WIAW: Red, White & New

Happy 4th of July to all my fellow U.S. bloggers! Unlike most years, I won’t be watching fireworks…well maybe on TV, but due to all the fires, most fireworks shows were cancelled around here. I will be wearing some red, white and blue and enjoying some festive eats, though–maybe with a recipe to come!

Anyways, for this week’s WIAW I wanted to highlight some new things I’ve been enjoying lately and share a couple recipes. Note: This was not all eaten in one day!

Red, white and blue fruit bowl: fresh strawberries, frozen banana, double blueberry chia jam.

I’ve been wanting to make my own jam forever so when I stumbled upon Angela’s blueberry chia jam, I knew I had to make it. I bought chia seeds for the first time ever and adapted the recipe to what I had on hand. Turns out, homemade jam is 1000 times better than storebought. And it’s not that hard to make!

Double Blueberry Chia Jam (vegan, gluten free)

1 cup fresh blueberries, rinsed

1-2 tbsp blueberry flavored agave (can use regular agave)

1 tbsp chia seeds

In a small pot, bring blueberries and agave to a low boil, stirring often. Once boiling, reduce heat to low and simmer for a couple of minutes. Lightly smash the berries with a fork, if desired. Stir in chia seeds, stirring often to prevent from sticking to the pot. Simmer for 10 to 15 minutes, or until jam is at your desired consistency. Remove from heat and store in a glass tupperware container or jar in the fridge. Makes about 1/2 cup.

This flavor is now in my top 5!

I still can’t believe I used to hate Larabars a couple months ago. Correction: I was scared of them, because of their calorie and fat content. Truth is, I love ’em now and all their calories and fat come from healthy, simple sources. Nothing but real foods in these! I was finally able to track down a couple new-to-me flavors, peanut butter chocolate chip and key lime pie. I’ve yet to try the key lime but the PB chocolate chip is amazing, especially when the chocolate chips melt, which is inevitable in this heat wave. Now I’m dying to try the chocolate chip cookie dough one!

Homemade vegan nachos: Late July sweet potato multigrain chips, black beans, spicy nacho cheez, crispy kale, guac, pumpkin seeds and nooch.

I think I have a problem. I put nooch on almost everything I eat now! It’s just so addicting, and I love knowing I’m getting a little protein and B vitamin boost from it. These nachos are my favorite thing to whip up for a quick and easy dinner. The cashew cheez sauce is what makes it!

Cookie the size of a salad plate…dominated!

If you haven’t tried Whole Foods’ vegan chocolate chip cookie and you have a store near you…go buy one now! I promise it’ll be the best 99 cents you’ve ever spent, especially if you pop it in the microwave for 30 seconds. I’m always shocked that this gigantic cookie has only 170 calories in it–the magic of vegan baking!

This $6 salad bar box was worth every penny.

I’m obsessed with the Whole Foods salad bars. The one near me always has a great selection and a lot of their options are vegan. I load up on a little bit of everything and it always turns out perfect. I can’t even remember everything in this box but there was some emerald sesame kale, marinated artichoke hearts, fruit salad, a warm bok choy salad, Asian cous cous, Mediterranean crunch salad, curry tofu and a falafel ball. It was worth all the stares I got for eating it at my internship–some people just don’t appreciate healthy eating!

Double chocolate protein waffle topped with NadaMoo! maple pecan coconut milk ice cream.

I’ve really been into making protein waffles lately. First I made them with peanut flour but then I tried some protein powder samples I got from Whole Foods. This one was made with Vega One and it was soooooooo good. For a snack, I topped it with some coconut milk ice cream. The ice cream melted all over the warm waffle which made it even better.

Double Chocolate Protein Waffle (vegan, high protein)

1 sample packet Vega One chocolate protein powder

2 tbsp oat flour (can sub whole wheat or gluten-free flour)

1 tsp baking powder

1 tbsp mini chocolate chips (I used Enjoy Life dairy free chips)

1 tbsp flax or chia seed, mixed with water to make flax or chia “egg”

unsweetened almond milk, to thin

stevia, to taste (I used one packet)

Heat up waffle iron (or skillet, if making into pancakes) and spray lightly with nonstick cooking spray. Mix together all dry ingredients until combined. Add in flax egg and almond milk until batter is smooth and thick, but can  be easily scooped up. Spoon batter (in two batches) onto waffle iron and cook until outside is crispy, about 3 to 5 minutes. Makes 2 waffles (the entire batch has about 18 grams of protein and around 300 calories!).

I love homemade pizza!

Since I became vegan, I’ve become much more creative with pizza toppings. I rarely even use vegan cheeses anymore but pizzas don’t really need cheese if you have amazing toppings. The one on the left is an Indian-inspired pizza topped with curry sauce, raisins (weird, I know, but it was actually good), cauliflower, carrots and chickpeas. The one on the right was a spicy Italian version with Field Roast Mexican chipotle grain sausage, garlic basil sauce, artichoke hearts and kalamata olives. The crust was amazing too, even though it turned out super thick. I used the fresh multigrain pizza dough that Whole Foods sells in their refrigerated section and I love the taste and doughiness of it, but it tends to rise a little bit too much!

Recent lunch: strawberries topped with double blueberry chia jam; peanut flour granola in almond milk with raisins, sunflower seeds and mini chocolate chips; spicy curry sauce with edamame, broccoli slaw and kale.

I’ve been loving whipping up a simple curry and veggie bowl for lunch lately. The sauce I use is the spicy & tangy curry sauce by Spicy Nothings and it’s one of the best curries I’ve ever had. It’s not even honestly that spicy, but then again I’m kinda obsessed with spicy things. It goes so well with kale and edamame but I want to try it soon with some tempeh!

How do you get in protein in the mornings? Do you like things spicy or mild?

WIAW: What I Ate (Monday)

I haven’t done a legit WIAW in awhile, you know, like posting all my eats from one specific day. Really, it’s just more fun to highlight some of my favorite meals from the past week instead of doing it all from one day, plus I always forget to take enough photos! But I thought I’d try to do a real WIAW this week since I actually remembered to take pictures.

Breakfast: peanut butter banana smoothie-in-a-bowl made with So Delicious unsweetened Almond Plus almond milk, peanut flour, xanthan gum, Truvia, mini banana and topped with peanut butter Puffins.

I’ve been experimenting with almond milks lately. So far, I’ve tried Pacific Naturals u/s vanilla, Almond Breeze u/s vanilla & chocolate, Silk u/s plain and So Delicious Almond Plus u/s plain. I’ve liked all of them, Almond Breeze and Silk are the creamiest and have the most calcium, not to mention I prefer the vanilla to plain, so I think I’ll be sticking to those to those two brands. The So Delicious one is good if you want  a little extra protein (5 grams versus 1 gram per cup in most almond milks) but I wish they would come out with an unsweetened vanilla.

Lunch: curried sweet potato pinto burger, carrots, ginger peanut sauce, fresh pineapple.

Being home has meant cooking for myself (for reals!) pretty much every day. For me, this isn’t a bad thing at all. Basically, because the rest of my family are omnis, I have to make my own dinner which has inspired me to get creative. Somewhat. I remade these awesome veggie burgers from spring break and they’ve been making an appearance at both lunch and dinner lately. The problem with cooking for one is you end up with a lot of leftovers…which maybe isn’t a bad thing at all!

Monday’s outfit: navy cardigan (American Eagle), dark grey lace tank (Hollister), navy/dark grey abstract floral skirt (Hollister), bangles (American Eagle).

The weather has been so effing bipolar here! Since I’ve been home, the weekends have pretty much sucked (temps. in the 60s at best, lots of clouds and wind, maybe some rain) and the weekdays are hit and miss. Monday was pretty warm, but cloudy for most of the day so I missed out on tanning. Boo 😦 Tuesday was super-warm, but I spent some of the day inside for my first day of my internship. What I did spend outside was extremely hot, even early in the morning. I’m just hoping this weekend is better because I want to do a lot of stuff outside.

Snackplate: freeze-dried fruit, raisins, square of dark chocolate with almonds and sea salt, stuffed date, kettle corn, blue and sweet potato Late July chips, peanut flour paste. Side of (half a can of) cream soda Zevia.

Snackplates are officially never going away…at least I hope not! The above assortment has been my go-to combo lately and I’m not getting sick of it. I’m just running out of almost everything on it! Time to make a trip to Whole Foods 😀

Dinner: Hugh Jass sweet potato topped with black beans/guac/nooch on one side, peanut flour paste on the other, side of mini sweet peppers and ginger jalapeno sauce.

The picture doesn’t do it justice, but this was one monstrous sweet potato! I enjoyed every last bite of it though, and of course had to please both my savory side (with the Mexican-inspired toppings) and my sweet side (with the peanut flour paste). The mini peppers are my new favorite veggie for summer, especially dipped in this spicy sauce. I can’t say enough good stuff about the Ginger People line of sauces. I love both kinds that I’ve tried and now I wanna try them all, well at least the ones without eggs or dairy in them!

Nighttime snack: PB Puffins in u/s almond milk, frozen grapes, peanut flour paste and almond peanut cashew butter.

See why I almost never post my meals from the same day? It’s because I repeat the same things throughout the day often. Like peanut flour, which I had 4 times on Monday, and Puffins which I had twice. I sometimes get really hung up on one thing and I eat it every single day or multiple times per day til I’m sick of it for awhile. I hope that never happens with my beloved Puffins and peanut flour…

Do you tend to eat the same things every day or multiple times per day? What’s your favorite thing to cook for just yourself?

WIAW: Free At Last (Almost!)

Well girlies, I am so close to being completely done with my first two years of college! I’ve just got one final bright and early tomorrow night and then I am done done DONE! I’ve already been home since Friday afternoon, but getting this over with means that summer can officially begin.

Being home has been awesome so far! Of course, I went on a huge grocery haul my first full day back–does anyone else love grocery shopping? I could literally do it every day and not get bored, especially at Whole Foods. There’s always some new product and I’ve always gotta try it! So this week’s WIAW will be featuring a few of those new finds, and a couple of recipes.

The ginger root beer variety is almost as good as the cream soda.

The 6-packs of Zevia were on sale at my WF, so I had to try out a new-to-me flavor. It was really good, but I was expecting a little more ginger flavor. I love ginger anything so it was a little disappointing, but I’m sure it’ll make the perfect healthy root beer float! I’ve been on the lookout for Zevia’s newer flavors (lime cola and strawberry) but no luck yet. I think I’ll be hitting up all the Whole Foods in CO… 😉

Whole Foods guacamole (aka the best guac ever) and amazing locally-made mango salsa, in honor of Cinco de Mayo.

Cinco de Mayo wasn’t too exciting for me or my family (my dad was more excited about the Kentucky Derby) but we did ‘celebrate’ with salsa and guacamole. WF has the  best guac, but unfortunately it’s super expensive. We got a tiny container of it for $4.99, a total rip-off but so worth it. The mango salsa was a much better buy, and also delicioso (had to get some Spanish in there somewhere!). I am in love with fruity salsas and really want to make my own this summer. I made a strawberry jalapeno pico de gallo last summer but the recipe never made it to the blog–I’ll be making it again soon and sharing the recipe this time!

What season is this?!

So Monday morning, I woke up to snow. Yes, snow in May. Crazy Colorado! We’ve had warm, dry weather for 2 months straight and now this. At least it was only a dusting, and didn’t stick around for long.

A Cinco de Mayo snack plate: crushed sweet potato and blue corn Late July chips, kettle corn, stuffed Medjool date, chili and jalapeno olives, guacamole and mango salsa.

I don’t think I will ever get sick of snack plates. They are perfect for indecisive people like me who don’t like to commit to one huge thing. I’d rather sample a bunch of small things and please all my cravings. Plus each snack plate is completely different, so I never get bored.

I’m always down for seasonal flavors!

You know you’re a foodie when you practically pee your pants upon seeing brand new Larabar flavors. Especially ones that you haven’t even heard about, and that sound as amazingly delicious as these. I am so glad I am no longer a Larabar snob because I will be hoarding these seasonal flavors like nobody’s business. I love anything and everything limited edition, especially summery things. I’ve only tried the pineapple upside down cake one and it’s so pineapple-y! I can’t believe it’s only made of almonds, dates and pineapple. If you see these near you, buy the whole box some! You won’t regret it.

[Pancake] breakfast of champions: peanut flour pancakes topped with homemade strawberry vanilla stevia jam and drizzle sunflower seed butter.

I couldn’t come home and not make pancakes, right? I haven’t had any in months, and this was my first time making them completely from scratch–no boxed mixes for this girl anymore! These pancakes are super easy to make, taste just like a gooey PB&J sandwich and have 15 grams of protein in the entire batch! P.S. Both recipes are adapted from here.

Peanut Flour Pancakes (vegan, gluten-free, high protein)

3 T peanut flour (or PB2)

1 T ground flax seed (I used golden flax) or mashed banana/unsweetened applesauce

1 1/2 T water

1/2 t baking powder

2 packets Truvia or stevia (can use liquid stevia drops)

4 T unsweetened vanilla almond milk (I used Almond Breeze)+ water, to thin

Stir together ground flax and water to make a flax “egg”. Set aside for a few minutes. In a bowl, mix together peanut flour, baking powder and Truvia. Add in flax egg, almond milk and any additional water needed to thin the batter. On a skillet or small pan heated to medium, scoop batter in small spoonfuls (I used a melon baller) or form into a larger pancake, cooking two at a time. Flip pancakes once the batter bubbles up. Serve pancakes topped with nut butter (I used sunflower seed butter), caramelized bananas, real maple syrup or homemade jam (see recipe below). Makes 5 small or 2 large pancakes.

Homemade Microwave Strawberry Vanilla Jam (vegan, gluten-free)

strawberries, sliced (I used 3 large berries)

4-8 drops liquid vanilla stevia, to taste (you can use any flavor)

Stir berries and stevia together until combined. Microwave on high for 30 seconds to 1 min. Can serve warm or chilled. Spoon over pancakes, on toast or on top of nondairy ice cream. Makes 1 serving.

So spicy, so good.

Continuing with my love for all things hot, I picked up this gem at WF this past weekend. Like a lot of new-t0-me products, I hoped that it would live up to the hype that I put on it. Well, this definitely delivered! Spicy with just a hint of ginger, it’s perfect as a marinade, sauce and dip.

Having Mexican food a few days after Cinco de Mayo still counts, right? Black beans with mango salsa, crispy kale tempeh taco on sprouted Ezekiel tortilla topped with guacamole.

I am usually a fan of tacos. Just because I don’t eat meat doesn’t mean I can’t enjoy a taco every once in awhile. In the past, I’ve used beans as a filler but this time I went for ground tempeh and it was a winner. In fact, it was probably the best taco I’ve ever had.

Crispy Kale Tempeh Tacos (vegan)

1 oz crumbled tempeh (I used Lightlife organic flax tempeh)

marinade of choice (I used the Ginger People Hot Ginger Jalapeno sauce above)

handful kale

salt and pepper, to taste

nooch, to taste

tortilla (I used a small Ezekiel sprouted grain tortilla)

taco toppings (guacamole, vegan sour cream, Daiya cheese or cashew cheese, salsa)

Marinade tempeh in sauce for 5-10 minutes. Place tempeh in a pan on the stove over medium high heat and let cook until browned and somewhat crunchy. Add in kale, salt, pepper and nooch and cook until crispy. Spoon kale and tempeh onto tortilla and top with more sauce and whatever toppings you love. Makes 1 taco.

PB&J smoothie in a bowl (unsweetened vanilla Almond Breeze, peanut flour, Truvia) topped with fresh strawberries and crushed PB Puffins.

Apparently I’m on a PB&J for breakfast kick right now! I’m just loving the combo of peanut flour and fresh strawberries right now–I may have to make a wrap or open-faced sandwich with these two ingredients soon.

Did you celebrate Cinco de Mayo? Have you spotted the new Larabar flavors yet?

WIAW: (Almost) Wordless

Heeeeey guys, I loved hearing what you think about Larabars! I always like to know what other people’s preferences are and try out new things based on a good review.

Today’s WIAW will be basically wordless, besides the captions, and just a mishmash of foods I ate throughout the weekend and early part of this week. Obviously this is not all I ate, nor was it all eaten in one day, it’s just some of the highlights of what I’ve been noshing on.

Baby carrots and (shiny) red grapes.

I love Whole Foods' no salt no oil popcorn, especially sprinkled with nooch!

Peanut butter Puffins in unsweetened vanilla almond milk are my crack.

My first time trying kale in a smoothie--and it's actually delicious, mixed with u/s vanilla almond milk, frozen banana and Truvia.

My latest Larabar find--peanut butter and jelly. It was just okay, not bad, but I wouldn't buy it again. Bring on the cappuccino and chocolate chip brownie flavors instead!

Carrot cake overnight oats (topped with raisins, almond peanut cashew butter and peanut flour) with a side of fashion magazine reading and a stuffed Medjool date.

Frozen grapes > fresh grapes.

Raw massaged lemon pepper kale topped with nooch and crumbled hempfast Sunshine burger. I have been obsessed with nooch on everything lately!

Another of my typical snack plates, with nooch-ified edamame, Late July sweet potato multigrain chips, mini sweet pepper, plain popcorn and kettle corn, kalamata olives, Medjool date and dark chocolate espresso bean.

What is the best thing you ate this past weekend? Have you ever tried kale in a smoothie?

WIAW: Branded for Life

Sadly, spring break came to an end for me and now it’s back to the daily grind. The break really got me excited for summer and I can’t wait to start my TV internship in exactly two months! I just want school to be over with already–just six and a half more weeks left in the semester. It’s actually pretty crazy how quickly this school year’s gone by for me. I can’t believe I’m almost a junior and I’ve got less than 2 months left of dorm living. Trust me, I’m not complaining though–I think I’m going to start a countdown til I move in to my apartment 😉

This WIAW, I don’t have any exciting food pictures or recipes to share with you, since I just got back from break and my dorm room eats have been sub-par but I still wanted to participate in the part-ay so I’m gonna do a little twist on the typical WIAW. This edition is all about brand loyalty, whether it’s to clothes or food or beauty products. I know most of us have some brand preferences so I wanted to share a few of mine.

Sorry for the repeat picture, but it was too good not to share twice!

When it comes to coffee, it’s Starbucks or nothing for me. Really. I’ve tried Archer Farms’ flavored coffee blends and they were just nasty. Yes, Starbucks is an expensive habit, but luckily I only go maybe once or twice a month right now, so it’s not too expensive. When I want coffee at home, I buy their VIA instant packets and pretend I’m drinking it inside a real ‘bucks.

A tempeh-topped salad with a side of frozen bloobs and half a yam topped with almond peanut cashew butter and raisins.

I’m one of those vegans who eats fake ‘meat’. I’m not a fan of the overly processed stuff, or of meat-like subs such as seitan and tofu (tofu is alright, just not my fave) but I do love me some tempeh and soy pepperoni slices. For those, I always rely on LightLife. Their faux meat products are always vegan, and full of protein and fiber. They are a little processed, but they don’t have a million and one ingredients and I can actually pronounce all of them. Plus they’re tasty, so they’re winners in my book.

My Coach Poppy backpack is probably my favorite designer purse.

I haven’t talked about it much on this blog, but I am a designer purse fanatic. I currently own 5 (all of which I was so lovingly gifted with for my birthday or Christmas over the past few years) and I love them all, from my orange Gianni Bini hobo bag to my brown leather Fossil tote. However, if I had to pick a favorite designer brand, I’d go with Coach. I have 2 Coach purses (well, one’s a backpack) and I just love their classic but standout designs. I realize they aren’t cheap by any means, but I take good care of them and they are well-worth the price…at least for me!

My favorite banana whip smoothie made with unsweetened vanilla almond milk.

Oh, almond milk. I go back and forth on this one. Not that I don’t love it, because I most definitely do. But I do switch between three brands on occasion–Pacific Naturals, Whole Foods 365 Organic and Almond Breeze. I love Pacific Naturals’ unsweetened vanilla flavor–it’s so creamy and thick. Whole Foods’ organic brand doesn’t have a u/s vanilla flavor, so I stick with their u/s original, which is pretty good for using in recipes. And Almond Breeze is the only one I know of that has a u/s chocolate flavor, so I buy that. They’re all good in their own ways, but for my personal favorite, I have to go with Pacific Naturals.

My new mini lotions (and lip gloss) for spring: Coconut Lime Breeze, Bali Mango, White Citrus and Liplicious Limeade.

Is anybody else obsessed with Bath and Body Works? I really just love going into a BBW and smelling all their lotions–they’re just so yummy-smelling! Of course, sometimes I do actually buy some of their products and as far as lip gloss and lotions go, they’re the only place I’ll buy from. They have the best quality products at fairly low prices and so many amazing scents.

Maybe I like this chip brand because my birthday's in Late July?

You guys all probably know this by now, but I am way more of a sweet snack fan than a salty snack fan. However, there are some times when I could really go for something salty and crunchy–like Late July multigrain chips. These chips come in a ton of varieties (I’m really loving the sweet potato kind right now) and they’re all gluten-free and most flavors are also vegan. I love that they’re baked and made with organic, whole foods ingredients like brown rice, chia seeds, quinoa and amaranth. I love plating them up with sweeter stuff for an afternoon snack plate.

Greek yogurt and frozen blueberries make a perfect sweet treat.

I’ve mentioned it before, but I am NOT a “Cho Ho” or whatever fans of Chobani like to call themselves. I realize I am in the minority here, but my favorite brand is and always will be Stonyfield Oikos. Why? Because it’s organic, I like the flavors they have (like superfruits, peach mango and even chocolate) and they don’t have as much sugar as Chobani. I’ve yet to try the new Oikos by Dannon, but I’m too busy enjoying my one true Greek yogurt love…

Spring break = perfect excuse for a shopping spree!

A fashion-lover like me must have some favorite brands, right? Of course. But I’m not a fan of runway styles or a lot of high-end designer pieces (mostly because of the price) so I stick with fairly high quality but lower price options such as Abercrombie & Fitch (okay, not exactly cheap but I love them anyway), American Eagle, Forever 21, Gilly Hicks, Hollister and VS Pink. The styles that these stores carry really just appeal to me and the prices are reasonable. If I had to pick one favorite, I’d go with Hollister, because I love their bold beachy style and most of my closet is made up of stuff from that store. In fact, when I went shopping over spring break, I picked up three things from Hollister, one thing from A&F, two things from American Eagle and one thing from Forever 21. So I am definitely obsessed with Hollister! Oh, and in case you were interested, you’ll hopefully be seeing some of my new purchases on here soon!

These are a few of my favorite bars!

It’s no secret that I’m obsessed with bars. But I am pretty picky when it comes to the brand. I have tried out several kinds, but my personal favorites are Clif (Mojo and kids bars only), Kind bars and Pure bars. I still need to try my new cappuccino Larabars and the raw cacao chia bar I got over break, but Clif, Kind and Pure are definitely my top three. I’m weird when it comes to bars, though, because I’m even more picky about the flavor. Like with Clifs, I really don’t like the originals anymore and I only buy the Mojo bars in mountain mix and white chocolate macadamia. With Kind bars, I’m obsessed with the PB & strawberry, but I also kinda like pomegranate blueberry pistachio. And I’ve tried all the Pure bars except the naturals line and their new dark chocolate berry flavor (which I’m dying to try) and I like them all but I only ever buy the chocolate brownie, cranberry orange and wild blueberry.

What are some brands (food, clothing, etc.) that you’re loyal to? What’s your favorite lotion scent?

WIAW: Weekend of Veggies and Dancing

Hey! Glad you all liked my product review! It was really fun to do and hopefully I’ve inspired some of you to go out and try the oats for yourself.

Anyway, as promised, here’s a recap of my weekend, in WIAW form. Okay, so it’s not really What I Ate Wednesday, but What I Ate And Did This Weekend (so WIAADTW). Whatever, WIAW sounds better! And this weekend, I got in a ton of veggies, which always seems to be the case when I go home. So hopefully spring break will be veggie city 😀

Friday

My madre picked me up around 11, as usual, and we hit the road. The thing I love best about getting done with class so early on Friday is that on the weekends I go home, my mom can come pick me up right away and we don’t end up hitting any rush hour traffic in Denver, plus I get a slightly longer weekend at home. Win win! We got back to the Springs just in time to pick up my sister from school, headed home for a little bit, then back out to drop her off for the musical she was performing in. My mom and I hit up Qdoba for a quick dinner, and obviously, I forgot to take a picture. But I ordered my usual, the Naked Vegetarian Taco Salad topped with lettuce (duh), black beans, fiery habanero salsa (super hot, just the way I like it) and corn & black bean salsa. So good! I was starving so I finished off the entire salad. Guess I love my greens 😉

Then we met my dad to see my sister’s musical. It was based on the Prince of Egypt movie, and it was pretty decent. She was the understudy for Zipporah (Moses’ wife) but unfortunately, she didn’t get to fill in. She was good in the other parts she did, though!

Saturday

I ate breakfast (obvs) and showered, which is so unusual for me since I usually do it at night, but my dad, sister and I were going to a father daughter dinner dance so I needed to be fresh for that!

Breakfast: carrot cake oats with raisins, spicy veggie sausage.

I did some yoga and cardio circuits, had lunch and then just did whatever around the house until it was almost 3…yikes, I needed to get ready pronto! I repainted my nails with pink crackle polish (my fave), curled my hair and got into my dress for the dance.

The only picture I have right now of me in my dress...more to come hopefully soon!

Lunch: sweet potato topped with crunchy almond butter and real maple syrup, crushed natural nacho kale chips, frozen banana slices, side of water in a Starbucks holiday tumbler.

Since neither my mom or sister were there (they were at the last performance of the musical), my dad had to take a few pictures of me outside in my dress, alone. Usually my mom would take pics of the three of us all dressed up, but it was just me this time. Not that I minded 😉 Except it was freezing outside and windy! Not fun.

My dad (who looked handsome in his suit, by the way) and I headed out…not for the dance yet, but for Whole Foods! The hotel the dance was at was catering dinner, but I know from past experience that I don’t like the vegetarian option they serve (and they had no vegan option, as far as I know) so my dad suggested we get something to go from Whole Foods. Um, yeah, I was a happy camper, especially when I discovered tons of new salads at the hot/cold bars. The Whole Foods I go to most of the time has an amazing selection, so I filled my box with a ton of different ones, like sweet potato chunks with cannelini beans, orange chipotle tofu cubes, an Asian kale salad, spicy marinated artichoke hearts and a Mediterranean salad with onions, tomatoes, olives and chickpeas. All of it was ridiculously good so it’s pretty sad that I could only get a super lame picture of it, since I had to take it in the dark ballroom at the dance. Yeah, it felt a little weird eating my Whole Foods salads while everyone around me was having the chicken or steak meals, but I did not regret my decision–it was super tasty, and healthy!

It doesn't look too tasty, but it really was!

The program was really really good, but of course, I was looking forward to the dancing! It’s always so fun to make a fool of myself with my dad and sister while busting a move on the dance floor. First, we had our pictures taken by the photographer there, and then we hit the floor! When we first went back in the ballroom, it was  packed and people were handing out these weird balloons for no reason. It was so funny though, because all the dads and daughters were waving them around to the music. So random, but so fun! Most of them popped by the end of the night, but I actually still have mine at home!

This random button we found on our table--my sister and I thought it was hilarious.

My place card.

The band was pretty decent, I just wish they had played more modern songs than the oldie type stuff, but I guess they wanted to appeal to the dads and daughters. They did do Cee Lo Green’s “Forget You” and Lady Gaga’s “Just Dance”, so my sister and I really got down to those! And of course, the last song was “Butterfly Kisses”–I almost cried while I was slow-dancing with my dad. The whole event makes me really appreciate how much my dad loves me.

Sunday

Unfortunately, we had an early wake-up call, which sucked after being out so late (I didn’t fall asleep til after midnight) the night before. We’re trying to sell our house, and we had a showing in the morning so we had to get out for a little while. Of course, it was the perfect opportunity to hit up Starbucks! I rarely get to have Starbucks in the morning–I usually go in the afternoon. It was nice to get a little caffeine burst…I definitely needed it!

My Starbucks order du jour: tall skinny soy hazelnut latte.

My family got some bagels at Einstein, but I just got a fruit cup for my breakfast. Okay, honestly, bagels are a HUGE fear food of me–so many carbs, especially the “bad” kind, a ton of calories, blah blah blah. I don’t think I’ve had one in a year and a half, and even then I only ate half of one at a time, without cream cheese (because of all the fat), of course. I would have loved to try to at least somewhat conquer my fear, with one of their bagel thins and some vegan cream cheese (they don’t have this, but I can dream, right?), but I didn’t. Part of it was because I honestly wasn’t hungry–and this actually continued throughout the day, which was weird–but it was also because I was just too afraid. Maybe next time I can try a bagel thin…

Sunday was actually just a really weird day, because like I just said, I was barely hungry the whole day. I had my Starbucks drink and the fruit for breakfast, skipped lunch, had a few orange and banana slices before my mom and I headed back up to school and a Clif Kids bar in the car. For dinner we stopped at Corner Bakery, where I got their salad trio, with the Asian edamame salad, mixed greens salad and seasonal fruit medley. Of course, the fruit medley was mostly cantaloupe (ick!) so I just had the few grapes, apple slices and pineapple pieces mixed in, a little bit of the mixed greens (the dressing was  way too oily) and all of the edamame salad (which was really good and fresh). It honestly was not much food, but I still wasn’t hungry. After my mom dropped me off, my hunger finally returned so I could have some oats with peanut flour for a snack. But the whole day just threw me off and it actually sucked!

My hunger did return on Monday (thank God!) so I was able to enjoy a few of the new purchases my mom got for me from Whole Foods. First up, Late July organic sweet potato multigrain chips. I thought I wouldn’t really like these because I didn’t really like the Food Should Taste Good version, but these are so much better! They’re slightly sweet, slightly salty and are the perfect mix of soft and crunchy. They have a subtle sweet potato taste, but I love them.

My new favorite Late July chips!

I also tried some Hope Hummus, which is a locally-made hummus brand. I liked their sweet potato hummus, but when I saw they had a spicy avocado version, I just had to get it. It tastes like a blend of guacamole and hummus and it’s really good! The sweet potato chips were awesome dipped in it.

Two of my favorite dips in one!

And finally, I tried a Sumo orange for the first time. My dad spotted them at Whole Foods, picked up a few, and I took a couple with me to try. They definitely live up to their name in size, and they have an amazing, juicy, tangerine-like taste. I recommend them if you love oranges!

For size comparison, a Sumo on the left, a blood orange on the right.

What was the best thing you ate this weekend? What do you do on “not hungry” days?

WIAW: Christmas Eve Eve Eve Eve

Hey friends, what is up? Can you believe that we’re just 4 days away from Christmas (hence my title)? It’s total craziness if you ask me, but I’m definitely looking forward to Christmas Eve and Christmas Day for several reasons. One being I love the church service my family goes to every Christmas Eve, and I also can’t wait to watch the 24-hour marathon of A Christmas Story on TBS! That is my favorite Christmas movie, so hilarious and such a classic.

But enough about Christmas, let’s get on with this week’s WIAW! Is it lame that I’m always super excited for it? Nah, I don’t care if it seems dumb, it’s such a fun foodie party that I can’t not participate in it week after week. This week’s edition includes some random eats I’ve been loving lately, as well as a couple of recipes too–BONUS 😀 And apparently this week I was obsessed with Instagram…

Peas and Crayons

Hot caramel apple pie volume oats--I know you've gotta be drooling by now!

As I mentioned in my NaNeFoMo bucket list post, I said I was planning on making some raw treats. Well, the first thing on my mind was raw salted caramel apple dip. I bookmarked this recipe a few weeks back and was just itching to test it out for myself. I made a few tweaks to it, though, but it still turned out yummy. Next time, I think I’d add a bit more salt, though, because it didn’t have quite the hint of saltiness I thought it would.

Raw Salted Caramel Apple Dip (vegan, no cook)

1/2 cup dates (the original called for Medjool, I used California pitted), about 12 dates

1 T raw nut butter (I used Artisana’s walnut)

squeeze fresh lemon juice

sprinkle sea salt or kosher salt, to taste

Soak dates in water for at least four hours (I did overnight) and cover. Drain dates and reserve soaking liquid. Blend dates and rest of ingredients in a food processor until smooth. Add in soaking liquid one spoonful at a time until it’s the right consistency for you. Use as a topping for oats, as a spread on fruit or bread or as an apple dipper, of course! Makes about 3/4 cup.

The salad kick continues with a homemade salad of spinach, crispy tempeh bacon slices and Whole Foods' carrot ginger dressing.

The dressing can really make or break a salad, but luckily, this one was a winner! I found it in the produce section when I hit up WF the other day, and it’s got a nice tanginess to it.

The perfect sides for a salad--a ripe Satsuma tangerine and some peanut butter balls cereal.

Hot cocoa (with marshmallows!) and frozen raspberries make a yummy snack.

I’ve been craving hot cocoa lately, so I decided to whip up an easy mug of it. I just heated up some unsweetened vanilla almond milk in the micro, mixed it with some Hershey’s special dark cocoa powder and a packet of stevia, and topped it with a few pescetarian marshmallows. It was the best hot cocoa I’ve had in quite a while (I actually rarely drink hot cocoa), so I’m thinking almond milk is what made it amazing. But then again, what isn’t amazing about almond milk?

A throwback to an old favorite--"taco salad" with black beans, spinach, plain Oikos and crushed mild green mojo multigrain chips on top.

So remember me talking about how I’ve been obsessed with salads lately? Ummmm, well, that obsession’s gotten a little bit stronger since then. Since I got home, I’ve had a different salad for lunch every single day and it’s been glorious. Having fresh spinach leaves really takes them over the top. A good obsession to have, am I right?

Simple ingredients make for the most delicious cookies!

Nutty Cherry Chocolate Chunk Cookies (vegan)

1/4 c almond butter

1/3 c maple syrup

1/2 t vanilla extract

1/4 c pumpkin puree (I used butternut squash, since it was on hand)

1/2 c oat flour

1/4 t salt

1/4 t baking soda

1/4 c vegan chocolate chips

1/4 c unsweetened dried cherries

1/4 c chopped pecans

In a large bowl, combine almond butter and maple syrup together until mixed; add in pumpkin and vanilla. In a separate bowl, stir together flour, salt and baking soda and then add in to wet mixture. Stir in chocolate chips, cherries and pecans until combined. Cover and chill batter for at least an hour. Preheat oven to 350. Scoop chilled batter with a melon baller onto baking sheet, spacing dough 2 inches apart. Bake until golden brown and just slightly soft, about 15 to 20 minutes. Set aside on baking rack to cool. Makes 12.

I loosely based this recipe off one from the Whole Foods website, but I made it vegan by subbing almond butter for dairy butter, maple syrup for white sugar and pumpkin puree for eggs. They turned out pretty good, a little small, but nice and “rugged” I guess. I like cookies that aren’t delicate–I definitely prefer ones like these that have chunks of good stuff in them! These cookies are pretty low-cal (about 120 per cookie) and you can feel good about eating them because they’ve got healthy ingredients like nuts and oats in them. But mostly you’ll just like them ’cause they taste good 😉

A 'classic' dinner with a twist--homemade black bean burger, sweet potato tots (best little things ever!), peanut flour sauce.

I made an attempt at making my own veggie burger last night, and it actually turned out decent, except it was too crumbly. I basically just mashed drained black beans and rolled oats together with a little chili powder and cooked it up in the skillet. It was a simple and delicious dinner alongside my favorite sweet potato tater tots and some peanut flour sauce for dippage. My kind of “burger and fries”.

What better way to start out the morning than with peanutty raspberry chocolate volume oats?

I have so much fun creating new oats combos. This one, like most of them, was a total winner, but then again when isn’t the combo of raspberry, peanut and chocolate delicious? Unfortunately, my supply of peanut flour is running dangerously low (no worries, another bag is on the way) so it turned out kinda runny but it still mixed well with organic jam and a few dark chocolate chips.

What is something you’ve tried again recently for the first time in a while? What is your favorite part of Christmas (if you celebrate it)?
