I’m off on vacation from tomorrow afternoon through Wednesday, so I probably won’t be doing much blog commenting or posting over the next few days but I do have a couple planned posts in the works and I’ll be back at the end of next week with regular posting, and a vacay/internship recap!

Current Book: This sucker. Summer classes aren’t the best, but at least mine’s online and only 4 weeks long. I’ve got about a week left and I’m so ready to be done…but the class is pretty interesting, I love human geography!

Current Music: Another alt song, but what can I say, it’s my fave genre of the moment! Vampire Weekend was on SNL a month or so ago and I loved their live rendition of “Diane Young”. I also scored the song for free on the Google Play Store a week or so ago.

Current Guilty Pleasure: The mini shopping spree I had last week. Two pairs of shorts (one of them my first pair of high-waisted shorts!), a lacy bralette and a printed romper, as well as some items ordered online that just arrived. I love summer clothes, and giving some old ones away means more room for new ones, right?

Current Nail Color: Sally Hansen Hard as Nails Xtreme Wear in fuschia power, with a coat of disco ball on my ring fingers for a ‘party nail’. I love this brand because it’s a lot cheaper than most other brands, but the Hard as Nails kind lasts longer than OPI! I really want to try Essie though.

Current Drink: Homemade iced tea, with or without stevia. And of course, Starbucks unsweetened passion iced tea!

Current Food: I’m loving all things raw, from ‘French toast’ to ‘coconut bacon’, to fruit and veggies (cauliflower is even better raw than cooked, especially dipped in salsa or guac) to raw desserts. Seriously just so good, and so energizing.

Current Favorite Show: I’m loving the Little Couple on TLC right now, because their new little adopted son is adorable, and I think they’re seriously the best parents. So different than most reality shows (with b*tchy people, letsbehonest) and that’s why I love it.

Current Wishlist: A Yonanas maker (seriously, it would make banana softserve so much easier to make), an ice cream maker and a spiralizer. I’m really getting into the whole raw thing, and having these (relatively) inexpensive appliances would make it so much more fun.

Current Needs: More time to pack…and catch up on assignments for my summer class!

Current Triumphs: Not taking constructive criticism personally. I’m learning a lot at my internship, and it’s making me check my pride at the door in terms of what I know and what I don’t. It’s really humbling learning from professionals who’ve been on TV for 10+ years and I’m improving every day. It helps having someone who’s so understanding and willing to work with me. Hopefully I’ll be ready for my first real job in 6-ish months!

Current Bane of Existence: Worrying about not getting in as much exercise + eating out a lot over the next few days on vacation. I think it’ll be a good test to see how I’ll do when my family flies out to visit our extended family in August and I have to deal with a lack of vegan food in restaurants and relatives who think meat and dairy are nonnegotiables. This upcoming trip will be a piece of cake, as I’ll still be pretty active (tennis and hiking for sure!) and have more vegan options.

Current Celebrity Crush: Macklemore. I swear, Can’t Hold Us is even better than Thrift Shop (ok, mayyyyybe not quite) and his hair is legit. Also, I’m kinda upset that I probably won’t get to see him in concert when he comes to my school in August. Not cool. Maybe I’ll just sneak in 😉

Current Indulgence: These raw flax pancakes I whipped up the other day. No dehydrator or food processor needed, and plenty of protein+fiber and sweetness from raw honey.

Current Blessing: A great forecast just in time for vacation. Can you say 80s and sunny every day? Perfect for tennis, hiking AND laying out by the pool!

Current Slang: Uh…I’m starting to say ‘real’ in place of ‘really’, like “That was real bad.” My sister got me into it 😉

Current Outfit: Wednesday I was wearing a sweater and cropped jeans (for real…this is summer?) and yesterday I wore a skirt with a short sleeved tee and a scarf. Can you say bipolar weather?

Current Excitement: Vacation! And possibly getting to go to Native Foods for the first time on the way up or back 😀

Fashion Friday: Just Keep Swimming

If you even glance at the cover of pretty much any fashion or fitness mag, there’s probably something on there about swimsuit season–getting the ‘perfect’ bikini body, finding a swimsuit for your budget, etc. I’m not here to talk about those things, though. I want to talk about how to find the perfect suit for the body YOU have, right now, that’ll make you feel your very best.

First things first: the hard truth. Not every swimsuit’s gonna look good on you. You may fall in love with a cute halter bikini that looks amazing on your friend, but when you try it on, it just doesn’t look right. Remember that it isn’t your body that’s to blame, it’s just that not every style looks great on every body, and that’s ok. There’s definitely at least one style out there that’ll make you love what you see, so don’t get discouraged when a certain style doesn’t look so great.

For example, I was shopping at Hollister the other day when they were having a sale on swimsuit separates for $10 each. What a steal, right? I found plenty of cute options, and tried a few of them on. I have a smaller chest, so the halter bandeaus and triangle bikinis made me look even smaller, but a ruffly halter push-up bikini made me look a little fuller up there and enhanced what I have. With bottoms, I liked the look of the high rise boyshorts but since I am pretty straight up-and-down with no curves, it looked awful on me. Sticking with bikini style bottoms with side ties gives me some shape.

Don’t be afraid to mix and match. A lot of stores sell two pieces in separates, partly so you can buy them in different sizes if you need to, but also so you can mix and match patterns and colors. I personally like to go for neutral, solid colored bottoms with a patterned top featuring the same color as the bottoms. I have a pair of white side-tie bikini bottoms that I wear with three separate patterned tops. It was cheaper than buying 3 full swim sets, but it’s like I have 3 different swimsuits.

This might be obvious, but make sure the swimsuit fits. Don’t worry if you have to buy separate sizes in the top and bottom to fit right. I know it’s easier said than done, but don’t freak out about the size on the tag, either. I know I still tend to stress if I have to wear a size other than my usual one, but different suits fit differently based on style and store, so you may be one size in one store and another one in another. It’s good to find a store, or style, that fits you well, so you have a better idea that another suit from that same store will fit similarly.

You can have fun this summer, soaking up the sun and enjoying the water, without worrying about how you look in your swimsuit…because you’ll know you look good!

Food & Fitness Goals for the Summer

I’m usually not one to make goals, at least not out loud or in writing. Sure, I have goals in mind for my future, but I don’t generally come up with short-term goals because I know that if I’m not successful in keeping them, it’ll just disappoint me. But I figure I might as well have a few fun goals in mind over the summer, and I won’t sweat it if I don’t keep them all.

Fitness

Go on at least one hike over the summer.

Play tennis with my dad/sister at least twice a month. I’ve already played once with my dad since I’ve been home and with the weather so warm, I hope we can keep playing regularly. It might get harder once it gets into the 90s, but we’ll endure the heat as long as possible.

Get back into my yoga practice.

Take at least one rest day per week. I can’t lie, it’s been mentally stressful convincing myself that it’s okay and actually healthy to take a rest day every week. But as I’m getting busier, I know it’ll be a lot less strenuous trying to squeeze in workouts on my internship days or days that I’m not feeling 100%.

Take walks around the neighborhood more often.

Switch up my lifting routine and try new things.

 

Food

Have at least one raw meal per day. Raw foods have a TON of benefits, like being alkaline-forming and retaining more nutrients than cooked food, and I already have a love for raw, whole foods. Disclaimer: I’m not saying I’m going 100% raw or even high raw (I would love to try a high raw diet at some point) but I think raw foods have a place in everyone’s diet. I want to do a lot of experimenting with raw meals and raw desserts and see what works best for me and my body. And with it being summer, it’s the perfect time to do a little less cooking!

Make more of the recipes I’ve bookmarked. 

Work towards more intuitive eating. I’ve gotta say, I feel a lot better now that I haven’t been counting calories or macros since the beginning of the year. However, I still stress out a lot when it comes to eating, and I want to work on my relationship with food. I know a lot of girls have seen success with intuitive eating in overcoming their eating issues and I want to see if it can really help me figure out my own issues. I know intuitive eating can have a bad rap for being just another way to restrict, but I really feel that it can be helpful in balancing a healthy diet with a less strict attitude around food.

Stay on top of weekly food prep.

Go to Native Foods or another local vegan/vegan-friendly restaurant. Colorado is fairly vegan-friendly, with an abundance of health food stores state-wide (Whole Foods, Sprouts, Natural Grocers, possibly Trader Joes soon?) and veg restaurants in many of the larger cities but my hometown doesn’t have many (if any) exclusively veg places to eat. There are plenty of places with lots of vegan options, but when I really want something other than veggie burgers and salads, I know I’ll have to make a trip to Boulder or Denver to get my fix of more creative, healthy vegan food.

WIAW: Best of the Week

I’m finally back, guys! And before I get into today’s WIAW post, I want to express my sorrow for the devastation in Oklahoma. Natural disasters can be incredibly hard to deal with, since they are so random and there’s no one to blame. It’s easy to feel helpless in the face of nature (I know I did last summer as my hometown faced the most destructive fire in state history) but I know that the people affected by the tornado appreciate all the support and love we can give them.

I’m finally all moved back home and getting into the swing of summer. Though right now it doesn’t feel quite like summer since I’m in an online geography class that I need in order to graduate early but luckily, after a few more weeks of studying and note-taking, I can say goodbye to school stuff for the rest of the summer. However, I am getting really excited to finally start my weather internship on Monday! Last summer’s internship at a different station wasn’t quite what I was expecting it to be (yet still a good experience) but since this summer’s will be in the actual field I want to pursue within broadcast journalism, I’m sure it’ll be even better.

With my busy weekend, I didn’t have much time to snap many pictures but I still wanted to do a WIAW so I’m going to be taking a different approach this week. This week’s WIAW will be focused on the best things I’ve seen/eaten/etc. over the past few days!

Best Summer Fun Under $20

Kid at heart over here, but I love summer water toys. When I was a lot younger, we had Super Soaker Twister (way better than regular Twister) and a Slip N Slide and I loved those things. I’ve always dreamed of living somewhere that was warm year-round so I could have a real pool in my yard. My sister and I have even tried convincing our parents to get one 0f those huge inflatable water bouncy houses but let’s be real, those things are crazy expensive and way too big for our now-tiny backyard. But this waterslide from Target is $19.99 and would definitely fit behind the house. Plus it’s even better than the regular Slip N Slide because it’s got room for 3 people to slide at once. I may actually just end up buying this soon… #noshame

Best Raw Meal…EVER!

One perk of moving out of my apartment over the weekend? Getting to go to my fave restaurant, Tasty Harmony, one last time until the school year starts again. I love this place because it’s mostly vegan (surprisingly rare to find in Colorado…other than Native Foods in Boulder which I have yet to try…) and the menu is seasonal so there’s always something new to try. And I’ve tried something new almost every time I’ve gone, and I’ve loved it all, including the samples I stole off my parents’ and sister’s plates. This time, one of the new dishes was a raw pad Thai, made with my favorite kelp noodles. I couldn’t not get it, so I did and I was pleasantly surprised. The kelp noodles were perfectly crunchy, the veggies were fresh and the sauce was amazing. I wish I could have a bottle of just the sauce to take home and use on my kelp noodle dishes because it was just that good!

Best Splurge (aka Non-Vegan Meal)

After our vegan feast, we decided to hit up a mostly non-vegan (still veg though) favorite, Gelazzi. Gelato has always been my favorite frozen dessert and Gelazzi was my favorite gelato place ever. Sadly, it closed down in the fall and my whole family was upset because it was so good. But this weekend, my dad texted me when he and my mom were out and said he saw the doors were open again. I just had to see it for myself, so we decided to check it out after dinner. I ended up getting an old favorite I hadn’t had in probably 2 years, the birthday cake gelato. Most of their flavors, other than the fruit ones, aren’t vegan as they’re made with milk (but are still a lot healthier than dairy ice cream) but I wasn’t feeling the fruit flavors and decided to go for a small of the birthday cake. OMG, heaven in a cup. It tastes like vanilla frosting and is just ridiculously good. So sorry to let down the vegan police, but I just had to have it again.

You knew this had to happen. I am obsessed with the Whole Foods salad bar and I had to get it again once I got back home to the good salad bar. They had all my favorites (curry tofu, marinated artichoke hearts, sweet potato salad) and I was happy. Expect to see a similar photo many more times this summer.

Excuses, Excuses

Excuses. We all have ’em. They can be a convenient way to get out of something we don’t want to do. But sometimes, they can really hold us back from doing something we want or need to accomplish.

I admit it, I’m an excuse-maker. I make excuses about small things, like why I didn’t clean the bathroom. But excuses I make about my health and well-being are a lot more important and unfortunately, I make them all too often.

Excuse #1: I can’t eat as much as ____ or I’ll gain weight…OR I can’t eat ____ without being unhealthy.

I’ve thought these things to myself a LOT throughout my recovery process, especially lately as I’ve been sharing my struggles here. It’s all really a comparison game for me. I see people in my real life and online who either do eat more than I do, or at least claim to eat a lot, and I always think “Well, good for them that they can eat that much and have an amazing body and life. Too bad I’d balloon up if I ate that much.” I know I’ve gotten countless comments on here about how I eat so little but it’s so hard to see for myself when it seems normal or even healthy to me. Four years ago, when I was at my worst, I was eating only a few hundred calories a day. Now I’ve finally gotten away from obsessively tracking every morsel that enters my mouth so I can’t say for sure how much I am eating but I know it’s way more than I was. I also know that it may not be enough, especially since I do workout pretty much every day. And I know there have been many success stories of people maintaining or even losing weight eating more than they used to, so it’s something I do want to ease into myself. It still seems crazy to me that I could be eating much more than I am now and still be the same size.

Excuse #2: I don’t look ‘sick’ so I must be fine.

At my worst, I was a good 15-20 pounds lighter than I am now which is definitely unhealthy, even for someone who’s only 5’1. I didn’t see it then, but looking back at pictures from 4 years ago I can see a definite difference and it makes me sad. Now, I’m at my highest weight ever and honestly, it scares me. I’ve never been in the triple digits so being so close to it is really scary to me. I always rationalize that I ‘need’ to be underweight to look halfway decent because I’m so short. I think that’s just how my disordered mind sees my body, though. I certainly don’t think I look underweight, or sick, or in need of help. But maybe I still am. And there are a few, rare days where I look in the mirror and actually think I look good, or maybe even a little thin, but those days aren’t often. Because I see myself in this distorted way, I tell myself that it’s okay to obsessively eat clean and rarely take a day off from exercise because if I don’t, all hell will break loose (aka I’ll gain weight). But you don’t have to look sick, or be at your lowest weight to need help. You can still be sick while barely underweight or even at a normal weight.

Excuse #3: I need to workout everyday or I’ll lose my fitness.

I always praise other bloggers for taking rest days when they need them, but when do I take a rest day? I’d say once or twice a month. It doesn’t matter if I have a headache, am feeling a little sick or am really busy, I will squeeze in exercise almost every day. Not necessarily a bad thing, but it is when I don’t listen to my body. And it’s also not good when I feel guilty for not exercising. Take this weekend, for example. I’m heading back up to my apartment with my parents to load up all the bigger items I couldn’t get on my trip home Wednesday and cleaning out my apartment so they can lease it out for the summer. I’ll be gone from Saturday afternoon til Sunday afternoon, and besides running errands and taking things up and down the stairs multiple times, I won’t be getting in much traditional exercise. I’m already stressing out about it. Not good. However, I’ve reached my breaking point with this. I’ll be busy this summer with my internship, a 4 week online summer class and just wanting to have fun. So I want to plan out 1 or 2 rest days per week, so I’m not a ball of stress figuring out when I can work out. And taking a day or two off won’t just not kill me, it’ll also benefit me and my energy levels.

College Vegan on a Budget: Looking Ahead

A healthy food-loving girl’s adventures in the world of grocery budgeting.

If you’ve been sticking with me since I started the CVB series then you’ve seen how I’ve had my ups and downs with budgeting. I think I’ve learned a lot since August though, and I want to keep what I’ve learned in mind every time I go grocery shopping, even if it’s on my parents’ dime. Which it will be verrrrry soon, aka in like 4 days!

But CVB will not be back until school starts up again in the fall, so if you still want to read about budgeting, just check out my previous posts on the topics. And just a note, this produce will all be finished this week, but some of the non-perishable or frozen items will be returning home with me when I move back.

Some things I’m planning on bringing back with me because I don’t think I can get them at the Whole Foods stores in my hometown.

I feel like I was just saying this a month or so ago, but it’s dead week again on my campus. It’s honestly not as awful as it sounds, but seeing as I have just over a week until my first and only final, as well as many projects due this week, I needed to get in some quick and easy posts while I’m stressed out over end-of-the-year stuff for the next week and a half. I promise I’ll be back to more normal posting once school ends, I move out and get settled back in at home and with my internship and online summer class. Until then, enjoy the mindless fun posts 😀

This weekend alone, I stocked up on kale chips (hey, they were on sale!), sprouted Thai curry cashews (total obsession), cacao nibs, dried fruit and a few raw energy bars. Current Food: I’ve been loving on the raw snacks (as I said above), sweet potatoes (what else is new?), salted crunchy peanut butter (normally not a PB lover, but I’m going with it), all kinds of summer fruit, tofu, avocados and the new paleo BBQ sauce I picked up.

Current Wishlist: For the weather to stay warm for the rest of the summer(60s and rain is better than snow, but I want 70s and 80s!), good grades in all my classes, a smooth move-out process, maybe one more time to hang out at my apartment’s pool (which as far as I know still hasn’t reopened…and there’s less than 2 weeks left in the semester).

Friday Faves (June 22)

Before I get into the post, I’ve gotta thank everyone for your wonderful and encouraging comments on my last post! I love having the support and also knowing that some of you out there are in a similar boat as me and want to stop letting your lives be dictated by ED. It’s only been a couple of days since I decided to actually buckle down and start eating more and while it is hard to change that mindset, I’m already feeling stronger and happier.

Favorite Bath & Body Works Scent: Signature Vanillas Lemon

Since this scent first came out (either last summer or the one before), I’ve been in love with it. It seriously smells like a lemon poppyseed muffin with a hint of vanilla. It’s my daily go-to lotion and when I was at the mall the other day, I spotted the matching shower gel for only $2! If you love BBW and haven’t checked out their semi-annual sale yet, doooooo it! They’re having the best deals right now. Oh, and as if having the lotion and shower gel weren’t enough, I also have the lip gloss in this scent. Yeah, I’m kinda obsessed…

It’s no secret that I have a major sweet tooth. I am NOT a savory breakfast kind of girl at all, but sometimes I even take my breakfasts to the extreme. Okay, not really, but this particular breakfast was pretty dessert-like. I made peanut flour flax pudding (peanut flour, ground flax and almond milk mixed together and set in the fridge overnight to thicken), added in a spoonful of dark cocoa powder and topped with fresh raspberries, chopped almonds and semisweet chocolate chips. Ummm, yeah, I could eat this every day! What other dessert boasts 10 grams of protein and flax seeds? Probably not many.

Favorite (Actual) Dessert I Want to Make: Vegan S’mores Hot Fudge Sundae

It’s been years since I’ve had an ice cream sundae, and sometimes a girl just has to treat herself to one (especially if she’s trying to eat more/gain weight). S’mores (and ice cream sundaes in general) aren’t usually vegan-friendly but this one is, thanks to the use of nondairy ice cream, ricemellow creme and soy whipped cream. Once I can track down some of the ingredients, I will for sure be trying this out…and reporting back, so you guys can try it too if you want!

Trust me, this isn’t the only one I’ve taken this week!

Okay, actually this isn’t true. I’ve done a lot more exciting things this week but I don’t have photographic evidence of those things (such as messing around with the mannequins at Dillard’s with my sister…) so this is what I went with. Some days I just get bored, whip out my phone, pull up the Instagram app and go to town. It’s kinda fun making different faces and playing with the different effects.
