Week through my iPhone: Part II

Well, it’s been almost a week since I last posted, whoops! I have some time off coming up so maybe another post will make it in there somewhere. I can’t make any promises though. I love being busy though — it makes time fly (which is sometimes good, sometimes bad…like when my weekend ends too soon).

It hasn’t technically hit 100 degrees here yet, but the heat index has been in the 100s on some days. I only hate it when I’m trying to push through a run or when it messes up my hair. Humidity+me = super sweaty hot mess. Is it any wonder I want to move to the desert?

Running has been going well. Still running between 2 and 3 miles, but trying to run almost every single day, even if it’s just a mile on the treadmill mixed with walking. I ran in the drizzle one day last week, and it was the best. I was basically alone out on the trail, and it wasn’t too hot. The above picture was from a very sunny, 90+ degree run.

I’ve been shelling over $5 for figs on the reg at Whole Foods and I’m not mad about it. Especially not since I discovered the best flavor combo ever — figs and coconut butter. The coconut butter formed a little shell on this fresh-from-the-fridge-fig and it was so creamy. Why do I have such expensive tastes? At least I never eat out!

Work is…work. Some days I wake up at 2 am ready to hit it and other times I think “I wish I could lay in bed forever”. But having little moments like this makes it better. Some videos on the NBC feed are really…weird? Yeah, I think I’ll pass on running a package about overactive bladders in my newscast, thanks.

And I’m trying to find work-appropriate things that work in the summer. The station is air-conditioned, so that means cardigans are a must (and I can’t get away with tanks anyway). I also got called out for wearing a dress that was ‘too short’ so I’ve been more cautious ever since. The dress code is casual, but apparently a dress that is more than an inch or two above the knees is not okay (but basketball shorts and a T-shirt are?).

It’s official — Alejandro is getting old. Okay, he’s only 5 years old, but he’s almost 100 K miles. Whattttt? He’s seen me through two years of college and now my new adventure in Tulsa…maybe another move on the horizon in a year? I just hope he holds out that long — Hyundais are pretty reliable!

On my last trip to Whole Foods, I was upset when I walked through the baking aisle and my beloved stevia-sweetened chocolate chips were nowhere to be found (aka sold out). I basically live off those things, so I was devastated. But when I finally spotted the new flavor of my favorite chocolate bar brand I decided to buy two bars. Well, I should have bought more because this stuff is incredible. It tastes exactly like chocolate-covered espresso beans but it just has three ingredients — cacao, fair trade coffee, and cane sugar.

I generally wear contacts because it’s just easier (especially when I’m running) and I’m lucky that my eyes can tolerate them, but sometimes you just gotta wear glasses. Or in my case, you use them as a fashion statement. I’ve been lusting after hipster glasses for years, and finally got some (real ones) of my own. These were $50, lenses and all, because I took advantage of a first pair free deal on Coastal.com. They arrived in my mailbox within just a couple days and they’re basically perfect. No, I promise I wasn’t asked to write a glowing review (or any review, period), I just really loved my first experience with Coastal.

More randomness thrown in a bowl and called a meal. This was my favorite homemade sweet potato hash with added in spinach, hemp tofu, cauliflower and topped with homemade hummus, coconut ‘bacon’, sprouted salted nut mix and spicy peppers. Colorful, balanced and oh so tasty. And easy. I haven’t been in the mood (or had the time) to make anything complicated and that’s fine with me.

My Week Through Phonto

No WIAW this week–I know, how lame! Kidding, but my eats have been kinda lacking lately. Think homemade waffles with protein frosting for breakfast, steamed edamame with fresh fruit for lunch, DIY trail mix for snacks (I’ve been loving on the dry roasted edamame, raisin, pistachio and mini chocolate chip combo!), chilled stirfrys for dinner and healthy homemade baked goods for dessert. Okay, maybe not so boring since I love all of it (especially the protein powder-packed version of my mocha chip banana bread!) but you’ve all seen a million photos of these things already. So I thought this week I’d switch things up and share my favorite things from the week–in Phonto form!

I professed my love for planks in last week’s Friday Faves–and this is why! My arms and core have been getting so strong because of them, which is awesome. I love body weight workouts because they make me feel badass–like I’m building strength all on my own, without any equipment!

I love love love Starbucks, especially their iced drinks. I could probably just live on their plain iced coffee sweetened with stevia or their light soy Frappuccinos. Or maybe even their unsweetened passion iced tea. But these new Refreshers are definitely delicious, and totally live up to their name. When they were offering them free, my mom and I each got one. I loved the berry one most but the limeade one was decent. I’m excited to try their VIA packets though!

Rain looks so pretty, especially with a rainbow, but it sure isn’t pretty to drive in! I got caught in it on my way home from my internship and the worst part was the crazy wind. I made a quick stop at Whole Foods and almost blew away on my way out! But when I got home, I spotted this rainbow and had to take a picture because it looked gorgeous.

I am obsessed with the party or color blocking nail trend. Basically you paint glitter over one of your nails or paint one of them a different color. So fun, and a little more grown up than painting every nail a different color! My favorite shades at the moment are coral and lavender. Who says they don’t go together? I make them work 😀

I’ve mentioned it no less than a million times but I’ll say it again–I lurve me some spicy foods! I’m not one of those wimps who thinks jalapenos are too hot…nope, I take my spicy stuff seriously. So these new pickles are right up my alley. They’re perfectly spicy and really crisp and fresh. I only eat Claussen pickles because they’re always kept refrigerated so they taste better. If you like spicy things like I do, please look for these. You won’t regret it…well, maybe your tastebuds will a little bit!

I used to hate stripes with a passion, dunno why. Now I’m totally embracing them, especially this particular shirt. It’s just so simple yet cute, slightly cropped and kinda loose fitting, just the way I like my tees in the summer.

I’m so indecisive that it’s no wonder I turn to snackplates almost every day. I’d rather have little bits of a lot of stuff than make a commitment to one big thing most of the time and this dessert was no different. I only had a few pieces of a cookie left so I paired it with some vegan coffee ice cream, my favorite kettle corn and some super juicy pineapple. I did eat them all separately though, otherwise that would just be weird and gross!

WIAW+Facts of Life

Hey lovelies! I loved all your responses to my weekend update post. I honestly had no idea that everyone would be so in love with my glasses! I think they’ll be making a more regular appearance around here 😉

It’s that time again–WIAW! I can always gauge how quickly a week is going by if I find myself scrambling to gather pics for WIAW. That’s a good thing, though; I hate when school weeks drag on forever. Especially when I have something to look forward to on the weekend. Oh well, that’s life. This week has been going by decently fast, which is great, because I can’t wait for this weekend–or more specifically, Saturday. I’ll get to that soon! For now, just enjoy some foodie pics and a little blogger questionnaire that I found on Alexis’ blog.

Peas and Crayons

How could I start a morning without overnight oats? I couldn't, of course, you know me. Today's lovely creation was dark chocolate oats topped with a spoonful of Whole Foods chocolate apple crunch trail mix. Alongside a spicy veggie sausage and gummy vitamins. A heart bowl makes it that much better. And cuter.

 Fact 1) I have never been to the East Coast, except for Florida. Yes, I realize that’s pretty crazy, especially to all you (many many) East Coast-based bloggies out there. But hey, I’m a Western girl at heart. Born and raised out here, baby. And I don’t plan on ever moving out of this region. I ideally want to move to California (either San Diego or San Fran, but I’m not too picky), Phoenix (my birth cit-ay) or Denver. In that order.

Quickie lunch between classes is always fun. Strawberry Oikos Greek yo' cup, all mixed up with Bear Naked Fit triple berry crunch granola. So good for a super-fast lunchie.

 Fact 2) I go to the school that had the major pool party over the weekend that’s all over the news and YouTube. I mean, really, guys, The Huffington Post covered it. Way to take away CU’s party school status, CSU. Go Rams?????

Ahoy matey! Okay, I'll stop trying to be cool. Outfit of the day, inspired by all things nautical (and nerdy): royal blue striped tee (Hollister), navy culotte shorts (Abercrombie & Fitch), ultra cool nerd glasses.

 Fact 3) I collect rubber ducks. Oh yeah, you know you wanna be friends with me now. Seriously, though, I’ve gotten 2-3 every year of the past 5 years or so (from an annual Labor Day rubber duckie race in a ski town near me) and I’ve got quite the collection now, from a cheerleader duck to a Mardi Gras one.

Snackplate time! Literally, on a plate. Kashi TLC crackers, agave/almond butter dip, frozen banana slices. Sweet, salty and cold all in one. But mostly just yum.

 Fact 4) Lady Gaga is my favorite. Despite her weirdness at the VMAs the other night (what were you thinking dressing like a dude, LG?), I will forever be a fan of her music. She is just so chill and I love that she isn’t afraid to make a fool of herself with her outfit choices. Most of them I approve of (but Sunday night’s choice? Not so much.)

 Fact 5) I really LOVE spicy foods! Seriously, give me spicy over salty any day, I can take it. Some of my favorite spicy foods include: Indian curries, fresh jalapeno peppers (especially on veggie burgers), really hot salsas, chile powder and the spicy veggie sausages I have every day for breakfast.

Overnight oats making their first (hopefully not last) appearance at dinner time! These were my PB&J Remix oats: 1/3 c. thick rolled oats, mixed with raisins and topped with PB Puffins and fresh black grapes. Heaven in a bowl, I tell ya!

Fact 6) Yearbook nerd alert! Yes, I was on my school’s YBK for 3 years in high school. I was a section editor, went to yearbook camp twice and even traveled three hours three different times to go to a yearbook conference at the school I’m going to now. Yeah, I was a hardcore yearbooker.

I like to make a mess when I eat. Plain 0% Fage mixed with chocolate whey protein powder and 2 duplex cookies. Who said yogurt messes couldn't include cookies?

Fact 7) I love Mediterranean/Greek cuisine. Falafel, hummus, tabouleh, vegan gyros, pita, baba ganoush, olives–it’s my favorite cuisine, hands-down. I think I could totally live in that area and be completely happy.
