WIAW: Weekend Fashion & Monday Food

I’m baaaaack after a semi-relaxing weekend and a busy start to the week. You know how it goes. But I’ve got a major countdown going on until Thanksgiving break…only 23 days until no school for a week and a couple days! Yeah, that’s 23 days totalincluding weekends. Where has the semester gone? There’s only 5 1/2 weeks left, not counting finals week. Not that I’m complaining though. I’m in desperate need of a break!

Spooky Snacks and Healthy Halloween Treats

This week’s edition of everyone’s favorite party features what I ate on Monday, along with a few extra pics from the weekend. I’ve been taking more fashion photos lately so enjoy those!

Can I pull off the hippie look?

Sometimes I think I could almost be a hippie. Vegan? Check. Liberal leaning? Yup. Long hair? Of course. Love of boho fashion? Sure. I don’t do the whole drug thing or ‘natural’ hygiene habits (I like my showers and trips to the salon, thankyouverymuch) but I think I could fit in with the hippie crowd just fine. Plus I have a newfound love for their headbands. I just think they add a cute touch to almost any outfit. But are sparkles considered hippie?

Or maybe I’m more of a hipster, writing a paper in Starbucks…

I spent a few hours on Sunday at my favorite FoCo Starbucks. Not because I love coffee so much (though I do) but because I had a paper to write and I thought I’d be less distracted at ‘bucks. Well, turns out that a change of scenery did me good. I was able to finish the paper, enjoy a tall Americano with sugar-free hazelnut and do some people watching while jamming out to Pandora. It was a great, productive afternoon.

I finally invested in some garbanzo flour (it was only $2.50 at Sprouts…score!) so I could try out the blogger fave, socca. And I’ve gotta say, it makes a great gluten-free grain-free sub for pizza crust. However, I’m warning you–don’t taste test the socca batter before you cook it. The flavor reminded me of when I used to get bloody noses, it was so metallic-y. But once cooked (I did the skillet method) it tastes great. Especially if you mix it with plenty of spices.

I’ve been wearing flip-flops, tees and shorts on a regular basis…and yes, it is October. I know some of you may have already gotten snow, but this is why I love Colorado. Our weather is so unpredictable this time of year, but it can definitely be summer-like into October. Sadly this streak is coming to an end soon–snow is in the forecast for tomorrow into the weekend 😦

Breakfast

Monday breakfast: pumpkin vanilla protein pudding. Topped with pomegranate seeds and maple pecans.

Like I said, it’s been warm enough here even in the mornings to not want warm breakfasts quite yet. I still have to do smoothies and protein puddings so I don’t overheat. But I still want my meals to be fall-inspired, so Monday’s breakfast fulfilled both requirements. Pomegranate tastes awesome with pumpkin and pecans and maple. It’s like all the flavors of fall in one bowl.

Lunch

Lunch plates for the indecisive girl. Coconut oil roasted brussels sprouts (with organic ketchup), coconut flour microwave muffin crumbles, sweet stuffed acorn squash, peanut flour paste, almond butter, Alter Eco mint chocolate bar.

I haven’t been doing snackplates as much lately but I have been doing them for lunches! One of my go-tos is a coconut flour microwave muffin. It’s so simple to make, just add some coconut flour (1 or 2 tbsp), baking powder, salt/stevia and almond milk to a microwave safe bowl and let it cook for a minute or so. It turns out really crumbly, but totally voluminous and cake like. It’s crazy that a grain free flour turns out like a tasty muffin, but it just does. And I love it!

I realize the seeds are called arils, but I don’t like that word. Seeds sounds better. I can’t believe how obsessed I am with these little guys. They were so worth almost staining my skin and every surface of my kitchen 😉

I don’t wear my glasses often in public (I usually wear contacts) but some days they’re just necessary. Like when one of your contacts is seriously bothering your eye and you realize that it’s illegal for you to drive without contacts or glasses. I can’t believe how bad my vision has gotten since I first got contacts/glasses 4 years ago. I hope I can eventually get laser surgery, but it’s kinda scary too…

Afternoon Snack

Yes, I like weirdly green food. Mint chocolate buckwheat waffle made with kale, topped with mint kale infused protein frosting.

I love love love homemade waffles, in case you couldn’t already tell. My waffle maker is my most-loved kitchen appliance for sure, it gets used almost every day whether for breakfast or a snack. I prefer making my own because ones from the store don’t taste that great, they aren’t as healthy and with homemade ones I can add in only the ingredients that I want and make them whatever crazy flavors I’d like! Plus they’re almost as convenient as store bought, so why not?

Dinner

Sepia-ified nachos. Sweet potato multigrain chips topped with 1/4 vegan Mexican chipotle seitan sausage, coconut oil-sauteed plantain slices, guacamole, crispy kale and nooch.

I love healthy nachos for a quick and easy dinner. The best part is, they’re totally customizable. Monday night’s version included delicious plantain slices, my favorite vegan sausage (it’s so spicyyyy and I love that it’s made with simple ingredients), pan-crisped kale and fresh guac. My nacho base is always Late July multigrain chips, which are great because they’re healthier than the typical chips, gluten free and packed with chia and flax seeds. So nachos can definitely be considered a ‘health food’…well, if you use the right ingredients 😛

Nighttime Snack

My latest favorite nighttime snack: chocolate peanut butter protein microwave cake, made with raw chocolate protein powder, peanut flour, almond milk, baking soda and topped with almond butter and vegan mousse.

I have a strange addiction to microwave protein cakes lately. They’re just so foolproof and you can make them almost any flavor. And they just call for toppings, dontcha think?! I recommend coconut milk ice cream, coconut whipped cream or almond butter!

A New Decade (Birthday Weekend Recap)

Hi everyone! Did you all have fab weekends? Mine was the best I’ve had probably all summer, and as promised, I’ve got a recap of my birthday weekend for ya! (Warning: Plenty of photos ahead!)

Who doesn’t want their own birthday banner?

I woke up on Friday to this–my mom taped it up there while I was asleep, how sweet is that?! My morning continued with an unpictured homemade chocolate chip oat flour waffle topped with fresh raspberries and chocolate protein frosting.

I love having a summer birthday because I can always wear a cute dress on my big day!

Most of the morning and afternoon were low-key. My mom and I stopped at the store to pick up a few things she needed and then we headed downtown for a special Olympics event they were holding. We got there around 4, which was when it was supposed to start, but not much was going on when we first got there. There were some cool things set up, like a giant trampoline, BMX ramps, a mini tennis court and a synthetic ice rink but no one was really doing anything. We did end up getting on TV though–one of the guys I know from my TV internship saw us and he interviewed my mom! And I also got some free Starbucks (unsweetened iced coffee) so it was worth it.

Whole Foods cold bar dinner: jicama apple quinoa salad, sweet potato/pepper/currant salad, marinated artichokes, zucchini pickles, chipotle orange tofu, curried potatoes and Korean slaw.

For my birthday dinner, I chose the Whole Foods salad bars! I am obsessed with the one near me, they always have the best stuff and they change it a lot so I can always get something new. My mom got some of the Mexican things they had, I got a random mish-mash of cold salads and my dad got a seafood sandwich (my sister was at her rehearsal for the theatre camp she’s at, so she missed out on the WF fun). Oh, and we of course watched the Olympic opening ceremonies! The best part is watching all the countries come in and making fun of their outfits.

My first birthday cake in a couple years! Totally vegan, and totally yummy!

I’m usually not a huge fan of cake. I’ll eat it if it’s a really interesting flavor, but I definitely prefer giant warm cookies or vegan ice cream for desserts. In fact, the last couple of years for my birthday, I’ve requested gelato instead of cake. But this year, I was super excited to try one of Whole Foods’ vegan cakes. I was planning on getting a slice of raw cheesecake but (full disclosure) the fat and calorie content kinda freaked me out. I loved how simple the ingredients were (cashews, coconut oil, raw chocolate) but I ended up with a slice of their vegan chocolate raspberry cake. And I was not disappointed at all! I split this giant square with my dad, who also loved it. With most cakes, I scrape the frosting off immediately because I’ve never been a fan. But this vegan frosting was so rich and delicious that I couldn’t skip it.

Saturday wasn’t too exciting. I had work in the afternoon, but after dinner, my dad and I watched The Descendants. George Clooney and Shailene Woodley were perfect in it and it was a really great movie. Funny in some parts, and super sad in others. Plus it made me realize that I need to move to Hawaii!

Ready for a day of shopping!

Sunday was the day I was really looking forward to. I decided to forgo birthday presents in favor of a parent-funded shopping spree in Denver. I live for shopping, seriously! I just love looking through all the stores I love, laughing at some of the weirder items and finding the perfect outfits. We started out at the Pavilions at the 16th Street Mall and hit up H&M and Forever 21. Both of those stores are HUGE at that location so it can be kinda hard to find something you want to buy, but it’s still super fun. And I bought my first-ever item at H&M!

We also went to my favorite mall on the south side of Denver. My sister and I ventured off on our own and ended up going to a bunch of stores: Hollister, American Eagle, ALDO Accessories, Bath & Body Works and Abercrombie & Fitch. It sucked though because it was a Sunday, and we got to the mall around 4:30…and all the stores started closing at 6. We got to Abercrombie as soon as they were closing, so we had to rush around trying to find something to buy and I left the store empty-handed. We’ve never gone up there on a Sunday, so it was weird being kicked out of the stores so early, but we’ll know better next time.

Garbanzo is one of my fave places to go! I ordered a plate with falafel, tabbouleh, cilantro sauce, grilled eggplant, lettuce, red cabbage and hummus.

Unfortunately, we didn’t get to go to the vegetarian restaurant because it was a little pricey but I’m planning a visit to a vegetarian/vegan restaurant in my college town sometime soon. We did go to Garbanzo, though, which I could eat at every week. They have a lot of vegan options too which I love and everything there is so fresh and pretty cheap. Their tabbouleh and hummus are my favorite of any Mediterranean place I’ve been to!

So that’s pretty much my entire birthday weekend. I had such a fun time, treated myself a few times and did some major shopping. I couldn’t have asked for a better 20th birthday!

WIAW: Salads and…Snow?

Happy WIAW…and happy birthday to my lovely madre! She is one lucky lady, having both her birthday and Mother’s Day in the same week. I’m so glad school ended just in time for me to be home to enjoy both days with her.

I haven’t gotten around to taking photos of an entire day’s worth of eats (bad blogger, I know, but it’s just slipped my mind most of the time) so this week’s WIAW is just a random compilation of the best of what I’ve been eating this past week along with a recipe and some new grocery store finds.

Breakfast: overnight oats topped with peanut flour paste, sunflower seed butter, mashed strawberries and maple macadamias.

This is my new favorite overnight oats combo. Peanut flour paste, sunflower seed butter, fresh strawberries and maple macadamia nuts are surprisingly yummy together, and taste like summer. The maple macadamia nuts are a new obsession of mine from the Whole Foods bulk section. They are expensive (18 bucks per pounds, yikes) but they’re so worth it.

Lunch: kale wraps with cold grilled tofu strips, sauteed bell peppers and Ginger People hot ginger jalapeno sauce.

Move over, lettuce wraps! Kale wraps are heartier, more nutritious and delicious. One day for lunch I decided I didn’t want a salad but I still wanted to get my greens in. So I took a few heads of kale, partially destemmed them and filled them with leftover fajitas filling, aka grilled tofu strips and sauteed peppers. I drizzled them with my new favorite sauce, and they turned out perfectly spicy and crunchy.

Lunch: chopped kale, sundried tomatoes, artichoke hearts, sprinkle of nooch and vegan Caesar dressing thinned with almond milk.

I’ve also been loving raw kale salads for lunch lately. The key is to let the greens soak up the dressing or sauce overnight and marinade with the other ingredients. Oh, and nooch is a necessity for me. This was a Mediterranean inspired salad that I’m definitely repeating. It would be great for dinner bulked up with some chickpeas and kalamata olives.

Can you believe I wore this outfit on a day it snowed? Okay, so I definitely changed into something more weather-appropriate when I had to go out that night to see a performance of Hairspray (really good, BTW) but it’s crazy to think that it didn’t snow at all here in March or April, and then we get dumped on practically in May. What?!

I’m not complaining though because after a weekend of rain, light snow and thunder (yeah, Colorado’s weird!) it was back to shorts weather by Monday. I enjoyed a little time outside and did a stairs workout that left me tired (in a good way) and hungry. Running up and down the stairs of my deck was no joke, but it was a fun, heart-pumping workout that I like to do every once in a while to change things up.

I’m pretty sure I can’t go to Whole Foods without trying out at least one new thing. When I went over the weekend, I hit the mother lode and got mostly all new-to-me things. So far, I’ve tried the quinoa pasta (better than whole wheat or regular), ginger peanut sauce (perfect for Asian dishes), maple macadamias (0b-sessed!), rice cakes (pretty plain but good with toppings), honey vanilla agave (great sub for pancake syrup) and artichoke hearts (basically like any other artichokes, which I love) so I’m excited to try the lemon Larabar, vegan ravioli and pasta sauce.

First Frapp of the summer: tall mocha light with soy and 1 pump raspberry. So effing delicious!

You know me, can’t pass up Starbucks, especially when it’s half price. Sadly, I only got to take advantage of their happy hour once, but I’m glad I did for the deliciousness above. Mocha light Frappuccinos are my absolute favorite, and they get even better with the addition of a pump of raspberry syrup. If you love the chocolate and raspberry combo, order this. Now.

I’m growing my own cilantro!

Get ready for a whole lotta pico de gallo recipes around here…because I officially have my own cilantro plant! My dad’s growing a mint plant so we are definitely stocked up on two of the best herbs. Last summer I grew strawberries and while there weren’t many and they were tiny, it was cool to grow my own stuff. The cilantro already looks pretty healthy and vibrant, so I’m excited.

California Pizza Kitchen’s half Thai Crunch salad without chicken, dressing or wontons…so basically Napa cabbage, carrots, avocado, edamame, peanuts and Ginger People ginger peanut sauce.

I love me some giant salads. I had one on Thursday post-final at Mad Greens with my dad (no picture, but it was spinach/artichoke hearts/kalamata olives/garbanzo beans/sunflower seeds with fat free balsamic) and I had one on Sunday night to celebrate Mother’s Day. We got CPK to-go and I was debating between a veggie pizza without cheese and this salad. Glad I went with the salad, even though there aren’t any leftovers (boo!) We hadn’t eaten at CPK in well over a year and I almost forgot how much I love them and their giant salads. Plus now I know that they’re totally accommodating to vegetarians, vegans, gluten-free people and also if you’re picky like me and don’t like wontons or restaurant dressings. I totally demolished this salad and for the record, it took up my entire regular-sized dinner plate. No shame!

Definitely freeze these if you want to be able to eat them whole!

I made raw blondies for the first time last summer and they were definitely a hit…well at least with me, since my family’s wary of trying raw desserts. I made a new and improved version the other day and while they’re crumbly and messy, they’re simple and healthy, with just 4 ingredients.

Raw Amaretto Blondies (vegan, gluten-free, raw)

3 100 calorie pack cinnamon almonds (can use plain almonds)

6 pitted dates (I used California pitted)

1/2 tbsp raw agave nectar (can sub raw honey or real maple syrup)

1 tbsp Vega Vanilla Almondilla protein powder (can use other protein powder but this gives it the amaretto flavor)

Blend almonds and dates in food processor or high powered blender until mostly combined and crumbly. Add in agave and protein powder until mixed in. Pack blondie mixture into a square glass dish and keep frozen (so the blondies don’t crumble). Makes 4 blondies.

Easter Weekend in Pictures

Hi bloggy friends! I hope you all had a lovely Easter/Passover weekend (if you celebrate). Mine was really really good, but as usual, it went by super fast and it’s back to the daily grind. The only good thing about that is that the countdown is officially on–4 weeks til I’m no longer a sophomore! Wooooooo 😀 I am beyond excited for summer and everything I have planned for it, plus all the little things that are sure to pop up. Just gotta get through these next few weeks.

I took a bunch (well, not really) of pictures this weekend so I wanted to do a mostly wordless recap of my Easter weekend. So here goes!

Look how bright those strawberries are! My mom bought a huge box of them at Whole Foods for only $5 and even though they started to go bad by the end of the weekend, I got to enjoy them several times over the weekend. They’re my first of the season and were really juicy and fresh. Definitely a sign that summer is on its way! The garlicky kale is a super simple dish that I whipped up three times this weekend–oh yeah, it’s that good!

Garlicky Kale (vegan, gluten-free)

large handful curly kale, washed and patted dry

1/2 tsp olive oil

1/2-1 tsp minced garlic (or freshly grated garlic clove)

sea salt, nutritional yeast and black pepper, to taste

Heat olive oil in a small sauce pan over medium heat. Add kale and salt and pepper, until the kale starts to shrink and gets crispy edges. Add garlic to pan and cook until fragrant and browned. Sprinkle nutritional yeast on top and serve as a side dish (makes 1 serving).

Saturday was fairly busy but pretty fun. My sister and I went for a walk, then my dad and I popped in at my pastor’s house for his birthday open house and later my whole family went out to eat to celebrate my dad’s birthday a few days late. The restaurant wasn’t too vegan friendly, but I did get a yummy homemade-style black bean burger with a side of avocado and black bean salsa. Yum!

Coloring Easter eggs is one of our family traditions. My sister didn’t join in on the fun this year because of homework, but I had fun dyeing the eggs. Do I have a future as an artist? Ummmm, probably not!

Besides going to church on Easter (I always love the holiday services!), we also went to Starbucks where I got my new favorite unsweetened iced coffee, played tennis for 45 minutes, snacked outside in the gorgeous weather (sunny and in the low 70s), colored eggs, made a special dinner and Skyped with my grandma and grandpa.

My mom still hides Easter baskets for me and my sister…yes, we are still 5 years old! Haha, just kidding, but I still think it’s fun to go find the basket and see what’s in it. This year, I got some Sally Hansen Salon Effects nail strips (super excited about these!), some sparkly green nail polish, guava-scented body wash from Ulta, mini Sweet Tart bunnies/ducks/chicks and two new-to-me Chocolove dark chocolate bars. My mom knows me so well 😀

My Easter dinner: grilled chili lime tofu and mini sweet peppers, broiled lemon pepper asparagus (tops only, the best part) and cheezy quinoa (sprinkled with nooch).

While the rest of my family enjoyed their carnivorous dinner (flank steak, asparagus and cheesy mashed potatoes, in case you were wondering), I had a very vegan and very yummy dinner. It was my first time grilling tofu and I was a fan. I think next time I’d get extra firm, rather than super firm sprouted tofu, since it was kinda bitter, and I’d try out a marinade, rather than a seasoning on the outside. But still a really nice Easter dinner.

I really wanted to try the new So Delicious almond milk ice cream sandwiches, but my Whole Foods didn’t have them. I did find these, which are soy ice cream, and actually really good, if really small. I haven’t had an ice cream sandwich in years, but these are better than regular dairy ice cream sandwiches. They also have coconut milk ice cream versions, if you like coconut milk.

Monday came early–at 6 am, to be exact. I wanted to stay all of Sunday so I could spend more time with my family, so my dad had to take me back up to school on Monday morning and we had to leave at 7. Luckily, we made a stop at Starbucks and I got my first Frapp in about six months. It was the perfect little pick-me-up!

WIAW: Weekend Food and Fitness Thoughts

Hi girlies! Hope you enjoyed your weekend! As I mentioned in my last post (which I loved all the comments on, BTW!) I went home this weekend, actually for the first time since spring break. And I’m headed back home this weekend, because of Easter. I know it seems like I go home for the weekend a lot but I only live about a 2 hour drive away, so it’s not a huge haul plus having no car means my weekends on campus are super-boring (yet really good for getting homework, papers and studying done). Usually I go home every other weekend, and it’s nice to get a little break from college life, and I love my family to death so it’s a win-win. Anyways, I wanted to recap my weekend for this week’s edition of WIAW. Instead of just sharing all my eats (most of which went undocumented, unfortunately), I also wanted to give you all a little insight into what I was thinking regarding food/fitness this weekend. As I’m sure you can guess, I still struggle a lot with disordered thoughts but I think letting them out is a good way to figure out where they’re coming from and how to refocus them.

Oh, and P.S. today (Tuesday) is my daddy’s birthday! I won’t get to be there to celebrate with him but I’ll just have to have a belated party for him this weekend!


Friday

After writing my hand off finishing an essay exam in my only Friday class, I waited around until my mom and sister got here to pick me up. Usually it’s just my mom, since she doesn’t work on Fridays, but it was their spring break this past week, so my sister was able to come up and get me too. We are really close, so I loved seeing her again.

We had plans to go out to lunch, which I was really excited for. My mom let me pick the place, and being indecisive as usual, I had come up with 3 or 4 possible places. We checked out two of them and finally decided on Ingredient, which is a small chain restaurants with locations in Colorado (where we went, obviously), Missouri, Kansas and Nebraska. I had looked up the menu ahead of time and I found plenty of things that were Ashley-friendly, aka vegan (or could be modified to be vegan) and ‘safe’, ED-wise. Yes, looking up menus/nutritional facts ahead of time is a habit I’ve clung to, I pretty much do it every time I’m planning on going out to eat, not just to find the lowest calorie item, but also now because I’m eating primarily vegan, and non-vegan things can be hiding in almost anything! I would like to move away from the calorie researching thing, but it’s still a scary thing for me not to know the calories in something.

Anyways, we settled on Ingredient and we enjoyed the sunshine and warm weather outside as we waited for our food. Like I said, the restaurant had a lot of options for me, but I ended up getting something ‘safe’, aka a build-your-own salad. But to be honest, I didn’t order it just because it was safe, but because I really love getting to make creative salads. I ordered napa/bok choy mix topped with fresh jalapenos, artichoke hearts, fresh strawberries, white beans and fat-free raspberry vinaigrette. Random, I know, but it was what was appealing to me at the moment. And I did love the salad, but I mostly just ate the toppings because the lettuce ended up being hearts of romaine, and it wasn’t very tasty. But…I kinda regretted getting it, because I saw that they had other yummy-sounding options, like a falafel sandwich, a veggie burger with whatever toppings you wanted and make-your-own pizza (which I could have gotten without cheese). But I chose the ‘safe’ option, and while it was good, it wasn’t very satisfying.

Saturday

I woke up bright and early (aka like 8 am) because my dad, sister and I had plans to play tennis! We’ve been playing tennis on and off during the spring and summer ever since my sister and I went to a tennis camp 5 years ago and discovered that we really liked it. Now it’s one of my favorite forms of exercise, because it’s challenging mentally and physically, and I can do it with other people, namely my dad and sister. We kinda play doubles, only my dad is on his own 😉 We had breakfast and set out for the tennis courts that are about a 10 minute drive from our house–which is HUGE, because almost nothing is within 10 minutes of our house. We live in the middle of nowhere 😛

The weather was gorgeous, even at 10 in the morning. It was the perfect temperature (around 70 degrees) and the sun was out with almost no wind. We played for almost an hour, but I wasn’t even close to being tired. In fact, I felt like we had only been playing for half an hour! The only issue was, I tripped on my way back from class on Friday (klutz status!) and totally tore up both knees, plus a few layers of skin ripped off one of my big toes. TMI, I know! I was wearing band-aids all over, and of course, my right knee was kinda stiff because the skin was trying to grow back and all that jazz that happens after you fall down. It didn’t really impact my playing, just that I wasn’t able to run to get the ball as much as usual. This made my ED voice act up big time. He was basically just telling me that even though we’d been playing for an hour, it was barely a workout, because I didn’t run as much as I usually would and mostly just walked to get the ball when it went out of the court. Okay, the reason I play tennis is not only to burn calories, but also because I truly love it, but it still made me feel ‘bad’ and ‘fat’ that I hadn’t been able to exert myself as much as usual.

Lunch was…lame. Like I do on most weekends at home, I take advantage of the abundant (or sometimes not-so-abundant) selection of produce and made myself a salad. I was going for an Asian-ish twist, so I whipped up some peanut dressing made with peanut flour and sriracha sauce, and topped the greens with a little edamame, a few mini sweet peppers (a new obsession) and cubed tempeh heated up on the stove. I also had some frozen pineapple on the side. Unfortunately, the dressing turned out to be bland and the edamame was freezer-burned so the entire salad was not too tasty. I ate all the pineapple, peppers and most of the tempeh but had to throw the rest out. Better luck next time? And yes, I know this was nowhere near enough food, especially since I had just played tennis, but I was just not feelin’ it. Of course, later on I was starving–duh, I had barely eaten before! I’m still trying to work out my weird hunger cues–I am rarely hungry after working out, but I definitely feel it later on.

After church with my family (a guy from Jews for Jesus came and told us all about the Seder meal for Passover–it was really cool!) we headed home for some dinner. I was very hungry even after having a decent snack a few hours earlier. My mom was going to grill sausages (chicken for my family, veggie for me) and have some salad and fries (aka sweet potato tots for me) on the side. I was excited…until I saw the sausages she bought for me. They were the Field Roast brand, the Mexican chipotle flavor. Um yeah, these sounded totally delicious…but 250 calories for one sausage? That’s about how many calories I’ve been eating for dinner, never mind we were also having stuff on the side! I freaked out, despite the fact that A) they sounded really good, B) they are pretty healthy and non-processed and C) they have 23 grams of protein per sausage (not too shabby!) But the disordered side of me went straight towards the ‘high’ calorie count (which is honestly not that high). I tried to compensate by skipping a bun (I’m not really a fan of them anyway) and only having a half serving of sweet potato tots. This didn’t stop me from mentally beating myself up after dinner, especially when my dad said, “Wow, you must have liked it!” because I ate the whole sausage. Well, yes, I did like it, but I interpreted his comment to mean “Wow, you’re a pig!” Unfortunately, I let his comment get to me and after dinner, I tried to feel better about how much I had eaten (not that much in reality, but more than I’m used to) by doing some cardio circuits for 15 or 20 minutes. I do this sometimes, try to make up for eating what I see as too many calories (aka the number doesn’t fit into my set plan for the day, despite the fact that it might still be not enough) by working out extra. And on top of this, it wasn’t enjoyable because my knee was still hurting and my ankles were sore. That’s been freaking me out–my ankles have ached whenever I’ve been doing cardio since this weekend and I’m not sure why–and I’m scared I’ll have to take a break from daily workouts, which is a big no-no for me.

Sunday

Sunday was a LOT better for me, thoughts-wise. I had breakfast with my family (BTW, chocolate and peanut butter Puffins taste amazing in unsweetened almond milk, they sweeten it up and make it taste like cookies and cream!), got ready for the day and played a few tricks on my parents. It was April Fool’s Day, after all! They were a little lame, like prank calling them on their cell phones using blocked numbers (they somehow knew it was me and my sister) but the best one was pouring some vinegar and tonic water into my dad’s flavored sparkling water at lunch. He totally spit it out and it was just hilarious! I was considering putting some toothpaste in place of the cream in the Oreos we had in the pantry, but I didn’t want to be too mean 😉

Speaking of lunch, it was a winner, especially compared to Saturday’s. I whipped up a quick pasta salad using quinoa pasta (love this stuff), chopped baby carrots, edamame and spicy peanut dressing (basically the same as on Saturday, but I got the proportions right this time so it actually tasted like something). I also had some green grapes on the side, as well as garlicky kale, which I sauteed on the stove with some salt and garlic until it was crispy. It was so good, I am definitely making this as much as I can! The best part of lunch, though, was enjoying it out on the deck with my family reading the Sunday paper. I love getting to eat outside and enjoy a leisurely lunch, which I never get to do at school. Only 4 and a half more weeks til I can eat outside every day!

Before my mom and I had to hit the road, my sister and I went for a quick walk on our street. The weather was perfect and it’s hard to believe it was almost 80 degrees when I was home–it’s been cold, cloudy and windy the past two days, plus it snowed…Colorado is bipolar! 😦 It’s supposed to warm up by tomorrow though.

Back in good old FoCo, my mom and I had dinner at Garbanzo, since they were having a buy one get one deal. It was really crowded and busy because of this, but still enjoyable. It’s one of my favorite fast casual places to eat at, since it’s all Mediterranean cuisine, which is one of my faves, and they also have a lot of veg options. I got my usual plate of hummus, cilantro sauce, fresh red cabbage, tabbouleh (they have the best!), lettuce and I tried the portobello mushroom this time. I would probably skip it next time, since it was really watery, but it wasn’t too bad. I ate it all minus most of the mushrooms and loved it. And surprisingly, I didn’t feel too guilty about it, which I usually do after eating out. However, Garbanzo is a really healthy place and I truly just love it.

So yes, I realize this was a monstrous post, but it really feels good to get all my thoughts out there and just be honest with myself and all of you. I really love how Tessa does this with her WIAW posts, because I can always relate, and I think it just adds something rather than just sharing what I ate. I think it’s more important to share the thoughts and feelings behind the food, rather than the food itself.

WIAW: Weekend Wrap-Up

Hey hey hey 😛 Glad you all really liked my last post! I loved that so many of you could relate to my “confessions” and you shared some of your own. There’s no shame in being different!

Peas and Crayons

This past weekend I was lucky enough to get to go home (in case you’re wondering, I go home roughly every other weekend–I love my family too much not to, plus I get oober bored on campus on the weekends as I have no car 😦 ) and as those weekends usually do, it zipppppppped by! But it was jam-packed with awesome adventures so I’m not complaining!

Friday night my wonderful daddy picked me up since my mom and sister were getting ready for the play my sister was in. We stopped at Mad Greens, one of my favorite fast casual places, and I got a Hugh Jass salad, as usual. They also have a few sandwiches, but why not go for a giant bowl of greens and other good stuff, right? I got the Da Vinci salad, which was spinach, roasted artichokes (my fave), roasted red peppers, grilled portobello pieces and I subbed in edamame for the cannelini beans. It was topped with a spicy nonfat yogurt dressing which was yummy. The salad was giant but really good. Every salad I’ve ever gotten from there is good, so if you’re ever in Colorado (specifically Denver/Boulder/Fort Collins) and you love a good salad, make sure to stop by!

Back home, I got to spend some quality time with the little sis cracking up while looking at guys clothes on the Abercrombie website. Don’t ask why, we’re weird awesome.  

Saturday started out on the right foot–with a pumpkin spice Vitatop! I wouldn’t say they’re my favorite flavor (that would probably go to golden corn) but I love that they’re seasonal and they smell so good when you toast them. But lunch was even better…it was my first sweet potato in probably over a month! I’ve been missing them like crazy because I hadn’t been able to find them near me, but now I’m finally reunited because my mommy bought me a bunch to take back to my dorm. I topped half with red pepper flakes (I like things spah-cy!) and the other half with apple pie spice and APCB. With a slice of crispy tempeh ‘bacon’ and frozen mango on the side, it was the best lunch I’ve had in a while.

After a lot of procrastinating and filling out some job forms (oh yeah, I finally have my first real job…wooooooooo!) my dad, sis and I embarked on our many errands. And…my sister drove! She just got her permit 6 months ago and I’ve never been in the car before when she was driving, so it was quite the experience. Don’t worry, I made it out alive 😉 Just kidding, she’s an awesome driver! It was just so weird to have her in the driver’s seat, instead of me or my dad. But anyways, we went to several places and then made a final stop at Starbucks! I’ve also been missing the ‘bucks, there isn’t one within walking distance of where I live 😦 I got the salted caramel mocha light Frappuccino and it was one of the best drinks I’ve ever had there! I love their light Frapps, partly because they’re ‘safe’ for me (since they’re made with skim milk and have no whipped cream) but also because they’re just so good and customizable. I really wanted to try a seasonal Frapp, and the pumpkin spice didn’t appeal to me as much, so I went for the salted caramel mocha and I don’t regret it. It had a toffee kinda taste to it and you could definitely taste the salt, but it was not too salty or sweet–a perfect balance. It sounds like it would be so weird, but trust me, it was the bomb.com and you should try it if you’re brave enough 😛

After dropping the sister back off at home (she had her final play performance–which she did so well in, btw! the show was really funny also), my dad and I left yet again to finish our errands. This time, I was pumped because we were going to Whole Foods, aka my favorite place in the whole world! We also made a stop at Sunflower Market, which I’d never been to before. I totally didn’t know what to expect, but I was pleasantly surprised. It was like an indoor farmers market mixed with Whole Foods. They didn’t have as much of a selection as WF, but I managed to be able to find a few items I’ve been dying to try–PB & Chocolate Puffins, Clif Mojo White Chocolate Mac bars and the new Clif Kid Zbar Full Moon Brownie. I almost squealed when I saw these things, but I restrained myself 😉 I also got a tiny white pumpkin to decorate my room for Halloween of course! And we couldn’t not stop at Whole Foods, so I picked up a bunch of stuff there, including a new-to-me item, meatless pepperoni slices. They’re made by Lightlife, and they’re actually pretty decent, a little chewy but a good sub for pepperoni. Honestly, I haven’t had real pepperoni in so long so I can’t really remember what it tastes like, but I think this was pretty similar, just not greasy at all!

Whole Foods haul: unpictured Medjool dates, Pacific Naturals unsweetened vanilla almond milk, Fage 0% blueberry acai, Oikos blueberry, Food For Life brown rice tortillas, EVOL veggie fajita burritos, cubed butternut squash, LightLife soy pepperoni slices, dried pineapple, Late July mild green mojo chips.

 Sunday was pretty chill, we went to church in the morning (which I’ve been missing, I haven’t gone to church in over a month I think), came home and had a quick lunch, then me, my mom and sister hit the road…for some retail therapy, of course! My favorite mall is on the way back to campus, so we decided to do a little shopping. It was my sister’s idea, believe me 😛 Anyways, I wasn’t exactly planning on buying anything, but I can’t not buy something if I’m already at the mall! I ended up getting this adorable cream cable knit sweater with cropped sleeves from Hollister. It’s incredibly warm (and a little itchy, ’cause it’s part wool) but really cute and I can’t wait to wear it. After our little outing, we continued on towards campus, and stopped at Noodles for dinner. I haven’t been there in a few months (mostly because my mom hates it so we usually never go when she takes me out for dinner) but surprisingly she agreed to it. I wasn’t feeling my usual (pad Thai with shrimp or pasta fresca with no cheese) so I got the Veggie Med flatbread without feta…only it ended up coming with feta. I hate when restaurants screw up your order, but it wasn’t too big of a deal for me to pick it off. It was super delish, with all these yummy veggies and some sort of spicy Mediterranean sauce. Unfortunately, I didn’t feel like being a creeper and snapping a pic of it, but hopefully you can picture it 😉

Monday's lovely outfit: orange sweatshirt (HCo.), owl pendant (AE), brown striped leggings (AE), unpictured brown Bearpaw boots I love my Bearpaws to death and I'm so glad I can wear them again!

I finally got to try this, and OMG, so good. It might even be better than the mountain mix which is my favorite. I love the soy white chocolate chips and pretzel pieces throughout. I just wish the chips were on top because for some reason, I prefer to pick them off and save them for the end, but I think they actually tasted better mixed in.

 

Tuesday's outfit: grey duster sweater (A&F), dark grey lace tee (HCo.), coral culottes (A&F), grey sweater tights (Target), unpictured grey Bearpaw boots. I just love how vibrant the shorts look against all the grey!

WIAW: Randomness

Some weeks, I just don’t get around to taking pictures of all my meals for WIAW. Blame it on laziness busyness. I was running around like a crazy person this last weekend and I kinda forgot to snap some pics of all my food. Most of it was pretty boring (aka using up whatever I could find at home since there wasn’t much Ashley-friendly food) but with the stuff that was good, well…I was too busy having fun to really remember to get pictures.

So for this week’s WIAW, it’s pretty much some random food pics that I managed to take within the past couple of days, plus some non-food stuff (aka outfits and such). Oh, and a random survey. Just the way I roll. Random is good, peeps.

Peas and Crayons

Early morning breakfast (hence why the lighting sucks). Coffee overnighters topped with PB Puffins. Probably my favorite overnight oats combo right now.

What was the last thing you bought? The necklace in the picture below. Not even kidding. I’ve been dying to buy the owl necklace since I first saw it and I finally had to cave and buy it online, since I never saw it once in any American Eagle store. Stupid shipping & handling, but it’s well worth it for this beauty.

What’s the weirdest thing anyone’s ever asked you? If I’ve skipped a grade. IDK where that came from, especially since I didn’t know the person who said it. I guess I am small for my age, though. Someone thought I was a HS freshman when I was a senior. Ugh.

A GIANT date! Okay, so it doesn't look so big, but trust me, it was like almost the size of my palm!

A typical yogurt mess: plain Greek yogurt mixed with blueberry protein powder, topped with Bear Naked Fit triple berry granola. It's even better in a pink bowl.

Best Halloween costume? Oh gosh, I loved so many of them. I was a blue M&M once (funny story: a few years after I wore this costume, a guy in my class said he was going to be Eminem for Halloween, and I was so naïve that I said “What color?” since I thought he was talking about M&Ms. Silly child!), bride of Frankenstein and a pirate. Uh, yeah, I think that was my favorite, since I wore obnoxious boot covers with jangly coins on them. I like being loud.

Amazing froyo (when is it ever NOT amazing)? Irish mint swirled with Oreo froyos, topped with raspberries and strawberries. Bliss in a cup.

What are you wearing right now? Look at the picture below. That’s exactly it. A light yellow hoodless sweatshirt from Hollister (hand-me-down from the lil sis. Anyone find that weird?), khaki twill shorts from Hollister and got-wet-in-the-random-rainstorm tan mocs from American Eagle. This is what I consider casual.

I used to be scared to wear yellow. Silly me.I'm really into playing around with the color and saturation of photos. It's kinda an obsession now.

 

What is your favorite food that your mom makes? Definitely this really really good chile lime pasta (usually with shrimp). She totally came up with the recipe on her own, and it’s super simple but delish. It has roasted bell peppers, Williams Sonoma chile lime seasoning and it’s just downright amazing.

Green goodness: Late July green mojo chips (aka crack chips), spicy guac/Greek yogurt dip. It's easy being green.

Best concert? The best one I’ve actually been to would have to be Relient K. But my dream concert is Lady Gaga. Shocker, right? But I’m dying to dress up in one of her bizarre outfits without getting looked at like I’m cray cray.

Poor mocs. All wet from the freak rainstorm on my way back from classes.

Things you do for fun? Shopping. Tennis. Mountain biking. Modeling photo shoots. Texting (well, I mostly do this when I’m bored). Fashion magazine-reading. Blog-surfin’ on my iPod touch. All the stuff cool kids do, obvs.

My second-ever Halo bar! I liked this one almost as much as the S'mores kind. I think I love vegan marshmallows more than regular ones, especially when they're combined with peanuts and flax seeds...
