My (Now) Crazy Life

Sorry I’ve been missing lately! I wish I could promise a more regular posting and commenting schedule but my life is about to get even crazier and busier in the next couple of weeks so I may not be around much. But I want to fill you in on what’s been happening in my (now) crazy life lately!

It all started on Wednesday. I drove up 2 1/2 hours to my college town to reunite with one of my best friends. We hadn’t seen each other since before I graduated in December and a fun girls’ day was in order. We got sushi for lunch with her boyfriend (I got an avocado maki roll and it was the cheapest lunch ever–like $4!) and then drove over to our favorite nail salon to get manis and then drove down to the outlet mall for a little shopping. We didn’t buy much (I only ended up getting a coral dress from American Eagle for under $20) but we had fun trying on different outfits and just reconnecting. She’s graduating in May so we talked a lot about our future plans. And I filled her in about my new job! I haven’t talked about it a lot here yet, but let’s just say I’m moving out of state in a couple weeks…

On Friday my mom and I headed up to Denver for a busy day of shopping and food. We got lunch at Native Foods first (my last time getting to eat there for awhile 😦 ) and then the moment I’ve been waiting for for at least a year…we stopped at the new Trader Joes! Colorado finally got with the program and opened up a few TJs last month, but since none are where we live, we had to drive about an hour up to Denver to check out the store.

The store was a little smaller than I was expecting it to be, but then again I’m used to Whole Foods and Sprouts which are a little bigger. But the selection is incredible! They had so many products I’ve never seen anywhere else, and a lot of stuff (like their raw almond butter) is just much cheaper than at any other store. It made me a little sad that I’m moving to a state that doesn’t have any TJs. Of course, I ended up with a bunch of stuff, including dried persimmon (!), almond butter, tofu burgers and a pink sea salt grinder. My mom was mostly impressed with their beer and wine selection!

After a quick trip to our favorite ice cream place (they always offer 4 rotating vegan flavors and I got the spiced cider sorbet–just like apple cider!), it was off to IKEA! If you’ve never been to an IKEA, you won’t realize how awesome it is. It’s also a decent workout, as you have to walk through the entire store to get to the checkout. My mom and I went to check out some inexpensive furniture for my new apartment but we didn’t get anything other than a tabletop ironing board because we realized we won’t have enough room in the car to move it. And there’s no IKEA where I’m moving to, so any IKEA furniture will have to wait until I come back home to visit and I can take some back with me.

On Saturday my dad and I hit up a vegan pop-up market downtown. The weather was seriously crappy (windy, cloudy and cool) but luckily the market was held inside. It was a lot smaller than I was expecting it to be, but we got free samples of kale chips and green juice and I also got a couple locally-made gluten free vegan cookies. I wish I had bought more, because they were incredible.

After church, it was time for my celebratory dinner out. My family doesn’t go out to eat often (once a month, if that) but we always do for special occasions, like birthdays and apparently job offers! I chose Tapateria, where I had my birthday dinner in July and even though we couldn’t sit outside because of the weather, it was still just as nice of an experience as it was the first time. We ordered a lot of the same things as last time, like the incredible fresh garlic bread (everything is gluten free, which I love!), the warm olives and of course, the sangria. I don’t drink that often (again, probably about once or twice a month) but I love sangria and I plan on making my own this summer.

It’s crazy that Saturday’s dinner was one of the last times I’ll be eating out with my family. I know it’s kinda hard on my parents too–my sister’s going off to college in the fall so they’ll officially be empty-nesters. I’m lucky to be so close with my family, so I know the transition period will be tough on all of us, but it’s nice to know that I’m always a phone call, text or 9 hour drive away from seeing them.

I’m finally an iPhone owner!

On Sunday, I officially became an iPhone owner! I’ve had an iPod touch since 2010 but all my smartphones have been Androids. I’ve been wanting an iPhone for awhile, and since T-Mobile finally offers them, I upgraded to the iPhone 5C. In pink, naturally. That phone is seriously my baby. I’m in love with iOS 7 and the feel of the phone. And I still have the best of both worlds, because my tablet still has all my Android stuff on it. Win win! The best part is, I can finally use emojis so…don’t be surprised if my Instagram is bombarded with them 😉

So there’s just a little glimpse into the craziness of my life lately. I’ve got one more post lined up for this week, and then I’m off to TX at the end of this week for spring break! Fair warning, my life will be even crazier post-spring break so I’ll try to keep up with commenting but I probably won’t post much for the next few weeks. See y’all in mid-April!

I’m not sure when (or if) I’ll get back to a regular posting schedule with a vacation coming up and settling back in at scchool but for now, enjoy this little survey I always enjoy doing.

Current Book: I’m loving my new “Going Raw” cookbook. I like that it’s not just recipes (and delicious-looking ones at that) but it also came with a tutorial DVD and has tips for implementing raw foods into your lifestyle. I basically want to make everything in the book!

Current Guilty Pleasure: Phoney Baloney’s coconut bacon. Gah, I need to stop devouring this stuff–I only bought a small bag of it and the stores around me don’t sell it yet! Sooooo addicting, and awesome ingredients list.

Current Drink: Water all day errryday in my VS PINK giant water bottle. It makes drinking water that much easier. Also, coconut water iced coffees.

Current Food: Salads at least 1X per day, protein banana softserve (though not as much anymore), protein fruit ‘cereal’ (Sunwarrior+almond milk+fruit+other toppings in a bowl), Larabars, ice cold watermelon.

Current TV Show: I’m not watching much right now, but I like that new Hollywood Game Night show on NBC. I like seeing celebs in real life!

Current Wishlist: Some clothes I can transition into fall (particularly a hi-lo dress), more cute oxfords (spotted the cutest pair at a little boutique the other day!), a new planner for the school year…and motivation to get through this last semester. Senioritis is hitting me hard!

Current Needs: The need to pack! Seriously, I actually like packing but I always procrastinate. I can’t even think about packing up stuff again for school in 2 weeks…I just need to pack for vacation first!

Current Triumphs: Finishing up my weather internship with a bang. Last summer’s internship was a bit of a letdown but this summer’s was an amazing learning experience and I got to work in a great environment with awesome people. I’m going to miss that place a lot, but I’m thankful for the experience I got there. Annnnnnd, I may end up posting some of my work from there at some point on here, who knows!

Current Bane of Existence: School coming up. I’m sorta looking forward to it, but after 16 years of school, I am beyond ready to just get my diploma and move on to the real world. I loved college but at this point, I’m so done.

Current Indulgence: The vegan carrot cake ice cream I enjoyed the other day. Totally fine with having ice cream right after a delicious salad, and it was really good ice cream. It was like two of my favorite desserts (carrot cake+vegan ice cream) in one.

Current Blessing: Being able to see my extended family again. We haven’t been back to see most of the fam in 4 years and it’s good timing now because one of my grandpas is not doing so well. Hopefully our visit can lift his spirits and help him feel better. Not to mention, it’ll be great to get away for a week and enjoy a different state!

Style Phile: Fierce Fashion Inspiration Board

Hey lovelies! Hope your weekend is going well for you so far. Eeeee, I still can’t believe it’s September. And tomorrow is the 10th anniversary of 9/11 for all of my fellow U.S. bloggies. I can’t believe it’s been that long since the terrible tragedies of that day, it seems like it was just yesterday. Anyways, on to happier thoughts!

So I started this new thing on my fashion blog where I feature a mini-slideshow of all the things that are inspiring me during that season. Natch, I steal borrow photos from weheartit (love their stuff!), and I include everything from style to beauty and even just random seasonal things. Here’s my debut of the fall slideshow in inspiration board format!

Yeah, a lot of them are completely random-ish (like the pumpkin cupcakes and the Starbucks cup that says you’re extremely hot–bahaha I love that one 😉 ) but most of them are very inspirational to my style this season. I love love love Emma Stone–she’s so down-to-earth and I wish I could pull off her amazingly-rich red hair. The Coach Poppy wristlet is totally adorable and I like the combo of pink and silver (in fact, it’s on my nails right now!). The A&F billboard, well…that’s a given 😛 I love A&F, especially their hot half-naked male models. Yum. I’m really into boho hippie fashion right now so I’d love to have a headband and shades like the girl in the middle does. The iPod cases with little bows is just too cute. I’m going to find a way to incorporate pastels and bows into my wardrobe this fall without it being a faux pas. And gosh, who wouldn’t totally adore those cheetah lips? Fierce, I tell ya 😀 I am dying to figure out how to create that, and also to pull it off without looking like a freak.

Playing Tour Guide

So I’ve been sorta absent around the blogosphere for the past few days, and I’ve really been missing it! I wish I would have been able to post/comment more, but this weekend was move-in weekend at my college, so I was super busy with that. But now I’m back in action 😉 And I’ve got a surprise for all of you…a virtual tour of my new place!

I would have loved to have lived in a campus apartment this year, but my parents thought it would be better to try for those next year, since I don’t have a car and I applied for them too late and the selection was small. I was originally supposed to be in the same dorm building as last year, except on a different wing and in a double-as-single room (a double occupancy room without a roommate). But apparently, in June, my school realized that too many freshman were enrolled than there was housing, and they sent me an email telling me I could upgrade to an actual single room in a much-newer dorm (it was built in 2004!) with a suite-style bathroom for the same price I was paying for the double-as-single. Well, that was a total no-brainer! So here I am in an air-conditioned dorm that seriously looks like a hotel on the inside and out, and I couldn’t be happier! Now I can do (almost) whatever I want in my room without worrying about a roommate’s disapproving look (not that I do anything that weird…) or awkwardness (a la last year). And I don’t even care that I’m only one of the few sophomores on my floor. It actually feels cool to be older-slash-more mature than all the freshies in my hall.

The mystery door. Actually, it leads to the bathroom I share with my 2 suitemates, but I didn't feel like being a creeper and actually taking pics in the bano. It's basically just a toilet, shower, and some towel bars.

Such a rebel with 2 fridges. This one is my makeshift "freezer" so I can store more frozen yumminess, like veggie burgers and frozen mango. Being rebellious is worth it.

Microwave and pretty pink dishes! I love having real dishes, even if they're plastic, because it feels more like home.

WIAW: The Big 1-9

Hey guys! Sorry my WIAW is a little late this week. I was pretty busy on Wednesday, so I didn’t have much time to post. But I still wanted to get in on the party, so here it is!

Well, it’s finally here–my 19th birthday!I feel like I’ve been waiting a whole year for my birthday…oh wait, I have 😉

The most exciting part of this year’s birthday (besides a special store opening event–more on that in a bit) is that it just so happens that it’s also Wednesday. As in, What I Ate Wednesday! I love this weekly party (hosted by the lovely Jenn) and this week, it feels like even more of a party, since it’s my b-day. Self-centered much? 😀

Peas and Crayons

I started my birthday out reaaaaaaaally early (well, early for me!) at the ripe hour of 6 o’ clock. Who in their right mind wakes up that early on their birthday if they don’t have to go to work (or they just happen to be an early bird, which I am most definitely not)? This girl right here, and for a good reason–my mom and I were going up to Denver for the grand opening of Colorado’s first-ever IKEA store! I’ve never been to an IKEA store so I was curious about what they’d have there, but mostly because they were giving away gift certificates worth $52.80 (the elevation of the store is 5280 feet, I guess that’s how they got that amount) only to people whose birthday was on July 27th (the grand opening day, obvs). I’ve never thought my birthday was on a special day (though, one of my lucky numbers is 7, so it’s kinda special) but I guess it was in this case! I had to prove my birthday was really July 27th, though (this is when having a driver’s license comes in handy…oh, I guess also if you want to drive 😉 )and I got a neato Happy Birthday stamp on my wrist. I think some people thought it was a tat lol JK.

Welcome to IKEA!

The coolest stamp ever!

 My mom scored a $10 gift certificate at the door, so we had over $60 to spend. My dad told us that we couldn’t go crazy and spend way over the amount we got (knowing us, we probs could have easily) and we didn’t! We even had $5 left over. We ended up getting a floor lamp with a pink and orange shade, a pink plastic shower caddy and a cool orange lamp thing (notice a trend here?) All the stuff gonna be for my dormie room and I can’t wait! I’ll show pics when everything’s actually assembled. As for the verdict on IKEA? Love. It. I’m a big fan of modern, sleek, cool furniture and I can totally see myself shopping here when I have a place of my own. The best part is that it’s all pretty cheap but well-made. Double score!

After the adventure that was IKEA (I totally got my exercise in for the day at that store. No joke. We were running to try to find the birthday certificate hand-out area, wrestled people to the ground manuevered around people to check out the lighting fixtures and almost got lost in that maze of a store.) we went to Panera for lunch. I got the strawberry poppyseed salad for the second time, and it was perfect for a hot summer day. It was huge though, so I wasn’t able to eat much of it.

Then we drove to Gelazzi (the best gelato place, hands-down!) to pick up my b-day dessert. I was planning on getting a gelato cake or pie, but after being shellshocked by the prices (30 bucks for a cake? No thanks!) I settled on 2 pints of gelato, one mint chocolate chip and the other Hilo pineapple. Mmmmm (not together, though!)…

Back at home, I was starving so I munched on a handful of PB Puffins (those things are like crack, I swear) and some raisins. IDK why, but I’ve been loving on the raisins lately, even more so than my beloved dates. Don’t worry dates, you’ll always be my true love 😛

After some cardio interval time and yoga (as if I didn’t exercise enough already at IKEA…) I had a snackie that’s quickly becoming a favorite of mine: Late July mild green mojo multigrain chips alongside an almond butter-stuffed date and pineapple chunks. I convinced my sis to try the chips and she fell in love. My sister, the organic-hater, loved these organic healthy chips because they “taste like Doritos” (her words, not mine). I’m glad I can convert her to healthy eating 🙂

My daddy got home and then we were off to Pei Wei for my birthday din din. If you’ve never heard of/been to Pei Wei it’s basically a cheaper version of PF Changs. Okay, maybe that didn’t help either, but it’s a place that has a bunch of different Asian cuisines and dishes. I got my personal fave, the Vietnamese Chicken Salad rolls. I also had some iced chai black tea (s0 delish with a fresh orange slice!), edamame and a little bit of my dad’s brown rice mixed with peanuts from his Kung Pao. Such a delish dinner and I can’t wait to have the leftover roll for lunch! My only complaint is that I was freezing my butt off the entire time! What is it with restaurants and their extreme air conditioning?

After a little AGT (America’s Got Talent) watching, I was starving again (!) so we decided to have the birthday gelato then. Remember above when I said that I would never have pineapple and mint chocolate chip gelato at the same time? Well…I did. It honestly wasn’t bad, but that’s probs because I ate each flavor separately (and now I can look forward to many more nights of gelato leftovers!) I was surprised the house didn’t burn down, with 19 candles on a tiny gelato container!
