So Many Surveys

I think I have a problem. I literally cannot turn down any fun surveys that come my way! What can I say, I love wasting my time filling them out and they’re just fun to do. Yes, basically I have no life 😉

This is the healthy living survey that’s been floating around for a little while now. I just spotted it on Tessa’s blog and thought “Why not?” Now that it’s kinda sorta summer for me, I have plenty of time to blog and what-not, so if any more surveys pop up this summer, I will definitely be filling them out.

1. What did you eat for breakfast?

Peanut flour pancakes with homemade strawberry jam and sunflower seed butter.

2. How much water do you drink each day?

Not enough, that’s for sure! Now that I’m home, I think I’m a little better with this, since I drink water with both snacks and also at lunch, but usually not any other time. I love water (especially with a little vanilla stevia added in) but I just don’t think about it. Something to work on, especially as the weather heats up this summer.

3. What is your current favorite workout?

Either tennis, or the daily cardio circuits I do courtesy of some free iPod apps. I would like to mix things up and buy different workout apps or just try new workout routines. I’m starting to feel burned out, which is no bueno.

4. How many calories do you eat each day?

In an effort to not be triggering, I won’t say how much but let’s just say it’s not a  healthy amount. I am still working on bulking up my meals and working towards eating about the same amount last summer when I was able to maintain my weight and feel good. To be honest, I’m not quite sure how much I actually need, and maybe even the amount I was having a year ago wasn’t quite enough but it’s definitely a step in the right direction.

5. What are your favorite healthy snacks?

Oh gosh, I have a ton! I can’t list them all but here are a few…

  • Larabars (love the cappuccino and chocolate chip brownie flavors, excited to try the brand new seasonal flavors…)
  • Pure bars (chocolate brownie, wild blueberry and cranberry orange are my faves)
  • Clif Mojo bars (obsessed with the mountain mix and white chocolate macadamia kinds)
  • Fruit! Frozen, fresh or dried.
  • Almond milk ice cream/banana soft serve. What, it’s a lot healthier than actual ice cream, but it tastes so creamy and good!
  • Snack plates, with random items

6. What do you usually eat for lunch?

When I was at school, it was mostly a bar (see above) paired with fruit and some baby carrots, since I was usually on-the-go. Now that I’m at home, I love having the time to prepare all kinds of things, from nut butter-topped sweet potatoes to epic salads.

7. What is your favorite body part to train?

Abs/core! I have definitely improved my core strength over the past few months and I love feeling that burn in my abs.

8. What is your least favorite body part to train?

I have to go with legs right now. My left ankle has been killing me every time I try to run or even walk for a long time and it’s not fun. I’m not sure what’s up with that…

9. What are your “bad” food cravings?

I still have a lot of foods on my “bad” list, but I honestly don’t crave them at all. I like eating healthy and my indulgences tend to be on the healthier side as well, but I guess I’ll go with dark chocolate. I used to say I didn’t like it, but I was totally lying to myself. Now I allow myself one square a day (Chocolove FTW!) but that means that chocolate is still somewhat of a fear food for me.

10. Do you take vitamins or supplements?

Yes! I have since I was a little kid, my parents were always good about making us do that. Currently I take a gummy multivitamin and a gummy calcium/vitamin D supplement, since I don’t get enough of those as a vegan.

11. How often do you eat out?

During the school year, it was about once every two weeks, because my mom had to take me back up to school after a weekend spent at home so we’d eat out at fast casual places like Chipotle, Panera, Noodles and Mad Greens. Now that I’m home for the summer, we probably won’t eat out as much, but my mom’s birthday (and Mother’s Day) are next week, so we’ll definitely be going out to a real restaurant for that!

12. Do you eat fast food?

No way! I haven’t had legit fast food in at least 5 years and I don’t miss it at all. We never used to eat much fast food anyway. Now when we want a quick meal on-the-go, we hit up places like the ones I mentioned above. They are all super tasty, have plenty of healthy options and even some things I can veganize, which is always a win.

13. Who is your biggest supporter?

This is tough, because I have three for sure–my mom, my dad and my little sister. I truly enjoy spending a lot of time with my family. We are really close, I know they’ve always got my back and we all share the same sarcastic humor 😉

14. Do you have a gym membership?

Nope, but in the fall, my apartment complex has a fitness center which I hope will be a good place to workout!

15. How many hours of sleep do you get each night?

I am high-maintenance in that I need 8-10 hours per night to function, otherwise I’m just dragging through the afternoon and sometimes end up with a headache. Since I’ve been home, my sleep schedule’s been thrown off a bit, but I’m sure I’ll get back into one soon!

16. Do you have a cheat day?

No. It’s still a work in progress, but I’m feeling better with eating stuff I love each and every day in moderation. I’m not sure I can call them treats, since they’re all pretty healthy, but if I want something, I will usually have it.

17. Do you drink alcohol?

Honestly, only small sips here and there when my parents offer it. I am underage, and I would rather wait til I am 21 (in a year and 2 ish months!) to drink more than that. I did enjoy a little bit of my mom’s homemade margarita on Saturday–had to celebrate Cinco de Mayo of course–and it was pretty good.

18. Do you have a workout buddy?

Usually not, but for tennis, I always play with my dad and sister.

19. What is the best thing that has changed about your life since committing to a healthy lifestyle?

It has helped me move away somewhat from my eating disorder. In my worst days, I’d eat all sorts of low cal crap, like sugar-free Jell-O and Lean Cuisines because I genuinely believed they were healthy, since they were low fat and what-not. Now I now that some fats are healthy and I enjoy them every day, especially in nut butter form! It helped me transition into veganism, which feels right for me and my body, and has opened me up to new foods I never would have thought to try before.

20. What was the last healthy thing you did?

I went for a walk with my dad yesterday. It was cold and windy, but I loved catching up with him and getting some fresh air.

Top Ten Tuesday

So in case you haven’t noticed, it’s already almost May. Ummmm, what the heck?! Seriously, I feel like just the other day it was Christmas. Like many other college kids, I’m feeling pretty burned out on school at this point. But my summer unofficially begins in 10 days, so obviously I am beyond psyched for that! I say unofficially because I have only one final exam this time around, so I’m starting my summer a little early, heading home next Friday and popping back up here to take my final the following Thursday…then my summer will officially begin!

Because of this burnout, which extends to many aspects of my life (oh summer, please come faster!) I’ve decided to do a little Top Ten list type post for today, as a little recap of my weekend, and also because I can’t really think about posting an actual post 😀 Hopefully you enjoy this for the time being though!

Ten Foods I Can’t Live Without

1. FruitOkay, technically this is cheating, but there are a billion fruits I can’t live without, from grapes to pineapple to watermelon to bananas to raspberries to kiwi to…you get the picture!

2. Almond milk. I love the unsweetened vanilla kind, but the plain unsweetened is kinda growing on me.

3. Oats. 

My favorite oats combo at the moment--topped with kettle corn, pretzel sticks, raisins and peanut flour/almond peanut cashew butter.


4. Kale. It’s great in chip form, cooked up with some salt/pepper/garlic on the stove and even raw and massaged with some kind of dressing.

5. Tempeh. My vegan “meat” of choice. I love it’s nutty flavor!

6. Peanut flour. 

I prefer peanut flour to PB2, I just store mine in an old PB2 jar so it's less messy!

7. Kalamata olives. Some people can’t stand olives–I don’t understand those people!

8. Medjool dates. So gooey, so caramel-y, so addictingly good.

9. PB Puffins. Do I really even have to explain this one? It’s basically my crack (besides peanut flour).

10. Sweet potatoes.

Ten Things I Did This Weekend

1. Went to an independent film fest with my dad. We’ve gone to it since it started 5 years ago–we both love seeing random short indy films.

2. Went to church on Saturday night. Pretty self-explanatory!

3. Went out to eat…4 times! Normally, we barely ever eat out, except for when my mom drops me off back at school after a weekend at home. Due to our busyness this weekend, we had to eat out a lot. Definitely a struggle for me with my ED thoughts, but I mostly succeeded. Yes, I did order ‘safe’ things, like salads and veggie/hummus plates, but I truly enjoyed all of them. My favorites of this weekend were the salad I ordered at Mad Greens on Friday afternoon (baby spinach topped with Kalamata olives, dried cranberries, artichoke hearts and garbanzo beans with a fat free balsamic dressing) and the salad I got on Sunday night at Noodles (the Med salad with no dressing or feta, topped with grilled tofu). I kinda learned that I’m really not a tofu girl–it’s not necessarily the texture, but the taste for me. I’m not the hugest fan.

4. Played tennis with mi padre. Usually we play singles and a half (because we play with my sister) but she was unavailable so the two of us just played singles. It was so warm out and I was running around more than usual, so it was a great workout!

5. Grocery shopping. When my mom and sister picked me up on Friday afternoon, we hit up the Whole Foods and Super Target up here, then back at home we picked up a couple more things at the Super Target by us. And on Sunday, my dad and I ventured to Walmart where I stocked up on Truvia.

6. Bought my first-ever Zevia! I got the cream soda variety, and while I’m still waiting for the perfect opportunity to enjoy it, I have a feeling it’ll be incredible. Hopefully not so incredible that I feel the need to buy it on a regular basis since it’s pretty expensive…

So excited to try this!

7. Rode my bike for the first time since last fall. I never get the chance to ride it during the winter because of snow (duh) and there was even some lingering snow when I came home for spring break. I got in two quickie miles that were super hard because my tires were flat. Oops!

8. Worked on my final papers. Not fun, but they have to get done at some point!

9. Starbucks trip! I ordered a tall unsweetened iced coffee with 3 pumps of sugar-free hazelnut. Even better than the plain unsweetened with Truvia. I loved the nutty taste.

10. Repainted my nails silver and pink. I love this color combo and I actually haven’t had it since the beginning of school back in August!

Ten Things to Do Before School’s Out

1. Finish my papers/essays. I’m definitely on track, just gotta keep my motivation up.

2. Clean my room. Vacuuming, dusting and all that should probably be done before I peace out.

3. Laundry. I don’t want to burden my mom too much, so I’m planning on washing my sheets and towels.

4. Finish up my last two weeks of classes. Even though I’m so done, I still have to get through 8 more days of classes. I can do this!

5. Make a (huge) list of recipes to make this summer. Some of this list will be coming ‘atcha tomorrow or Thursday for WIAW.

6. Turn in the last page of my internship stuff. The adviser in charge of organizing internships for students has such limited office hours that every time I stop by her office she isn’t there. I need to get this in though!

7. Move everything out of my room. Most of this will be done next Friday, and the rest the day of my only final. Not exciting or fun, but it’s gotta be done.

8. Sell my textbooks? Since I won’t be here during finals week, I’m not sure if this will get done, but I hope it will so I won’t have to have all these books laying around until the next buyback.

9. Study outside. It’s been incredibly nice here lately (I’m talking 80 degrees in April!) so I want to do this at least once.

10. Move out of the dorms…forever! I can’t tell you how excited I am for this. I love my dorm this year, since it’s all my own and it’s new and has air conditioning, but I am so ready for my own place next year.

Of course, everyone has their own food preferences and that’s totally okay! I hate a lot of things a lot of bloggers seem to love (like ketchup and eggs) and I have weird preferences (I love almond butter but can’t stand peanut butter). It was just cool seeing what people like and dislike as far as food goes.

This one was good too, because I showed some new flavor combinations I’ve been enjoying lately. It’s hard to choose between WIAWs though, because it’s the best day of the week, in my opinion 😀

Another raw dessert recipe to add to the repertoire, and it’s one of my favorites so far! I especially love them topped with peanut flour paste. Definitely making these again, hopefully over spring break. The only issue with them is it took forever and a day to grate the carrots!

Best Undocumented Eat: Mad Greens Dionysos Salad

When I went home last weekend, my mom took me out to eat at Mad Greens, one of my favorite restaurants, for dinner when we came back up on Sunday. I love them because they have salads bigger than my head, and really creative names (like Annie Oakley and Don Quixote). This particular salad is one of my faves, because it’s a Greek inspired salad. Of course, I ate up all the kalamata olives (and edamame, which I added instead of feta) first and then tackled the yummy greens. I got it with tofu, which wasn’t too great, next time I’d probably get portobello mushroom for the protein instead. But I still devoured it, no shame!

Saturday Seven: Home Sweet Home

Well, by the title of my post I’m pretty sure you can guess that I’m home 😀 I have been since about 9 on Thursday night and I’ve had so much fun so far! I’ll explain this in my Saturday Seven, so let’s do it to it (sorry I’m such a dork 😉 )

1. I can’t wait to wear these booties!

I am ob-sessed with these!

Ever since I bought my brown tall boots I’ve been totally head-over-heels (haha, get it?) in love with boots of all kinds. And I’ve had my heart set on these Aldo Pirnie booties in particular since earlier this fall. When my grandpa sent me an Amazon gift card for an early Christmas present, and I saw they had these boots for $28, I snapped them up. They came on Tuesday, and they were probably the reason I was most excited to come home (just kidding!) I finally got to try them on on Thursday night and they fit perfectly and look super adorable. The only problem is, my dad said I can’t wear them til after Christmas, since they are technically a Christmas present. Boooooo 😦 Dads just don’t understand that we girls want to show off our new clothes 😛

2. I’m on a salad kick, and loving it

It basically looked like this, except for with a different salsa and there was lettuce of course!

Monday night when my mom dropped me off after my weather anchor audition (I spent a long weekend at home), we hit up my favorite salad place, Mad Greens, and I got the Don Quixote, which is one of my fave salads there. It had lettuce (duh), mango chunks (yes please!), fresh avocado, corn and black beans. Not a fan of corn at all, but the salad was still good. On Thursday night my mom and I grabbed dinner at Qdoba on our way outta town, and I got the naked vegetarian taco salad. The naked part just means it is in a bowl instead of a taco shell. I was starving, so I went to town on that baby! It was basically lettuce, black beans, corn salsa, habanero salsa (which was soooo hot, but soooo good!) and their fat free picante ranch dressing. That dressing is so delicious, but definitely not overpowering, and it made for a delicious dinner. Then yesterday, my sister and I had a nice lunch at Panera, where I got the Thai Chopped salad, minus the chicken and wontons. The peanut sauce, edamame and cashew clusters really make the salad and again, I devoured it. No shame! I’ve been craving salads like crazy, since at school I mostly just eat in my dorm and don’t have space for lettuce. You best believe I am stocking up on salad greens ASAP to make my own salad creations at home!

3. Need someone to unpack your stuff? Just call me!

Friday morning, I went to town unpacking the two giant suitcases I brought back half my life in. I think it took me like 20 minutes at the most, and it’s all unpacked. I think you just gotta get in the groove, and it doesn’t feel like work. If you put it off, it’ll just suck when you finally get around to it. Plus, I’m somewhat of a neat freak, and can’t stand having too many things out on the floor. Drives me nuts.

4. Colorado doesn’t get white Christmases

That picture above was taken last year on Christmas Eve…does it looks like snow to you? Ummmm, no. Seriously, we have a much better chance of it snowing on Easter than on Christmas here. And Halloween, too. Bizarre weather much? Apparently in the last 100 years, only 13% of the time has Colorado had a white Christmas, where it either snowed on Christmas day, or there was snow on the ground on the day. How sad is that? I’m hoping it snows this year, or at least the snow that’s still on the ground sticks around for another week…

Don’t ask about the weird  image that’s with the song. But anyways, my mom told me that she heard this song for the first time the other day (it’s called “This Year’s Santa Baby”) and since then, I’ve heard it twice. It has the same melody, but new and kinda funny lyrics. But apparently, it was never a hit, which is probably why it’s rarely played. But if you have Sirius XM radio, definitely check out the Holiday Traditions station because they’ve been playing it a lot!

6. I could totally live in a bottle of Bath & Body Works’ Vanilla Bean Noel lotion

Uh, yeah, don’t mind me over here smelling my lotion bottle like a crazy person. I can’t help it, BBW has the best lotion scents. This one is truly amazing. Don’t tell anyone, but I kinda want to eat it…

7. I really want lace shorts for Christmas

I’m kinda obsessed with the shorts and tights (with boots!) trend for winter, and what better way to dress up the combo than with lacy shorts? I think they’re completely cute and I’m really hoping I get them. I like these grey ones, since white seems too summery and I already have a pair of navy shorts.

WIAW: Weekend Wrap-Up

Hey hey hey 😛 Glad you all really liked my last post! I loved that so many of you could relate to my “confessions” and you shared some of your own. There’s no shame in being different!

Peas and Crayons

This past weekend I was lucky enough to get to go home (in case you’re wondering, I go home roughly every other weekend–I love my family too much not to, plus I get oober bored on campus on the weekends as I have no car 😦 ) and as those weekends usually do, it zipppppppped by! But it was jam-packed with awesome adventures so I’m not complaining!

Friday night my wonderful daddy picked me up since my mom and sister were getting ready for the play my sister was in. We stopped at Mad Greens, one of my favorite fast casual places, and I got a Hugh Jass salad, as usual. They also have a few sandwiches, but why not go for a giant bowl of greens and other good stuff, right? I got the Da Vinci salad, which was spinach, roasted artichokes (my fave), roasted red peppers, grilled portobello pieces and I subbed in edamame for the cannelini beans. It was topped with a spicy nonfat yogurt dressing which was yummy. The salad was giant but really good. Every salad I’ve ever gotten from there is good, so if you’re ever in Colorado (specifically Denver/Boulder/Fort Collins) and you love a good salad, make sure to stop by!

Back home, I got to spend some quality time with the little sis cracking up while looking at guys clothes on the Abercrombie website. Don’t ask why, we’re weird awesome.  

Saturday started out on the right foot–with a pumpkin spice Vitatop! I wouldn’t say they’re my favorite flavor (that would probably go to golden corn) but I love that they’re seasonal and they smell so good when you toast them. But lunch was even better…it was my first sweet potato in probably over a month! I’ve been missing them like crazy because I hadn’t been able to find them near me, but now I’m finally reunited because my mommy bought me a bunch to take back to my dorm. I topped half with red pepper flakes (I like things spah-cy!) and the other half with apple pie spice and APCB. With a slice of crispy tempeh ‘bacon’ and frozen mango on the side, it was the best lunch I’ve had in a while.

After a lot of procrastinating and filling out some job forms (oh yeah, I finally have my first real job…wooooooooo!) my dad, sis and I embarked on our many errands. And…my sister drove! She just got her permit 6 months ago and I’ve never been in the car before when she was driving, so it was quite the experience. Don’t worry, I made it out alive 😉 Just kidding, she’s an awesome driver! It was just so weird to have her in the driver’s seat, instead of me or my dad. But anyways, we went to several places and then made a final stop at Starbucks! I’ve also been missing the ‘bucks, there isn’t one within walking distance of where I live 😦 I got the salted caramel mocha light Frappuccino and it was one of the best drinks I’ve ever had there! I love their light Frapps, partly because they’re ‘safe’ for me (since they’re made with skim milk and have no whipped cream) but also because they’re just so good and customizable. I really wanted to try a seasonal Frapp, and the pumpkin spice didn’t appeal to me as much, so I went for the salted caramel mocha and I don’t regret it. It had a toffee kinda taste to it and you could definitely taste the salt, but it was not too salty or sweet–a perfect balance. It sounds like it would be so weird, but trust me, it was the bomb.com and you should try it if you’re brave enough 😛

This was worth having to say the ridiculously long name...

After dropping the sister back off at home (she had her final play performance–which she did so well in, btw! the show was really funny also), my dad and I left yet again to finish our errands. This time, I was pumped because we were going to Whole Foods, aka my favorite place in the whole world! We also made a stop at Sunflower Market, which I’d never been to before. I totally didn’t know what to expect, but I was pleasantly surprised. It was like an indoor farmers market mixed with Whole Foods. They didn’t have as much of a selection as WF, but I managed to be able to find a few items I’ve been dying to try–PB & Chocolate Puffins, Clif Mojo White Chocolate Mac bars and the new Clif Kid Zbar Full Moon Brownie. I almost squealed when I saw these things, but I restrained myself 😉 I also got a tiny white pumpkin to decorate my room for Halloween of course! And we couldn’t not stop at Whole Foods, so I picked up a bunch of stuff there, including a new-to-me item, meatless pepperoni slices. They’re made by Lightlife, and they’re actually pretty decent, a little chewy but a good sub for pepperoni. Honestly, I haven’t had real pepperoni in so long so I can’t really remember what it tastes like, but I think this was pretty similar, just not greasy at all!

 Sunday was pretty chill, we went to church in the morning (which I’ve been missing, I haven’t gone to church in over a month I think), came home and had a quick lunch, then me, my mom and sister hit the road…for some retail therapy, of course! My favorite mall is on the way back to campus, so we decided to do a little shopping. It was my sister’s idea, believe me 😛 Anyways, I wasn’t exactly planning on buying anything, but I can’t not buy something if I’m already at the mall! I ended up getting this adorable cream cable knit sweater with cropped sleeves from Hollister. It’s incredibly warm (and a little itchy, ’cause it’s part wool) but really cute and I can’t wait to wear it. After our little outing, we continued on towards campus, and stopped at Noodles for dinner. I haven’t been there in a few months (mostly because my mom hates it so we usually never go when she takes me out for dinner) but surprisingly she agreed to it. I wasn’t feeling my usual (pad Thai with shrimp or pasta fresca with no cheese) so I got the Veggie Med flatbread without feta…only it ended up coming with feta. I hate when restaurants screw up your order, but it wasn’t too big of a deal for me to pick it off. It was super delish, with all these yummy veggies and some sort of spicy Mediterranean sauce. Unfortunately, I didn’t feel like being a creeper and snapping a pic of it, but hopefully you can picture it 😉

I finally got to try this, and OMG, so good. It might even be better than the mountain mix which is my favorite. I love the soy white chocolate chips and pretzel pieces throughout. I just wish the chips were on top because for some reason, I prefer to pick them off and save them for the end, but I think they actually tasted better mixed in.

 

Tuesday's outfit: grey duster sweater (A&F), dark grey lace tee (HCo.), coral culottes (A&F), grey sweater tights (Target), unpictured grey Bearpaw boots. I just love how vibrant the shorts look against all the grey!
