WIAW: I’m Baaaaack!

When I posted a few weeks back that I was done with WIAWs for awhile, I wasn’t sure how long of a break I’d be taking. Well, it’s only been 2 Wednesdays since then and I’ve caved…but only because I have a lot of food I wanted to share with you guys! I probably won’t be doing WIAW on a weekly basis, as I’m still trying to overcome my orthorexia and I’ve been making strides in eating intuitively, at least amount-wise and not counting calories, but the urges to ‘eat clean’ are still strong and I feel more pressure to eat as cleanly as possible for WIAW posts. So I’m thinking it’s best for me to not do them as often.

Anyways, this week’s WIAW is basically just a bunch of random meals I’ve been eating lately, mostly over this past weekend. I’m sensing a few trends in my recent eats: my salad-a-day goal is still going strong, I love homemade waffles for weekend breakfasts and a few old favorites have made their way back into the rotation. Oh, and an obsession with Instagram and seasonal PicMonkey effects #noshame.

Sorry this is super cheesy, but I had to put a heart around one of my fave meals ever–the WF hot/cold bar! I know I’ve said that the WF up here at school blows, at least as far as their salad bar selection goes. Well, it’s more like hit-or-miss. This box, consumed last Friday, was a hit–tofu ratatouille (a little too salty, but decent), Asian cous-cous, kale topped with maple pecans, grilled asparagus, edamame and my favorite, the in-store made vegan tortilla chips. I also added some homemade guac and it was a delicious box that was totally worth the $7 or whatever it cost. I like never go out to eat, so I think a couple of WF hot/cold bar runs a month is justified 😉

This was one of the few successful chia puddings I’ve made–most of them turn out to be runny, no matter how long I let them set. I think this one worked because Sunwarrior is incredibly drying, as in it soaks up liquid easily. Anyways, I love the vanilla+blueberry+coconut combo, so this will be a repeat breakfast/snack.

My salad-a-days have mostly been eaten at lunch, but on my busiest day (Wednesday) I have to eat while typing up a weather forecast in the newsroom–aka, I want something I can eat with one hand, and pack easily into my bag and not have to lug around all day. Salads are semi-portable, but they can get messy, so I usually eat a Larabar with some carrots, and then have my salad-a-day for dinner. Oh, and the salad-a-day goal was just something I decided I’d try out at the beginning of the year, and I think it’s been going strong for a month now. It’s been fun experimenting with different add-ins, greens and dressings but I have a few favorites I like to come back to often.

Yep, snack plates are back in my life and better than ever. I love having balanced meals (complex carbs/fruit/veggies, protein and healthy fat) so these cover all the bases, and taste delicious. Plus it gives my indecisive tastebuds a lot of different flavors at once…but I’m weird and only eat one part at a time!

It’s official–waffles have become my weekend breakfast. I might still have them as an occasional breakfast during the week, but I’m sticking with quicker meals to maximize the time I can spend in bed before getting up 😉 Kidding, it’s really so I have more time to get ready and work out without feeling rushed. But I won’t give up my waffles. I’ve found the best flour combo is an equal ratio of buckwheat to almond, with a little tapioca starch thrown in there to keep them together. They always turn out thick and fluffy!

These are basically like my salads, only with less greens. I haven’t had nachos for dinner in awhile, because of my silly fear of grains, but I can’t deny that I love me some Late July multigrain sweet potato chips and honestly, they’re pretty healthy: gluten-free, made with simple ingredients like chia seeds and quinoa and nothing weird in them, and baked. So nachos will be back in the rotation, at least on the nights where I don’t feel like making dinner but have all the ingredients ready to go. I also really want to experiment with Asian and Greek inspired nachos…so stay tuned!

I’ve been trying to perfect the cinnamon roll for awhile. For me, it has to be vegan (duh), healthy, gluten free if possible and foolproof. I don’t do well with making my own rolls from scratch, sadly. I’ve made some tasty almond flour based cinnamon ‘rolls’ that, while delicious and simple, were super crumbly and not much like cinnamon rolls at all. Not that that’s bad, but I was still unsatisfied. Until I discovered the perfect gluten free AND vegan frozen pizza dough ball at Whole Foods. Yeah, it’s really rare to find a whole grain based pizza dough that’s GF and vegan so I was thrilled. I’ve made some great cinnamon rolls before using premade pizza dough so I knew this had to work. And luckily for me, it did! I thawed the dough, rolled it out, filled it with just cinnamon, raw honey and chopped dates, rolled it up and cut it into 8 mini rolls and baked it. They turned out a little too chewy, but delicious and pretty darn close to perfect. Finally!

And to end on a veggie-filled note (to go with this month’s WIAW theme, of course), yet another salad creation. At this point, I don’t necessarily make my salads based on a theme, like Mexican or Asian or whatever, but I kinda just throw things in a bowl, shake it up and see what works. I generally love a combo of sweet and salty, so I like a lot of olives, dried fruit and something spicy in there.

WIAW: What I (Want to) Eat on Thanksgiving

Can you believe we’re just over a week away from T-day? Me neither! Does it surprise you that I really like Thanksgiving–even as a vegan? For me, it’s not really about the food (the desserts, though…) but the fact that I get a week-long break away from school, just when I need one. I am really stressin’ right now but luckily this year, I get an extra day off because my class on Friday was cancelled. Definitely thankful for that!

Even though I’m not a fan of the traditional Thanksgiving fare, I still have some things I would like to make and eat on the big day. Some of the flavors that scream ‘Thanksgiving’ for me include maple, pumpkin, cranberry and pecan so hopefully I can include all of those in this year’s meal.

Can you believe these are vegan, gluten-free and grain free? Me either, but I really want to give them a whirl to see if they turn out as delicious as they look. I actually really love trying out recipes that are vegan and grain free, which is kinda hard to find since most grain free recipes include eggs, but this one thankfully doesn’t!

You all know how much I love kale (it’s my favorite veggie, other than sweet potatoes) so combining it in a salad with fresh cranberries and miso paste sounds perfect for Thanksgiving.

Caramel apples seem so complicated and way too sugary…but not this one! The recipe seems so easy to follow, and the caramel sauce itself is made with coconut sugar (lower glycemic!) and coconut milk so it’s much healthier.

WIAW: Weekend Fashion & Monday Food

I’m baaaaack after a semi-relaxing weekend and a busy start to the week. You know how it goes. But I’ve got a major countdown going on until Thanksgiving break…only 23 days until no school for a week and a couple days! Yeah, that’s 23 days totalincluding weekends. Where has the semester gone? There’s only 5 1/2 weeks left, not counting finals week. Not that I’m complaining though. I’m in desperate need of a break!

Spooky Snacks and Healthy Halloween Treats

This week’s edition of everyone’s favorite party features what I ate on Monday, along with a few extra pics from the weekend. I’ve been taking more fashion photos lately so enjoy those!

Can I pull off the hippie look?

Sometimes I think I could almost be a hippie. Vegan? Check. Liberal leaning? Yup. Long hair? Of course. Love of boho fashion? Sure. I don’t do the whole drug thing or ‘natural’ hygiene habits (I like my showers and trips to the salon, thankyouverymuch) but I think I could fit in with the hippie crowd just fine. Plus I have a newfound love for their headbands. I just think they add a cute touch to almost any outfit. But are sparkles considered hippie?

Or maybe I’m more of a hipster, writing a paper in Starbucks…

I spent a few hours on Sunday at my favorite FoCo Starbucks. Not because I love coffee so much (though I do) but because I had a paper to write and I thought I’d be less distracted at ‘bucks. Well, turns out that a change of scenery did me good. I was able to finish the paper, enjoy a tall Americano with sugar-free hazelnut and do some people watching while jamming out to Pandora. It was a great, productive afternoon.

I finally invested in some garbanzo flour (it was only $2.50 at Sprouts…score!) so I could try out the blogger fave, socca. And I’ve gotta say, it makes a great gluten-free grain-free sub for pizza crust. However, I’m warning you–don’t taste test the socca batter before you cook it. The flavor reminded me of when I used to get bloody noses, it was so metallic-y. But once cooked (I did the skillet method) it tastes great. Especially if you mix it with plenty of spices.

I’ve been wearing flip-flops, tees and shorts on a regular basis…and yes, it is October. I know some of you may have already gotten snow, but this is why I love Colorado. Our weather is so unpredictable this time of year, but it can definitely be summer-like into October. Sadly this streak is coming to an end soon–snow is in the forecast for tomorrow into the weekend 😦

Breakfast

Like I said, it’s been warm enough here even in the mornings to not want warm breakfasts quite yet. I still have to do smoothies and protein puddings so I don’t overheat. But I still want my meals to be fall-inspired, so Monday’s breakfast fulfilled both requirements. Pomegranate tastes awesome with pumpkin and pecans and maple. It’s like all the flavors of fall in one bowl.

Lunch

I haven’t been doing snackplates as much lately but I have been doing them for lunches! One of my go-tos is a coconut flour microwave muffin. It’s so simple to make, just add some coconut flour (1 or 2 tbsp), baking powder, salt/stevia and almond milk to a microwave safe bowl and let it cook for a minute or so. It turns out really crumbly, but totally voluminous and cake like. It’s crazy that a grain free flour turns out like a tasty muffin, but it just does. And I love it!

I realize the seeds are called arils, but I don’t like that word. Seeds sounds better. I can’t believe how obsessed I am with these little guys. They were so worth almost staining my skin and every surface of my kitchen 😉

I don’t wear my glasses often in public (I usually wear contacts) but some days they’re just necessary. Like when one of your contacts is seriously bothering your eye and you realize that it’s illegal for you to drive without contacts or glasses. I can’t believe how bad my vision has gotten since I first got contacts/glasses 4 years ago. I hope I can eventually get laser surgery, but it’s kinda scary too…

Afternoon Snack

Yes, I like weirdly green food. Mint chocolate buckwheat waffle made with kale, topped with mint kale infused protein frosting.

I love love love homemade waffles, in case you couldn’t already tell. My waffle maker is my most-loved kitchen appliance for sure, it gets used almost every day whether for breakfast or a snack. I prefer making my own because ones from the store don’t taste that great, they aren’t as healthy and with homemade ones I can add in only the ingredients that I want and make them whatever crazy flavors I’d like! Plus they’re almost as convenient as store bought, so why not?

Dinner

Sepia-ified nachos. Sweet potato multigrain chips topped with 1/4 vegan Mexican chipotle seitan sausage, coconut oil-sauteed plantain slices, guacamole, crispy kale and nooch.

I love healthy nachos for a quick and easy dinner. The best part is, they’re totally customizable. Monday night’s version included delicious plantain slices, my favorite vegan sausage (it’s so spicyyyy and I love that it’s made with simple ingredients), pan-crisped kale and fresh guac. My nacho base is always Late July multigrain chips, which are great because they’re healthier than the typical chips, gluten free and packed with chia and flax seeds. So nachos can definitely be considered a ‘health food’…well, if you use the right ingredients 😛

Nighttime Snack

My latest favorite nighttime snack: chocolate peanut butter protein microwave cake, made with raw chocolate protein powder, peanut flour, almond milk, baking soda and topped with almond butter and vegan mousse.

I have a strange addiction to microwave protein cakes lately. They’re just so foolproof and you can make them almost any flavor. And they just call for toppings, dontcha think?! I recommend coconut milk ice cream, coconut whipped cream or almond butter!

WIAW: Loving Lately

Happy WIAW! I swear, this year’s gonna be over before I know it. I can’t believe I’m already almost done with midterms, am about to sign up for classes for next semester and Christmas is almost 2 months away. I’m one of those crazy people who can’t wait for it to be the holiday season so I’m already counting down to Thanksgiving. But can you blame me, I need a break!

Spooky Snacks and Healthy Halloween Treats

Unlike my most recent WIAWs, this one isn’t documenting what I ate on a certain day. I used to like doing that but then I always ended up posting similar items each week. I don’t feel like I eat the same things all the time, but I almost always end up taking pictures of the same things. So this week is all about what I’ve been loving on lately.

Apple nachos. Half a sliced Jazz apple. Peanut flour drizzle. Mini chocolate chips. Raisins. Maple almonds.

Not much to say about these, except you’ve gotta try them. They take apples to a whole new level!

One minute coconut flour carrot cake. Coconut flour. Chopped carrots. Cinnamon. Chopped dates. Ground flax. Almond milk. Peanut flour paste.

This was a microwave cake, but I’m working on a vegan, grain free coconut flour based carrot cake for the oven. Stay tuned!

Coffee roasted squash seeds. Ground coffee. Kabocha seeds. Maple syrup. Coconut oil.

These were even better than the original squash seeds. But then again, anything coffee-flavored is.

Dirty chai waffle. Buckwheat and almond flours. Cinnamon and nutmeg. Ground coffee. Raw cacao powder. Topped with raw pumpkin chocolate protein frosting, mini chocolate chips, fresh figs and maple syrup.

What’s dirty chai? Apparently it’s chai tea mixed with espresso, and this waffle was inspired by that delicious combo. The best part of any waffle is the toppings though!

This snackplate style lunch was perfect right before class. This week I roasted my first kabocha and I’ve gotta say that now I understand the addiction. The texture is a little weird but it’s so tasty!

I don’t really talk macros on here much, but I really love tracking mine. Usually my carbs are around 45%, protein at 20% and fat at 35%, it’s just what works for me. But there are a few days that I definitely love my protein and fats more. Who says you can’t get enough protein as a vegan?!

Spicy Italian-style kelp noodles. Sauteed kale. Half a chopped Field Roast Mexican chipotle vegan sausage. Nooch. Olives. Spicy harissa hummus. Kelp noodles. Basil pasta sauce.

Who knew I’d end up loving kelp noodles even more than my beloved quinoa pasta? It’s really just so cool how kelp noodles are pasta-like but are made from a sea veggie instead of grains. I love having them any way, but the Italian way is my fave. Bring on the olives and the nooch!

I wish this weren’t true, but the Whole Foods salad bar at my home WF is so much better than the one at the WF near school. I love the store near school, but the salad bar rarely has many tasty vegan options like the one at home has. As you can probably guess, this particular box was from a weekend trip home.

The Meal Survey

Happy Labor Day, for those of you who get the day off! Sorry I’ve been pretty MIA since midweek–school was crazy and then I came home for the long weekend. My family and I went to Breckenridge, CO on Saturday for their annual duck race. Sounds silly, but totally fun and a great excuse for a day trip to the mountains. I was really looking forward to it, especially because the weather here has been crazy hot for months and it’s always cooler up there. Well, we got a little more than we bargained for–it was sunny and hot in the morning, storm clouds rolled in and it rained like crazy, then it was cold and windy, then sunny again and finally cold and rainy. Totally bipolar day, but still fun!

Today I’ve just got a fun food-related survey that’s been all around the blog world lately. Enjoy!

Breakfast Questions

1. Favorite cereal as a child?

Tough question, since I was a huge cereal lover as a kid. That was basically my breakfast every morning. I remember really loving Post Blueberry Morning. It was a healthy-ish cereal but plenty sweet and full of berries and almonds!

2. Coffee or tea? With milk or without?

Coffee for sure! I love tea, but really only iced tea. Coffee is great iced and hot. When I get it iced, I go for just straight black coffee sweetened with some Truvia. But I prefer my hot coffee with a little soymilk or almond milk (Starbucks, can you get on the almond milk trend?) and one of their sugar-free syrups. I know artificial sweeteners aren’t the best, but I love their syrups and they’re an occasional indulgence.

3. The one food you eat most often at breakfast?

I go through major breakfast phases. A year ago, I was really into overnight oats. Then I liked hot oats. Then smoothies in a bowl. Then pancakes. Now it’s waffles, and I’m ob-sessed! I always make them with buckwheat flour (I want to experiment with coconut flour though), ground flax, almond milk and then go crazy with mix-ins or toppings. My favorites are dark chocolate chips, real maple syrup, sweet potato, berries and protein frosting.

Lunch Questions

1. Sandwiches are generally considered a “lunch food”. If you had to choose between a grilled cheese and a peanut butter and jelly, which would you pick?

Hands-down, PB&J! I obviously don’t eat real cheese anymore and I’m not a big fan of the vegan cheeses. I actually never was a big grilled cheese lover, even as a kid. However, I did used to eat just jelly sandwiches on wheat bread because I hated (still do) PB. I was a weird kid 😉 I absolutely love almond butter and jelly sandwiches though. I really want to try a macadamia butter and mango jam sandwich, it just sounds amazing!

2. You can only put four ingredients in your salad (not including greens); what do you throw in the mix? Additionally, which greens and dressing do you pick?

Ooooooh, hard question! I really love complex, random salads so it’s hard for me to pick just four. I guess I’ll go with edamame, peanut sauce, red peppers and chili-flavored cashews (like the Thai salad from Panera!) For greens, I usually go with kale or baby spinach. I hate hate HATE arugula though, so I’ll pick it out if it’s in a spring mix. I’m so high maintenance 😉

3. One food you can’t live without at lunch?

My lunches are always different, but one thing that stays the same is produce. I always have a fruit and veggie at lunch time and I try to mix it up. I love salads but it isn’t always practical to have one, so sometimes I’ll bring baby carrots or mini sweet peppers to campus and for fruit I try to go with something more portable if I can’t be at my apartment for lunch.

Dinner Questions

1. It’s the end of the day. You’re tired, hungry, and your fridge is empty. If a fast food (from a chain) is your only option, where do you go and what do you order?

I haven’t had legit fast food in years, and I have no desire to do so. Plus most of them aren’t very vegan-friendly. I prefer fast casual chains, like Chipotle, Panera, Noodles, etc. since they have plenty of healthy options. However, my real ‘go-to’ is Whole Foods. Their prepared foods section is amazing and you all know my love for their salad bar! I actually just got some again on Friday and I’m already wanting more #noshame

2. TV/computer on or off while you’re eating?

Always on, at least when I’m by myself, otherwise it feels too quiet and weird.

3. The one food you eat most often at dinner?

Sweet potatoes! I don’t know why, but I rarely have them at other meals (besides my sweet potato chocolate chips waffles). They’re my addiction for sure, especially topped with nut butter!

Dessert Questions

1. Choose between these two American desserts: cheesecake or apple pie?

Cheesecake, definitely. Never been an apple pie fan, but cheesecake was one of my faves before becoming vegan. Now I still enjoy it sometimes, when I make raw cheesecake from scratch or buy this amazing raw cheesecake brand from Whole Foods (super expensive, but worth it).

2. Choose between these two foreign desserts: tiramisu (Italy) or flan (Spain)?

Never had flan, but it does not look appetizing. Tiramisu, on the other hand, is amazing. I haven’t had it in forever, but I’m working on a raw, vegan version. Stay tuned!

3. Ice cream: cone or cup?

I prefer cups, unless it’s a special-flavored waffle cone like this one place in Estes Park makes. They seriously have flavors like bubblegum and marshmallow!

Friday Faves (July 6)

The festivities of the 4th are over so now it’s back to real life. Who am I kidding, summer isn’t real life, at least if you’re still a student! I still have about a month left at my internship but the majority of my weeks are spent doing whatever I want. I’m definitely appreciating that I can still do that–in a couple years, that won’t be an option!

Labels make everything more fun!

I’ve been noticing cute little labels popping up on a lot of people’s Instagram photos so I had to do a little sleuthing to figure out how they were doing this. Turns out, it’s a simple and free app called LabelBox. It’s available for iPhones/iPods and Androids and it’s so easy to use. Basically all my Instagram photos will be labeled now. #Sorryimnotsorry

I almost can’t remember the last time I didn’t have a waffle for breakfast! And don’t be fooled, these homemade waffles are 100 times healthier and tastier than those pathetic frozen Eggo waffles. I’ve been loving on the protein waffles mostly but when I just want a simple, fruit-packed waffle like the one above, I just use some oat flour, which gives it a perfectly fluffy texture while also packing it with fiber. And toppings are necessary, of course. I topped my 4th of July waffle with fresh raspberries and protein frosting made with Vega vanilla almondilla protein powder and water. Mmmmmmm!

Favorite New Find (that I haven’t found yet): So Delicious Greek-style almond milk yogurt

6 grams of protein and fiber ain’t too shabby for a nondairy yogurt!

The Amande almond milk yogurts are decent, but a little too jiggly and low in protein for my liking. When I popped on over to the So Delicious website and saw this gem, I knew I had to have it ASAP! The only thing I somewhat miss from my non-vegan days is Greek yogurt, and now I can get my fix in nondairy form, with more fiber and calcium than the dairy version! I just need to find it in stores first…

Favorite 4th of July Activity: Water balloon wars

I probably dropped more than I caught, but it was still fun!

What do you do on the 4th when it’s hotter than an oven outside and inside, the parade your family was planning on going to was cancelled and there are no fireworks shows within 100 miles? Have a water balloon war, of course! Filling up countless water balloons was worth the fun we had and it was actually great getting water in your face when you didn’t catch a balloon. Not that that happened to me though 😉

Survey Time Up in Here!

Who even likes tests or quizzes? Not me. Especially not around this time of year, aka dead week, aka the week before all hell breaks loose, aka finals time. Luckily this semester I only have one actual final, but I’m still dreading it. One thing I will never dread is taking surveys. They are so much more fun than real tests and you actually learn something about yourself and other people. Take that, weather and climate final exam!

I saw this survey on a couple blogs recently and I decided to do it while I still have brain cells left. Definitely fill it out if you get the chance because it’s fun–way more fun than a pop quiz. Oh, and I did change a few of the questions to be more veg-friendly 😉

Coke or Pepsi? Ummmm, neither?! Sorry, not a soda girl at all. Not even diet anymore (though Zevia’s an exception…), though I used to drink Diet Coke occasionally a few years ago. So I guess I’ll go with Coke, since I was never able to stomach Pepsi.

Lemonade or Fruit Punch? Lemonade, baby! It reminds me so much of summer. I haven’t had a legit lemonade in quite a few years, but I’d like to try making my own this summer with some stevia.

Caramel Apple or Cotton Candy? I actually don’t think I’ve ever had a caramel apple, so I think I’ll have to go with cotton candy. The colors always appealed to me when I was younger. Though I really do love my overnight oats version of caramel apples!

Dark Chocolate or Milk Chocolate? Dark all the way. I prefer the stuff that’s between 55-75%, since I do have a major sweet tooth, but I’ve preferred dark chocolate since I can remember–yes, I was that weird kid who liked the Hershey Special Dark bars at Halloween!

Tofu or Tempeh? No question…tempeh! Some people say it tastes bitter, but to me it’s just a little nutty. Tofu weirds me out, especially the taste. I can handle the texture if it’s extra firm, but I’ve never had really good-tasting tofu, aside from the stuff they have at the Whole Foods hot bar. Now that is some good tofu!

Soy or Almond Cheese? Both are pretty good, but I’m gonna go with almond, because it’s a little healthier than soy cheese. Plus I’ve found it in awesome flavors like jalapeno jack.

Crackers or Cookies? Hmmmm, this one is tough. I like crackers, but I haven’t had any in awhile since it’s been hard to find kinds without milk in them (crazy, I know). I like cookies too, but they have to be certain kinds, like the knock-off healthier Oreos that Whole Foods makes, or really soft homemade cookies. I think I’ll say cookies, to go with my sweet tooth!

Pretzels or Chips? Uh, can I say both? I used to not be such a huge fan of pretzels, but once I discovered that they make a really good topping for sweet and salty oats (not to mention delicious dipped in almond butter), I was hooked. The only chips I really eat are the sweet potato multigrain chips from Late July, but they are beyond amazing!

Mexican or Indian Food? This one’s hard. I like Mexican food a la Chipotle or Qdoba, which I know isn’t authentic Mexican, but whatever. I’m mostly in it for the pico de gallo and guacamole. I haven’t had Indian in awhile, but I’ve always loved its spiciness and curries are so good. I’m gonna say Indian.

Mediterranean or Chinese Food? No question–Mediterranean. How can you beat hummus, tabbouleh and falafel? You can’t.

Pie or Cake? Uh, pie…maybe? I actually prefer cold desserts, like sorbet and gelato, but pie is definitely better than cake for me. I hate frosting, so whenever I’d have cake at a party, I’d just eat the cake part. Which is boring. A good fruit-filled pie can be pretty delicious though.

Pasta or Pizza? Another hard one! I prefer pasta in cold pasta salads (especially quinoa pasta), and I like pizzas sans cheese, but with tons of random toppings, like artichoke hearts or olives or pineapple or hummus. Not all on one pizza though. I’ll say pizza, because I really want to experiment with making my own pizzas this summer.

Green or Red Grapes? Red, obvs. They’re usually sweeter, and they’re awesome frozen. Just do it.

Salad or Soup? Come on, really? I am a salad fiend fo sho! Soup isn’t really my thing, but I love devouring huge salads, especially from places like Panera, Qdoba and my favorite place, Mad Greens.

Pancakes or Waffles? Waffles. There’s just something about them that reminds me of being a kid, plus they’re just more fun than pancakes to me. And easier to make!

Raw or Cooked Veggies? I’m weird because I prefer a lot of veggies raw. Like the obvious ones (baby carrots, greens) but also broccoli, cauliflower and bell peppers. Try dipping raw cauli in salsa, it’s amazing!

Oatmeal or Cereal? Oats! I used to gag just thinking about oats, but that was before I discovered how great overnight oats are and the million flavor combos. So much better than those lame Quaker packets. The only cereal I really like is peanut butter Puffins, which I’m basically addicted to.

WIAW: Back at It+Obsessions

Well guys, I’m finally back at school and ready to start off second semester! I really enjoyed having a full month off to be at home with my family, and not gonna lie, it was hard coming back. Besides missing my family, I also miss the comforts of home, having a car and a kitchen to cook in. Spring break is only a month and a half away though, so I’m looking forward to that!

Peas and Crayons

This WIAW, I thought I’d show you some of the food I’ve been obsessed with lately while I was home, as well as a few other recent ‘obsessions’.

Breakfast: raspberry mocha protein waffle, frozen grapes, spicy veggie sausage

I really wanted waffles the other day, since I haven’t had one in a couple of months, but I wasn’t feeling a boxed mix. Instead, I whipped up my own raspberry mocha protein waffles, and they did not disappoint, especially with 6 grams of protein per waffle! I had one as my last breakfast at home 😦 along with a spicy veggie sausage and frozen grapes (another obsession).

Raspberry Mocha Protein Waffles (vegan, high protein)

1/2 cup oat flour (or ground rolled oats)

1 scoop Soytein cappuccino protein powder

handful frozen raspberries

1 tbsp vegan chocolate chips

sweetener, to taste (I used Truvia)

water, to thin

Process oats in a food processor or blender til mostly ground. Mix oats, protein powder and sweetener in a bowl until combined. Add water until desired consistency is reached; stir in chocolate chips and raspberries. Heat a waffle iron (or make into pancakes) and cook until browned (makes about 4 small waffles).

I just stocked up on new pens for the upcoming semester, and of course, I scored the most colorful kind! I’m obsessed with organizing my notes by color, so these will be well-used.

Lunch: summer rolls, edamame in the shell, fresh pineapple, "poor girl's" spicy mustard (yellow mustard mixed with Sriracha)

My parents and I went to Pei Wei on Friday for lunch. I got my usual, the Vietnamese summer rolls, but when I asked them to leave out the chicken, they said they couldn’t do that! Most places are usually pretty accommodating to vegetarians, so this was a shock, especially since Pei Wei has plenty of veg options. I still got the rolls and just picked out all the chicken, which wasn’t easy, but it was totally worth it for the delicious summer rolls (with a side of in the shell edamame). Next time, I’d get an actual vegetarian option, despite my fear of ordering noodle dishes in restaurants.

Snack: in the shell edamame, small Pink Lady apple, handful organic cinnamon crunch cereal, PF paste

Snack plates are my favorite, whether for snacks or even lunch (I’d love to do one for dinner, too). I’m so indecisive so I like my meals to have many components so I don’t get bored. This was a pretty random one, but it fulfilled my craving for something sweet (cereal), something green (edamame), something crunchy and fresh (apple) and something delicious and protein-packed (peanut flour).

Outfit of the day: cream cropped sweater (Hollister), navy ruffled tank (Hollister), multi floral skirt (Hollister), grey polka dot tights (Target), grey corduroy booties (ALDO)

Sorry that I look super-pissed in the picture above–I always make the stupidest faces when I self-time. And, yes, I did just take this picture on Saturday and yes, I still have my mini Christmas tree up. What can I say, I like to make the holidays last as long as possible 😉 I’m in love with the booties that I got just before Christmas, but they’ve still yet to make a debut at school. I blame the snow and ice that randomly dumped on campus on Monday afternoon!

Dinner: Gardein beefless tips stir fry (with asparagus, mixed veggies and edamame), frozen mango chunks, freeze-dried strawberries

While I was still at home, I discovered a TON of frozen Gardein products in the freezer. I went through a phase over the summer where I was obsessed with them, but then I got kinda burned out. I rekindled my love for their meatless goodness over Christmas break and it was wonderful. The beefless tips weren’t as good as I remembered, though…

Dessert: carrot cake oats topped with almond peanut cashew butter and raisins

I don’t know why, but I’ve been obsessed with the carrot cake flavor combo lately. I’ve been loving the raw carrot cake bites I made and I’ve enjoyed quite a few bowls of carrot cake oats recently. I just love the mix of carrots, raisins and nut butter! Another awesome, new-to-me combo is coffee oats, topped with peanut flour paste and crushed Annie’s bunny pretzels–sweet and salty is the best!
