The End is Near+Kelp Noodle Stirfry

Well guys, here we are again, at the end of another year. I hate being cliche, but where the heck did 2012 go? I feel like as I get older, the years fly by so much faster than when I was a kid. Not that I’m complaining, but it’s crazy to me that I’m practically done with college!

I’m really excited for 2013. I have no idea exactly what will happen, which scares the type-A planner in me, but it’s exciting to think about all the things that could happen this year. For one, I’m finally turning the big 21 in July. Don’t get me wrong, I’m not big into drinking or anything but it’ll be nice to be able to order a good drink in a restaurant sometimes, or enjoy a cool cocktail at home. Also, I might possibly be graduating in December–crazy talk! I really want to get all my credits done in time so I can graduate a semester early and get started on my first big girl job. I know a lot of people would rather stay in school as long as possible but I’m so excited about my future career (hopefully as a meteorologist) that I want to get a head start!

I don’t want to drag this post on forever, so I’ll just share some brief highlights from the year with you and then give you a delicious, quick recipe at the end.

January

I finally got a Twitter, I experimented more with raw recipes and I overcame my hatred for hot tea.

February

I tried a bunch of new-to-me products, did a raw food challenge and went to a father daughter dance with my sister and dad.

March

I reevaluated my recovery journey and eating habits, got an internship at a local TV station and made a bunch of recipes over spring break.

April

I proclaimed my love for the Whole Foods salad bar, stressed out about finals and had an enjoyable (while sick) Christmas.

 And now for the recipe! I don’t know about you, but after Christmas, some nights I’m feeling lazy and I just want a quick dinner to throw together so I have more time for family game and movie nights. This stirfry recipe comes together in 10 minutes and is easy to customize to your tastes. I used kelp noodles as the base because I love their texture and how they can bulk up a meal without adding any calories but you can use rice or soba noodles if you prefer.

Coconut Curry Kelp Noodle Stirfry (vegan, gluten free, grain free)

1/4 cup light canned coconut milk (can use full fat)

1 tsp curry powder

red pepper flakes, to taste

1 tbsp peanut flour (or peanut butter)

1 tsp coconut aminos (or tamari)

1/2 cup kelp noodles, rinsed and dried

fresh or frozen veggies (I used shredded carrot slaw and fresh green kale)

1/4 cup fresh or frozen pineapple (or chopped fresh orange)

1/2 cup shelled edamame

In a small bowl, stir together coconut milk, curry powder, red pepper, peanut flour and aminos until thickened and combined. In a medium pan over medium heat, cook edamame, veggies and pineapple in a small amount of coconut oil. Add in kelp noodles and stir sauce over noodles. Cook for 5 minutes or until mixture is hot and sauce thickens up a bit. Serve topped with shredded coconut, chopped peanuts, pumpkin seeds or a drizzle of sriracha. Serves 1.

I’m Weird Because…

My spring break has officially begun! I am super psyched to get a whole 9 days off from school and get a little chance to relax in the middle of this crazy semester. I don’t have any really exciting plans for this break (boo!) but I’m sure I’ll have some fun no matter what goes down.

I’ve been thinking a lot lately about things that I like and comparing them to the preferences of the healthy living blogging community as a whole. Don’t get me wrong–I’m not comparing in a way that makes me feel inferior or whatever–just in a fun way that shows that we all have differences and it’s good to embrace those differences. So in the spirit of my It’s Okay… post a while back and share the reasons that I’m weird awesome!

I’m weird because…I love peanut flour but can’t stand peanut butter.

I basically have peanut flour paste in some form at least once a day!

I know most people say peanut flour isn’t a replacement for PB, but for me it is–not because I’m scared of the fat in PB (I just prefer other nut butters, like almond and pecan) but because I don’t like the texture or taste of straight-up PB. I use peanut flour as a source of easy protein and I just love how delicious it is!

I’m weird because…my Greek yogurt brand of choice is Oikos.

I know, I know, I’m not a Chobani fan like most of the blogging world. Honestly, I discovered Greek yogurt prior to blogging and Oikos was the first brand I tried–and I was hooked! I’ve tried Chobani and Fage a few times since then (Fage is okay…) but Oikos is still my one true Greek yogurt love. I like that it’s organic and I just love the flavors they offer, plus the plain kind is so thick and tangy.

I’m weird because…my favorite dinner at the moment is a topped sweet potato.

An oldie but a goodie!

I just love a hot sweet potato “baked” in the microwave and topped with peanut flour paste, almond peanut cashew butter and some cinnamon. I don’t know why, but it’s just so tasty and filling!

I’m weird because…I’m loving my coffee iced and my tea hot right now.

Before a couple of months ago, you couldn’t pay me to drink hot tea–I loved iced, and that was that. Now I really love me some hot Celestial Seasonings, especially country peach passion, and I’m craving iced coffee like no other. I’m hoping I can hit up Starbucks over spring break and get some of their iced coffee with some sugar free vanilla or hazelnut syrup in it–mmmm! For now, I’m making my own and flavoring it with my new stevia drops.

I’m weird because…I prefer my fruit frozen.

Bananas are so much better frozen!

Once I realized bananas taste amazing when frozen, I don’t think I’ve eaten a room temperature banana! I’m also hooked on freezing my grapes, and buying frozen pineapple, mango and berries from Target. There’s just something about frozen fruit that can’t be beat. I don’t even care if it’s cold out, I’m eating my fruit frozen!

I’m weird because…I make oats just for the toppings.

Okay, maybe I don’t make them just for the toppings, but they are the best part! You’ll never find me eating a naked bowl of oats–I love me some nut butter/peanut flour, dried fruit, nuts, cereal, etc. to top them with. I love creating flavor combos and making a totally delicious bowl. Some of my current faves include carrot cake, s’mores, PB&J (topped with grapes and peanut flour) and banana/honey/pretzel/peanut flour. Mmmm, so many choices!

Saturday Seven: Counting Down Already?

Hi guys! It’s my first weekend back at school and I can already say that I think I may be overwhelmed this semester! Not that I haven’t thought that pretty much every semester of my school career, but this one looks like it might kick my butt if I don’t stay on top of things.

The classes, while probably difficult, are at least hopefully interesting. I’ve got a broadcast news class–what I’m majoring in and want to do with my life (and apparently it’s a very popular class…there’s a gigantic waiting list)–a business reporting class, a studio production workshop class, an American environmental history class, a class on the history of U.S. national parks and a weather & climate class. So, all things I’m interested in (journalism, U.S. history and weather) but this is my first semester taking all 300 and 400 level classes, aka I’m one of the only sophomores in most of them! Which is fine, but I can definitely predict them being a challenge.

1. Colorado’s getting a Trader Joe’s!

I actually mentioned this in one of my most recent Saturday Seven posts and just the other day on my Twitter. I was sooooo upset that TJs had no future plans for a store in Colorado, but then a few nights ago on the news and two days ago on the Coloradoans for Trader Joe’s Facebook page, it’s apparently official that they’re coming to good old CO sometime soon. Of course, the first location will be in Boulder, but I don’t care that it’s 2 hours from home (or an hour from my college campus)–I am dragging my parents there as soon as it opens! I can’t wait to try all the amazing products that everyone in the blog world raves about!

2. I’m already counting down to spring break

This is where I spent my spring break 2 years ago--any guesses where I was?

Yes, I’m fully aware that school just started, but can you blame me for wanting a break already? The weather here, despite being fairly warm for winter, still isn’t as great as spring (or summer) weather and I’m longing for the days when I can wear skirts with bare legs again, and reunite with my flip-flop collection. Until then, I’ll just be inside, bundled up, counting down the days til spring break (only 35 school days left!)

3. I need this puppy in my life…stat!

I got a daily calendar of cute animals for Christmas, and this is by far the cutest thing I’ve seen in it! I just want to keep this little guy forever and ever. I used to think I hated little dogs, but this is one of the most adorable dogs ever! If I can’t have a greyhound (dream dog), I’ll settle for a cute Chihuahua!

4. I have a new drink obsession

I used to be a hardcore hot tea hater. I could only stand iced tea, which is ironically my drink of choice during the summer (preferably flavored and sweetened only with Truvia). Once I tried the Celestial Seasonings candy cane lane and sugar cookie sleigh ride teas, however, I was hooked! Before heading back up to school, I grabbed the fruit variety pack sampler and hoped these teas would be just as amazing. And…they are! I especially love the peach one, since it reminds me of summer, but the true blueberry and wild berry zinger ones are also winners. The acai mango zinger flavor is on my list of flavors to try!

5. I’m really loving this song right now

I don’t know why, but this song just makes me super happy! It doesn’t hurt that Enrique is a super-sexy beast 😉 I just bought it the other day, and every time I listen to it, I pretend that I’m the star of a movie and this song is the soundtrack. Anyone else ever do that with songs? It’s just me then?

6. Trying out new products is the highlight of my life

Ever since NaNeFoMo, I’ve been more motivated than ever to try out new foods! On my back-to-school shopping trips, I bought a bunch of new-to-me things, including blood oranges, Amy’s bistro burgers and vegan soups, organic refried pinto beans with chile and lime, Lightlife vegan smart bacon, Ezekiel sprouted corn tortillas and Archer Farms frozen grilled peppers. What I’ve tried so far has been amazing, and I can’t wait to sample the rest. The only way you can find out if you like something is to try it!

7. The only two things on my wishlist: an apartment and a car

Even though I signed the lease for my apartment next year a month or so ago, I’m still nervous that something will fall through and I’ll have to do the dorm thing again, which is NOT okay with me. I did it for a year and a half, and I’m already so done with it. I need a kitchen and more independence, ya know? And a car…well, that’s also a big one. I could live without it if I had an apartment, but I’d prefer to have one so I could actually go places on my own without relying on other people. Of course, I have a few cars on my dream list, but I’d be perfectly okay with any safe, working car!
