What I’ve (Been Wanting to Eat) Wednesday

Hey ladiessssss I loved reading about all your Thanksgiving fun slash shopping adventures. I know I’m going to give H&M another chance, I just think it wasn’t such a great experience since a lot of stuff was picked over, but what can you expect the week of Black Friday?

Basically I haven’t taken any pictures since coming back from break, I’m just so burned out with projects, studying for finals and work stuff–I am so ready to be done. Thanksgiving was kinda like a little teaser for winter break so I’m hoping the next 15 days go by quickly so I can be outta here! But I love WIAW way too much to not participate in some way or another, so I decided to dig up some older food pics and make this week’s theme about things I’ve been wanting to eat lately.

I’m in the dorms, so it’s required to have a meal plan. Last year, I went a few times a week with my roommate (before our relationship got really awful) but then around October, I stopped going that much. Second semester was basically the same–I just wasn’t diggin’ the dining hall. Luckily I had a microwave in my room to cook stuff in. This year, I’ve been to the dining hall a whopping two times, and both were the first weekend of school. Yeah, can you say bad resident? The only thing that’s somewhat decent there is the salad bar, but I’m too lazy to go there. So I’ve been making do with my dorm, which this year is equipped with a micro and two fridges. Mini, of course, but still. And for the most part, I really love what I’ve been able to make in my room. But going home over break made me miss the oven and stove and grill and a real freezer and…you get the picture. Plus I miss being able to go out to eat occasionally with my fam, so this edition of WIAW is all about what I really want to eat.

Breakfast: You know how much I miss being able to use a toaster? A LOT! I can’t ever have toast, or English muffins or waffles because of the stupid rule of not being able to have a toaster in the dorms. So dumb.

Lunch: My lunches now are always something quick and easy, like some Greek yogurt and fruit or a Clif Mojo bar. But as much as I love those things, they get old fast. I haven’t been to Qdoba/Chipotle since I took this picture way back in August, and I miss their naked burritos, which are like a burrito in a bowl. I especially love the grilled veggies!

Snack: Okay, honestly, there’s nothing really stopping me from making a yogurt mess for snack. But…well…I haven’t. I’ve just been eating Greek yo’ on its own, or granola on its own, but not together. I guess I’m lazy?

Dinner: This was something I made for mi familia way back during spring break. The inspiration just came to me randomly, and I decided to roll with it. I’ve never been a big Philly sandwich fan (since I never loved beef) but this vegan version was awesome. Seriously, try it! It was basically sautéed peppers and onions, vegan cheese slices and Gardein beefless tips. So easy but so delicious.

Dessert: Honestly, I was planning on making a version of my raw brownie pie topped with pumpkin Greek yogurt mousse over Thanksgiving break, but I already made the festive garland bars and didn’t want too many desserts around. Not that that’s a bad thing, since both are pretty healthy, but I didn’t want my mom getting on my case for making so many! But I really need to make a minty version of this over winter break. I’m going to experiment because I miss these delicious raw treats.

WIAW: Randomness

Some weeks, I just don’t get around to taking pictures of all my meals for WIAW. Blame it on laziness busyness. I was running around like a crazy person this last weekend and I kinda forgot to snap some pics of all my food. Most of it was pretty boring (aka using up whatever I could find at home since there wasn’t much Ashley-friendly food) but with the stuff that was good, well…I was too busy having fun to really remember to get pictures.

So for this week’s WIAW, it’s pretty much some random food pics that I managed to take within the past couple of days, plus some non-food stuff (aka outfits and such). Oh, and a random survey. Just the way I roll. Random is good, peeps.

Peas and Crayons

Early morning breakfast (hence why the lighting sucks). Coffee overnighters topped with PB Puffins. Probably my favorite overnight oats combo right now.

What was the last thing you bought? The necklace in the picture below. Not even kidding. I’ve been dying to buy the owl necklace since I first saw it and I finally had to cave and buy it online, since I never saw it once in any American Eagle store. Stupid shipping & handling, but it’s well worth it for this beauty.

What’s the weirdest thing anyone’s ever asked you? If I’ve skipped a grade. IDK where that came from, especially since I didn’t know the person who said it. I guess I am small for my age, though. Someone thought I was a HS freshman when I was a senior. Ugh.

A GIANT date! Okay, so it doesn't look so big, but trust me, it was like almost the size of my palm!

A typical yogurt mess: plain Greek yogurt mixed with blueberry protein powder, topped with Bear Naked Fit triple berry granola. It's even better in a pink bowl.

Best Halloween costume? Oh gosh, I loved so many of them. I was a blue M&M once (funny story: a few years after I wore this costume, a guy in my class said he was going to be Eminem for Halloween, and I was so naïve that I said “What color?” since I thought he was talking about M&Ms. Silly child!), bride of Frankenstein and a pirate. Uh, yeah, I think that was my favorite, since I wore obnoxious boot covers with jangly coins on them. I like being loud.

Amazing froyo (when is it ever NOT amazing)? Irish mint swirled with Oreo froyos, topped with raspberries and strawberries. Bliss in a cup.

What are you wearing right now? Look at the picture below. That’s exactly it. A light yellow hoodless sweatshirt from Hollister (hand-me-down from the lil sis. Anyone find that weird?), khaki twill shorts from Hollister and got-wet-in-the-random-rainstorm tan mocs from American Eagle. This is what I consider casual.

I used to be scared to wear yellow. Silly me.I'm really into playing around with the color and saturation of photos. It's kinda an obsession now.

 

What is your favorite food that your mom makes? Definitely this really really good chile lime pasta (usually with shrimp). She totally came up with the recipe on her own, and it’s super simple but delish. It has roasted bell peppers, Williams Sonoma chile lime seasoning and it’s just downright amazing.

Green goodness: Late July green mojo chips (aka crack chips), spicy guac/Greek yogurt dip. It's easy being green.

Best concert? The best one I’ve actually been to would have to be Relient K. But my dream concert is Lady Gaga. Shocker, right? But I’m dying to dress up in one of her bizarre outfits without getting looked at like I’m cray cray.

Poor mocs. All wet from the freak rainstorm on my way back from classes.

Things you do for fun? Shopping. Tennis. Mountain biking. Modeling photo shoots. Texting (well, I mostly do this when I’m bored). Fashion magazine-reading. Blog-surfin’ on my iPod touch. All the stuff cool kids do, obvs.

My second-ever Halo bar! I liked this one almost as much as the S'mores kind. I think I love vegan marshmallows more than regular ones, especially when they're combined with peanuts and flax seeds...

WIAW+Facts of Life

Hey lovelies! I loved all your responses to my weekend update post. I honestly had no idea that everyone would be so in love with my glasses! I think they’ll be making a more regular appearance around here 😉

It’s that time again–WIAW! I can always gauge how quickly a week is going by if I find myself scrambling to gather pics for WIAW. That’s a good thing, though; I hate when school weeks drag on forever. Especially when I have something to look forward to on the weekend. Oh well, that’s life. This week has been going by decently fast, which is great, because I can’t wait for this weekend–or more specifically, Saturday. I’ll get to that soon! For now, just enjoy some foodie pics and a little blogger questionnaire that I found on Alexis’ blog.

Peas and Crayons

How could I start a morning without overnight oats? I couldn't, of course, you know me. Today's lovely creation was dark chocolate oats topped with a spoonful of Whole Foods chocolate apple crunch trail mix. Alongside a spicy veggie sausage and gummy vitamins. A heart bowl makes it that much better. And cuter.

 Fact 1) I have never been to the East Coast, except for Florida. Yes, I realize that’s pretty crazy, especially to all you (many many) East Coast-based bloggies out there. But hey, I’m a Western girl at heart. Born and raised out here, baby. And I don’t plan on ever moving out of this region. I ideally want to move to California (either San Diego or San Fran, but I’m not too picky), Phoenix (my birth cit-ay) or Denver. In that order.

Quickie lunch between classes is always fun. Strawberry Oikos Greek yo' cup, all mixed up with Bear Naked Fit triple berry crunch granola. So good for a super-fast lunchie.

 Fact 2) I go to the school that had the major pool party over the weekend that’s all over the news and YouTube. I mean, really, guys, The Huffington Post covered it. Way to take away CU’s party school status, CSU. Go Rams?????

Ahoy matey! Okay, I'll stop trying to be cool. Outfit of the day, inspired by all things nautical (and nerdy): royal blue striped tee (Hollister), navy culotte shorts (Abercrombie & Fitch), ultra cool nerd glasses.

 Fact 3) I collect rubber ducks. Oh yeah, you know you wanna be friends with me now. Seriously, though, I’ve gotten 2-3 every year of the past 5 years or so (from an annual Labor Day rubber duckie race in a ski town near me) and I’ve got quite the collection now, from a cheerleader duck to a Mardi Gras one.

Snackplate time! Literally, on a plate. Kashi TLC crackers, agave/almond butter dip, frozen banana slices. Sweet, salty and cold all in one. But mostly just yum.

 Fact 4) Lady Gaga is my favorite. Despite her weirdness at the VMAs the other night (what were you thinking dressing like a dude, LG?), I will forever be a fan of her music. She is just so chill and I love that she isn’t afraid to make a fool of herself with her outfit choices. Most of them I approve of (but Sunday night’s choice? Not so much.)

 Fact 5) I really LOVE spicy foods! Seriously, give me spicy over salty any day, I can take it. Some of my favorite spicy foods include: Indian curries, fresh jalapeno peppers (especially on veggie burgers), really hot salsas, chile powder and the spicy veggie sausages I have every day for breakfast.

Overnight oats making their first (hopefully not last) appearance at dinner time! These were my PB&J Remix oats: 1/3 c. thick rolled oats, mixed with raisins and topped with PB Puffins and fresh black grapes. Heaven in a bowl, I tell ya!

Fact 6) Yearbook nerd alert! Yes, I was on my school’s YBK for 3 years in high school. I was a section editor, went to yearbook camp twice and even traveled three hours three different times to go to a yearbook conference at the school I’m going to now. Yeah, I was a hardcore yearbooker.

I like to make a mess when I eat. Plain 0% Fage mixed with chocolate whey protein powder and 2 duplex cookies. Who said yogurt messes couldn't include cookies?

Fact 7) I love Mediterranean/Greek cuisine. Falafel, hummus, tabouleh, vegan gyros, pita, baba ganoush, olives–it’s my favorite cuisine, hands-down. I think I could totally live in that area and be completely happy.

Tell me one fun fact about you! Oh, P.S., I changed my blog design once again. What can I say, I’m kinda obsessed with changing it every time there’s a new layout that looks cool. Change is good, right?

WIAW: It’s Almost July!

Hey errrrrybody! Hope you’re all having a fantastic Wednesday! The lil sis and I have had the house to ourselves since yesterday afternoon since my parents went on their anniversary trip. It’s the first time we’ve been alone together overnight, and I gotta say, it’s kinda nice to be without the parentals for awhile. No, we didn’t go crazy inviting all our friends over for a party or anything 😉 It’s been pretty chill but today we went to Panera for lunch (I had the half size of their strawberry poppyseed salad and it was the bomb.com, with all that fresh fruit in it!) and afterwards did some window shopping at Ulta, Victoria’s Secret and Bath & Body Works. And blasted some Lady Gaga on the way home, no big deal 😛

Now it’s time for WIAW! I love catching up on everyone’s recent eats and getting new recipe ideas. I also love that it’s almost July (favorite month everrrrrrr 😀 ) because it’s almost the 4th of July and my family’s doing something fun this year for it (details to come!) and also because my birthday is at the end of the month. I can’t believe I’m almost 19!

Breakfast: frozen raspberry mocha overnight oats, frozen grapes, spicy veggie sausage, 1/2 homemade protein cake batter waffle

 

Lunch: sweet tater topped with black beans and spicy Oikos Greek yogurt dip, baby carrots, mango chunks and bloobs, raw blondie

 

Snack (actually Monday's snack): grande unsweetened green iced tea from Starbucks, 1/2 container strawberry Oikos and 1/4 cup Bear Naked Fit berry granola yogurt messDried fruit munched on throughout the afternoon

 

 

Dinner: bloobs, baby carrots, banana and unsweetened chocolate soymilk smoothie, quinoa/sweet potato/tempeh bacon/edamame guac mess

 

Snack: coffee froyo, 2 Whole Foods duplex cookies

 Well, that was fun as usual!
