WIAW: 6 Days

Ahhhhh I can’t believe we’re so close to Christmas! It always seems like the days drag on leading up to the big day, but then it’s all over so fast. So this year I’m trying to savor each moment leading up to the 25th so it doesn’t zip by me!

This week’s WIAW is what I ate Monday and it’s a random assortment of old favorites and new foods…and there’s even a recipe thrown in there.

I’ve been alternating between homemade waffles and protein chia puddings for breakfast. This waffle was carrot cake inspired–filled with carrot shreds and raisins, and topped with coconut and vanilla ‘frosting’. The Sunwarrior is new to me, and not my favorite protein powder, but I think it’ll grow on me.

It was not warm enough to wear this dress on its own (Colorado in December isn’t quite that nice!) but I paired it with my faux leather jacket, grey tights and my favorite grey wedge booties and felt like a total fashionista hipster. This is my first winter-appropriate dress and now I want even more–dresses are my absolute favorite thing to wear so it’s nice not to have to say goodbye to them during the colder months!

I love kale salads for lunch but I need a way to mix them up. Enter: raw sunflower taco ‘meat’. Obviously it’s not meat, as I am vegan, but it replicates taco filling so well…actually, better than taco filling! I’ve seen a few recipes for raw vegan tacos so I tweaked those to come up with my own, crave-worthy taco filling that’s totally raw, packed with healthy fats and protein and is delicious.

Raw Sunflower Taco Filling (vegan, grain free, gluten free)

1/2 cup sunflower seeds

1/2 tbsp coconut aminos

1 tbsp nutritional yeast

chipotle powder, to taste

Pulse all ingredients in a food processor until it comes together and resembles taco filling. Serve in kale or lettuce leaves with guacamole, salsa and raw cashew cream. Makes about 1 cup.

Can’t go without fruit or something sweet to end lunch! On my trip with my dad to WF over the weekend we picked up some Satsumas which are my favorite type of citrus fruit, and luckily, they’re actually good this year. I love how pretty they look with their leaves and stems, too.

The snackplate lives on! Sadly I had to toss the fig after a few bites because it was dried out inside and not tasty, but everything else was. The rice cake combo is something I’ve been having almost daily–there’s just something about pumpkin butter, chocolate and coconut that goes together so well.

As much as I love to give new recipes a try, there’s nothing like reinventing a classic. I’m just obsessed with pineapple ‘fried’ quinoa for some reason and I’ve been eating it at least once a week. I think it’s the sweet, salty, spicy and crunchy combo that just gets me. It’s so good and it’s so quick and easy to whip up.

I’ve been having some kind of protein cake for dessert for at least a week now and I don’t see it stopping anytime soon. This version is probably my favorite though–I just combine peanut flour and raw chocolate protein powder with a splash of unsweetened almond milk, baking powder and sometimes a few Enjoy Life mini chocolate chips (love them!) and pop it in the micro for a minute until it puffs up and turns into a cake-like consistency. I sometimes have it with a small side of coconut milk ice cream and a square of dark chocolate if I want a little extra something.

Saturday Seven: Do the Kale Hail

Heeeeeeeeeeeey guys! So did you make it through the week? Honestly, I almost thought I wouldn’t! I had a 4-day week because I played hooky from classes on Monday since I was still at home, so that was nice, but it was kind of hard diving right into things on Tuesday. Especially because I had two tests this week, a huge essay to write and all the usual assignments, plus a random floor meeting and a meeting for work both on the same day. Needless to say, I was super happy for this week to finally be over. Next week isn’t looking too crazy, which will be great, plus I’m headed home again next weekend and it’ll be busy busy but fun. I’ll let you all know what’s going down latah!

For now, let’s get right into another edition of Saturday Seven. I’m on a roll with these lately–I’ve done one every weekend I’ve been on campus since December!

1. Homemade is better than store-bought

You were delicious, but too expensive!

At least when it comes to kale chips. I mentioned that I ordered some Brad’s Raw Leafy Kale chips a couple of weeks back, and I finally got them a week ago. I also happened to make my first batch of baked kale chips that same day. Verdict? I loved my homemade ones more (even though they still need some tweaking). I’m blaming in on the particular flavor I got of the chips–they’re natural nacho, and they’re a little too strongly “cheezy” for me, especially since I haven’t had real cheese in a few years. Don’t get me wrong, they weren’t bad, just not quite what I was expecting. I love their crunch though. I would like to try another variety, like the Vampire Killer or Nasty Hot, but for now, I’ll be sticking with homemade. They’re so addicting!

2. T-minus 3 weeks…

I met Dory last year on my spring break...

Til spring break, of course! I don’t have any huge plans, but getting a 9 day break from school will be ah-mazing! Last year, I did end up doing a few fun things, like playing tennis, going to the aquarium, shopping and recipe experimentation (like a delicious vegan Philly “cheesesteak” sandwich) so hopefully I can do some of those things and more this time around. Actually, I really want to make at least one new recipe every day of break, so we’ll see how that goes down!

3. Small things are the cutest

I’m a huge fan of Gardein products because they’re quick and easy, pretty healthy for faux meat, yummy and vegan! When I saw these little guys on their website, I was sold. I’m not even that big on products that imitate beef, but their beefless veggie burgers are one of my favorites. Plus sliders are just adorable, and each one has 9 grams of protein–score!

4. Apparently I like to recycle…

More than just a holder for delicious coffee.

I liked my Starbucks Valentine’s cup so much that I washed it out and decided to use it as a pencil holder on my desk. Way to get creative while being green, right? Plus it just looks cute.

5. I’m still learning how to text on my new phone

I absolutely love the case though!

I got my new phone at the beginning of January (a T-Mobile MyTouch, in case you were wondering) and I’m still struggling with the texting. I had a touch screen before this one and I also have an iPod Touch, so I thought it would be easy to learn, but not so much. I guess I’m trying to text as fast as I used to so I end up hitting the wrong keys. I’ll get it eventually though, and besides, I really love the phone. It’s an Android so it has web service, so I can check my email/the weather/Twitter during class. Oops, did I just say that? 😉

6. A hair waver can work as a straightener

I usually either straighten my hair or use my hair waver to enhance my natural waves. The other day I discovered that I can do both with the hair waver. Who knew? Now I don’t have to lug home both appliances on the weekend!

7. I’m so done with winter

It may look pretty, but I'm sick of it!

This winter has been pretty sucky here. At least compared to recent winters. January was actually alright and unseasonably warm for most of the month, but February hit and well, it’s been awful. For one thing, it’s been cloudy a lot, and that is really not normal for Colorado. I’m so used to sunshine year-round that it’s been kinda depressing. The cold and snow are another story altogether. February is usually in the 40s and sometimes 50s, but it’s been in the 30s and 20s most of the month, which is freaking freezing! I know some parts of the country have it worse, but I feel like we’ve just gotten the worst of the winter weather this year. I cannot wait until March and I’m hoping it comes in like a lamb, aka warm weather and sunshine! I miss my sandals, shorts and dresses!

What’s something you prefer homemade over store-bought? Are you looking forward to spring?

Saturday Seven: Oh, Fudge!

Let me just say that I loved all your responses to my WIAW post–you guys are the best, seriously, so thanks! I’ve been getting some…erm, weird, creepy and downright mean comments in my spam box but seeing all the supportive and nice comments from you all has really helped me brush off the anonymous negativity.

Anyway, I’m spending another weekend on campus, this one filled with tons of studying and homework, but at least I have a weekend at home to look forward to a week from now! I thought I’d do yet another Saturday Seven post because they’re just fun so here we go!

1. You can make fudge in a dorm room

I know I complain a lot about not having the best food living in a dorm, but honestly, I’ve been making do and it’s not that horrible. I actually eat pretty similarly here and at home, just minus the extra cooking appliances like an oven, stove and food processor. However, I think this is my first real recipe that I’ve ever created in my room–and it rocks! I made two variations and I really love both. So simple, so tasty…make it now!

Frozen PB Fudge (vegan)

1/3 cup unsweetened chocolate almond milk (I used Almond Breeze)

1 tbsp dark cocoa powder

1/2 tbsp peanut flour

sweetener, to taste (I used 2 packets of Truvia)

Stir all ingredients in a microwave-safe measuring cup or bowl. Microwave on high for 1 minute; take out and stir til mostly mixed. Microwave for another 3o seconds and then pour into an ice cube tray and freeze for a few hours (makes 1 small tray of fudge cubes or half a tray if you have a bigger tray)

I was surprised how delicious these little fudgy cubes are. They’re a bit icy, but I don’t mind that. They’ve got a rich chocolate flavor from the combo of the chocolate almond milk and dark cocoa powder. And they’re a lot healthier than traditional fudge–low cal (about 40 for the entire batch!) and sugar-free (if you use a natural no-calorie sweetener like stevia or Truvia).

1/4 scoop vanilla protein powder (I used Soytein)

1 tbsp peanut flour 

sweetener, to taste

This combo is also super yummy and has about 8 grams of protein in the entire batch–not too shabby for ‘fudge’!

2. Snow is really pretty…as long as you don’t have to be out in it

I’ve lived most of my life in Colorado, so it’s safe to say I’ve been through my fair share of real winters. Almost 17, to be exact. Okay, okay, maybe they’re not as brutal as Midwestern or even Northeastern winters, but they can still be pretty rough. I used to love snow as a kid, because it meant sledding, hot cocoa and snow days. Now, it means cussing under my breath while trekking to class. Even last winter, when we had sub-zero temps (which never happen here!) my college was basically the only school in the state that didn’t close. Yeah, didn’t appreciate that. Anyway, this Thursday and Friday was supposed to be the mother of all winter storms. As far as I know, it snowed a ton in Denver and at my house, but not so much in my college town. It probably snowed 5 inches, which isn’t horrible, and the sidewalks were just a little slushy. But still, I hate having to be out in snow! Can it just be summer already?

3. I really love quick cardio circuits

I am not the kind of girl who likes to hit the gym for a workout–I prefer fitting exercise into my day, like walking to classes (I walk for 30-60 minutes 5 days a week!), outdoor sports like tennis and biking or my personal favorite, shopping! What, it totally counts as cardio 😉 Because it’s winter, doing stuff outside is usually not an option, so I turn to cardio circuits I can do in my room. I love that they’re quick but they do give you a really good workout. I’m definitely sweating and my heart’s pumping after 15 minutes of these circuits. I typically do two different ones per day, as well as some yoga and walking to class. The one above is a new personal favorite, and I also love this free workouts app I have on my iPod that gives me a good full-body workout.

4. I’m obsessed with ordering food online

I ordered a Hugh Jass thing of peanut flour as soon as I got back from winter break (hey, I was running out!) and earlier this week I ordered some Natural Nacho Brad’s Raw Kale Chips. I’m really nervous that my order isn’t going through, since I got the confirmation email and it said that there’s a lot of demand for the chips at the moment…and then the other day, the charge was canceled on my credit card. I’m holding off on reordering for a few days so I don’t spend money that I don’t need to in case the shipping is just delayed. I can’t wait to get my hands on the kale though–I’ve heard good things about it!

5. I have 4 tests coming up in the next 2 weeks

So. True.

They’re not even midterms–I’ve only ever had two midterms in my year and a half in college, so I don’t know the awfulness that is midterm week. I’ve got a weather & climate test on Tuesday, a broadcast writing test on Valentine’s Day, an American environmental history essay exam on that Thursday, and a national parks history test the next day. Yikes, I hate having three tests in a week! It makes me think it’s finals week, which sadly it isn’t. Luckily, this semester I only have ONE final exam, so I guess it’s not too bad having so many tests back-to-back.

6. I don’t get Recipage

I just don't understand how it works!

I’ve seen a lot of bloggers using Recipage, and I think it looks really professional, so I set up an account and followed all the directions, but it didn’t create a Recipage on my blog! WTH? I don’t get what I did wrong, so for now, I’m still storing my recipes in a somewhat disorganized way on my Eats & More page. I really want to set up a Recipage at some point, so does anyone have any advice for me on how to make it work?

7. Naps are my new BFF

I don’t know what’s been up with me but lately, an afternoon nap has sounded so good to me. It’s not like I’m not sleeping enough at night–I get about 8 to 9 hours per night (I’m one of those people who needs that much to function) but I think it’s because my Tuesdays and Thursdays are crazy-busy. I have classes straight from 9:30-2 and by the time I get back, I just want to take an hour-long power nap. I’ve napped 3 times in the past week, and that’s just something I never do. But I don’t think it’s a bad thing right now since I’m getting used to having a crazier schedule, plus I feel so refreshed when I wake up.

Do you take naps? What do you think about snow?

Rawsome Sauce

Hi guys, how have you been? I can’t believe it’s almost the weekend again–my winter break has practically flown by! Luckily, I still have about a week and half left of it before it’s back to school time again.

It’s only been a couple of days and I’ve already accomplished some of my goals! I was honestly not anticipating that at all but it feels awesome to have already made some progress.

First of all…I got a Twitter! I really liked what you all had to say about it, so I decided to get one of my own. You can follow me @fashion_ash, and I will definitely follow you back!

This wasn’t one of my goals, but I also got a brand new phone. It’s my first real smart phone and I’m already in love with it! The only thing I don’t like is how quickly the battery dies, but I guess that’s pretty normal. Oh, and it’s a Droid phone, so any of you out there with Droids–do you have any suggestions for apps I should get?

Speaking of my phone, if you look in the screen shot above, you’ll see that the temperature was 62 degrees today. Say what? Yes, Colorado is being crazy with the warm weather. It actually got to 65 today at my house, and we live in a forested area that’s pretty shaded, so that’s saying a lot! I’m not complaining though, because I’m sure more snow is right around the corner.

At lunch today, I came up with something new–mango softserve! Only it was more like mango Dip-n-Dots 😀 Mango isn’t as great for blending as bananas are but I didn’t break the food processor so that’s a plus.

Simple, quick lunch of mango softserve, plain Greek yogurt and peanut flour sauce.

The other goal I accomplished was making yet another raw recipe! It’s officially my fifth raw recipe, and one of the best so far–the raw brownies do hold a special place in my heart though 😛 I based them basically off my raw blondies, except using plain almonds, no protein powder and no added sweeteners, plus the necessary ‘carrot cake’ ingredients. They turned out really delicious, and I think I’m gonna enjoy my first one tonight with a frosting of peanut flour sauce. So it won’t be totally raw, but still yummy!

Mini Raw Carrot Cakes (vegan, raw)

1/2 cup raw almonds

1/2 cup dates (I used about 8 California pitted)

3/4 cup grated carrots

1/2 t cinnamon

pinch sea salt

3 T raisins

Process dates and almonds until mostly combined. Add a little water to thin things out if necessary (about 2 T). Grate carrots and squeeze out any excess moisture. Add carrots, cinnamon and salt to food processor and pulse until it forms a smooth dough. Add in raisins until combined. Pack carrot cakes into muffin liners (makes 5 small, or 3 larger cakes) and keep in fridge. Frost with raw cashew ‘cream cheese’, peanut flour sauce, nut butter or enjoy plain. 

I also have another recipe for you guys…not raw, but still completely delicious. I decided to create a homemade version of cookie butter! I know a lot of you with TJs close by rave about this stuff. I don’t have one near me sadly, plus I know it’s definitely not the healthiest thing, so I set out to create a much healthier, simpler version. And I think I rocked it! I’ve never had cookie butter or Biscoff or whatever, so I can’t tell you how it compares, but let’s just say mine tastes like cookie dough in nut butter form!

I think I may have found a new favorite spread...

Healthier Homemade Cookie Butter (vegan, no cook)

3 T nut butter (I would suggest using a raw, lightly-flavored kind like cashew or walnut, so it doesn’t overpower the cookie flavor)

1 serving cookies of choice (I used 30 Annie’s bunny friends bunny grahams)

water, to thin (about 2 T)

sweetener, to taste (I used 1 packet stevia)

Mix nut butter and cookies together until it forms a crumbly paste, adding in water and sweetener as needed. Makes about 1/4 cup. Store in a jar in the fridge and enjoy as an oats topper, toast spread or fruit dip.

I’m already thinking of more variations, like using peanut flour in place of the nut butter for a peanut-buttery cookie butter!

It’s the Most Wonderful Time of the Year

Apparently I’m on a roll with these cheesy Christmas song titles 😉 What can I say, I’m in love with Christmas music and I’m so sad that most radio stations (besides Sirius XM) have stopped playing the stuff.

Anyways, I hope you all had a lovely Christmas (if you celebrate it) and a wonderful weekend. It was really nice just getting a couple of days to relax, have fun and not feeling the need to be ‘plugged in’. I love getting a break from technology every once in awhile, and Christmas is the perfect opportunity to do just that. But now I think it’s about time for a recap of the past few days, so here we go!

Friday

My mom and I headed out for last-minute gift shopping. Because we got a lot of snow on Thursday, we weren’t able to get out and get presents earlier, so unfortunately we had to face the crowds. But I was able to get some of my favorite things at Whole Foods, a game for my dad at Barnes and Noble and a cute necklace for my sister at American Eagle. I also bought myself my first-ever pair of jeggings at AE and surprisingly, I love them. I have a lot of issues with my body image, my legs and arms in particular, so I usually stick with looser fitting, boy fit type jeans. But I really needed some jeans that can fit in my new boots without looking baggy, so the jeggings fit the bill perfectly. They’re actually a lot more comfortable than I thought they would be, and not too tight at all. I think I might start actually buying jeggings and skinny jeans on a more regular basis, which is a total body image win!

Saturday

Christmas Eve! I love this day so much, maybe even more so than Christmas Day, because of the anticipation. The morning and early afternoon were pretty chill, and then we all got ready to go to church. I got to debut my new booties which was awesome! I also really loved the Christmas Eve church service. The end part is definitely the best, because the lights are turned off and everyone lights their candles and sings Silent Night. It’s just so beautiful and reminds me what the real reason for the season is. Afterwards, we drove around and checked out a few light displays and then went home to start on dinner. Now, I’m not gonna lie, I was feeling pretty uncomfortable around this time because dinner was going to be at least an hour later than I feel comfortable with. I hate eating so late because I’m afraid of weight gain, which is so stupid. Our bodies don’t know what time we’re eating, but it’s just a fear I cling to. But once I dug into the dinner I made, I didn’t feel so guilty. I made some vegan butternut squash ravioli, with peanut flour sauce and roasted asparagus spears on the side. It was an amazing Christmas Eve dinner, and I loved enjoying it with my family surrounded by candlelight. After dinner, we watched some of A Christmas Story on TV (best Christmas movie EVER!) and then went to bed…but not before my dad read me a few Christmas stories. It’s one of our traditions, and I always love hearing these classic stories year after year.

Sunday

The big day, of course! I woke up bright and early around 8 ‘o clock and made myself a delicious breakfast of peanutty raspberry chocolate oats and then my sister and I opened our stockings. We always open those in our pajamas, and then get ready for the day and then open presents together as a family. We always go around and open one at a time, so everybody can see what everyone else got and so the present-opening doesn’t go by way too quickly. I got a lot of amazing gifts, which I’m incredibly thankful for. A few highlights include metallic faux-snakeskin Bearpaw boots, a vegan dessert cookbook, a faux leather jacket, some gift cards to my favorite stores and dark chocolate covered espresso beans–a definite fear food of mine, but so so good that I’m not gonna let them go to waste, I’m just going to have a couple a day and enjoy them without any guilt 😀

After the present-opening, we continued to watch the 24 hour A Christmas Story marathon while munching on snacks. But the best part of the day was getting to go sledding in our yard! We got probably about half a foot of snow, so the sledding was great. We live on a 5 acre property with tons of pine trees and some hills in the back part of the property, so it’s always fun to get a chance to go sledding. It was our first white Christmas in awhile, and probably one of the only times we got to sled on Christmas Day. My sister, who usually hates sledding, actually went with my dad and I and we had the best time! It was a great workout climbing back up the hill in all that snow, of course, but I was just thinking about how fun it was. I absolutely hate feeling like I’m forcing exercise (which I still unfortunately tend to do) so working out in a fun way is definitely preferred. Sledding definitely did not feel like a workout, but it was nice to be active and get fresh air while still having fun and being with my family.

Dinner was an awesome pasta dish that my mom made up. It’s so simple but just really tasty. It’s basically just bell peppers and pasta sauteed with this chili lime seasoning from Williams Sonoma and then she adds in some kind of protein. My version was with whole wheat pasta and shrimp and it was sooooo amazing! I hate traditional Christmas-type dinners (because I’m mostly vegetarian/vegan besides the occasional seafood and because it’s so boring) so this was a really nice change. After dinner, we played two new board games that we got (my family loves board games!) while watching It’s a Wonderful Life. Best way to end Christmas, in my opinion. Oh, but I can’t forget about dessert, of course! I enjoyed one of the raw pecan tartlets that I made–they were soooooo good! I’m not gonna lie that I didn’t feel guilty about eating it, because they’re fairly small but “high” in calories (not really, maybe around 120 per tartlet) but because they have such simple ingredients (basically just dates and nuts!) I didn’t feel too bad and they turned out delicious.

Raw Mini Pecan Pies (vegan, raw)

15 Medjool dates

2/3 cup raw nuts (I used a mix of almonds and pecans)

1 T raw nut butter (I used walnut)

sprinkle sea salt or kosher salt

Soak 12 of the dates for at least four hours and cover. Drain dates and add to food processor with nut butter and salt. Pulse until smooth, adding in soaking water if necessary to thin out. Set aside. Pulse nuts and remaining 3 dates until a fine crumb is form. Pack nut mixture into muffin liners (makes about 5) and freeze for an hour. Remove and pour in date mixture and freeze again for at least another hour. Top with chopped or whole pecans and serve straight from the freezer. 

Cute little desserts are the best!

I watched Holiday Inn with my dad in the morning (a really cool Christmas/holidayish movie from the 1940s with Bing Crosby and Fred Astaire), enjoyed a delicious sweet potato topped with peanut flour for lunch and then ran a few errands with my dad and sister. It was kinda crazy out there to be honest, since apparently a lot of people like to return stuff and go shopping the day after Christmas, but we made it out alive 😉 Then for the best part, we went to Starbucks! I had to get my skinny soy peppermint mocha fix, of course! It was nice enough that we were able to sit outside, and I also bought myself a cute holiday cold cup for $5! Before Christmas, it was twice that much so maybe the post-Christmas bargains aren’t so bad after all!

Well, today we’re planning on going up into the mountains for more sledding and I can’t wait! I’ll be back later in the week for more updates!

Saturday Seven: Home Sweet Home

Well, by the title of my post I’m pretty sure you can guess that I’m home 😀 I have been since about 9 on Thursday night and I’ve had so much fun so far! I’ll explain this in my Saturday Seven, so let’s do it to it (sorry I’m such a dork 😉 )

1. I can’t wait to wear these booties!

I am ob-sessed with these!

Ever since I bought my brown tall boots I’ve been totally head-over-heels (haha, get it?) in love with boots of all kinds. And I’ve had my heart set on these Aldo Pirnie booties in particular since earlier this fall. When my grandpa sent me an Amazon gift card for an early Christmas present, and I saw they had these boots for $28, I snapped them up. They came on Tuesday, and they were probably the reason I was most excited to come home (just kidding!) I finally got to try them on on Thursday night and they fit perfectly and look super adorable. The only problem is, my dad said I can’t wear them til after Christmas, since they are technically a Christmas present. Boooooo 😦 Dads just don’t understand that we girls want to show off our new clothes 😛

2. I’m on a salad kick, and loving it

It basically looked like this, except for with a different salsa and there was lettuce of course!

Monday night when my mom dropped me off after my weather anchor audition (I spent a long weekend at home), we hit up my favorite salad place, Mad Greens, and I got the Don Quixote, which is one of my fave salads there. It had lettuce (duh), mango chunks (yes please!), fresh avocado, corn and black beans. Not a fan of corn at all, but the salad was still good. On Thursday night my mom and I grabbed dinner at Qdoba on our way outta town, and I got the naked vegetarian taco salad. The naked part just means it is in a bowl instead of a taco shell. I was starving, so I went to town on that baby! It was basically lettuce, black beans, corn salsa, habanero salsa (which was soooo hot, but soooo good!) and their fat free picante ranch dressing. That dressing is so delicious, but definitely not overpowering, and it made for a delicious dinner. Then yesterday, my sister and I had a nice lunch at Panera, where I got the Thai Chopped salad, minus the chicken and wontons. The peanut sauce, edamame and cashew clusters really make the salad and again, I devoured it. No shame! I’ve been craving salads like crazy, since at school I mostly just eat in my dorm and don’t have space for lettuce. You best believe I am stocking up on salad greens ASAP to make my own salad creations at home!

3. Need someone to unpack your stuff? Just call me!

Friday morning, I went to town unpacking the two giant suitcases I brought back half my life in. I think it took me like 20 minutes at the most, and it’s all unpacked. I think you just gotta get in the groove, and it doesn’t feel like work. If you put it off, it’ll just suck when you finally get around to it. Plus, I’m somewhat of a neat freak, and can’t stand having too many things out on the floor. Drives me nuts.

4. Colorado doesn’t get white Christmases

SNOW...oh wait, just kidding, that's basically just frost!

That picture above was taken last year on Christmas Eve…does it looks like snow to you? Ummmm, no. Seriously, we have a much better chance of it snowing on Easter than on Christmas here. And Halloween, too. Bizarre weather much? Apparently in the last 100 years, only 13% of the time has Colorado had a white Christmas, where it either snowed on Christmas day, or there was snow on the ground on the day. How sad is that? I’m hoping it snows this year, or at least the snow that’s still on the ground sticks around for another week…

Don’t ask about the weird  image that’s with the song. But anyways, my mom told me that she heard this song for the first time the other day (it’s called “This Year’s Santa Baby”) and since then, I’ve heard it twice. It has the same melody, but new and kinda funny lyrics. But apparently, it was never a hit, which is probably why it’s rarely played. But if you have Sirius XM radio, definitely check out the Holiday Traditions station because they’ve been playing it a lot!

6. I could totally live in a bottle of Bath & Body Works’ Vanilla Bean Noel lotion

Uh, yeah, don’t mind me over here smelling my lotion bottle like a crazy person. I can’t help it, BBW has the best lotion scents. This one is truly amazing. Don’t tell anyone, but I kinda want to eat it…

7. I really want lace shorts for Christmas

I’m kinda obsessed with the shorts and tights (with boots!) trend for winter, and what better way to dress up the combo than with lacy shorts? I think they’re completely cute and I’m really hoping I get them. I like these grey ones, since white seems too summery and I already have a pair of navy shorts.

WIAW: With a Side of Survey

Hiya guys! I can’t tell you how glad I am that I’m not the only one who seems to be stressed out around this time of year! For any of you currently in the same boat as me (finals, packing, etc.)–hang in there! We will make it through, and today is one day closer to freedom break.

I decided to interrupt my studying (ummmm who am I kidding, I haven’t started yet!) and bring you this week’s edition of WIAW, aka the best part-ay ever! I mean who wouldn’t want to party it up in the midst of finals and projects? I know I do so let’s get to it! This week’s version includes a fun little survey brought to you by Tessa at Amazing Asset.

1. Four TV Shows I Watch

  • The Office—OMG, so funny! I started watching this show religiously a couple of seasons ago and haven’t stopped since. It isn’t quite the same with Steve Carell (aka Michael Scott) around, but it’s still hilarious
  • What Not to Wear—probably my favorite show. Stacy and Clinton aren’t afraid to tell people that their style is horrendous, and I love seeing the before & after, and their shopping trips.
  • Saturday Night Live—okay, maybe this is my favorite show? This show makes me crack up every time, and I love watching it with my family. Looking forward to some hilarious fam time over winter break catching up on SNL. Seriously, we are so obsessed that we constantly quote the sketches.
  • The news—haha I watch the local news on a pretty much daily basis, whether I’m at home or at school. What can I say, I’m a broadcast journalism major and I pretty much have anchors who are my idols on the local news!

Breakfast of champions: (last) Clif Kids full moon brownie bar, spicy veggie sausage, gummy dinosaur vitamins, frozen pineapple/banana chunks.

2. Four Things I’m Passionate About

  • Healthy living. One positive thing that’s stemmed from my eating disorder is my passion for eating healthy. I am now vegetarian/semi-vegan and it just feels right for me. I also like to stay active in fun ways like playing tennis with my dad and sister, going for a long bike ride or a major shopping trip  😉
  • My faith. I don’t mention it a lot on here, but I have a growing relationship with Jesus Christ, and it really fuels everything I do. I’ve been  Christian my whole life but my faith has grown even more as I’ve struggled with things during the past few years.
  • Fashion. I really need to do another  Style Phile post on here soon, because I’m missing having a fashion outlet through blogging. I am not the kind of girl who goes to class in sweats or jeans and a t-shirt. That being said, I do think comfort and style can go together and that’s how I strive to dress.
  • Staying true to myself. Sometimes, yeah, I do feel out of place for not going out and partying every weekend (or ever…) but I remind myself that that’s just not who I am and I know personally that that’s not what I consider fun. I prefer hanging out with people on a closer basis and just doing low-key things and that’s perfectly okay.

Seems like a bizarre lunch, but I promise you it was delicious! 1/2 cup organic kettle corn (my new addiction), tablespoon peanut flour sauce, plain Greek yogurt mixed with cinnamon and Truvia.

3. Four Words/Phrases I Use A Lot

  • Like, especially when I’m nervous!
  • Definitely. It’s pretty much my go-to phrase.
  • Haha. That one is definitely overused in my text messaging!
  • That sucks! So creative, I know!

4. Four Things I’ve Learned in the Past

  • Don’t take things too personally. Honestly, I am still so bad at this. I get emotional really easily and I read too much into people’s words and reactions. But really, most of the time, people don’t care that much about me, so I should just move on.
  • Comparisons suck. I am so done with comparing myself to others, it’s just completely pointless and has it ever made anyone feel better about themselves?
  • Making excuses all the time can really bite you in the butt. I make excuses a lot and while they sometimes work to my advantage, sometimes I just need to suck it up and do the work.
  • I am so glad I’m not majoring in a math-related field. Pretty self-explanatory, but I am so over math and science. I definitely wasn’t expecting to have to take some classes in it in college…

And this is why I've stopped taking pictures of my dinner! The sun sets basically at like 5 pm, so lighting at a quarter to 7 is awfulness. But it honestly was good--volume oats topped with peanut flour sauce (I'm on a roll with this, obvs) and organic raspberry jam, with a side of cinnamon-spiked butternut squash.

5. Four Places I’d Like to Go

  • Somewhere in the Caribbean. I love that whole tropical atmosphere, plus the water there is gorgeous!
  • Mall of America. Shopaholic over hurrrrr! Haha but seriously, this mall has everything (or so I’ve heard). I just need a ton of cash to spend first!
  • Australia. I’d actually love to go there this time of year (when it’s summer there) and spend Christmas on the beach or something. It would probably blow my mind.
  • A vegan/raw restaurant. They have these in a few places across the U.S. but they just sound so yummy whenever someone posts about going there. The food seems so creative and I’d love to try a raw recreation of some of my fave foods.

6. Four Things I Did Yesterday (I’m writing this on Tuesday, so it’s what I did Monday)

  • Gave a presentation in my PR class. My group did pretty well I think, but I just can’t wait to be done with the project altogether. Just some issues I’m having with the group…
  • Did NOT slip on random ice patches in my new heeled boots. We had to dress professional for the presentation (I was basically the only one who really did) so I decided to wear my boots with tights and a dress. Luckily, I didn’t slip on the stupid random patches of ice all around campus.
  • Took an hour-long nap around 5:30. I try not to nap so late in the day, so it doesn’t wreck my sleep schedule, but I was honestly so exhausted yesterday that it felt good to just rest. I didn’t really sleep much, but it was still a nice break.
  • Continued to count down to Christmas break. Yeah, it’s down to only 8 days total, as of Wednesday!

7. Four Things I Love About Winter

  • Starbucks holiday drinks and red cups. You could say I’m obsessed.
  • The holidays. Christmas and New Year’s, it doesn’t get any better than that!
  • Wearing tights and boots together. It’s one of my favorite outfit combos—sometimes I wear (different) tights and boots every day of the week!
  • How pretty snow is when it’s falling. Once it’s on the ground and frozen over so you slip every few seconds, not so much…
