Thinking Out Loud #1

I haven’t been into linkup style posts in awhile. I used to do the WIAW thing almost weekly, and it just got old. I share my food here anyway, but I’d rather do it when I want to and not feel forced to do it just because it’s the ‘cool’ thing.

But I’ve got a bunch of random ramblings going on in my head right now, so what better way to share them than with the Thinking Out Loud Thursday linkup?

  • I bought baby food AND dog food at Sprouts. And I don’t have a dog or a baby…
Some of my other Sprouts buys.

Some of my other Sprouts buys.

On one of my days off, I decided to make the trek to Sprouts for a midweek produce restock…and of course, I bought a lot more than I intended to. I don’t go to Sprouts more than maybe once a month anymore because it’s just not as convenient to work or home as Whole Foods is, but they do have some pretty cheap produce. But then I happened to stroll down the baby food aisle and I decided to get a couple pouches. They’ll be good to take to work when I don’t feel like packing veggies! And then I saw the Brad’s Raw dog treats were on sale, and even though they’re meant for dogs (but people-friendly too), the ingredients are spot on and they sounded good. Well, that was a waste of $5, because they taste nasty. I don’t even know why, because they’re just made of kale, sweet potatoes, spices and buckwheat groats. Maybe I’ll find an actual dog to feed them to…

  • I legitimately don’t understand how 20-somethings can vacation so much

Chalk it up to bitter jealousy, but I just don’t get it. ‘Tis the season for vacations, and it seems like every blog I read has some vacation recap and/or talking about an upcoming trip. I’m certainly not opposed to travel, it’s just that I grew up in a family where we vacationed once, maybe twice, per year. And usually one of those trips was an in-state road trip to the mountains. We weren’t poor, it’s just that my parents chose to spend money on other things. Now that I have a job and money of my own, I realize just how $$$ traveling is. And that’s why I don’t get how recent college grads like myself can take trips (especially by plane) so often. I’m talking multiple times in the summer alone! A car trip just to go back home is a good 10 hour + trip one way (I’m not making that drive, it sucks) and a 2-3 hour flight is at least $150 each way. And that would be going home, not even having to pay for a hotel or food. I want to fly home at least once this year, and I’d like to visit my good friend when she moves to Salt Lake City, but traveling that much is just not in the cards, wallet-wise 😦

  • I basically eat the same breakfast every day, and it does NOT get old
The protein bowl, aka my breakfast special.

The protein bowl, aka my breakfast special.

I got into the habit of making a protein chia pudding (Sunwarrior or Garden of Life raw protein+chia seeds+almond milk) for breakfast and then topping it with all sorts of stuff, usually raisins, stevia chocolate chips, raw granola and raw salted nuts. I’m basically obsessed with the sweet+salty combo. And now I’ve eaten this every single day for probably a month. I even eat it when I have breakfast at work — I just put the chia pudding in one mini tupperware and the toppings in another and combine at my desk. Sometimes I add fresh fruit (like the figs in the above picture), or half a Larabar, but it’s way too good. And sometimes, I even have it for dessert.

  • I’m obsessed with the pink+grey combination
I also love dresses with scarves.

I also love dresses with scarves.

Who says scarves are for fall and winter? I love them year-round, especially paired with dresses. And a plain (but really cute) dress like this just screams to be put with a patterned scarf. I also love how pink and dark grey pop against each other. It’s a good way to make pink less girly for those of you who dislike the color (obviously not me).

How often do you travel? Have you ever bought baby food to eat yourself?

New in Review: Nails & Noshes

Hey look, I didn’t totally give up on my new series! I’m going to try to get these up every other week so I hope y’all like them as much as I do!

This week features a couple nail-related beauty products as well as plenty of food items…

  • Veggie-Go’s (sweet potato pie)

2014-05-04 17.17.46

I’ve actually had these before but I never did a formal review on them. They’re anything but your basic fruit strip, because they include veggies (!) and have no added sugar. This flavor in particular tastes like a dessert, but it’s only got 2 grams of sugar, from the sweet potatoes and apples. They’re just fruit, veggies and spices — perfect if you’re like me and prefer your food to be as simple as possible.

Pros: extremely tasty, perfect for a quick 1/2 serving each of fruit & veggies

Cons: a little expensive for the size (~$1.25 per strip)

Where to buy: Whole Foods, their site

  • Sally Hansen Kwik Off Moisturizing Nail Polish Remover

2014-05-04 17.16.00

Has anyone else ever been intrigued by those little containers you dip your fingers in to get nail polish off? My friend had one and it worked magic, so I thought I’d buy one instead of the usual messy nail polish remover liquid. This stuff works like a charm, and it doesn’t smell all chemical-y or get all over the place. I will never buy acetone remover again!

Pros: inexpensive, easy to use, no lingering smell

Cons: honestly, none!

Where to Buy: Target, Sephora, drug stores (CVS and Walgreens probably have them)

  • Dr. in the Kitchen Flackers raw flax crackers

2014-05-04 17.19.15

Another cheat (I first started buying them like 2 years ago), but I started recently buying them more often now that the Whole Foods nearest me carries them. I’ve tried the dill, rosemary, sun dried tomato & basil and cinnamon & currants flavors (basically all of them but the savory flavor) and I love them all except the cinnamon and currants. That one gets a bit too chewy from the currants and the flavor is weirdly sour. But all the others are tasty, not too salty and have stellar nutritionals. 6-7 grams of fiber, raw, gluten free and 4-5 grams of protein per serving. Freakin’ delicious on a snack plate with some olives or raw cashew cheez.

Pros: really healthy, good flavors

Cons: a bit expensive, hard to find

Where to Buy: Whole Foods (not all carry them), natural foods stores, Amazon

  • Honest Fizz (root beer)

Y’all know Zevia has my heart. I mean, sure it costs a lot more than your typical diet soda but it’s so much better for you. If you drink soda, you really need to switch to Zevia.

But Honest Fizz is another great alternative that is a little cheaper. Currently, they only have 4 flavors but I’m hoping they’re successful so maybe they’ll add more. Fingers crossed they (or Zevia) make a watermelon soda. Obsessed. Anyways, the root beer is pretty spot on. I actually prefer the Zevia root beer only because it has a kick from the ginger, but the Honest Fizz was less filling (I don’t drink Zevias too often because I hate being filled up with soda, even if it’s zero calorie) which I like. And I think it would make a pretty good healthy root beer float!

Pros: cheaper than Zevia, less filling

Cons: not many flavor options

Where to Buy: Whole Foods, possibly Sprouts

  •  Broadway Nails imPress press-on manicure

2014-05-06 17.28.46

I’ve gotten into the habit of constantly having my nails painted. The problem is I hate constantly touching up and redoing my nails every few days after they inevitably chip. Enter the fake nails! This is my first time using them, and I can honestly say I am imPressed 😉

These go on really quickly and easily. You press them down for a few minutes and after an hour they’re completely good to go. My nails were fairly short at the time I applied these, so even the ‘short’ length had to be trimmed down a bit, but they look natural. Best of all, no chipping!

Pros: easier than nail polish, look natural

Cons: more expensive per use than nail polish, only get 1-2 uses out of each pack

Where to Buy: Target, CVS, Walgreens

  • Living Intentions superfood cereal (hemp & greens)

2014-05-04 17.18.15

I first discovered this granola at the Whole Foods in my college town. They started stocking it in the bulk bins last spring and once I saw it, I had to give it a try. Of course, being a sprouted, superfood-y type thing, it’s expensive. About $12 per pound! But if you only get a little bit at a time like I do, it’s a lot less expensive. Some stores only sell it prepackaged so you can’t buy only what you need, but if your Whole Foods sells it in the bulk area, BUY IT!

I’ve tried a few of the flavors, but my favorite by far is the hemp & greens. This one isn’t sweetened with agave like some of the others, which I like. It’s got a bit of a ‘green’ flavor from the added spirulina, chlorella, spinach, alfalfa and dandelion — what other cereal can boast those ingredients? It’s grain free (made from buckwheat), low sugar, high protein…basically the healthiest granola ever. It’s perfectly crunchy and just a bit sweet and pairs well with almond milk. I also love it as a topping for my protein puddings.

Pros: one of the healthiest cereals ever, great ingredients

Cons: expensive, I love it so much I keep buying it 😉

Where to Buy: Whole Foods, Sprouts, Nuts.com

What new products have you tried lately?

New in Review: Chai & Chocolate

I have a problem. A problem with starting too many post series that I never stick to. I did keep my College Vegan on a Budget series going for several months and obviously I can’t go back to it now as a post-grad. But several other series I had big plans for died an early death.

I’m hoping I can keep this one going for awhile. See, I like product review posts a lot. I read them when I spot a new product on the shelves and I’m wondering if it’s worth a purchase, or if I just bought something and want to see what other people think. Either way, I think they’re informative and fun, so I wanted to bring something like that to AlmostVegGirlie.

I’m calling this new series New in Review, and it will be my honest thoughts about products (not just food!) that I’ve recently tried. Everything I post will be products I bought myself, so no sponsored posts here. And I hope you find them to be interesting!

  • Quinn Kale & Sea Salt popcorn

2014-04-15 16.32.32

I spotted this at Whole Foods, and even though I eat grain free a lot of the time by default, I’ve been craving popcorn lately. Plus it’s gluten free and sounded interesting, so I bought it. When I opened the bag, I was surprised to see that the popcorn was green. Like spinach green. I love all things green, though, so it didn’t scare me away, though some picky people might be thrown off by it. But then, it is made with dried organic kale (and carrot), so it’s basically like salad 😉

The ingredients list is stellar–non-gmo popcorn kernels (corn is a heavily GM product so non-gmo is important), sunflower oil (healthier than most veggie oils, though coconut oil is best), dried organic kale and carrot (seriously, veggies in popcorn is incredible), sea salt, onion powder and garlic powder. That’s it…just popcorn and spices and a little oil. The best part is how tasty this popcorn is. It’s got a slight veggie flavor but not overpowering, with the perfect amount of saltiness and tang from the spices. And it’s a little addicting, but in a good way, because one serving of popcorn (4 cups) is 150 calories.

Pros: organic/non-gmo, clean ingredients, good flavor

Cons: I wish there was more popcorn!

  • Maybelline Volum’ Express Mega Plush mascara

2014-04-15 16.33.47

I’ve been partial to Maybelline mascaras since I discovered their Illegal Length mascara. My lashes are fairly voluminous, so I’m mostly looking to add length and darkness. I like Maybelline’s mascaras because they last a long time (I use it daily) and are fairly inexpensive and available at regular stores like Target.

This mascara is gel mousse, so the texture is a bit different, but it doesn’t clump at all. It also has a flexible brush, which makes it easier to apply. I prefer washable mascaras so I haven’t tried the waterproof kind, but the washable one is easily removable with soap+water or makeup wipes but it doesn’t smudge either.

Pros: inexpensive ($7 ish for a tube), goes on smoothly, feels light

Cons: I wish it added length as well as volume

  • Fearless Chocolate

2014-04-15 16.33.18

This is officially my go-to chocolate brand now! So far, I’ve tried 4 flavors: Superfruit, Green Tea Mint, Exploding Coconuts, and Super Seeds Crunch. All of them are good, but the Exploding Coconuts is my favorite so far. It’s got great little chunks of coconut in it! Though I can’t wait to find their new coffee flavor–I love coffee+chocolate!

Fearless Chocolate has one of the simplest ingredients list of any chocolate brand. They’re soy free (no soy lecithin, which is hard to find in chocolate), gluten free, vegan and certified organic & fair trade. Best of all, they’re made with raw cacao instead of cocoa butter, making them purely chocolate, and organic cane sugar is the last ingredient, so the bars aren’t too sweet.

Pros: Basically everything I’m looking for in dark chocolate

Cons: I didn’t love the mint flavor as much as I thought I would, a little pricey

  •  Trader Joes Spiced Chai Tea

2014-04-15 16.33.07

I went to Trader Joes for the first time about a month ago, and while I’ve already finished off most of the things I’ve bought, I’ve still got plenty of pink sea salt and this chai tea left.

With the warm days we’ve been having lately, I decided to use these tea bags to make iced tea over the weekend. I cold-brewed them in a pitcher for 10 minutes or so, and then taste-tested. This tea has a great, complex spiced flavor but it isn’t too bold. It also pairs well mixed with a bit of stevia and some coconut-almond milk over ice.

Pros: budget friendly, good flavor

Cons: No TJs near me anymore so I can’t buy more 😦

  • Kevita Probiotic Drinks

2014-04-15 16.31.59

I still haven’t gotten on the kombucha train, but I loooooove Kevita! It’s a little fizzy, sweetened with stevia and comes in a bunch of tasty flavors (I’ve tried the lemon cayenne, strawberry acai coconut, mango coconut & mojita lime mint).

This stuff is about the same price as GT Kombucha (though generally cheaper at Sprouts and Whole Foods when on sale) and it boasts the same probiotic qualities. But there’s no weird aftertaste or floaties that come with some kombuchas. Plus it’s organic and made with reverse osmosis water. It’s almost like a light, refreshing soda but so much better for you and won’t make you all bloated like diet soda does.

My new favorite flavor is the lemon cayenne cleanse–it tastes like lemonade!

Pros: tasty, health benefits, lots of flavors

Cons: a bit expensive when not on sale

Perfectly Imperfect

This weekend was one of those weekends that I never wanted to end. Don’t get me wrong–it wasn’t the perfect weekend in every way. But perfection is boring! My weekend was perfectly imperfect, and I wouldn’t have it any other way.

  • I finally got my hair re-done.

It was time for a change and I’m so glad I made one. I got about 5-6 inches off the length (big for me since my hair’s been this long since 9th grade!) and got it colored darker. I’m in love with the results though–but of course, hair is never as amazing as it is right after getting it done.

I'm a brunette again!

I’m a brunette again!

I was a little worried when I went out with my mom later on Friday on a few errands because it was raining & snowing and I didn’t want my new hair getting ruined. Fortunately, it stayed pretty dry and I was able to score a new bikini from Target thanks to my lovely mom. Trying on swimsuits is still an anxiety-provoking thing for me but I was able to get over my body hang-ups and find a cute suit that I love!

  • I went hiking with my parents.

After crappy weather on Friday and some cold (in the 40s) sunshine on Saturday, I was more than ready for some springlike weather like we had on Thursday. Sunday delivered on that, so my parents and I laced up our hiking boots (okay, I just wore some tennis shoes) and hit the trails at a state park in the foothills on the south side of town. The weather was perfect–in the 70s with gorgeous blue skies. I was excited to fit in some exercise out in the fresh air. Everything was great…until we ran into some mud on the trails. And by mud, I mean several inches of sloppy, gooey fresh mud. Not so ideal, especially with the shoes I was wearing but with a little help from my dad, I was able to survive the muddy trails. You never know what’s going to happen when you’re hiking, and that’s what I love. Sure, it wasn’t quite the perfect conditions but we made the best of it and now we have a great story to tell 😉

I was finally reunited with the Whole Foods salad bar!

Isn't this view just gorgeous? I'm so lucky to be able to call Colorado my home (for now)!

  • I got my grocery shopping done for the week.

I’m being serious when I say that grocery shopping is one of my highlights of the week. I love browsing the aisles for new products and being able to pick out my produce and other food for the week. I get a little upset, though, when I have to push back my grocery trip because of my mom or dad’s schedule. Mostly because I go through my groceries by the time the weekend rolls around, and being low on my favorite foods is a little annoying. But I’m learning to be patient, and just to appreciate the fact that right now, my parents are paying for my (slightly expensive) groceries.

My dad and I didn’t get to the store until 5 pm on Sunday because of our hiking escapades earlier in the day, but I really enjoyed the time I spent with him at Sprouts and Whole Foods. We ran into my internship supervisor from last summer–he’s always been so nice and funny and supportive, so we talked a little about my possible upcoming job. My dad and I share a love for fruit, so we went a little crazy in the Sprouts produce area. At Whole Foods, I wasn’t able to buy everything I had on my list (no spinach, boo!) because things weren’t stocked or they were a bit too expensive but I’m just so grateful that my dad spent the time and money to take me to my favorite store. And now I’m all stocked up for the week and ready to try out some new recipes!

Homemade grain free pizza with homemade kale pesto made from the remnants of my last grocery haul.

Homemade grain free pizza with homemade kale pesto made from the remnants of my last grocery haul.

So yeah, my weekend wasn’t perfect. My nail polish chipped right after I painted them, I had some anxieties over my workouts, I ate too many Larabars (I’ve had 1 per day since Thursday even though I meant to save them…oops!), I was disappointed by this week’s SNL, I didn’t drink enough water, I got a not-so-great voice mail from my doctor’s office and I struggled with some lingering cold symptoms. But you know what? My weekend was perfectly imperfect. I enjoyed plenty of family time, I ate some amazing pizza (of the homemade, grain free variety), I helped my sister with a baking project, I slept in and stayed up late and I just lived. Not every weekend or every day will be perfect, but it doesn’t have to be. Sometimes, the imperfect days are the best!

What were some highlights of your weekend?

Meal Prep Monday: Raw Week 4

My “fully raw February” challenge is almost over…but I’m not done with the raw vegan lifestyle by any means! In my introductory post I said I was planning on going raw til dinnertime, but that actually turned into eating raw all day, every day since February 3 (besides a cooked dinner on Valentine’s Day) and I’ve been loving the results. I feel so light and refreshed after my meals, without any desire for cooked foods or added oil, sugar or salt (aside from a little pink sea salt added into my guacamole and kraut). This is something I want to keep up as long as possible and though I may be experimenting in the next month with high raw dinners (cooked beans with raw veggies), I feel great eating mostly raw and it’s something I’ve found I enjoy more than I thought I would!

Meals for the Week

Breakfast: This is always my most simple meal. Plenty of chia puddings, flax pancakes and I do want to try fruit+buckwheat rawnola someday if I can get out of my breakfast rut.

Lunch: I’m planning on zucchini noodles with raw marinara sauce or pumpkin seed pesto, salads and possibly lettuce wraps, with some fruit on the side.

Pesto zoodles for lunch.

Pesto zoodles for lunch.

Dinner: This is where I like to get creative and actually meal plan. I’ve got raw falafel/hummus/cauliflower tabbouleh on the lineup one night based on these recipes, pumpkin seed & garlic zucchini pasta and maybe a kelp noodle thing if I get to the store to restock them. I also will probably have more jicama chili fries since I have some leftover.

Snacks: Same as usual–snack plates with veggies, fruit and a fat source; protein banana softserve for dessert; chia pudding if I didn’t have it for breakfast.

Lean, green banana softserve packed with raw protein powder and spinach.

Recipes for the Week

Other than the dinner recipes linked above, I’m planning on making these raw cacao donuts, a raw take on pink lemonade, spicy hot zucchini chips from Going Raw, sweet potato ‘fries’ in the dehydrator and probably more raw brownie bites. I had the best batch of them last week, but I forgot exactly what I put in them, so I’ll have to try again!

These look almost too good to be raw!

Groceries for the Week

I’m including some things my dad picked up for me at Sprouts; otherwise, the rest was from Whole Foods and as usual, the produce will last for part or all of the week while other stuff may last through next week or longer.

*= organic

Produce: strawberries, baby spinach*, watermelon, cauliflower*, fry-cut yams, zucchini*, carrots*, avocados, garlic, mint*, bananas, papaya (excited to try this!), blueberries (on sale), lemons, cilantro, parsley, romaine hearts*

A little early for watermelon, but still tasty.

A little early for watermelon, but still tasty.

Bulk Bins: Medjool dates, raw mixed nuts, sprouted walnuts, pumpkin seeds, almond flour, raw cashews, nutritional yeast

Miscellaneous: raisins*, coconut aminos, pitted dates, no-salt-added tomato paste, sundried tomatoes, frozen cherries*, hemp hearts, chia seeds, xylitol mints

As usual, lotsa produce and bulk bin seeds and nuts. My Whole Foods trip cost me about $70, which is a great deal for tons of fresh fruits and veggies. My biggest tip for keeping grocery costs low is shop from the bulk bins. I always get my nuts, seeds and dried fruit from there because I get only what I need and it saves a ton over buying them prepackaged. And I can always try a little bit of something new without worrying about wasting my money!

Have you ever tried papaya? What’s your best tip for saving money at the store?

Meal Prep Monday

Remember my ‘vegan on a budget’ posts from last year and earlier this year? I was planning on bringing them back once school started back up in the fall but it’s been…3 months since school started and I haven’t done one of those posts yet. Oops. Anyways, it’s a little late to do them again now since I only have 4 more weeks left, including finals! Crazy talk.

I’ve still been keeping up with my grocery budgeting and meal prepping, though, and I wanted to showcase a little of that, especially because I did a LOT of it this weekend. I managed to spend under $70 total for the week at 3 different grocery stores, which is way better than I was doing last semester, and I’ve been loving my long weekends (I only have classes Monday through Thursday, so 3 days weekends every week for this girl…enjoying them while they last!) because they give me plenty of time to go shopping and get my food prep done for the week. Taking an almost full course load means that I don’t have a ton of time during the week to do this, so it’s a blessing to have 3 days to catch up on stuff, including prepping my meals.

Anyways, here’s what I’ve been up to in the kitchen lately!

Groceries

Sprouts and Natural Grocers mini-haul.

Sprouts and Natural Grocers mini-haul.

I wasn’t planning on going to Sprouts this weekend, but when my friend said she needed to swing by there for a few things, I decided to tag along. I ended up getting some cheap organic Pink Lady apples (my favorite kind), Ataulfo mangoes (also my favorite) and Medjool dates. All for under $10. Afterwards I stopped at Natural Grocers, mostly because they’re the only store in my area that carries black bean pasta, which is a new high-protein staple for me. Unfortunately, they were all out but I still ended up buying a few things I needed wanted, like my favorite Hail Merry miracle tart, xylitol-sweetened gum, pumpkin seeds and sunflower seed butter–for under $15.

Whole Foods produce...

Whole Foods produce…

...and pantry staples.

…and pantry staples.

Whole Foods is a given, but luckily it hasn’t been a budget breaker lately. I’ve been able to spend under $50 there consistently if I also shop at another store, and I only spend around $60 if that’s the only place I shop for the week. I can’t complain! This week I bought two more expensive items (the stevia-sweetened chocolate chips and Skinnycrisps) but the chocolate chips were on sale and the Skinnycrisps I hadn’t had in months and I wanted to bring them home to have over Thanksgiving break. I was planning on buying Tessemae’s BBQ sauce (sweetened only with dates!) so I could make this ‘pulled’ BBQ cauliflower but they were all out so I just had to nix that recipe for this week. As usual, I got a ton of produce (bananas, pomegranates and persimmons on sale, romaine hearts, lime, cilantro, Hannah yams) and some other things I needed for recipes like organic peanuts from the bulk section (on sale!), raisins and yeast. And of course, a few Larabars for quick snacks during the week. This was all just under $45, score!

Meals

Some of these things I made before I did my grocery shopping, so I was kinda using up some things and getting creative. I ran out of nut butter on Wednesday I think so that was fun trying to find other fat sources in my pantry. It was nice to finally restock and have more fruit and snack-y stuff again.

Raw protein bowl for breakfast on Saturday. Garden of Life RAW Marley coffee protein powder+coconut flour+almond milk base, topped with homemade raw coconut 'bacon', pomegranate seeds and a little chia ginger rawnola.

I already plowed through one of the Garden of Life protein powder tubs my dad bought me late last month and I’m onto the second. I definitely recommend this brand, especially their new coffee flavor (it’s only available at Whole Foods right now, though)–decent consistency, especially mixed with coconut flour, and great stats for a raw protein powder.

Lettuce wraps...for breakfast?

Lettuce wraps…for breakfast?

This was another recent breakfast, when I ran out of bananas so I couldn’t have my usual banana ‘softserve’, which is what I have like 90% of the time. Instead, I took some romaine hearts and filled them with dates, raisins and the last of my PB. The date/lettuce combo is seriously killer! I know it sounds weird, but it’s really good. I also had some Garden of Life protein powder mixed with almond milk on the side.

Salad with romaine, leftover black bean spaghetti, pomegranate seeds, pumpkin seeds and sauerkraut.

Before my grocery trips this weekend, my lunches were getting pretty random. I was basically throwing together some leftovers, like the black bean noodles and pumpkin curry sauce, with some add-ins like pomegranate seeds and sauerkraut. These lunches were actually really tasty and filling–I just love the sweet and salty combos!

Oh She Glows' Thai veggie burger on top of spinach, topped with sunflower seed butter+aminos, peanuts, cilantro and mango. Side of roasted cauliflower.

Oh She Glows’ Thai sweet potato veggie burger on top of spinach, topped with sunflower seed butter+coconut aminos, peanuts, cilantro and mango. Side of roasted cauliflower.

Finally a more put-together meal! This was my take on Angela’s Thai-style veggie burger. I made a few changes to it though–I nixed the oats in favor of almond flour to make it grain free, I didn’t really measure anything, I only added in the spices/veggies that I had on hand like curry powder and cilantro and I topped mine with a sunflower seed butter sauce. These were pretty crumbly, but the flavor was spot-on and definitely the best homemade veggie burger I’ve ever had! I’m looking forward to leftovers all week..

Pomegranate seeds are well worth the work and the mess.

Sometimes simple desserts are the best. Like these stevia-sweetened chocolate fruit & nut clusters.

Sometimes simple desserts are the best. Like these stevia-sweetened chocolate fruit & nut clusters.

As for the rest of meal prep, I cut up and stored the 2 organic pomegranates I scored at Whole Foods for just $2.50 (they were on sale 4 for $5)–always messy work but I’m obsessed with pomegranates so it’s all good–made another batch of homemade sweet potato fries out of one of the Hannah yams I bought, made some more PB&J bites and some healthy ‘rice krispies’ (cacao brown rice cereal made with coconut sugar+sunflower seed butter+1 tbsp maple syrup+1 scoop protein powder+some almond milk made into bars) to use up some brown rice cereal I had and I also made the chocolate-covered fruit and nut clusters above. It’s so simple it doesn’t even really need a recipe, and I have no idea where I came up with it, but it’s basically raw mixed nuts (mine were from Whole Foods) and raisins topped with the Lily’s stevia-sweetened dark chocolate chips and set in the freezer to harden. I used the stevia chocolate so these would be sugar free, but feel free to use whatever dark chocolate you have on hand. These are really good, and they’d be the perfect simple holiday dessert, maybe made more festive with dried cranberries instead of raisins and peppermint-flavored dark chocolate?

Do you like to do meal prep on the weekends? What are some of your recent favorite food finds?

What’s in My Kitchen?

I don’t know about you, but I’m one of those people who LOVES grocery/fridge/pantry type posts. I like seeing what other people stock up on to give me good ideas and just because I love how differently everyone eats. It’s cool to see that diversity, plus I like to inspire other people to eat more plant-based, so here’s my take on the ‘what’s in my kitchen’ type post!

This is a biggie in my weekly grocery budget. I think fresh produce should be the basis of everyone’s diet, and I definitely spend a big chunk of my money on it, but it’s worth it for the amazing taste and the health benefits. However, I’m not one of those people who buys the same fruits and veggies week after week–there are a few things I buy nearly weekly, but I like to switch it up based on what’s in season and what’s on sale. Here’s some of what I’ve been buying lately.

  • bananas, organic or conventional (I buy these as ripe as possible so I can use them right away)
  • lemons and limes
  • berries (Sprouts has some great deals on organic berries, and I try to always buy these organic)
  • figs (a personal favorite)
  • watermelon, depending on availability (I only buy in summer/early fall)
  • frozen fruit, organic (I like cherries frozen better than fresh!)
  • grapes, organic
  • plantains
  • mangoes and pineapple, if on sale
  • avocados, organic or conventional depending on price
  • hot peppers (Hatch chiles, jalapenos, etc.)
  • romaine lettuce, organic
  • baby spinach, organic
  • sweet potatoes or yams, organic
  • celery, organic
  • red cabbage
  • full size carrots, organic

Pantry/Fridge Staples

These tend to be things that last a week or longer, so even if they’re a little pricey, they’re worth the price in the long run since I won’t have to restock for awhile. Again, these aren’t weekly buys, and I often switch up brands/flavors of these things depending on what I’m in the mood for or what’s on sale that week.

  • almond or flax milk (I like Good Karma with protein unsweetened flax milk, 365 brand unsweetened vanilla almond milk, Califia Farms toasted coconut unsweetened almond milk)
  • coconut water
  • almond meal, from bulk bins
  • raw cashews, from bulk bins
  • dates and dried figs, from bulk bins
  • raisins, organic
  • hemp seeds, from bulk bins
  • dark chocolate (I’m really loving Fearless chocolate because it’s mostly raw and has simple ingredients)
  • canned no-salt beans (365 organic brand)
  • Whole Foods bread and butter pickles (made in store!)
  • sauerkraut or kimchi
  • raw buckwheat groats, wild rice, quinoa (pre-rinsed)
  • sprouted corn tortillas (Food for Life brand)
  • olives (from Whole Foods olive bar)
  • Living Intentions raw nuts (I love most of their varieties)
  • nutritional yeast, from bulk bins
  • applesauce, unsweetened
  • peanut butter and coconut butter (just the nut, nothing else added)
  • kelp noodles
  • coconut flour and buckwheat flour
  • Larabars (yes, these are a must have and I go through 4-6 bars per week on average!)

Specialty

These are things I don’t buy every week–I usually get them if they’re on sale or I’m really wanting them or need them for a recipe or something.

  • Hail Merry raw tarts (the BEST vegan dessert–and pretty clean, too) and macaroons
  • protein powder (my favorite right now is Garden of Life RAW Meal in Marley Coffee–a Whole Foods exclusive flavor–and I also like Sunwarrior and RawFusion)
  • popcorn (no salt, no oil from Whole Foods)
  • One Degree Organics cereal (I like that these are GF and made from sprouted grains and coconut sugar)
  • dark chocolate chips (Enjoy Life mini chips)
  • sweet potato tortilla chips (Way Better Snacks)
  • raw local honey or maple syrup (from bulk area so it’s cheaper!)
  • spices (pink sea salt, garlic-and-herb-no-salt blend, curry powder, cayenne pepper, garlic gomasio)

If I had to define how I eat, this is what I would say: I eat 99% plant based (other than raw honey), mostly gluten free (I only eat gluten if I go out to eat and I really want something, like a vegan pizza, and I know it won’t really bother me–I’m not celiac, but I feel better without gluten), grain free a lot of the time (I usually only eat psuedograins like buckwheat or quinoa if I eat them at all–probably 2 times per week at the most), produce lover (especially fruit!), tries to eat organic as much as possible, mostly a whole foods eater who still likes cleaner packaged foods, maybe 50% raw foodie and total sweet tooth that I try to tame with stevia, maple syrup, raw honey and coconut sugar. Honestly, I’m feeling better about the way I eat now than I ever have before, and it’s so freeing to be able to enjoy Larabars regularly without feeling guilty because they have so many calories, and to be able to eat intuitively and enjoy my healthy homemade meals 90% of the time as well as eating out and truly loving it. I know that to a lot of people, being vegan, gluten free and mostly grain free might seem restrictive, but it’s what makes me feel my best right now, and I don’t think it’s restrictive at all! For example, my family came up to visit me this weekend and we went out to eat at this awesome, hipster-type restaurant where I got a pizza on gluten free crust with kale, dried figs, mushrooms, garlic and olive oil (and ate 4/6 of it) and then had a gluten free vegan pumpkin cupcake (UNREAL!) without an ounce of guilt. There are still SO many things I can eat, and I’m not as strict with myself when going out to eat–as long as I stick to healthier vegan options, I feel amazing and not guilty at all! I’ve said before that I’d love to give a fully raw lifestyle a try, but I don’t think I could stick to it full time because there are some things I LOVE that I wouldn’t be able to eat on that diet, and honestly, those things are healthy too, just not 100% raw. I think it’s best to have an 80/20 or 90/10 mindset when it comes to eating–eat clean 80-90% of the time, enjoy whatever else you love the other 10-20% of the time and just don’t be so obsessed about food. Food is fun, and tasty, but it isn’t the be-all, end-all. Enjoy it, and move on!

College Vegan on a Budget: Makin’ Changes

An occasional series on my trials and successes in grocery shopping for myself for the first time while on a college budget.

It’s getting to be that time of year ago–finals week. Okay, technically it’s not for another 4 weeks, but close enough, right? With that being said, these CVB posts will probably be on hiatus soon for the next few months, as I move back home for the summer and hopefully go back to my parents paying for most of my groceries. I’m excited for that, but truth be told, I’ve been having fun and learning a lot doing this budgeting thing and I don’t plan on going crazy with the groceries once my parents are doing the purchasing.

So I’ve been doing a great job at keeping my weekly Whole Foods trips at around $60 or under, but I’ve failed at keeping my whole weekly grocery budget at around $80. I shop at Sprouts on a weekly or every other week basis and keep my costs to around $30 or under, but I get into trouble when I go crazy over their Larabar selection, or when I hit up yet another natural foods store in the same week (as I did last week, going to Natural Grocers and spending $20 on some super-expensive coconut flour bread, dark chocolate and cappuccino Larabars that were on sale) or when I buy food online from iHerb or Amazon (as I did two weeks ago). So for the rest of the semester, I’m going to be limiting those purchases as much as possible, probably only making one more purchase from iHerb to restock my peanut flour. And since I’ll be moving out of my apartment in a month, I need to get rid of some of the pantry staples I have, like beans and flours, so I’ll really be watching my grocery list and eliminating unnecessary purchases.

Sprouts

What I Got: ALT  and Uber Larabars, Kit’s bar*, chocolate Kale Krunch* (not planned, but I’d never seen it before and was intrigued), cherry cola Zevia (on sale for only $2.99!), pineapple, Gone Nuts chipotle pistachios, unsweetened applesauce*, avocados x3*, serrano peppers

What I Spent: $32.70

Verdict: The raw nuts and kale chips were the only things not on my list (and the two most expensive by far) but I bought them because I’ve never seen them anywhere else and wanted to try them. I stocked up on the Zevia (a new-to-me flavor) even though I have some others in my pantry because they were a steal at just $3, compared to the usual $5 or $6. The avocados were bought organic because they were the same price as conventional and buying organic whenever possible is always best.

Whole Foods

What I Got: Gone Raw Thai curry cashews (it’s a problem, I’m obsessed), raw cashew butter (this stuff is AMAZING, and only getting a little bit from the bulk aisle saved me tons of money), bulk unsweetened coconut shreds, bulk white Turkish figs*, Medjool dates*, Veggie-Gos fruit and veggie strips*, canned green olives, Tom’s kids toothpaste (I had a coupon, and have been looking for a more natural toothpaste), cherry chocolate Vega One bar, plain Skinny Crisps (for an upcoming recipe), eggplant*, watermelon (yes!), 1 lb. strawberries (finally we’re getting into berry season), Ataulfo mangos X2 (tastiest mangos ever!), baby spinach*, fair trade vanilla extract (on sale and one of the only clean extracts I could find), Hail Merry raw chocolate tart (another thing I need to stop buying, I love it too much!), bulk fair trade 65% dark chocolate chips*

What I Spent: 60.76

Verdict: I have gotten SO much better at spending less at Whole Foods while still getting a lot. Produce is usually about 1/3 of my total purchase, which is really decent, especially for such great quality and sometimes organic produce. I still got a few fun purchases, but I’ve been better about not buying all my favorite splurges all the time.

What fruit are you most excited to eat this summer? What’s the best grocery store deal you’ve encountered lately (for me, it’s either the Zevia, or the Larabars I found for under $1 each)?
