Best Discoveries This Year

Before I start this post, I want to take a moment to acknowledge the tragic shooting that occurred just a few days ago in Aurora, CO. It’s always hard to hear and read about these horribly sad events, but even more so when they happen in your own state, only about an hour’s drive away from where I live. Please keep all the victims and their families in your thoughts and prayers!

Now onto something lighter! Yes, I realize it’s not the end of the year yet–but it will be soon if the year keeps flying by like it has–but since my birthday is just around the corner, it kinda feels like a new year for me.

Anyways, I’ve made a lot of new purchases and discoveries since last July 27th so here are some of the best! They’re not all food related but knowing me, most of them are 😉

Whole Foods Hot/Cold Bars

The most recent edition, and one of my favorites so far!

Honestly, if I could, I would eat at Whole Foods once a week, it’s just that good! But $7 salad boxes just aren’t in my budget so I’ve only had them about 5 times over the past year. But each one is amazingly delicious, and I can always find something new. Oh, and I never stick with the boring spinach leaves and black olives…no, I load my boxes up with flavored tofu (they have the best stuff), cold veggie salads, fresh fruit and yummy grains. They never disappoint!

LabelBox (and Phonto)

I love all the colors!

Move over, Instagram, you’re old news! LabelBox and Phonto are the perfect way to jazz up your Instagram’d photos and if you’re as much of a font nerd as I am, you won’t be able to live without them. Plus they’re free, and who doesn’t like free?

Veganism

Who says vegan foods have to be boring and tasteless?

My decision to go vegan a little less than a year ago has been seriously life-changing. During my eating disordered days, I relied on low-cal, low-fat things too much because I thought they were ‘healthy’. Now as a vegan I’m eating mostly whole foods and minimally processed foods, with plenty of nuts, grains like quinoa and oats and tempeh, all things I never would have touched a few years ago. I feel healthier, happier and more vibrant. I feel okay treating myself to things like coconut milk ice cream and tons of guacamole because they have health benefits and make my life better. Not to mention, I’ve become more creative in the kitchen and ordering things at non-vegan restaurants. I am not 100% vegan, as I do enjoy gelato or froyo and honey on occasion, but I know I’m doing a good thing for the animals, the environment and myself and that’s why I continue to do it.

I still want this for my apartment!

I don’t go on this as much as I should (or could?) but I still love how inspirational it is. I pin a lot of fashion and decor stuff and when I’m done, I get some closet and apartment inspiration. Sure, some of it is unrealistic but it’s so fun!

Kale

Kale: a nutritious part of this complete dinner!

How did I not discover what’s become my favorite veggie until February? I first tried this superfood in kale chip form and was hooked. I didn’t love it raw at first but when I figured out you have to massage a dressing or sauce into it, I fell in love. It’s also really great crisped up in a dry skillet with salt, pepper and garlic. Basically it’s awesome no matter how you use it, and I love that I feel like a superhero when I eat it!

Zevia

My second-fave flavor so far. This root beer’s got a bite!

I’ve never been a big soda drinker, but I would always always always stick to diet versions. But all that fake sweetener isn’t the best and it gives me headaches. So I went soda-less for awhile, until I stumbled upon Zevia. I love stevia as a sweetener and thought why not. Yeah, $5 or 6 is kinda a lot for a 6-pack, but it’s worth it for a 0 calorie natural soda. The cream soda is the bomb, and I also love the cola and root beer. Still have yet to find the lime cola and strawberry but I’m on the hunt!

Bold Shorts

Dark grey and hot pink make a perfect outfit!

I’ve never been one to shy away from bright colors, but I wasn’t so sure about the neon shorts trend. Luckily I got over that quickly because I love my hot pink shorts! They’re fun and different while still being polished and pretty. I’m planning on investing in a few more pairs of bright shorts (and some bright jeggings) before the summer’s over!

Sweet Quinoa

I need to have this deliciousness from breakfast again soon!

Who knew quinoa could be tasty for dinner and breakfast? I was skeptical at first but after seeing some mouthwatering breakfast quinoa pictures on Instagram, I knew I needed to try it for myself. And now I’ve got a new breakfast obsession, along with fluffy homemade waffles and overnight oats. Give them a try if you haven’t already, they’re worth the weird stares you might get from people 😛

WIAW: New in Review

Who else loves finding new products at the grocery store? I know I can’t be alone…well, maybe I’m the only one who almost squeals when I see something I’ve been searching for forever or something that just looks too good to pass up 😉 Lately, on all my Whole Foods trips, I’ve been buying at least one new-to-me product so I thought I’d share some of them with you in case you’ve been seeing them too and wanted to know if they’re worth the splurge. Spoiler alert: most of them are!

First up, Larabars. Not exactly new, but lately I’ve been branching out and buying some flavors I’ve never tried before. Sure, I love the pineapple upside down cake and cappuccino, but I need to try new ones so I can find new favorites! And some of them were. The peanut butter chocolate chip and peanut butter cookie ones were awesome, the chocolate cherry torte not so much, but that can be expected because I hate most cherry flavored things. It was decent though, but mostly because of the chocolate chips! I haven’t tried the other flavors in this pic, but it’s only a matter of time 😉

From the freezer/fridge: Spicy Nothings curry sauce, NadaMoo! java crunch coconut milk ice cream, Amande peach almond milk yogurt, Nayonaise.

Okay, I can’t say enough good things about the curry sauce and coconut milk ice cream! The curry sauce is perfectly spicy (which, coming from me, is saying something, because I love all things spicy, and most things aren’t spicy enough) and so good over veggies and the ice cream is so dreamy and creamy, all without dairy. Love it. I kinda like the Amande yogurts, since they’re made from almond milk, but they have the weirdest texture. I can’t wait to find the So Delicious Greek style almond milk yogurts because I’m guessing they’ll be so creamy and thick, not jelly-like like Amande. I do love that it’s got vegan probiotics and plenty of calcium though. I haven’t tried the Nayonaise yet, but I really want to use it in curried tofu salad and tofu crab cakes!

Like I mentioned in my latest Friday Faves post, I love LabelBox app. It’s probably not new, but it still is to me, and it’s just so fun to use. Get it now if you still haven’t (bonus–it’s free)!

Annie Chun pad Thai style brown rice noodles, Alter Eco dark mint chocolate, veggie spirals quinoa pasta.

The quinoa pasta isn’t new to me, but this particularly shape is! Who else loves getting cool shaped pasta just because? Plus this one is made with veggies, in addition to corn and quinoa flour. Yum. I also really love the brown rice noodles. They just have two ingredients, brown rice flour and water. It doesn’t get more simple than that, and they’re also really tasty with Asian dishes! But the real winner in this line-up is the chocolate. I used to think Chocolove was my favorite chocolate brand, but Alter Eco basically takes the cake. 7 of their 10 flavors are vegan, they’re totally organic and fair trade certified, which I think is awesome. The company is really focused on sustainability and being fair to the coffee growers, which is so much more than most companies can say. Plus they have a chocolate bar with quinoa puffs in it, which just sounds delicious!

A yummy, nutritious Pan-Asian dinner: brown rice noodles stir-fried with Spicy Nothings curry sauce, steamed kale and spicy orange-glazed chickpeas.

And finally, another recipe for you! I kinda made up this dinner on the spot but it turned out so good that I couldn’t not share. You can use whatever curry sauce you love or have on hand, but I definitely recommend the Spicy Nothings brand.

Spicy Curry Stirfry with Orange-Glazed Chickpeas (vegan, gluten-free)

For Chickpeas

1/2 cup chickpeas, rinsed and drained

1/4 large navel orange

maple syrup, to taste

red pepper flakes, to taste

1 tsp cornstarch

For Stirfry

1 oz brown rice noodles

3 tbsp curry sauce

handful kale

In a small bowl, mix together orange juice, maple syrup and red pepper flakes. Toss in chickpeas and let marinate for 15-30 minutes.  In a pot, boil water and add in brown rice noodles. Cook for about 5 minutes, or until softened. In a wok or sauce pan, cook chickpeas and kale until orange glaze starts to bubble. Stir in cornstarch until glaze thickens and add in noodles and curry sauce. Mix until combined and serve garnished with cashews, cilantro or sesame seeds. Serves 1.

Friday Faves (July 6)

The festivities of the 4th are over so now it’s back to real life. Who am I kidding, summer isn’t real life, at least if you’re still a student! I still have about a month left at my internship but the majority of my weeks are spent doing whatever I want. I’m definitely appreciating that I can still do that–in a couple years, that won’t be an option!

Favorite App: LabelBox

Labels make everything more fun!

I’ve been noticing cute little labels popping up on a lot of people’s Instagram photos so I had to do a little sleuthing to figure out how they were doing this. Turns out, it’s a simple and free app called LabelBox. It’s available for iPhones/iPods and Androids and it’s so easy to use. Basically all my Instagram photos will be labeled now. #Sorryimnotsorry

Favorite Obsession: Waffles

Told you I’d be using these labels a lot!

I almost can’t remember the last time I didn’t have a waffle for breakfast! And don’t be fooled, these homemade waffles are 100 times healthier and tastier than those pathetic frozen Eggo waffles. I’ve been loving on the protein waffles mostly but when I just want a simple, fruit-packed waffle like the one above, I just use some oat flour, which gives it a perfectly fluffy texture while also packing it with fiber. And toppings are necessary, of course. I topped my 4th of July waffle with fresh raspberries and protein frosting made with Vega vanilla almondilla protein powder and water. Mmmmmmm!

Favorite New Find (that I haven’t found yet): So Delicious Greek-style almond milk yogurt

6 grams of protein and fiber ain’t too shabby for a nondairy yogurt!

The Amande almond milk yogurts are decent, but a little too jiggly and low in protein for my liking. When I popped on over to the So Delicious website and saw this gem, I knew I had to have it ASAP! The only thing I somewhat miss from my non-vegan days is Greek yogurt, and now I can get my fix in nondairy form, with more fiber and calcium than the dairy version! I just need to find it in stores first…

Favorite 4th of July Activity: Water balloon wars

I probably dropped more than I caught, but it was still fun!

What do you do on the 4th when it’s hotter than an oven outside and inside, the parade your family was planning on going to was cancelled and there are no fireworks shows within 100 miles? Have a water balloon war, of course! Filling up countless water balloons was worth the fun we had and it was actually great getting water in your face when you didn’t catch a balloon. Not that that happened to me though 😉
