Food & Fitness Goals for the Summer

I’m usually not one to make goals, at least not out loud or in writing. Sure, I have goals in mind for my future, but I don’t generally come up with short-term goals because I know that if I’m not successful in keeping them, it’ll just disappoint me. But I figure I might as well have a few fun goals in mind over the summer, and I won’t sweat it if I don’t keep them all.

Fitness

Go on at least one hike over the summer.

Play tennis with my dad/sister at least twice a month. I’ve already played once with my dad since I’ve been home and with the weather so warm, I hope we can keep playing regularly. It might get harder once it gets into the 90s, but we’ll endure the heat as long as possible.

Get back into my yoga practice.

My pretty purple yoga mat needs more lovin'.

Take at least one rest day per week. I can’t lie, it’s been mentally stressful convincing myself that it’s okay and actually healthy to take a rest day every week. But as I’m getting busier, I know it’ll be a lot less strenuous trying to squeeze in workouts on my internship days or days that I’m not feeling 100%.

Take walks around the neighborhood more often.

Switch up my lifting routine and try new things.

Food

Have at least one raw meal per day. Raw foods have a TON of benefits, like being alkaline-forming and retaining more nutrients than cooked food, and I already have a love for raw, whole foods. Disclaimer: I’m not saying I’m going 100% raw or even high raw (I would love to try a high raw diet at some point) but I think raw foods have a place in everyone’s diet. I want to do a lot of experimenting with raw meals and raw desserts and see what works best for me and my body. And with it being summer, it’s the perfect time to do a little less cooking!

I like raw restaurant meals, but I want to make them for myself too.

Make more of the recipes I’ve bookmarked.

Work towards more intuitive eating. I’ve gotta say, I feel a lot better now that I haven’t been counting calories or macros since the beginning of the year. However, I still stress out a lot when it comes to eating, and I want to work on my relationship with food. I know a lot of girls have seen success with intuitive eating in overcoming their eating issues and I want to see if it can really help me figure out my own issues. I know intuitive eating can have a bad rap for being just another way to restrict, but I really feel that it can be helpful in balancing a healthy diet with a less strict attitude around food.

Stay on top of weekly food prep.

Go to Native Foods or another local vegan/vegan-friendly restaurant. Colorado is fairly vegan-friendly, with an abundance of health food stores state-wide (Whole Foods, Sprouts, Natural Grocers, possibly Trader Joes soon?) and veg restaurants in many of the larger cities but my hometown doesn’t have many (if any) exclusively veg places to eat. There are plenty of places with lots of vegan options, but when I really want something other than veggie burgers and salads, I know I’ll have to make a trip to Boulder or Denver to get my fix of more creative, healthy vegan food.

Do you like to make goals? What are some of your plans this summer, food and fitness wise?

Excuses, Excuses

Excuses. We all have ’em. They can be a convenient way to get out of something we don’t want to do. But sometimes, they can really hold us back from doing something we want or need to accomplish.

I admit it, I’m an excuse-maker. I make excuses about small things, like why I didn’t clean the bathroom. But excuses I make about my health and well-being are a lot more important and unfortunately, I make them all too often.

Excuse #1: I can’t eat as much as ____ or I’ll gain weight…OR I can’t eat ____ without being unhealthy.

I’ve thought these things to myself a LOT throughout my recovery process, especially lately as I’ve been sharing my struggles here. It’s all really a comparison game for me. I see people in my real life and online who either do eat more than I do, or at least claim to eat a lot, and I always think “Well, good for them that they can eat that much and have an amazing body and life. Too bad I’d balloon up if I ate that much.” I know I’ve gotten countless comments on here about how I eat so little but it’s so hard to see for myself when it seems normal or even healthy to me. Four years ago, when I was at my worst, I was eating only a few hundred calories a day. Now I’ve finally gotten away from obsessively tracking every morsel that enters my mouth so I can’t say for sure how much I am eating but I know it’s way more than I was. I also know that it may not be enough, especially since I do workout pretty much every day. And I know there have been many success stories of people maintaining or even losing weight eating more than they used to, so it’s something I do want to ease into myself. It still seems crazy to me that I could be eating much more than I am now and still be the same size.

I might be eating more variety and incorporating more fats, but I still might be lacking in calories.

I might be eating more variety and incorporating more fats, but I still might be lacking in calories.

Excuse #2: I don’t look ‘sick’ so I must be fine.

At my worst, I was a good 15-20 pounds lighter than I am now which is definitely unhealthy, even for someone who’s only 5’1. I didn’t see it then, but looking back at pictures from 4 years ago I can see a definite difference and it makes me sad. Now, I’m at my highest weight ever and honestly, it scares me. I’ve never been in the triple digits so being so close to it is really scary to me. I always rationalize that I ‘need’ to be underweight to look halfway decent because I’m so short. I think that’s just how my disordered mind sees my body, though. I certainly don’t think I look underweight, or sick, or in need of help. But maybe I still am. And there are a few, rare days where I look in the mirror and actually think I look good, or maybe even a little thin, but those days aren’t often. Because I see myself in this distorted way, I tell myself that it’s okay to obsessively eat clean and rarely take a day off from exercise because if I don’t, all hell will break loose (aka I’ll gain weight). But you don’t have to look sick, or be at your lowest weight to need help. You can still be sick while barely underweight or even at a normal weight.

I may not think I look too skinny but maybe I am...

I may not think I look too skinny but maybe I am…

Excuse #3: I need to workout everyday or I’ll lose my fitness.

I always praise other bloggers for taking rest days when they need them, but when do I take a rest day? I’d say once or twice a month. It doesn’t matter if I have a headache, am feeling a little sick or am really busy, I will squeeze in exercise almost every day. Not necessarily a bad thing, but it is when I don’t listen to my body. And it’s also not good when I feel guilty for not exercising. Take this weekend, for example. I’m heading back up to my apartment with my parents to load up all the bigger items I couldn’t get on my trip home Wednesday and cleaning out my apartment so they can lease it out for the summer. I’ll be gone from Saturday afternoon til Sunday afternoon, and besides running errands and taking things up and down the stairs multiple times, I won’t be getting in much traditional exercise. I’m already stressing out about it. Not good. However, I’ve reached my breaking point with this. I’ll be busy this summer with my internship, a 4 week online summer class and just wanting to have fun. So I want to plan out 1 or 2 rest days per week, so I’m not a ball of stress figuring out when I can work out. And taking a day or two off won’t just not kill me, it’ll also benefit me and my energy levels.

I still want to play a lot of tennis this summer, but I won't stress out when I take a rest day (even if it's unplanned).

I still want to play a lot of tennis this summer, but I won’t stress out when I take a rest day (even if it’s unplanned).

Have you ever made any ‘excuses’ that you ended up tossing out?

Almost Wordless Vacation Recap

So I haven’t been on the computer in a week, and it honestly felt so freeing to just forgo technology (well, besides my phone and iPod) and just enjoy a few days of fun with my family. I also had an extra day away because I had to go up to my college town for some job training for my weather anchor position at the school’s TV station. I’m actually starting to get pumped up for school to start in just a week–well, maybe not school but having my own apartment and being on TV.

Anyways, here’s my mostly wordless vacation recap of my trip to Estes Park, CO with some words at the end about my intuitive eating/exercise experiment!

The cheese-free individual-size hummus pizza at Poppy’s…I devoured it all!

The view of Fall River from the condo.

Tanning by the pool.

Noodles in the deep end of the pool.

A mini Stanley Steamer model (steam-powered car) in the EP Museum.

Spicy sweet and sour tofu & veggies at Thai Kitchen…super spicy, but so good!

Sissy time!

The view from our hike around Lily Lake.

Tall iced soy skinny mocha enjoyed by the Big Thompson River.

Some awesomely bright flowers!

First time trying the Coconut Bliss brand of coconut milk ice cream–verdict = so good, even for the insanely high price ($6/pint). I had some chocolate hazelnut ‘ice cream’ topped with fresh raspberries.

The coolest owl cookie jar!

This really cool, super-vintage looking church just outside EP. It was even cooler inside!

The Big Thompson river.

First time trying vegan sushi! I had the sweet potato rolls filled with Japanese sweet potato, avocado and cucumber. And I loved the pickled ginger on the side.

Me and my sister down by the river.

I think I honestly kicked some serious ass on my self-imposed intuitive eating and exercise challenge. I didn’t record any of my meals or exercise in the calorie counting app I have since last Tuesday and I didn’t freak out (too much) about my macro balance. I feel like I ate more than I usually do, which I know is still probably not enough, but it was definitely a start. I feel like my meals out were pretty balanced–the first night, I had a small vegan pizza covered in veggies; the second night I had a Sunshine veggie burger (without the bun) topped with fresh guacamole; the third night I had sweet and sour tofu and veggies with a little brown rice on the side; and the last night I had a strawberry, spinach and walnut salad with balsamic and some vegan sushi. I honestly loved all the dinners that I had and didn’t have too much of a problem finding something healthy and vegan at the restaurants we went to. I challenged myself to try the Coconut Bliss brand of coconut milk ice cream despite it being higher in calories and saturated fat than my tried-and-true brand. I skipped my usual cardio circuits but was not a couch potato–I played tennis with my dad for an hour one day, walked around town a lot, went on a hike and did some swimming in the condo’s pool. I felt a little more comfortable in my skin than I usually do at home, despite wearing just a swimsuit a lot of the time. I tried a lot of new-to-me things, had some old favorites (veggie straws, baby carrots and PB Puffins, say what?!) and didn’t try to think too much about the food. Overall, the 5 days I spent intuitively eating were some of the best days I’ve had in awhile, and I want to try to keep eating the same way. Now that I’m home, I have more access to veggies, protein, etc. but that doesn’t mean I can’t keep eating more adequately and enjoying my food. And while I’m excited to go back to my regular exercise, I realize that a few days with less intense workouts won’t kill me. So I’m going to try to live every day like I did on my vacation–without the pool time, of course 😉

Do you eat intuitively or plan out your meals? Have you ever had vegan or vegetarian sushi?

WIAW (on Sunday)

So I haven’t done a legit WIAW (aka, posting all my meals from one day) in a really long time…why not do one now? I managed to take Instagram pics of basically everything I ate on Sunday so here it is!

Breakfast

Homemade oat flour waffle with semisweet chocolate chips and frozen raspberries, topped with chocolate protein ‘frosting’ and fresh raspberries.

It’s obvious that I’m obsessed with waffles for breakfast. But I haven’t spent a dime on frozen waffles in probably 2 years. Why not make your own, with all the things you want and nothing you don’t? My waffle maker is getting so much use by me that my mom said I could take it with me to my apartment! My basic recipe always includes oat flour, baking powder, Truvia, unsweetened almond milk and chia gel. But I always include add-ins. And you can’t forget the protein frosting, that’s the icing on the cake waffle.

Lunch

Steamed edamame topped with nooch, baby carrots, mini raw carrot cake bite topped with pineapple cashew cream frosting, fresh pineapple and blueberries.

I love having edamame at lunch! Lately, I’ve been increasing my protein and it keeps me so satisfied. I’m not straying from veganism for the sake of protein though–there are plenty of plant based proteins that I’m obsessed with. Edamame is definitely one of them, it’s just so good and easy to make. And it tastes awesome with nooch–sounds weird, but it does.

Snack

Simply sprouted sweet potato chips, wasabi rice crackers, kettle corn, dried edamame, maple cashews, Medjool date, Alter Eco dark mint chocolate square.

I don’t think it’s possible for me to get sick of snack plates–there’s just so many combos! I always have a good mix of carbs (sprouted chips, rice crackers and organic kettle corn), protein (edamame), fat (cashews) and fun (chocolate and date). I just love the mix of flavors and textures, plus it lets me be indecisive 😉

Tennis

It’s a Christmas court!

I’ve been trying to play tennis with my dad every weekend this summer. It hasn’t always happened, but we’ve been playing a lot and it’s always a fun break from the norm. On Sunday we only played for half an hour since we started out late (around 5:50 pm) and the clouds were rolling in but we were running around the court more than usual.

Dinner

Spinach and mixed greens topped with falafel and homemade vegan tzatziki, veggie straws (unpictured chocolate banana protein smoothie).

I was feeling lazy and uninspired when dinner rolled around but I decided to make use of some falafel balls taking up space in the fridge. I whipped up a vegan tzatziki sauce made from some coconut milk yogurt I just bought, topped some greens with the baked falafels and sauce and had some veggie straws and a protein smoothie on the side. It was actually a great dinner, especially for being on the fly!

Coconut Tzatziki (vegan, gluten-free)

1 container So Delicious plain coconut milk yogurt (can use Greek-style or regular)

1/4 seedless cucumber, peeled and chopped

mint leaves, to taste

1 tsp minced garlic

1/4 lemon, juiced

salt and pepper, to taste

Scoop yogurt into a bowl. Add in cucumber, mint leaves, garlic and lemon juice. Stir until combined, and add in salt and pepper. Let sit for 10 to 15 minutes to let flavors mix. Makes 4-5 small servings.

Dessert

Half of a WF vegan chocolate chip cookie, fresh raspberries, mint chip coconut milk ice cream.

I know I post a picture of a vegan cookie and ice cream all the time, but I don’t have it every night! The cookie I buy maybe once every two weeks when I hit up Whole Foods, and I split it in half to make it last two nights. And I have a small bowl of vegan ice cream a few nights a week, it’s just too good not to enjoy often! But it’s expensive so I try to make it last!

I just noticed that I was obsessed with chocolate and berries on Sunday–not bad obsessions at all 😛 Actually, I’ve been loving both a lot lately, along with pineapple, mango, quinoa and sunflower seed butter. Hey, food ruts aren’t all bad!

Have you been in any ‘food ruts’ lately? Do you like eating salads for dinner?

This or That

By now you probably all know that I’m a sucker for surveys. Anytime I see one on someone’s blog, I just have to do it. It makes for an easy post idea (lazy alert!) and it’s just plain fun. This latest survey is health and fitness related, which is perfect!

Run/work out in the heat and humidity or freezing temps and snow?

Well, considering I’ve only ever lived in Arizona and Colorado, I basically have no experience with extreme humidity. The rare few days that it gets up to 50% humidity after a thunderstorm are pure torture for me 😛 However, I hate the cold and specifically snow even more, so I have to go with heat. When I play tennis, I’d much rather be sweating like crazy because it’s 90+ degrees instead of bundled up trying to ignore the crazy winds and blowing snow. I once played tennis outside in November and it wasn’t the best idea…

Have washboard abs or flat abs?

I kind of already have flat-ish abs, depending on if I’ve eaten recently or not, but I would kinda like them to be flat all the time no matter what. Washboard abs take a lot of work and discipline and while I’d be willing to work for them, there’s just some things I don’t want to give up to get them, like dark chocolate and coconut milk ice cream!

Dr. Oz or The Doctors?

I actually kinda hate Dr. Oz because he tries to make people scared of certain things, like one episode he said taking a shower is unsanitary, and stuff like that. I just started watching The Doctors last year from time to time and I actually like the show. It’s cool how they all have different areas of expertise and they cover so many topics in one episode.

Cardio or Strength?

This is so bad, but I basically do no strength training, aside from things like planks and ab workouts. I’m a cardio girl all the way!

Do water balloon fights count as cardio?!

Cravings: protein or carbs?

Let’s be real…I almost never crave protein. Don’t get me wrong, I do have some protein sources I love, like Plant Fusion protein powder, tempeh and edamame, but I don’t exactly crave them. I do, however, crave carbs often–what can I say, I’m a carbavore! But I do stick with the healthier carbs, like whole grains and fruits/veggies and it seems to work for me.

Jillian Michaels or Bob Harper?

Jillian! She’s so bad ass and I love her no-nonsense approach to fitness. I wish I could be as tough as she is!

Frozen yogurt or ice cream?

I used to be such a huge fan of froyo, but since I’ve been more devoted to veganism, I rarely get it because the places I go to only ever have one or two nondairy flavors. When I get froyo, I only ever top it with fresh fruit but I’m not as obsessed with it as I used to be. Now I’m in love with high quality, coconut or almond milk based vegan ice creams. They cost about $5 for a pint but they’re worth the splurge a couple times per month, plus they last me so long because they’re so much more filling than froyo.

I really love the Nadamoo! brand of vegan ice cream!

To train: upper body or lower body?

Since I don’t do much strength training, I can’t really answer this. But I do know that I feel awesome after a yoga or plank session when my arms feel all weak!

Protein powder or food with protein?

Let me preface this by saying I only use protein powders that are totally plant-based, with as few ingredients as possible and no soy. With that said, I prefer protein powder. I love that I can be eating a sweet treat while still getting in quality protein. I use it in so many things, from smoothies to protein frosting to baked goods. I like some sources of whole foods protein, but protein powder is a lifesaver for me!

I’m in love with protein waffles (and protein powder frosting-topped waffles!)

Lunges or squats?

Lunges! I don’t know why, they’re just fun.

Sweet or salty?

I really love the two together. Lately I’ve been loving the combo of almond peanut cashew butter, real maple syrup and chocolate chips! I usually go for just sweet though.

Workout attire: cute or comfy?

Cute for sure. Of course I want to be comfortable, but I don’t feel comfortable if I’m wearing something I don’t love. So cuteness always has to come first for me.

My typical cute-ish and comfy workout outfit.

Body Pump or Heavy Lifting?

I haven’t done either, but I’ll go with heavy lifting because I know so many people have good results with it.

Yoga or Pilates?

Are you kidding me? Yoga! I still really need to go to a hot yoga class though…

Nike or Adidas?

Nike!

Running on the treadmill or outdoors?

I’m not big into running, but I have to say treadmill. That way, I can read a magazine or whatever and I probably won’t end up tripping!

Whole Foods or Trader Joes?

I wish I could actually choose between them, but TJs is nowhere near me, like literally none within 200 miles of where I live! However, Whole Foods is really awesome and I don’t even mind the high prices most of the time. They have so many of my fave products!

Who can pass up the delicious salads at the Whole Foods hot and cold bars? Not this girl!

Summer or winter Olympics?

Summer, definitely. A lot of years they happen during my birthday (this year they started on my birthday), which is awesome and I love so many of the summer Olympics sports.

Exercise classes or exercise videos?

Classes. I love working out alone sometimes but with other people it’s ten times more fun.

Steamed veggies or roasted veggies?

Roasted, but I actually prefer grilled over either of those!

Answer any of the questions above!

Work It Out

I don’t mention a lot of fitness stuff on here, but that doesn’t mean it’s not a big part of my life! Especially during the summer I love to get outside and get my heart pumping with some fun workouts.

I will admit that I’ve fallen into the trap of ‘exercise guilt’–you know, like feeling bad that I’m not a runner or for not working out as hard on one day compared to the previous one. But honestly, exercise always feels better when it’s something you truly love to do and aren’t pushing yourself to enjoy it. And I’m slowly learning that taking a rest day every once in awhile is okay. I’m not so good at that part right now, but I know it’ll come. For now, here are some of the things I enjoy doing, guilt free!

Tennis

How embarrassing is this photo? I’m so glad I’m not 15 anymore!

This is probably my favorite physical activity at the moment. It’s fun because I do with my dad (and sometimes sister) so we can talk and laugh. I love outdoor exercise, and being out in the sunshine on a perfect summer day feels amazing. Tennis works your whole body (and mind!) but it doesn’t feel like a workout to me because I enjoy it so much.

Biking

Another old-ish photo (from 2 years ago) but at least I look okay in this one!

Biking is another of my favorites. I love how powerful I feel when I’m pedaling along a trail, feeling the breeze and sun on my skin. I have definitely experienced a few wipe-outs and not-so-great rides, but I keep coming back for more. I haven’t biked in about a month, since I haven’t had the chance to refill the tires with air, but I’m excited to get back on my bike and ride!

Yoga

I wish I had a cool pic of me doing a yoga pose…

Yoga keeps me centered, focused and (somewhat) flexible. I love how it stretches out my muscles when they’re sore and I am obsessed with the feeling of weak spaghetti arms after doing a bunch of chaturangas. I still have yet to go to a hot yoga class, but I’m dying to.

Cardio Circuits

This one is my favorite at the moment!

Most days I just end up doing a bunch of 10 minute cardio circuits throughout the day. I like them because they’re short but kinda intense and they’re basically equipment-free. I space them out throughout the day for time’s sake and also because I like being active throughout the day.

Hiking

Why yes, we do like to hike in the snow during the summer!

This one is definitely a summer-only occurrence but I always look forward to hiking. Colorado is an awesome state for it, and I’ve climbed a lot of (small) mountains in my life. My parents are really into it and have dragged me and my sister along since we were itty bitty and now I can say I truly love it. It feels great to get more in touch with nature (I’ve even seen a baby bear on a hike once!) and challenge myself on the trails.

What’s your favorite way to work out? Have you ever seen a scary animal on a hike?

Top Ten Tuesday

So in case you haven’t noticed, it’s already almost May. Ummmm, what the heck?! Seriously, I feel like just the other day it was Christmas. Like many other college kids, I’m feeling pretty burned out on school at this point. But my summer unofficially begins in 10 days, so obviously I am beyond psyched for that! I say unofficially because I have only one final exam this time around, so I’m starting my summer a little early, heading home next Friday and popping back up here to take my final the following Thursday…then my summer will officially begin!

Because of this burnout, which extends to many aspects of my life (oh summer, please come faster!) I’ve decided to do a little Top Ten list type post for today, as a little recap of my weekend, and also because I can’t really think about posting an actual post 😀 Hopefully you enjoy this for the time being though!

Ten Foods I Can’t Live Without

1. FruitOkay, technically this is cheating, but there are a billion fruits I can’t live without, from grapes to pineapple to watermelon to bananas to raspberries to kiwi to…you get the picture!

2. Almond milk. I love the unsweetened vanilla kind, but the plain unsweetened is kinda growing on me.

3. Oats.

My favorite oats combo at the moment--topped with kettle corn, pretzel sticks, raisins and peanut flour/almond peanut cashew butter.

4. Kale. It’s great in chip form, cooked up with some salt/pepper/garlic on the stove and even raw and massaged with some kind of dressing.

5. Tempeh. My vegan “meat” of choice. I love it’s nutty flavor!

6. Peanut flour.

I prefer peanut flour to PB2, I just store mine in an old PB2 jar so it's less messy!

7. Kalamata olives. Some people can’t stand olives–I don’t understand those people!

8. Medjool dates. So gooey, so caramel-y, so addictingly good.

9. PB Puffins. Do I really even have to explain this one? It’s basically my crack (besides peanut flour).

10. Sweet potatoes.

Saturday's simple but yummy dinner: sweet potato topped with peanut flour paste, baby carrots, garden herb Sunshine veggie burger topped with mustard.

Ten Things I Did This Weekend

1. Went to an independent film fest with my dad. We’ve gone to it since it started 5 years ago–we both love seeing random short indy films.

2. Went to church on Saturday night. Pretty self-explanatory!

3. Went out to eat…4 times! Normally, we barely ever eat out, except for when my mom drops me off back at school after a weekend at home. Due to our busyness this weekend, we had to eat out a lot. Definitely a struggle for me with my ED thoughts, but I mostly succeeded. Yes, I did order ‘safe’ things, like salads and veggie/hummus plates, but I truly enjoyed all of them. My favorites of this weekend were the salad I ordered at Mad Greens on Friday afternoon (baby spinach topped with Kalamata olives, dried cranberries, artichoke hearts and garbanzo beans with a fat free balsamic dressing) and the salad I got on Sunday night at Noodles (the Med salad with no dressing or feta, topped with grilled tofu). I kinda learned that I’m really not a tofu girl–it’s not necessarily the texture, but the taste for me. I’m not the hugest fan.

4. Played tennis with mi padre. Usually we play singles and a half (because we play with my sister) but she was unavailable so the two of us just played singles. It was so warm out and I was running around more than usual, so it was a great workout!

5. Grocery shopping. When my mom and sister picked me up on Friday afternoon, we hit up the Whole Foods and Super Target up here, then back at home we picked up a couple more things at the Super Target by us. And on Sunday, my dad and I ventured to Walmart where I stocked up on Truvia.

6. Bought my first-ever Zevia! I got the cream soda variety, and while I’m still waiting for the perfect opportunity to enjoy it, I have a feeling it’ll be incredible. Hopefully not so incredible that I feel the need to buy it on a regular basis since it’s pretty expensive…

So excited to try this!

7. Rode my bike for the first time since last fall. I never get the chance to ride it during the winter because of snow (duh) and there was even some lingering snow when I came home for spring break. I got in two quickie miles that were super hard because my tires were flat. Oops!

8. Worked on my final papers. Not fun, but they have to get done at some point!

9. Starbucks trip! I ordered a tall unsweetened iced coffee with 3 pumps of sugar-free hazelnut. Even better than the plain unsweetened with Truvia. I loved the nutty taste.

10. Repainted my nails silver and pink. I love this color combo and I actually haven’t had it since the beginning of school back in August!

My (slightly chipped) nails, and my lovely snake ring from American Eagle.

Ten Things to Do Before School’s Out

1. Finish my papers/essays. I’m definitely on track, just gotta keep my motivation up.

2. Clean my room. Vacuuming, dusting and all that should probably be done before I peace out.

3. Laundry. I don’t want to burden my mom too much, so I’m planning on washing my sheets and towels.

4. Finish up my last two weeks of classes. Even though I’m so done, I still have to get through 8 more days of classes. I can do this!

5. Make a (huge) list of recipes to make this summer. Some of this list will be coming ‘atcha tomorrow or Thursday for WIAW.

6. Turn in the last page of my internship stuff. The adviser in charge of organizing internships for students has such limited office hours that every time I stop by her office she isn’t there. I need to get this in though!

7. Move everything out of my room. Most of this will be done next Friday, and the rest the day of my only final. Not exciting or fun, but it’s gotta be done.

8. Sell my textbooks? Since I won’t be here during finals week, I’m not sure if this will get done, but I hope it will so I won’t have to have all these books laying around until the next buyback.

9. Study outside. It’s been incredibly nice here lately (I’m talking 80 degrees in April!) so I want to do this at least once.

10. Move out of the dorms…forever! I can’t tell you how excited I am for this. I love my dorm this year, since it’s all my own and it’s new and has air conditioning, but I am so ready for my own place next year.

What’s on your top ten foods list? What’s the best thing you did this weekend?

Easter Weekend in Pictures

Hi bloggy friends! I hope you all had a lovely Easter/Passover weekend (if you celebrate). Mine was really really good, but as usual, it went by super fast and it’s back to the daily grind. The only good thing about that is that the countdown is officially on–4 weeks til I’m no longer a sophomore! Wooooooo 😀 I am beyond excited for summer and everything I have planned for it, plus all the little things that are sure to pop up. Just gotta get through these next few weeks.

I took a bunch (well, not really) of pictures this weekend so I wanted to do a mostly wordless recap of my Easter weekend. So here goes!

Small sweet potato topped with peanut flour paste and almond peanut cashew butter, garlicky kale, fresh strawberries, chocolate and peanut butter Puffins in unsweetened almond milk.

Look how bright those strawberries are! My mom bought a huge box of them at Whole Foods for only $5 and even though they started to go bad by the end of the weekend, I got to enjoy them several times over the weekend. They’re my first of the season and were really juicy and fresh. Definitely a sign that summer is on its way! The garlicky kale is a super simple dish that I whipped up three times this weekend–oh yeah, it’s that good!

Garlicky Kale (vegan, gluten-free)

large handful curly kale, washed and patted dry

1/2 tsp olive oil

1/2-1 tsp minced garlic (or freshly grated garlic clove)

sea salt, nutritional yeast and black pepper, to taste

Heat olive oil in a small sauce pan over medium heat. Add kale and salt and pepper, until the kale starts to shrink and gets crispy edges. Add garlic to pan and cook until fragrant and browned. Sprinkle nutritional yeast on top and serve as a side dish (makes 1 serving).

Saturday's outfit: navy striped cropped tee (Hollister), dark wash jeggings (American Eagle), necklace and bracelet (American Eagle).

Saturday was fairly busy but pretty fun. My sister and I went for a walk, then my dad and I popped in at my pastor’s house for his birthday open house and later my whole family went out to eat to celebrate my dad’s birthday a few days late. The restaurant wasn’t too vegan friendly, but I did get a yummy homemade-style black bean burger with a side of avocado and black bean salsa. Yum!

The lovely Easter eggs, post-dyeing.

Coloring Easter eggs is one of our family traditions. My sister didn’t join in on the fun this year because of homework, but I had fun dyeing the eggs. Do I have a future as an artist? Ummmm, probably not!

Easter outfit: yellow floral dress (Abercrombie and Fitch), bracelets and necklace (American Eagle), unpictured silver wedge sandals (Target).

Besides going to church on Easter (I always love the holiday services!), we also went to Starbucks where I got my new favorite unsweetened iced coffee, played tennis for 45 minutes, snacked outside in the gorgeous weather (sunny and in the low 70s), colored eggs, made a special dinner and Skyped with my grandma and grandpa.

This year's Easter basket!

My mom still hides Easter baskets for me and my sister…yes, we are still 5 years old! Haha, just kidding, but I still think it’s fun to go find the basket and see what’s in it. This year, I got some Sally Hansen Salon Effects nail strips (super excited about these!), some sparkly green nail polish, guava-scented body wash from Ulta, mini Sweet Tart bunnies/ducks/chicks and two new-to-me Chocolove dark chocolate bars. My mom knows me so well 😀

My Easter dinner: grilled chili lime tofu and mini sweet peppers, broiled lemon pepper asparagus (tops only, the best part) and cheezy quinoa (sprinkled with nooch).

While the rest of my family enjoyed their carnivorous dinner (flank steak, asparagus and cheesy mashed potatoes, in case you were wondering), I had a very vegan and very yummy dinner. It was my first time grilling tofu and I was a fan. I think next time I’d get extra firm, rather than super firm sprouted tofu, since it was kinda bitter, and I’d try out a marinade, rather than a seasoning on the outside. But still a really nice Easter dinner.

My new favorite 'ice cream': So Delicious mini Neapolitan nondairy ice cream sandwich.

I really wanted to try the new So Delicious almond milk ice cream sandwiches, but my Whole Foods didn’t have them. I did find these, which are soy ice cream, and actually really good, if really small. I haven’t had an ice cream sandwich in years, but these are better than regular dairy ice cream sandwiches. They also have coconut milk ice cream versions, if you like coconut milk.

Just what I needed on a Monday morning--Starbucks tall coffee light Frappuccino with soy.

Monday came early–at 6 am, to be exact. I wanted to stay all of Sunday so I could spend more time with my family, so my dad had to take me back up to school on Monday morning and we had to leave at 7. Luckily, we made a stop at Starbucks and I got my first Frapp in about six months. It was the perfect little pick-me-up!

How did you spend your weekend? What’s your go-to weekend lunch?
