Wow. That’s all I can say about the responses I got to my last post. I was touched by every single word you guys shared with me and I’m seriously blown away by just how many views it got. It reminds me that being open and honest really pays off, so thanks for every comment, tweet and repost!

Now onto something a little more fun. I haven’t done a ‘Currently’ post very much in the last few months so I thought it was time for an insight into my life at the moment.

Current Book: Does People StyleWatch count? I’m not much of a book reader, but I can pore over fashion magazines. This one’s especially fun because it features celebs and is a little more reasonable than, say, Vogue.

Current Music: I’ve been loving this brand new song by a new-to-me group, The Griswolds. It’s a fun, summer-y tune.

Current Guilty Pleasure: Spending so much damn $$$ on groceries. Gah. I thought I was getting good at budgeting. The past three weeks, I’ve spent around $100 for a week of groceries. Even this week, when I thought I didn’t have any big purchases (like protein powder) I still spent a ton. I guess those organic figs, stevia chocolate chips and raw cashew clusters add up! I’d like to keep my bill around $80 next week though.

Current Nail Color: Still Sally Hansen Hard as Nails Xtreme Wear in Hot Tamale. I did just score a fun blue sparkly polish from Target for under $2…I live by the cheap-o Sally Hansen polishes because they work just as well as OPI but for a fraction of the price.

Current Needs: I need to find a restaurant for my birthday dinner. It’s a week from this coming Sunday (!!!) and I just happened to stumble upon some menus for some very veg-friendly places here, but for whatever reason, none of them are open on Sundays for dinner. And I’m not sure I can convince my family to make an almost 2 hour drive to OKC for some vegan Mexican food (there’s apparently a very good all-veg Mexican place there).

Current Drink: Other than the usual ice cold water, I finally caved and invested in Chameleon cold brew concentrate. Holy yum, this stuff is good and it should actually save me money on Starbucks trips. I only ever get iced coffees, so this stuff is perfect.

Current Food: I finally got my fix of the Whole Foods salad bar after going at least a month without it. I went to the WF a little farther from home and they had the most killer selection of stuff. It was one of my favorite salad bar boxes to date. And actually cheap — only $6!

Current Obsession: My love for running (outside) is still going strong. I generally run 2 miles three to five days per week, but on Sunday, I managed to run 3 full miles! I still take walk breaks at the halfway point, but it really helps keep up my stamina on these days when it feels like 100 degrees out.

Current Triumph: Just having a much better body image. I guess writing my last post was really therapeutic for me, because I’m really seeing my body in a very different light than I used to…which is a good thing!

Current Bane of my Existence: This fly that’s been in my apartment for several days and somehow refuses to die. It’s also too quick to swat, so I’ve been just waiting for it to give up.

Current Indulgence: This amazing strawberry snow cone I picked up from Whole Foods on Friday. I haven’t had a snow cone in years, but when I heard WF was making some with locally-made syrups (also free of any processed crap) I knew I had to get one. And it was $2 and perfect for a super hot afternoon.

Current Excitement: My family is driving out to visit me for my birthday weekend! I haven’t seen them since April, which is the longest I’ve ever gone without being with my fam. It hasn’t been as hard of a transition as I thought it would be, but I still miss them, and my birthday would be weird without them. So thankfully, I have four days off around the big day in which to show them around my new city, drag them to all the veg-friendly restaurants I’ve been dying to try, go to a concert I’m extremely pumped for and just enjoy their presence. But…that also means getting my apartment ready for their arrival in just over a week. Not sure when that’s gonna happen!

Current Outfit: I’ve also been buying a lot of clothes lately (but trying to stay within my budget) and my outfit on Saturday incorporated a skirt I just bought from VS Pink. Yes, they have actual clothes there that are pretty cute!

Current Link: What is Femme Anyway? This post actually ties in quite well with my last one — basically it’s how I personally define myself as a woman. Some might describe me as high-maintenance, but part of my personality is about caring very much about my appearance and I’m proud of that. And it really spoke to me when it talks about loving yourself, because that’s something I’m always working towards.

Keep It Simple

I feel like I haven’t posted a recipe on here forever! I could blame it on my crazy work schedule (which is true), or the hot temperatures which have kept me far from the oven, but really, it’s just because I’ve been embracing simple foods lately.

My work meals are easy to throw together — Sunwarrior chia puddings+toppings (raisins, stevia chocolate chips, raw nuts), Kit’s Organic bars, fresh fruit, flax crackers, carrots+homemade hummus. Basically anything I can eat at my desk while writing stories for 8 hours. When I get home, I get my workout in and then throw something together for ‘dinner’ (if you can count a meal eaten at 4 pm as dinner…that’s life when you work early mornings). No more elaborate recipes requiring special ingredients. It’s all about things I can make from my pantry staples and put together in 10 minutes or less.

So what have I been eating?

Sweet potato hash.

Sweet potato hash. Aka heaven in a bowl. Basically I take a sweet potato, peel it, and then chop it up into fine chunks in my Ninja, and blend it with spices (pink salt, nooch, garlic, cayenne). And then I dump it into a pan heated up with a a little coconut oil, add in some spinach and hemp ‘tofu’ when I have it and let it cook up til it’s crispy. And then I top with hummus (either local from the farmer’s market or homemade) and raw nuts and seeds.

Pan-roasted veggies. The spices are really what makes these so craveable. I’ve done it with both cauliflower and cabbage, and both are really good. My go-to spices are pink sea salt, garlic granules, cayenne powder and nutritional yeast. And I just cook the crap out of the veggies over a pan on the stove, because ovens are overrated and I love having a gas range that heats up in seconds.

Banana softserve. Some days, I really wanted a cold dinner that was more on the sweet side. Enter banana softserve. I think you all know how this works, but I blend a frozen banana with greens (spinach or romaine), some Sunwarrior protein powder and a little almond milk. And then I serve with raw nuts and dried fruit on the side.

Snack plates. When all else fails, and I’m feeling like eating a bunch of random stuff, I go for the snack plates. While my combinations vary, I always include…A) a veggie (usually romaine hearts drizzled with spicy mustard or carrots), B) fruit (berries or watermelon), C) hummus or salsa, D) raw nuts or seeds, E) dried fruit/stevia chocolate chips.

I used to be so concerned about getting tons of variety in my diet, but now I honestly just go with the flow and eat what I crave. It’s so freeing, and it makes for easier grocery shopping trips. I literally buy about 20 or so of the same things every single week, with a few changes here and there. And of course, I still get plenty of variety in the produce I eat…and I’ve been a produce monster this summer so far! I spend about half of my grocery budget on fruits and veggies and I can’t get enough.

Haven’t done one of these in awhile but I thought I’d give a little insight into my life at the moment!

Current Book: Wintergirls. It’s a fictional book about eating disorders, but it feels so real to me. Too real. I devoured the book on my tablet in one day. I feel like I have to read it again just to totally pick up everything that’s going on. Definitely a chilling and potentially triggering read, but really good.

Current Music: I love The Black Keys’ new album and also Foster the People’s new one. “Best Friend” is a really fun pump-up song I plan on adding to my running playlist soon!

Current Guilty Pleasure: The new ALDO purse I bought on Memorial Day. Okay, it was on sale, but it’s still a splurge for this girl.

Current Drink: ice cold water. It’s been HOT here. Not complaining!

Current Triumphs: trying to be smart with my money (I get paid every other Friday, and at the beginning of the month it’s hard to stretch the paycheck after paying for rent), getting back into running after hurting my Achilles’ tendon. I actually just started running a few weeks ago, and for now it’s more a mix of walking and running, but I really love it. Like a lot more than I thought I would. It helps that I have a gorgeous riverside trail just across the street from my apartment.

Current Bane of Existence: Humidity. I’m a total baby when it comes to this. I was born in Arizona and grew up in Colorado, aka both basically deserts. I know Oklahoma is nothing compared to Texas/Florida/etc. for humidity, but I just can’t take it. Give me dry heat any day!

Current Indulgence: Recent mini shopping trips on my days off. I am giving myself a clothing budget each month, but of course it’s a new month now — I can totally buy a few new things again 😉

Current Blessing: Being able to start working a different position at work. I’m still an associate producer, but I’ve been producing the midday newscast a couple of days per week and while it’s totally scary, it’s also fun learning how to do. And it beats the assignment desk any day! I could bitch go on and on about how much I hate the fact that the station I work at hasn’t hired a PT desk person yet so I can stop filling in for a position I wasn’t hired for.

Current Outfit: My new jumpsuit. I feel totally fierce in it and now I want more jumpsuits!

Current Link: 35 Things Only People Who Work Weird Hours Will Understand. Buzzfeed just gets me. These are some of the annoyances I have with having a weird schedule. It’s not all bad but let’s just say it’s a good thing I’m not into the whole nightlife scene anyway. Basically my days consist of work, sleep, working out, laying by the pool and eating. Such is life!

Ever notice how everyone always apologizes for ‘crappy’ iPhone photos? Ummmmm, crappy? Maybe it’s just because I came from an Android with a lame camera, but I love the iPhone 5 camera. Sure, it’s not like a DSLR but it takes gorgeous photos for a smartphone and who wants to drag around a huge camera everywhere? I know I take a lot more photos now that I have a nice phone.

So here’s some highlights of my past week, as seen through my iPhone lens.

I’m getting back into taking outfit selfies when I’m wearing something I feel cute in. This was my work outfit on Saturday and I only regretted it when I stopped by the farmer’s market after work and it started pouring. Sheer shirts+rain don’t exactly mix.

I don’t have time for elaborate meals anymore, so my “dinners” are usually thrown together things like snackplates or this sweet potato hash. This tastes incredible, but is really simple. I take a sweet potato, remove the skin, chop it up small in a food processor and blend it with sea salt, garlic powder, nooch and cayenne pepper. Then I throw it in a pan with coconut oil, spinach and hemp ‘tofu’. Then I toss it in a bowl and serve it with raw seeds and local hummus. I don’t even know how it’s so good, but it is.

I haven’t talked about it much yet, but I’ve started running in the past month. I just love living so close to an awesome running trail right by the river. I’ve been doing a walk-run approach because I’m still working up to running consistently, but I love it. My Achilles’ was also injured for about a week but buying actual running shoes has helped. I ran my first unofficial 5K on Monday and I’m so excited for my running future. I can finally run about 10-12 minutes at a time with no walking breaks!

In the summer I spend SO much on produce. Like, this was literally half of what I spent at Whole Foods this weekend. I’m basically obsessed with watermelon, fresh berries, lettuce and cauliflower at the moment. All devoured straight from the fridge. That yellow ball up front is a new melon I spotted called a Fonzy melon. It’s really soft and sweet, like a subtle cross between honey and vanilla.

I’m getting more adventurous with my fashion choices and I don’t hate it. I never thought I could pull off a jumpsuit, but it helps that I found one that doesn’t drown me and has some cute ruffly details to add some interest. The fact that this was $13 at American Eagle is even better. Now I want #allthejumpsuits.

I stopped at a cute little juice bar near the outdoor shopping center where I got my jumpsuit. I’ve been dying for some fresh juice/smoothies since it’s been so hot and humid here. I got the “Summer Love”, which has blueberries, grapes, pineapple, peaches, dates, vanilla, chia seeds and coconut water. Basically all of my favorite things. It was kind of a cross between a fresh-pressed juice and a smoothie with a thicker texture and I loved it. I can see myself making more stops here in the future. The fact that it’s less than a 10 minute drive from work sweetens the deal.

Spring/Summer Survey

When this post is published, it’s officially my 7th day in a row of working. Yikes! As this is my first real job, I’ve only worked the traditional 5 day work week, and sometimes that’s exhausting enough. My schedule is being shifted around as the station plans to hire more people, so for now, I’m having to fill in the holes sometimes. Luckily, my ‘weekend’ starts tonight when I get off work at 10:30 and after that, I go back to a more regular 5 day work week. Phew! 

After a week of mostly working, workouts at my apartment’s fitness center and trying to get as much sleep as I can, I think a survey post is necessary! I found this one over on Kaila’s blog, and as a spring/summer lover, I just knew I had to fill it out.

Smoothies vs. juices?

Smoothies! I don’t have a juicer so I can’t make them at home, and the only fresh juices I like are the ones made by Suja…and they’re expensive! Smoothies are easy for me to whip up in my own kitchen and I can include whatever I want in them.

Grilled veggies vs. salads?

Definitely salads. I love giant salads year round, but they’re even more refreshing in the warmer months. Grilled veggies are good too, but I usually only get them when I go out to eat, since I don’t have a grill.

Corn on the cob vs. sweet potato fries?

No question–sweet potato fries! I know they don’t seem seasonally appropriate, but I actually hate corn and never got the appeal of corn on the cob. Sweet potato fries, on the other hand? Pure deliciousness, especially the ones from Native Foods!

Burgers or dogs (veggie varieties included)?

I love a good veggie burger, especially homemade and fresh off the grill or stove. I love tossing them on some spinach and adding tons of toppings.

Baseball or soccer?

Baseball is such a summer sport to me, and it’s one of the few sports I actually enjoy watching…at least in real life! I miss going to Rockies games with my family and soaking up the sunshine while enjoying a good game.

Walking or biking?

I love walking, especially hiking, in the summer. Spending time out in nature, especially the mountains, is something I try to do as often as possible when it’s warm, and it’s something I’m going to miss about moving away from Colorado…no more mountain trails!

Beach or trails?

As much as I love hiking trails, I gotta go with the beach. I’m pretty sure I’m meant to be a California girl (I will be someday!) and I love the relaxing sound of the waves hitting the shore, the soft sand and the cool water.

Ice cream or fresh fruit?

Fresh fruit! I like vegan ice cream (especially the So Delicious no sugar added kind), but fruit is something I enjoy multiple times per day, especially in the summer.

Sun bathing or swimming?

I like soaking up the sun, but I prefer getting in the pool! Especially after laying out in the sun for a bit, and then cooling off with a few laps.

Tulips or daffodils?

I love tulips! Don’t know why, they just remind me of spring.

Farmers markets or garage sales?

Definitely farmers markets! I went to my first real one the other weekend, and I fell in love. It’s nice being able to buy local produce and flowers for a bargain price. I’m definitely planning on hitting up a market every week this summer.

Sneakers or sandals?

Sandals allllllllll the way. I honestly have way too many pairs of sandals but I’ll never have enough. Target, American Eagle and Hollister are my sandal go-to stores.

Flower garden or veggie garden?

As much as I think flowers are pretty and spring-like, I think veggie gardens are more useful. You can plant the veggies you like, and save a bunch of money, not to mention get to enjoy the fruits (and veggies!) of your labor! Last summer, my dad and I planted a bunch of veggies/herbs and we had success with parsley, Japanese eggplant, hot peppers and cilantro.

Perfectly Imperfect

This weekend was one of those weekends that I never wanted to end. Don’t get me wrong–it wasn’t the perfect weekend in every way. But perfection is boring! My weekend was perfectly imperfect, and I wouldn’t have it any other way.

  • I finally got my hair re-done.

It was time for a change and I’m so glad I made one. I got about 5-6 inches off the length (big for me since my hair’s been this long since 9th grade!) and got it colored darker. I’m in love with the results though–but of course, hair is never as amazing as it is right after getting it done.

I was a little worried when I went out with my mom later on Friday on a few errands because it was raining & snowing and I didn’t want my new hair getting ruined. Fortunately, it stayed pretty dry and I was able to score a new bikini from Target thanks to my lovely mom. Trying on swimsuits is still an anxiety-provoking thing for me but I was able to get over my body hang-ups and find a cute suit that I love!

  • I went hiking with my parents. 

After crappy weather on Friday and some cold (in the 40s) sunshine on Saturday, I was more than ready for some springlike weather like we had on Thursday. Sunday delivered on that, so my parents and I laced up our hiking boots (okay, I just wore some tennis shoes) and hit the trails at a state park in the foothills on the south side of town. The weather was perfect–in the 70s with gorgeous blue skies. I was excited to fit in some exercise out in the fresh air. Everything was great…until we ran into some mud on the trails. And by mud, I mean several inches of sloppy, gooey fresh mud. Not so ideal, especially with the shoes I was wearing but with a little help from my dad, I was able to survive the muddy trails. You never know what’s going to happen when you’re hiking, and that’s what I love. Sure, it wasn’t quite the perfect conditions but we made the best of it and now we have a great story to tell 😉

  • I got my grocery shopping done for the week. 

I’m being serious when I say that grocery shopping is one of my highlights of the week. I love browsing the aisles for new products and being able to pick out my produce and other food for the week. I get a little upset, though, when I have to push back my grocery trip because of my mom or dad’s schedule. Mostly because I go through my groceries by the time the weekend rolls around, and being low on my favorite foods is a little annoying. But I’m learning to be patient, and just to appreciate the fact that right now, my parents are paying for my (slightly expensive) groceries.

My dad and I didn’t get to the store until 5 pm on Sunday because of our hiking escapades earlier in the day, but I really enjoyed the time I spent with him at Sprouts and Whole Foods. We ran into my internship supervisor from last summer–he’s always been so nice and funny and supportive, so we talked a little about my possible upcoming job. My dad and I share a love for fruit, so we went a little crazy in the Sprouts produce area. At Whole Foods, I wasn’t able to buy everything I had on my list (no spinach, boo!) because things weren’t stocked or they were a bit too expensive but I’m just so grateful that my dad spent the time and money to take me to my favorite store. And now I’m all stocked up for the week and ready to try out some new recipes!

So yeah, my weekend wasn’t perfect. My nail polish chipped right after I painted them, I had some anxieties over my workouts, I ate too many Larabars (I’ve had 1 per day since Thursday even though I meant to save them…oops!), I was disappointed by this week’s SNL, I didn’t drink enough water, I got a not-so-great voice mail from my doctor’s office and I struggled with some lingering cold symptoms. But you know what? My weekend was perfectly imperfect. I enjoyed plenty of family time, I ate some amazing pizza (of the homemade, grain free variety), I helped my sister with a baking project, I slept in and stayed up late and I just lived. Not every weekend or every day will be perfect, but it doesn’t have to be. Sometimes, the imperfect days are the best!

Meal Prep Monday: Raw Week 4

My “fully raw February” challenge is almost over…but I’m not done with the raw vegan lifestyle by any means! In my introductory post I said I was planning on going raw til dinnertime, but that actually turned into eating raw all day, every day since February 3 (besides a cooked dinner on Valentine’s Day) and I’ve been loving the results. I feel so light and refreshed after my meals, without any desire for cooked foods or added oil, sugar or salt (aside from a little pink sea salt added into my guacamole and kraut). This is something I want to keep up as long as possible and though I may be experimenting in the next month with high raw dinners (cooked beans with raw veggies), I feel great eating mostly raw and it’s something I’ve found I enjoy more than I thought I would!

Meals for the Week

Breakfast: This is always my most simple meal. Plenty of chia puddings, flax pancakes and I do want to try fruit+buckwheat rawnola someday if I can get out of my breakfast rut.

Lunch: I’m planning on zucchini noodles with raw marinara sauce or pumpkin seed pesto, salads and possibly lettuce wraps, with some fruit on the side.

Dinner: This is where I like to get creative and actually meal plan. I’ve got raw falafel/hummus/cauliflower tabbouleh on the lineup one night based on these recipes, pumpkin seed & garlic zucchini pasta and maybe a kelp noodle thing if I get to the store to restock them. I also will probably have more jicama chili fries since I have some leftover.

Snacks: Same as usual–snack plates with veggies, fruit and a fat source; protein banana softserve for dessert; chia pudding if I didn’t have it for breakfast.

Recipes for the Week

Other than the dinner recipes linked above, I’m planning on making these raw cacao donuts, a raw take on pink lemonade, spicy hot zucchini chips from Going Raw, sweet potato ‘fries’ in the dehydrator and probably more raw brownie bites. I had the best batch of them last week, but I forgot exactly what I put in them, so I’ll have to try again!

Miscellaneous: raisins*, coconut aminos, pitted dates, no-salt-added tomato paste, sundried tomatoes, frozen cherries*, hemp hearts, chia seeds, xylitol mints

As usual, lotsa produce and bulk bin seeds and nuts. My Whole Foods trip cost me about $70, which is a great deal for tons of fresh fruits and veggies. My biggest tip for keeping grocery costs low is shop from the bulk bins. I always get my nuts, seeds and dried fruit from there because I get only what I need and it saves a ton over buying them prepackaged. And I can always try a little bit of something new without worrying about wasting my money!
