I like trying new things. It’s the best way to figure out what you like, right? But sometimes, you just gotta come back to old–or new–favorites.

Doing the whole raw foodism thing for the past 2+ weeks has given me plenty of time for experimenting, and it’s helped me figure out what foods are my favorite. So lemme share them with you this WIAW!

Even though I have a lot of favorites, one thing I love about being raw is getting such a variety of foods in every day. Instead of getting stuck in a food rut, I’m always excited about trying something new and mixing things up so I get in a variety of nutrients!

Favorites Lately

Happy Monday, everyone! I hope you all had a fabulous weekend. Mine was great–I spent it at home with the fam, and after not having been home in a few weeks, it was nice to be back again. While there, I got my hair done, saw my sister in her latest production, watched this weekend’s SNL (a lot funnier than I thought it would be), made a little Whole Foods trip, carved a pumpkin and watched some classic Disney Halloween cartoons. It was the perfect weekend, and the weather was unreal–sunny and in the 60s. Perfection.

I wanted to start off the week with a fun little post…and what could be more fun than sharing some of my recent favorites, from food to fashion and beyond.

So when I said I got my hair done…I really meant it! I’ve been planning on changing my hair color for awhile, mostly because I’ll be starting the job hunt soon and I needed a more professional/mature look. I decided to go back to a more natural hair color for me, and I absolutely love how my hair turned out. It’s a big change for me after getting full blonde highlights throughout my time at college, but I’m really embracing the change!

What American Accent Do You Have?

My dad and I are obsessed with dialects, and this quiz he showed me was super interesting. It’s a really quick quiz, but it’s fairly accurate. It told me I have a “Midland” accent, which basically means I have no accent. I’m not from the “Midland” (which they say is Pennsylvania, Ohio, Missouri–but I’ve always heard it’s more like Nebraska and Kansas) but apparently it means I have a good voice for TV which is exactly what I need!

A few weeks ago, I was looking for my usual favorite vegan chocolate chip brand, Enjoy Life, at Whole Foods when I stumbled upon this gem. Yep, stevia-sweetened chocolate chips exist! I was excited that these were vegan too because the rest of the Lily’s dark chocolate line has milk added in the bars. The price tag was a bit steep ($7 vs. $4-ish for Enjoy Life) but I bit the bullet and decided to try them. They’re REALLY good–a little more bitter than Enjoy Life chips, but just the right amount of sweetness and I love that they’re sugar free. These won’t be a regular purchase because of the price, but I will definitely choose them over any other chocolate chip most of the time.

If I had to name a favorite shoe brand, it’d have to be ALDO (wellllll, maybe Sperry’s too). I only own 2 pairs of their shoes, but I think they’re very well-made, reasonably affordable and cute to boot (see what I did there?) I actually own a similar style of booties to these from ALDO (but mine are grey corduroy with brown leather detailing) but I can’t resist how awesome these ones are. Definitely going on my Christmas wishlist–hey, I need black booties anyway!

When I saw this recipe for butternut squash pasta, I had no idea I’d be diving into a new obsession. Seriously. I’ve made the sauce twice and I’ve been so sad when it’s run out. This stuff is incredible, sweet and spicy, creamy and comforting but in a totally healthy way. I’ve served it with kelp noodles and hemp seeds, as a spread for socca, and even just eaten straight off the spoon cold. I made some changes to the recipe to make it my own and I hope to share it with guys soon. It’s a real keeper.

I’m glad the capelet trend is still going strong…I still need to get my hands on one for this winter! I think they’re so cute and versatile. I haven’t seen any in stores around me so this may be a Christmas wishlist item or a future online order. I really like this one, but I also love the houndstooth/plaid patterned ones as well.

WIAW and New Series

It feels like forever since I’ve done a WIAW (okay, so it’s only been 2 weeks) so I’m back again with some random things I’ve been eating throughout the past few days. And…I’ve been wanting to start another post series like my grocery budgeting one and with my new found interest in raw foodism, I figured, why not do posts on my adventures in going raw?

I’ll start off with a few non-raw pics for WIAW, and then move into the first Adventures in Raw topic, which will be obsessiveness. I know a lot of non-raw-foodies think that a raw food diet, whether LFRV (aka the 80-10-10 fruitarian diet) or HFRV (including some higher fat raw foods) or somewhere in between, can become obsessive and restrictive, but so far, I’ve found that to be the opposite. More on that below!

WIAW

Besides when I was on vacation, and even then I was still trying to eat somewhat raw when I could, I’ve been eating at least one raw meal a day, and it’s usually been breakfast. But one day I was craving a cooked breakfast so I opted for some quick GF pancakes made from a mix of coconut and buckwheat flours. They turned out fine, but I realized while eating them that I missed my raw breakfasts. Nothing like prepping raw flax pancakes or chia puddings the night before and just having to plate and top them in the morning!

If I haven’t been eating mostly raw at dinner, I’ve been wanting things grilled. Grilled veggies, grilled fruit, grilled tempeh. I finally decided to grill a portobello for the first time. It was good, but it could have been grilled a little longer–I like my foods dry! The sweet potato fries were pretty good though. I thought you had to always precook sweet potatoes before you grill, but I just sliced up this one, spiced it with Old Bay and almond oil, and tossed it in a grill basket. Some pieces were too firm, and some too burned, but they were tasty!

On Mondays and Thursdays I work a 5 hour shift from 2 to 7 pm at my weather internship. That’s basically my ideal snack time, and I want to make sure I’m not too starving to make the half hour drive home from work unbearable (or make my wallet unhappy by stopping at Whole Foods every time) so I pack a lot of little snacks that I eat whenever I get the time. My favorite combo is half of a Vega or Larabar, with fresh veggies and fruit.

Now that I’m legal almost 21 (in just a month and 8 days!), and it’s summer, I’ve been in the mood to sometimes (read: once or twice a month) enjoy a little adult drink. And by little, I really mean little, because my body does NOT have a high tolerance for alcohol. I can’t even handle one drink without feeling a little weird. Guess that means I’ll be a cheap date in the future 😉 However, I was able to handle this watermelon frosty because it was just 1 shot of vodka and basically, it was like a watermelon in frozen form! My mom added some lime juice and a bit of honey with the watermelon, along with the vodka and a little water to the blender and it was the perfect summertime drink. It would be awesome too in nonalcoholic form, and made more raw-friendly with raw honey instead of regular.

Adventures in Raw

Now, onto what I was saying about raw foodism and obsessiveness. I know it can seem, and can actually become, overwhelming to eat all raw, all the time. Right now, I’m not at that point. I still eat cooked foods once or twice a day, and some things I eat aren’t strictly raw, but I keep it clean and healthy within the limits I’ve given. Going out to eat while raw can be hard, unless the restaurant you go to has some raw options, so that’s why I’m keeping my diet mostly raw at home, and just healthy and vegan if I’m out (unless there is a raw option, then I’ll probably go for it!)

Anyways, my point is that raw foodism doesn’t seem obsessive to me. In my experiments with it so far, it’s made me less obsessed over macros especially. When I was still tracking my calories, and even after I stopped, I was so focused on my macro balance. Earlier this year, I think I was striving for a 50-20-30 balance (carbs/protein/fat) and it wasn’t just a loose goal–I tried to get that everyday, and if I didn’t, I was disappointed and beat myself up. With eating raw, I just focus on nutrients and getting in enough calories because you have to eat a LOT more when you’re raw. It’s helped me challenge my old bad habit of wanting to restrict and seeing raw foodies’ Instagrams inspires me to eat a lot more than I’m used to. I just don’t worry about getting the perfect balance of macros anymore. I’m not sure I believe that the 80-10-10 balance is the way to go, because I feel great with more fats, but I think I’m probably hitting more of a 60-15-25 balance right now, and it’s great. I don’t stress about getting enough protein or too many carbs like I used to, but I also don’t worry about getting too much fat from healthy sources like raw nuts, seeds and coconut.

Raw foodism has also made meal prep a breeze. Like I mentioned above with the pancakes, I’m getting used to making meals that take almost no prep time, or can be made ahead of time. Even complicated raw desserts or sauces just need a few minutes in the food processor and they’re ready to be served. And making things in the dehydrator is actually less time-consuming, because I’m not constantly checking on the food and I can just let it run overnight. And if I’m starving and want to eat NOW, I can just throw veggies, spices and a fat together in a bowl and call it a meal.

And with raw foods, I don’t have to worry so much about the ingredient list. Looking at ingredients became such a compulsive and unhealthy thing for me. Whenever I wanted to buy a new food, I always had to check out the ingredients list in the store or research it online before to see if the ingredients were acceptable. With raw foods, pretty much all the ingredients have to be clean and vegan anyway, so I’m not so stressed out about buying new products.

WIAW: Best of the Week

I’m finally back, guys! And before I get into today’s WIAW post, I want to express my sorrow for the devastation in Oklahoma. Natural disasters can be incredibly hard to deal with, since they are so random and there’s no one to blame. It’s easy to feel helpless in the face of nature (I know I did last summer as my hometown faced the most destructive fire in state history) but I know that the people affected by the tornado appreciate all the support and love we can give them.

I’m finally all moved back home and getting into the swing of summer. Though right now it doesn’t feel quite like summer since I’m in an online geography class that I need in order to graduate early but luckily, after a few more weeks of studying and note-taking, I can say goodbye to school stuff for the rest of the summer. However, I am getting really excited to finally start my weather internship on Monday! Last summer’s internship at a different station wasn’t quite what I was expecting it to be (yet still a good experience) but since this summer’s will be in the actual field I want to pursue within broadcast journalism, I’m sure it’ll be even better.

With my busy weekend, I didn’t have much time to snap many pictures but I still wanted to do a WIAW so I’m going to be taking a different approach this week. This week’s WIAW will be focused on the best things I’ve seen/eaten/etc. over the past few days!

Best Summer Fun Under $20

Kid at heart over here, but I love summer water toys. When I was a lot younger, we had Super Soaker Twister (way better than regular Twister) and a Slip N Slide and I loved those things. I’ve always dreamed of living somewhere that was warm year-round so I could have a real pool in my yard. My sister and I have even tried convincing our parents to get one 0f those huge inflatable water bouncy houses but let’s be real, those things are crazy expensive and way too big for our now-tiny backyard. But this waterslide from Target is $19.99 and would definitely fit behind the house. Plus it’s even better than the regular Slip N Slide because it’s got room for 3 people to slide at once. I may actually just end up buying this soon… #noshame

Best Raw Meal…EVER!

One perk of moving out of my apartment over the weekend? Getting to go to my fave restaurant, Tasty Harmony, one last time until the school year starts again. I love this place because it’s mostly vegan (surprisingly rare to find in Colorado…other than Native Foods in Boulder which I have yet to try…) and the menu is seasonal so there’s always something new to try. And I’ve tried something new almost every time I’ve gone, and I’ve loved it all, including the samples I stole off my parents’ and sister’s plates. This time, one of the new dishes was a raw pad Thai, made with my favorite kelp noodles. I couldn’t not get it, so I did and I was pleasantly surprised. The kelp noodles were perfectly crunchy, the veggies were fresh and the sauce was amazing. I wish I could have a bottle of just the sauce to take home and use on my kelp noodle dishes because it was just that good!

Best Splurge (aka Non-Vegan Meal)

After our vegan feast, we decided to hit up a mostly non-vegan (still veg though) favorite, Gelazzi. Gelato has always been my favorite frozen dessert and Gelazzi was my favorite gelato place ever. Sadly, it closed down in the fall and my whole family was upset because it was so good. But this weekend, my dad texted me when he and my mom were out and said he saw the doors were open again. I just had to see it for myself, so we decided to check it out after dinner. I ended up getting an old favorite I hadn’t had in probably 2 years, the birthday cake gelato. Most of their flavors, other than the fruit ones, aren’t vegan as they’re made with milk (but are still a lot healthier than dairy ice cream) but I wasn’t feeling the fruit flavors and decided to go for a small of the birthday cake. OMG, heaven in a cup. It tastes like vanilla frosting and is just ridiculously good. So sorry to let down the vegan police, but I just had to have it again.

You knew this had to happen. I am obsessed with the Whole Foods salad bar and I had to get it again once I got back home to the good salad bar. They had all my favorites (curry tofu, marinated artichoke hearts, sweet potato salad) and I was happy. Expect to see a similar photo many more times this summer.

WIAW: Adios, Junior Year

First things first–yes, I did change my blog design after at least a year and a half with the previous one. I just needed something new, plus I like the sidebar ‘about me’ things everybody has and the old design wouldn’t let me do that! 

I’ve been waiting for this day all year. Well, maybe not, but I’ve definitely been for at least the past month or so! The last day of my junior year of college is TODAY…and how crazy is that? I remember when college felt sooooo far away, and now I’m really close to graduation. Scary stuff.

I know my blogging’s been pretty sporadic anyways for the past few weeks but it’s gonna get even more infrequent in the next week or so. First of all, I’m moving back a lot of my stuff this afternoon and moving home for the summer. Then my family’s driving back up here this weekend to load everything else up and my mom will be doing some epic cleaning (maybe not that dramatic) so I can turn in my keys to my complex for the summer and end my lease. It’s a pain to have to move everything out, only to move it back in again in August, but I’d rather not pay the extra rent just to keep my stuff here for the summer. And then next week is when I hopefully start my internship, so it’ll be a whirl of paperwork, a drug test and plenty of excitement. And there’s a doctor’s appointment thrown in there as well, so it all makes for quite a crazy several days. So I’m really sorry if I don’t post here too much or comment on all of your blogs but I will be back as soon as the craziness dies down.

What wasn’t too crazy was the meals I enjoyed over the past week. Well, unless you consider a lot of random experimenting to be crazy, but all I know is it was delicious. And I had plenty of fun, despite finals week and moving out looming. Hey, I only had one actual final exam this semester, so paper writing and projects were the name of the  game, and a little less stressful than studying.

I’m doing my best to embrace the healthy grains again. I have to say I prefer the ‘ancient’, gluten free, psuedo-grains such as quinoa and buckwheat, for their stellar nutritional profile and higher protein, not to mention their deliciousness. I had some leftover quinoa in my fridge from a couple of weeks ago, and I remembered how much I used to love this random stirfry I threw together for the first time last year around my birthday. The best part about it is it’s totally customizable, so I threw in the last of my frozen edamame (I’m trying to finish up or toss things that aren’t as easily transportable before I move home), orange cauliflower, spinach, curry powder, coconut aminos (way better than soy sauce!) and fresh pineapple was a given. Not too far off from the original, and topped with sprouted pumpkin seeds and cashew butter, it was a total winner dinner.

And the little bit I had leftover made the perfect nori filling for lunch one day. I think I’ve been loving on the Asian and Mexican flavors a lot lately, between my homemade guac obsession to constantly resupplying my pantry with those addicting Thai lemon curry cashews. Maybe I could combine the two and create a Mexican stirfry or an Asian taco…

My apartment complex does have a pool, but they’ve been slacking on opening it up (uh, kinda late there, management. Almost everyone’s moving out this week…) so when my friend invited me to her complex’s pool on Monday, I jumped on the chance to lay out. Honestly, I usually just lay out by the pool versus actually swimming, but I did go in it a few times just to cool off. Guys, I’m so happy. We finally have my dream weather, aka 80s and sunny. With afternoon thunderstorms. Basically, it’s finally summertime in Colorado.

I don’t get how some people make their protein pancakes look so perfect. I do okay with multiple, small-sized pancakes but a full size one is just asking for trouble. I thought I waited long enough to flip, but part of the top crumbled off so I cooked it in two pieces. It luckily didn’t burn, but it certainly wasn’t round or anything, and parts of the inside were still undercooked. It tasted great, but my pancakes skills need some work…

…which is why I stick to waffles. Sometimes they don’t quite hold up, but if I get the ratios just right, they turn out pretty perfect and intact. This one was a bit crumbly, but it mostly stayed together, and it tasted great, which is what really counts. Protein waffles are hard to make vegan, so I’m proud that most of mine aren’t complete disasters.

I’m glad I stuck through the crappy weather we got in April (and foot of snow on May 1st…thanks but no thanks, Mother Nature!) because it is absolutely gorgeous now! Like I said, 80 degree temperatures, lots of sun, minimal wind (but enough of a breeze to keep you cool) and the trees are blooming after being freaked by weird cold weather. And the grass, at least here in my college town, is nice and green after getting enough precipitation last month. If you’ve ever been to Colorado, you know that the grass here is generally brown because it’s basically a high altitude desert. I’ll be going back to brown lawns today (my hometown wasn’t blessed with as much snow) but I’m hoping we get some nice afternoon rains to keep the fire danger low and makes the grass nice.

I can’t remember where I first saw the idea for a sweet avocado, but I was really intrigued by it. I’ve really only used avos in guac, and had them raw in salads, but topping my avo with something other than lime juice or salt seemed weird. But I decided to try it with one of my favorite flavor combos (PB+cacao nibs+coconut) and it was actually really amazing. The key is a perfectly ripe avocado, so the flavor isn’t too overpowering. I still don’t like avocados plain (to me, they either need salt or something sweet to taste like anything) but now I have a new way of enjoying them!

Kelp noodles are still a favorite of mine, but especially now that it’s so warm and I prefer to do as little cooking as possible. I love that kelp noodles are raw, and they work out perfectly in salads, like this one. I used up some of my PB2 for the dressing (I finally finished the jar, and I’m glad it’s over because I did not like it, especially compared to real peanut flour), and added in carrots and romaine lettuce, aka the last of the produce I had until I went grocery shopping later that day.

The problem with poolside selfies is that A) I’m wearing a bikini which is super awks in a photo (and already sporting a sunburn) and B) I can’t really see my phone screen in the sun, so I end up taking them from a weird angle and usually have a weird face in them. #firstworldproblems

This is like a super-rich mousse, but the best part is that it’s perfectly acceptable for breakfast, because it’s protein-packed. There was 16 grams alone in just the Sunwarrior, plus a few extra grams from the other ingredients and toppings. It’s also no added sugar, just the natural sugars from the fruits (the Kit’s bars are just date sweetened, like Larabars) and the stevia in the Sunwarrior, so it makes for a healthy dessert option that isn’t too sweet. And it’s so easy to make if you have a food processor, just add in the protein powder, coconut cream and frozen bananas (optional, but add a little sweetness and coldness) to the processor, blend, and top away! I’ve enjoyed this twice this week, once as a dessert and once as breakfast and it was perfect for either occasion. I only wish I had more coconut cream to make it again!

WIAW: Almost Summer (Or Not)

It’s finally May! Can you believe it? This year has already flown by, and I’ll be packing up to go home for the summer in just about 2 weeks. I’m not sure if you’re as much of a weather nerd as I am (actually, pretty sure you’re not since I’m pretty obsessed, but hey, it is my job!) but if you’ve been keeping up with the national forecast, good old Colorado is getting yet another snowstorm today. Yep, May 1st. Snow isn’t totally unusual here, but since we’re supposed to get around 6 or more inches (writing this on Tuesday when it’s still raining, not snowing yet and hopefully won’t), that’s way more than normal. Can you believe we were at 80 degrees on Monday? This is just insane, and really not fair.

Anyways, I’ll stop my weather complaints and move on to better things…namely WIAW! This one will be fairly wordless other than captions, but full of recent food photos so enjoy!

Wow, I’ve been gone for awhile! Obviously, it’s that time of the year–midterms. Luckily I’ve just got one more left and then tomorrow afternoon starts my spring break! I won’t be doing anything too exciting (unless you consider going home for over a week to be exciting) but it’ll be great to see my family again…and possibly mooch off them for groceries? Haha it’s the little things!

I had to take advantage of the nice weather and wear a tee without a sweater for the first time in months. Rumor has it it will be in the 70s on Friday…hell to the yes!

I can’t get enough of kelp noodle stirfrys. You can just make them so many different ways it’s impossible to get bored with them.

This was actually a pretty successful dinner, though the veggie burger didn’t hold up too well. The eggplant fries were sooooo good though–coated in almond flour, sprinkled with sea salt and dipped in homemade BBQ sauce (basically unsweetened ketchup mixed with stevia and liquid smoke).

There was no budgeting post this weekend, but I managed to stay around $50 for the week, buying just stuff from Whole Foods with a few splurges! I’m excited to try the new Vega One bar, 15 grams of clean vegan protein in a chocolate-covered bar!

WIAW: The Last One?

As much as I love the weekly party known as WIAW, I probably won’t be participating in it for awhile. Why? Well, other than being busy with school again (I just started up yesterday and I think this semester will be crazy, in a good way) I’m just getting bored with posting my daily eats. I tend to go in waves with things that I eat, so a lot of my WIAWs look pretty similar. Nothing wrong with that, it’s just not that exciting to me anymore. I will still be checking out all your WIAW posts though, no worries!

I went to Sprouts the other day for a few things, and finally found the bread I’d been looking for–Alvarado Street essential flax sprouted bread. I liked the ingredients (for the most part), the nutrition stats and the fact that it’s smaller bread so it makes for better sandwiches. I don’t know about you but I like my sammies to be all about the filling–I prefer open-faced sandwiches but those aren’t so portable. So this 50 calorie per slice bread is perfect, and has simple ingredients for being a lower-cal bread, unlike most brands. It also made the perfect PB&J inspired French toast. I just dipped two toasted slices of the bread in peanut flour thinned with almond milk, cooked it, and topped it with crunchy almond butter and microwaved frozen blueberries. This is as good as it gets for a breakfast made at 7 am. That might not seem that early, but it is to me #collegeproblems

I’ve been having salads a lot lately for lunch, and the key to a great homemade salad is shaking all the ingredients up so they get coated in the dressing. Today, I just mixed nutritional yeast with a little apple cider vinegar and thinned with water, then tossed in some dino kale, olives and some new-to-me roasted chickpeas. I love these things, they’re way too addicting. I also had some unpictured salted in-shell pistachios (amazing!) and a date stuffed with chocolate coconut butter. I don’t know what it is about that combo, but it’s delicious. I just discovered it yesterday, and now I need more dates to enjoy the combo on a daily basis.

Snack: homemade trail mix with spicy chickpea crackers, dry roasted edamame, raisins, freeze dried tropical fruit and mini chocolate chips.

Trail mix in a baggie–how classy. This is going to be a go-to snack this semester on my busier days when I don’t have time to swing by my apartment to have a snack. I love making trail mix myself because I can add in whatever weird stuff I like. The chickpea crackers in this one were a new addition to my normal mix–I made them the other day and they’re actually really good and basically just made from chickpea flour, nooch and spices.

Why do the most random creations turn out to be the tastiest? I was tired after my first day of classes (a long day, BTW) and didn’t want to think too much about dinner so I threw together some stuff to make a sauce for my typical kelp noodle stirfry. For the record, I combined Whole Foods brand crunchy PB (the only PB I can stand), Hope Hummus coconut curry hummus, Frontera hot sauce and coconut aminos with almond milk to thin and it made the most delicious sauce. I don’t know why, but it was amazing. This will be repeated nightly weekly.

This has been my usual dessert for probably two weeks and I’m still not sick of it. I like to have some protein before bed to keep me from getting hangry so this does the trick while also giving me my sweet fix. I also had an unpictured square of dark mint chocolate (Alter Eco brand, natch) and another cacao bliss-stuffed date. Told you I’m obsessed.
