit, I do know what I love and stick with that but I really like switching things up and trying out new food. I did some of that over spring break and apparently that trend is continuing this week.

The chia seed pudding obsession is going strong, but what’s new is the addition of (half of) this new-ish to me Larabar flavor. I tried the chocolate chip cherry torte flavor last summer and didn’t love it. But after having it a second time, I kinda like it. I pretty much hate anything cherry or cherry-flavored, so this is huge for me. Probably the chocolate chips are what make it ok 😉

The salad-for-lunch thing isn’t new (I’ve been eating one almost every day for three months!) but the green garbanzos sort of are! I bought some frozen ones from Whole Foods on a whim about a month ago and haven’t been using them a lot, but they’re really good in salads drizzled with balsamic vinegar. I’d love to try making falafel from them too!

If you have the new ALT bars near you, please try them! Especially this flavor. It reminds me of spice cake, and is really good and filling! Half of one made the perfect lunch dessert, and it had 5 grams of pea protein to boot (the entire bar has 10 grams). I love finding all-natural vegan protein bars that actually taste good!

The kale chips are semi-new (the southwest ranch flavor of Kale Krunch chips is unreal) and so are the apple chips and the cashew butter (the WF brand reminds me of cookie dough, but it’s just made from cashews and a little safflower oil!) but the real newbie is the yellow carrot. Can you believe I’d never had a whole carrot before a week ago? I spotted a bunch of tri-colored carrots at Whole Foods and just had to snag them. I don’t think I’m gonna rely on baby carrots so much anymore, I love the crunch of these full size carrots! And the fun color is just an added bonus.

I’ve been wanting to try this flavor for awhile, but I didn’t want to pay $5 for a 6 pack, in case I didn’t like it. Verdict: while it’s not my favorite flavor (that would be the cream soda) , it actually grew on me and I do like it. At first it reminded me of children’s Tylenol, but it’s actually pretty tasty!

Socca pizzas are a staple around here, but this was a first for me–a sweet socca pizza. I made my usual socca base (1/4 cup chickpea flour, salt, enough water to thin) and topped it with 1/4 of a mashed sweet potato mixed with almond milk and cinnamon, crumbled maple mesquite walnuts, shredded coconut and a drizzle of maple syrup. It was like dessert pizza for dinner, and it was oh so good!


These were actually all my meals for Monday, minus my nighttime snack (unpictured because it was eaten too late for a good photo to be taken), which was coconut flour mixed with a little baking powder, chocolate chips and almond milk and microwaved to make a coconut flour muffin, a square of Alter Eco dark mint chocolate, peanut flour paste and a date stuffed with cashew butter and cacao nibs. Nothing exciting, but I love it.

Why I’m Not the Typical HLB

As a self-proclaimed healthy living blogger, I like reading other HLBs and seeing what food and fitness trends everyone’s getting into. I have to admit, I sometimes act like a sheep and follow these trends but that’s really only because I end up loving the food/workout so much. But there are many, many ways that I’m not at all like the stereotypical HLB…

I hate eggs. 

Yep, always have, (probably) always will. It’s a combination of the texture, taste and smell for me. Ick. I could never do any form of eggs for breakfast–I blame my dad, because he’s never been a big fan of eggs. So that aspect of going vegan was super easy for me! While I think things like veggie-filled omelettes and 2 ingredient pancakes are cool ideas, I’d never be able to stomach them. Just no.

I’m not a Chobani/Love Grown/ Luna Bar/ PB&Co. whore.

There’s quite a few brands that seem to be really popular in the HLB world…and I’ve never understood them. To each their own, of course, but I’ve tended to go my own way with brands and I love what I love. I do like a few of the popular brands, like Larabar and Almond Breeze, but some of them just don’t do it for me. For instance, I prefer unflavored almond butters to flavored PBs (other than Justin’s vanilla AB) and I really love Purely Elizabeth granolas because they’re made from ancient grains and is the only granola brand I know of that’s made with coconut sugar.

I’ve never stepped foot in a Lululemon or a Trader Joes. 

It’s not that I don’t want to shop in these places, it’s just that I’m semi-deprived out here in CO and neither of those stores are near me (okay, that’s a lie, there’s a few Lulus in Denver, but I’ve never been). I’m actually waiting on a couple of TJs locations that are set to open soonish, but since I’ve never been, I feel a little left out. Maybe it’s for the best–I can’t afford anything from Lulu and I’d probably blow my budget if I had a TJs in my city!

I’m not a runner, or a Crossfitter, or a heavy lifter.

I have started lifting recently, and I really love it, but I’m nowhere near lifting heavy yet. As for running and Crossfit, I just don’t feel like they fit my lifestyle. I like doing cardio like tennis or circuits (or window shopping 😉 ) and I also love yoga. There’s definitely a workout style out there for everyone, you’ve just gotta find what works for you.

I don’t eat the typical HLB breakfast.

I’m a huge breakfast lover, but (obviously) I don’t do eggs, I don’t really like oats anymore and yogurt messes are out because vegan yogurts are beyond nasty. I tend to mix things up a little bit, but right now I’m loving homemade buckwheat waffles with protein frosting, and chia seed protein puddings. I really try to get a great balance of carbs, fat and protein in at breakfast while still satisfying my sweet tooth.

I’m vegan.

Vegans seem to be a rare breed these days in the HLB world. And honestly, I kinda like it this way but also not. I like it because then I feel more unique, like that’s the niche my blog fits into. But I also don’t like it because there’s not as much food inspiration…so I just end up borrowing from the boys omnis!

The Best Products (I’ve Tried) of 2012

Can you guys believe we’re just a little over two weeks away from a new year? Craziness. When it gets to be this time of year, all I’m thinking about is how excited I am for Christmas, enjoying my time off from school and all the things I accomplished over the past year.

And if you’re a foodie like I am, you might also be reminiscing about the new food you’ve tried over the past 12 months…I know I am! With that said, here are a few of the best things I’ve tried since January 2012!

Zevia

Before I sucked it up and finally bought my first (overpriced) can of this amazing stuff in May, I’d heard lots of good things about it. I’ve never been a big soda fan, but I used to enjoy diet sodas on occasion. So having an all-natural diet soda was a definite treat! Since then, I’ve tried the ginger root beer, cream soda, cola, orange and lime cola (the orange is the only gross one) and I can’t wait to try more. Like a lot of things I love, these are very pricey so I buy a 6 pack when they’re on sale or maybe once a month at most and make them last.

This was another blogger-hyped product that I was on the lookout for since last fall. I didn’t find one until this October and haven’t found it very often since (but I stocked up on two last weekend!), but it’s my favorite squash by far (other than delicata). I prefer the texture and taste over any other and it’s delicious with peanut flour paste, almond butter or ketchup.

Larabars

I’ve seen these around for awhile, but because of my previous fear of fat, I never gave them a try until March but they’ve become my bar of choice since then. I love the flavor variety and the fact that they’re made from whole foods, like dates and nuts. My favorite flavors are cappuccino, pineapple upside down cake, peanut butter chocolate chip, chocolate chip brownie and the Uber banana bread.

Can you believe I never tried Vega products until earlier this year? Vegan blasphemy, for sure. They have good quality (though expensive) protein powders, simple protein bars and I’m obsessed with their latest product, the dark chocolate-covered saviseed which is packed with protein and Omega-3s.

This stuff is incredibly versatile, and easy to make. Basically you just soak raw cashews overnight or for several hours, and then it’s ready for blending. I’ve made a raw cheesecake (see above), nacho ‘cheez’ dip, mascarpone ‘cream’ and savory cashew cream filling–it really is good for anything!

Even if you eat dairy, you need to try this vegan ice cream, it is out-of-this-world good! The healthy coconut fat makes it incredibly rich but not overly indulgent, and stores like Whole Foods carry a million and one flavors so you don’t have to feel limited to chocolate and vanilla. So Delicious and NadaMoo are my favorite brands, but there are definitely more out there–there’s a variety for everyone!

Kale

I think I actually tried kale for the first time last year (it was when I first tried the Whole Foods salad bars) but I didn’t fall in love with it until this year. I know a lot of people say it’s bitter, and it can be, but I’ve found lots of ways to make it tasty and craveable. Homemade kale chips (they’re best made in the dehydrator), crispy sauteed kale, ‘pizza’ kale (kale cooked with pasta sauce and olives), raw massaged kale salads, kale/almond milk smoothies…I’ll eat it almost any way, and I try to eat it at least once a day! Bonus: it’s an amazing superfood.

Coconut flour (or really, coconut everything)

I used to say I hated coconut, partly because I didn’t like the texture of shredded coconut but also because I was deathly afraid of the fat in it. I avoided saturated fats like the plague but once I became pretty much 100% vegan, I realized that plant-based saturated fats were totally healthy and necessary. One of the first coconut products I bought was coconut flour–I wasn’t sure if I’d like it but I do! I really love it mixed with baking powder and almond milk and microwaved for a minute to make a crumbly coconut flour muffin but I also want to experiment more with it in baked goods. It’s hard to bake it into things without using eggs but I want to try it out.

If you’ve ever seen these before, they’ve probably grossed you out just a little. They weirded me out too the first time I bought them but I really wanted to try a raw noodle substitute and I’d heard good things. Unlike shirataki noodles, these are made from a seaweed so they’re more of a whole food, they don’t smell weird and they soak up the flavors in anything. They make the perfect low-cal sub for pasta and I especially love them mixed with pasta sauce, nooch, a crumbled veggie burger, kale and olives. I also included them in a stirfry the other night and they were amazing–recipe coming soon!

I’ve tried a lot of vegan protein powders, from the (not-so-good) cheapo soy-based powders to the delicious but expensive Vega and Sunwarrior. But I think Garden of Life is my fave. First, it’s made from a blend of raw sprouted plant-based proteins, like quinoa and sunflower seed. It’s also pretty high in protein (17 grams per serving) and is a bit cheaper than some other higher-quality brands, it’s sweetened only with stevia but best of all, it’s delicious. I love both the chocolate and vanilla chai (only available at Whole Foods) flavors and the lovely team at Garden of Life was nice enough to send me some samples of the regular vanilla too so I can’t wait to try that one! Look for a review soon and possibly a giveaway in early 2013!

It actually makes me really sad that fig season is over–it became my new favorite fruit over the past few months. It pairs so well with both sweet and savory things and though they are a bit expensive, they’re worth every dollar. They’re out of season now but at least I can settle for dried figs!

Best Discoveries This Year

Before I start this post, I want to take a moment to acknowledge the tragic shooting that occurred just a few days ago in Aurora, CO. It’s always hard to hear and read about these horribly sad events, but even more so when they happen in your own state, only about an hour’s drive away from where I live. Please keep all the victims and their families in your thoughts and prayers!

Now onto something lighter! Yes, I realize it’s not the end of the year yet–but it will be soon if the year keeps flying by like it has–but since my birthday is just around the corner, it kinda feels like a new year for me.

Anyways, I’ve made a lot of new purchases and discoveries since last July 27th so here are some of the best! They’re not all food related but knowing me, most of them are 😉

Whole Foods Hot/Cold Bars

Honestly, if I could, I would eat at Whole Foods once a week, it’s just that good! But $7 salad boxes just aren’t in my budget so I’ve only had them about 5 times over the past year. But each one is amazingly delicious, and I can always find something new. Oh, and I never stick with the boring spinach leaves and black olives…no, I load my boxes up with flavored tofu (they have the best stuff), cold veggie salads, fresh fruit and yummy grains. They never disappoint!

Move over, Instagram, you’re old news! LabelBox and Phonto are the perfect way to jazz up your Instagram’d photos and if you’re as much of a font nerd as I am, you won’t be able to live without them. Plus they’re free, and who doesn’t like free?

Veganism

Who says vegan foods have to be boring and tasteless?

My decision to go vegan a little less than a year ago has been seriously life-changing. During my eating disordered days, I relied on low-cal, low-fat things too much because I thought they were ‘healthy’. Now as a vegan I’m eating mostly whole foods and minimally processed foods, with plenty of nuts, grains like quinoa and oats and tempeh, all things I never would have touched a few years ago. I feel healthier, happier and more vibrant. I feel okay treating myself to things like coconut milk ice cream and tons of guacamole because they have health benefits and make my life better. Not to mention, I’ve become more creative in the kitchen and ordering things at non-vegan restaurants. I am not 100% vegan, as I do enjoy gelato or froyo and honey on occasion, but I know I’m doing a good thing for the animals, the environment and myself and that’s why I continue to do it.

I don’t go on this as much as I should (or could?) but I still love how inspirational it is. I pin a lot of fashion and decor stuff and when I’m done, I get some closet and apartment inspiration. Sure, some of it is unrealistic but it’s so fun!

Kale

Kale: a nutritious part of this complete dinner!

How did I not discover what’s become my favorite veggie until February? I first tried this superfood in kale chip form and was hooked. I didn’t love it raw at first but when I figured out you have to massage a dressing or sauce into it, I fell in love. It’s also really great crisped up in a dry skillet with salt, pepper and garlic. Basically it’s awesome no matter how you use it, and I love that I feel like a superhero when I eat it!

Zevia

My second-fave flavor so far. This root beer’s got a bite!

I’ve never been a big soda drinker, but I would always always always stick to diet versions. But all that fake sweetener isn’t the best and it gives me headaches. So I went soda-less for awhile, until I stumbled upon Zevia. I love stevia as a sweetener and thought why not. Yeah, $5 or 6 is kinda a lot for a 6-pack, but it’s worth it for a 0 calorie natural soda. The cream soda is the bomb, and I also love the cola and root beer. Still have yet to find the lime cola and strawberry but I’m on the hunt!

Bold Shorts

Dark grey and hot pink make a perfect outfit!

I’ve never been one to shy away from bright colors, but I wasn’t so sure about the neon shorts trend. Luckily I got over that quickly because I love my hot pink shorts! They’re fun and different while still being polished and pretty. I’m planning on investing in a few more pairs of bright shorts (and some bright jeggings) before the summer’s over!

Sweet Quinoa

I need to have this deliciousness from breakfast again soon!

Who knew quinoa could be tasty for dinner and breakfast? I was skeptical at first but after seeing some mouthwatering breakfast quinoa pictures on Instagram, I knew I needed to try it for myself. And now I’ve got a new breakfast obsession, along with fluffy homemade waffles and overnight oats. Give them a try if you haven’t already, they’re worth the weird stares you might get from people 😛

WIAW: What I Ate (Monday)

I haven’t done a legit WIAW in awhile, you know, like posting all my eats from one specific day. Really, it’s just more fun to highlight some of my favorite meals from the past week instead of doing it all from one day, plus I always forget to take enough photos! But I thought I’d try to do a real WIAW this week since I actually remembered to take pictures.

Breakfast: peanut butter banana smoothie-in-a-bowl made with So Delicious unsweetened Almond Plus almond milk, peanut flour, xanthan gum, Truvia, mini banana and topped with peanut butter Puffins.

I’ve been experimenting with almond milks lately. So far, I’ve tried Pacific Naturals u/s vanilla, Almond Breeze u/s vanilla & chocolate, Silk u/s plain and So Delicious Almond Plus u/s plain. I’ve liked all of them, Almond Breeze and Silk are the creamiest and have the most calcium, not to mention I prefer the vanilla to plain, so I think I’ll be sticking to those to those two brands. The So Delicious one is good if you want  a little extra protein (5 grams versus 1 gram per cup in most almond milks) but I wish they would come out with an unsweetened vanilla.

Lunch: curried sweet potato pinto burger, carrots, ginger peanut sauce, fresh pineapple.

Being home has meant cooking for myself (for reals!) pretty much every day. For me, this isn’t a bad thing at all. Basically, because the rest of my family are omnis, I have to make my own dinner which has inspired me to get creative. Somewhat. I remade these awesome veggie burgers from spring break and they’ve been making an appearance at both lunch and dinner lately. The problem with cooking for one is you end up with a lot of leftovers…which maybe isn’t a bad thing at all!

Monday’s outfit: navy cardigan (American Eagle), dark grey lace tank (Hollister), navy/dark grey abstract floral skirt (Hollister), bangles (American Eagle).

The weather has been so effing bipolar here! Since I’ve been home, the weekends have pretty much sucked (temps. in the 60s at best, lots of clouds and wind, maybe some rain) and the weekdays are hit and miss. Monday was pretty warm, but cloudy for most of the day so I missed out on tanning. Boo 😦 Tuesday was super-warm, but I spent some of the day inside for my first day of my internship. What I did spend outside was extremely hot, even early in the morning. I’m just hoping this weekend is better because I want to do a lot of stuff outside.

Snackplate: freeze-dried fruit, raisins, square of dark chocolate with almonds and sea salt, stuffed date, kettle corn, blue and sweet potato Late July chips, peanut flour paste. Side of (half a can of) cream soda Zevia.

Snackplates are officially never going away…at least I hope not! The above assortment has been my go-to combo lately and I’m not getting sick of it. I’m just running out of almost everything on it! Time to make a trip to Whole Foods 😀

Dinner: Hugh Jass sweet potato topped with black beans/guac/nooch on one side, peanut flour paste on the other, side of mini sweet peppers and ginger jalapeno sauce.

The picture doesn’t do it justice, but this was one monstrous sweet potato! I enjoyed every last bite of it though, and of course had to please both my savory side (with the Mexican-inspired toppings) and my sweet side (with the peanut flour paste). The mini peppers are my new favorite veggie for summer, especially dipped in this spicy sauce. I can’t say enough good stuff about the Ginger People line of sauces. I love both kinds that I’ve tried and now I wanna try them all, well at least the ones without eggs or dairy in them!

Nighttime snack: PB Puffins in u/s almond milk, frozen grapes, peanut flour paste and almond peanut cashew butter.

See why I almost never post my meals from the same day? It’s because I repeat the same things throughout the day often. Like peanut flour, which I had 4 times on Monday, and Puffins which I had twice. I sometimes get really hung up on one thing and I eat it every single day or multiple times per day til I’m sick of it for awhile. I hope that never happens with my beloved Puffins and peanut flour…
