WIAW: What I Ate (Monday)

I haven’t done a legit WIAW in awhile, you know, like posting all my eats from one specific day. Really, it’s just more fun to highlight some of my favorite meals from the past week instead of doing it all from one day, plus I always forget to take enough photos! But I thought I’d try to do a real WIAW this week since I actually remembered to take pictures.

Breakfast: peanut butter banana smoothie-in-a-bowl made with So Delicious unsweetened Almond Plus almond milk, peanut flour, xanthan gum, Truvia, mini banana and topped with peanut butter Puffins.

I’ve been experimenting with almond milks lately. So far, I’ve tried Pacific Naturals u/s vanilla, Almond Breeze u/s vanilla & chocolate, Silk u/s plain and So Delicious Almond Plus u/s plain. I’ve liked all of them, Almond Breeze and Silk are the creamiest and have the most calcium, not to mention I prefer the vanilla to plain, so I think I’ll be sticking to those to those two brands. The So Delicious one is good if you want  a little extra protein (5 grams versus 1 gram per cup in most almond milks) but I wish they would come out with an unsweetened vanilla.

Lunch: curried sweet potato pinto burger, carrots, ginger peanut sauce, fresh pineapple.

Being home has meant cooking for myself (for reals!) pretty much every day. For me, this isn’t a bad thing at all. Basically, because the rest of my family are omnis, I have to make my own dinner which has inspired me to get creative. Somewhat. I remade these awesome veggie burgers from spring break and they’ve been making an appearance at both lunch and dinner lately. The problem with cooking for one is you end up with a lot of leftovers…which maybe isn’t a bad thing at all!

Monday’s outfit: navy cardigan (American Eagle), dark grey lace tank (Hollister), navy/dark grey abstract floral skirt (Hollister), bangles (American Eagle).

The weather has been so effing bipolar here! Since I’ve been home, the weekends have pretty much sucked (temps. in the 60s at best, lots of clouds and wind, maybe some rain) and the weekdays are hit and miss. Monday was pretty warm, but cloudy for most of the day so I missed out on tanning. Boo 😦 Tuesday was super-warm, but I spent some of the day inside for my first day of my internship. What I did spend outside was extremely hot, even early in the morning. I’m just hoping this weekend is better because I want to do a lot of stuff outside.

Snackplate: freeze-dried fruit, raisins, square of dark chocolate with almonds and sea salt, stuffed date, kettle corn, blue and sweet potato Late July chips, peanut flour paste. Side of (half a can of) cream soda Zevia.

Snackplates are officially never going away…at least I hope not! The above assortment has been my go-to combo lately and I’m not getting sick of it. I’m just running out of almost everything on it! Time to make a trip to Whole Foods 😀

Dinner: Hugh Jass sweet potato topped with black beans/guac/nooch on one side, peanut flour paste on the other, side of mini sweet peppers and ginger jalapeno sauce.

The picture doesn’t do it justice, but this was one monstrous sweet potato! I enjoyed every last bite of it though, and of course had to please both my savory side (with the Mexican-inspired toppings) and my sweet side (with the peanut flour paste). The mini peppers are my new favorite veggie for summer, especially dipped in this spicy sauce. I can’t say enough good stuff about the Ginger People line of sauces. I love both kinds that I’ve tried and now I wanna try them all, well at least the ones without eggs or dairy in them!

Nighttime snack: PB Puffins in u/s almond milk, frozen grapes, peanut flour paste and almond peanut cashew butter.

See why I almost never post my meals from the same day? It’s because I repeat the same things throughout the day often. Like peanut flour, which I had 4 times on Monday, and Puffins which I had twice. I sometimes get really hung up on one thing and I eat it every single day or multiple times per day til I’m sick of it for awhile. I hope that never happens with my beloved Puffins and peanut flour…

Survey Time Up in Here!

Who even likes tests or quizzes? Not me. Especially not around this time of year, aka dead week, aka the week before all hell breaks loose, aka finals time. Luckily this semester I only have one actual final, but I’m still dreading it. One thing I will never dread is taking surveys. They are so much more fun than real tests and you actually learn something about yourself and other people. Take that, weather and climate final exam!

I saw this survey on a couple blogs recently and I decided to do it while I still have brain cells left. Definitely fill it out if you get the chance because it’s fun–way more fun than a pop quiz. Oh, and I did change a few of the questions to be more veg-friendly 😉

Coke or Pepsi? Ummmm, neither?! Sorry, not a soda girl at all. Not even diet anymore (though Zevia’s an exception…), though I used to drink Diet Coke occasionally a few years ago. So I guess I’ll go with Coke, since I was never able to stomach Pepsi.

Lemonade or Fruit Punch? Lemonade, baby! It reminds me so much of summer. I haven’t had a legit lemonade in quite a few years, but I’d like to try making my own this summer with some stevia.

Caramel Apple or Cotton Candy? I actually don’t think I’ve ever had a caramel apple, so I think I’ll have to go with cotton candy. The colors always appealed to me when I was younger. Though I really do love my overnight oats version of caramel apples!

Dark Chocolate or Milk Chocolate? Dark all the way. I prefer the stuff that’s between 55-75%, since I do have a major sweet tooth, but I’ve preferred dark chocolate since I can remember–yes, I was that weird kid who liked the Hershey Special Dark bars at Halloween!

Tofu or Tempeh? No question…tempeh! Some people say it tastes bitter, but to me it’s just a little nutty. Tofu weirds me out, especially the taste. I can handle the texture if it’s extra firm, but I’ve never had really good-tasting tofu, aside from the stuff they have at the Whole Foods hot bar. Now that is some good tofu!

Soy or Almond Cheese? Both are pretty good, but I’m gonna go with almond, because it’s a little healthier than soy cheese. Plus I’ve found it in awesome flavors like jalapeno jack.

Crackers or Cookies? Hmmmm, this one is tough. I like crackers, but I haven’t had any in awhile since it’s been hard to find kinds without milk in them (crazy, I know). I like cookies too, but they have to be certain kinds, like the knock-off healthier Oreos that Whole Foods makes, or really soft homemade cookies. I think I’ll say cookies, to go with my sweet tooth!

Pretzels or Chips? Uh, can I say both? I used to not be such a huge fan of pretzels, but once I discovered that they make a really good topping for sweet and salty oats (not to mention delicious dipped in almond butter), I was hooked. The only chips I really eat are the sweet potato multigrain chips from Late July, but they are beyond amazing!

Mexican or Indian Food? This one’s hard. I like Mexican food a la Chipotle or Qdoba, which I know isn’t authentic Mexican, but whatever. I’m mostly in it for the pico de gallo and guacamole. I haven’t had Indian in awhile, but I’ve always loved its spiciness and curries are so good. I’m gonna say Indian.

Mediterranean or Chinese Food? No question–Mediterranean. How can you beat hummus, tabbouleh and falafel? You can’t.

Pie or Cake? Uh, pie…maybe? I actually prefer cold desserts, like sorbet and gelato, but pie is definitely better than cake for me. I hate frosting, so whenever I’d have cake at a party, I’d just eat the cake part. Which is boring. A good fruit-filled pie can be pretty delicious though.

Pasta or Pizza? Another hard one! I prefer pasta in cold pasta salads (especially quinoa pasta), and I like pizzas sans cheese, but with tons of random toppings, like artichoke hearts or olives or pineapple or hummus. Not all on one pizza though. I’ll say pizza, because I really want to experiment with making my own pizzas this summer.

Green or Red Grapes? Red, obvs. They’re usually sweeter, and they’re awesome frozen. Just do it.

Salad or Soup? Come on, really? I am a salad fiend fo sho! Soup isn’t really my thing, but I love devouring huge salads, especially from places like Panera, Qdoba and my favorite place, Mad Greens.

Pancakes or Waffles? Waffles. There’s just something about them that reminds me of being a kid, plus they’re just more fun than pancakes to me. And easier to make!

Raw or Cooked Veggies? I’m weird because I prefer a lot of veggies raw. Like the obvious ones (baby carrots, greens) but also broccoli, cauliflower and bell peppers. Try dipping raw cauli in salsa, it’s amazing!

Oatmeal or Cereal? Oats! I used to gag just thinking about oats, but that was before I discovered how great overnight oats are and the million flavor combos. So much better than those lame Quaker packets. The only cereal I really like is peanut butter Puffins, which I’m basically addicted to.

WIAW: (Almost) Wordless

Heeeeey guys, I loved hearing what you think about Larabars! I always like to know what other people’s preferences are and try out new things based on a good review.

Today’s WIAW will be basically wordless, besides the captions, and just a mishmash of foods I ate throughout the weekend and early part of this week. Obviously this is not all I ate, nor was it all eaten in one day, it’s just some of the highlights of what I’ve been noshing on.

WIAW: Weekend Food and Fitness Thoughts

Hi girlies! Hope you enjoyed your weekend! As I mentioned in my last post (which I loved all the comments on, BTW!) I went home this weekend, actually for the first time since spring break. And I’m headed back home this weekend, because of Easter. I know it seems like I go home for the weekend a lot but I only live about a 2 hour drive away, so it’s not a huge haul plus having no car means my weekends on campus are super-boring (yet really good for getting homework, papers and studying done). Usually I go home every other weekend, and it’s nice to get a little break from college life, and I love my family to death so it’s a win-win. Anyways, I wanted to recap my weekend for this week’s edition of WIAW. Instead of just sharing all my eats (most of which went undocumented, unfortunately), I also wanted to give you all a little insight into what I was thinking regarding food/fitness this weekend. As I’m sure you can guess, I still struggle a lot with disordered thoughts but I think letting them out is a good way to figure out where they’re coming from and how to refocus them.

Oh, and P.S. today (Tuesday) is my daddy’s birthday! I won’t get to be there to celebrate with him but I’ll just have to have a belated party for him this weekend!


Friday

After writing my hand off finishing an essay exam in my only Friday class, I waited around until my mom and sister got here to pick me up. Usually it’s just my mom, since she doesn’t work on Fridays, but it was their spring break this past week, so my sister was able to come up and get me too. We are really close, so I loved seeing her again.

We had plans to go out to lunch, which I was really excited for. My mom let me pick the place, and being indecisive as usual, I had come up with 3 or 4 possible places. We checked out two of them and finally decided on Ingredient, which is a small chain restaurants with locations in Colorado (where we went, obviously), Missouri, Kansas and Nebraska. I had looked up the menu ahead of time and I found plenty of things that were Ashley-friendly, aka vegan (or could be modified to be vegan) and ‘safe’, ED-wise. Yes, looking up menus/nutritional facts ahead of time is a habit I’ve clung to, I pretty much do it every time I’m planning on going out to eat, not just to find the lowest calorie item, but also now because I’m eating primarily vegan, and non-vegan things can be hiding in almost anything! I would like to move away from the calorie researching thing, but it’s still a scary thing for me not to know the calories in something.

Anyways, we settled on Ingredient and we enjoyed the sunshine and warm weather outside as we waited for our food. Like I said, the restaurant had a lot of options for me, but I ended up getting something ‘safe’, aka a build-your-own salad. But to be honest, I didn’t order it just because it was safe, but because I really love getting to make creative salads. I ordered napa/bok choy mix topped with fresh jalapenos, artichoke hearts, fresh strawberries, white beans and fat-free raspberry vinaigrette. Random, I know, but it was what was appealing to me at the moment. And I did love the salad, but I mostly just ate the toppings because the lettuce ended up being hearts of romaine, and it wasn’t very tasty. But…I kinda regretted getting it, because I saw that they had other yummy-sounding options, like a falafel sandwich, a veggie burger with whatever toppings you wanted and make-your-own pizza (which I could have gotten without cheese). But I chose the ‘safe’ option, and while it was good, it wasn’t very satisfying.

Saturday

I woke up bright and early (aka like 8 am) because my dad, sister and I had plans to play tennis! We’ve been playing tennis on and off during the spring and summer ever since my sister and I went to a tennis camp 5 years ago and discovered that we really liked it. Now it’s one of my favorite forms of exercise, because it’s challenging mentally and physically, and I can do it with other people, namely my dad and sister. We kinda play doubles, only my dad is on his own 😉 We had breakfast and set out for the tennis courts that are about a 10 minute drive from our house–which is HUGE, because almost nothing is within 10 minutes of our house. We live in the middle of nowhere 😛

The weather was gorgeous, even at 10 in the morning. It was the perfect temperature (around 70 degrees) and the sun was out with almost no wind. We played for almost an hour, but I wasn’t even close to being tired. In fact, I felt like we had only been playing for half an hour! The only issue was, I tripped on my way back from class on Friday (klutz status!) and totally tore up both knees, plus a few layers of skin ripped off one of my big toes. TMI, I know! I was wearing band-aids all over, and of course, my right knee was kinda stiff because the skin was trying to grow back and all that jazz that happens after you fall down. It didn’t really impact my playing, just that I wasn’t able to run to get the ball as much as usual. This made my ED voice act up big time. He was basically just telling me that even though we’d been playing for an hour, it was barely a workout, because I didn’t run as much as I usually would and mostly just walked to get the ball when it went out of the court. Okay, the reason I play tennis is not only to burn calories, but also because I truly love it, but it still made me feel ‘bad’ and ‘fat’ that I hadn’t been able to exert myself as much as usual.

Lunch was…lame. Like I do on most weekends at home, I take advantage of the abundant (or sometimes not-so-abundant) selection of produce and made myself a salad. I was going for an Asian-ish twist, so I whipped up some peanut dressing made with peanut flour and sriracha sauce, and topped the greens with a little edamame, a few mini sweet peppers (a new obsession) and cubed tempeh heated up on the stove. I also had some frozen pineapple on the side. Unfortunately, the dressing turned out to be bland and the edamame was freezer-burned so the entire salad was not too tasty. I ate all the pineapple, peppers and most of the tempeh but had to throw the rest out. Better luck next time? And yes, I know this was nowhere near enough food, especially since I had just played tennis, but I was just not feelin’ it. Of course, later on I was starving–duh, I had barely eaten before! I’m still trying to work out my weird hunger cues–I am rarely hungry after working out, but I definitely feel it later on.

After church with my family (a guy from Jews for Jesus came and told us all about the Seder meal for Passover–it was really cool!) we headed home for some dinner. I was very hungry even after having a decent snack a few hours earlier. My mom was going to grill sausages (chicken for my family, veggie for me) and have some salad and fries (aka sweet potato tots for me) on the side. I was excited…until I saw the sausages she bought for me. They were the Field Roast brand, the Mexican chipotle flavor. Um yeah, these sounded totally delicious…but 250 calories for one sausage? That’s about how many calories I’ve been eating for dinner, never mind we were also having stuff on the side! I freaked out, despite the fact that A) they sounded really good, B) they are pretty healthy and non-processed and C) they have 23 grams of protein per sausage (not too shabby!) But the disordered side of me went straight towards the ‘high’ calorie count (which is honestly not that high). I tried to compensate by skipping a bun (I’m not really a fan of them anyway) and only having a half serving of sweet potato tots. This didn’t stop me from mentally beating myself up after dinner, especially when my dad said, “Wow, you must have liked it!” because I ate the whole sausage. Well, yes, I did like it, but I interpreted his comment to mean “Wow, you’re a pig!” Unfortunately, I let his comment get to me and after dinner, I tried to feel better about how much I had eaten (not that much in reality, but more than I’m used to) by doing some cardio circuits for 15 or 20 minutes. I do this sometimes, try to make up for eating what I see as too many calories (aka the number doesn’t fit into my set plan for the day, despite the fact that it might still be not enough) by working out extra. And on top of this, it wasn’t enjoyable because my knee was still hurting and my ankles were sore. That’s been freaking me out–my ankles have ached whenever I’ve been doing cardio since this weekend and I’m not sure why–and I’m scared I’ll have to take a break from daily workouts, which is a big no-no for me.

Sunday

Sunday was a LOT better for me, thoughts-wise. I had breakfast with my family (BTW, chocolate and peanut butter Puffins taste amazing in unsweetened almond milk, they sweeten it up and make it taste like cookies and cream!), got ready for the day and played a few tricks on my parents. It was April Fool’s Day, after all! They were a little lame, like prank calling them on their cell phones using blocked numbers (they somehow knew it was me and my sister) but the best one was pouring some vinegar and tonic water into my dad’s flavored sparkling water at lunch. He totally spit it out and it was just hilarious! I was considering putting some toothpaste in place of the cream in the Oreos we had in the pantry, but I didn’t want to be too mean 😉

Speaking of lunch, it was a winner, especially compared to Saturday’s. I whipped up a quick pasta salad using quinoa pasta (love this stuff), chopped baby carrots, edamame and spicy peanut dressing (basically the same as on Saturday, but I got the proportions right this time so it actually tasted like something). I also had some green grapes on the side, as well as garlicky kale, which I sauteed on the stove with some salt and garlic until it was crispy. It was so good, I am definitely making this as much as I can! The best part of lunch, though, was enjoying it out on the deck with my family reading the Sunday paper. I love getting to eat outside and enjoy a leisurely lunch, which I never get to do at school. Only 4 and a half more weeks til I can eat outside every day!

Before my mom and I had to hit the road, my sister and I went for a quick walk on our street. The weather was perfect and it’s hard to believe it was almost 80 degrees when I was home–it’s been cold, cloudy and windy the past two days, plus it snowed…Colorado is bipolar! 😦 It’s supposed to warm up by tomorrow though.

Back in good old FoCo, my mom and I had dinner at Garbanzo, since they were having a buy one get one deal. It was really crowded and busy because of this, but still enjoyable. It’s one of my favorite fast casual places to eat at, since it’s all Mediterranean cuisine, which is one of my faves, and they also have a lot of veg options. I got my usual plate of hummus, cilantro sauce, fresh red cabbage, tabbouleh (they have the best!), lettuce and I tried the portobello mushroom this time. I would probably skip it next time, since it was really watery, but it wasn’t too bad. I ate it all minus most of the mushrooms and loved it. And surprisingly, I didn’t feel too guilty about it, which I usually do after eating out. However, Garbanzo is a really healthy place and I truly just love it.

So yes, I realize this was a monstrous post, but it really feels good to get all my thoughts out there and just be honest with myself and all of you. I really love how Tessa does this with her WIAW posts, because I can always relate, and I think it just adds something rather than just sharing what I ate. I think it’s more important to share the thoughts and feelings behind the food, rather than the food itself.

WIAW: A Day of Raw Challenge

Hey ladies, how is February treating you so far? I’m just glad we’re that much closer to March–I can’t wait to bust out the dresses and flip-flops again!

Peas and Crayons

 

As I promised in last week’s WIAW, I have a special edition of the weekly foodie party for you this week. As you might know, I’ve recently become interested in raw foodism. Let me just clarify that I am not considering eating 100% raw–I like the principles behind it and its health benefits, but I feel good right now with my current ‘almost vegan’ lifestyle and I feel like at this point in my ED recovery, I shouldn’t be excluding all cooked foods, because they are nutritious (not to mention delicious)! However, I do like making raw treats from time to time and I also love things like raw fruits and veggies (I actually prefer my veggies raw!) and nuts so I thought I’d try eating totally raw for one day and share my experience on here for a WIAW post. So here goes!

Breakfast: raw carrot cake bite topped with raw walnut butter, red grapes, dried mango slice.

Normally, I love my oat-filled breakfasts, usually with a side of veggie bacon or veggie sausage, or sometimes just a bowl of plain Greek yogurt and fruit, but this was a good way of switching things up. However, this meal didn’t have quite enough staying power (aka protein), so it’s not an ideal breakfast but still tasty.

Lunch: chocolate brownie Pure bar, baby carrots, freeze-dried mixed fruit.

However, I did get a little more protein at lunch with the delicious Pure bar! I love Pure bars, because they are basically bigger Larabars with a little bit fewer calories and more protein (7 grams in this flavor). I almost can’t believe they’re raw, they’re so good! The chocolate brownie is my favorite flavor, hands-down, plus I really needed my chocolate fix for the day since I couldn’t have my usual daily dose of  a handful of dark chocolate chips. I think I should invest in cacao nibs because they’re raw–I’ve heard they take some getting used to, though. The carrots and dried fruit were good for crunch and overall, this was a pretty balanced meal.

I also had some unpictured frozen pineapple chunks during my weather and climate lab. The date and nut combo is amazing, it tastes exactly like a turtle sundae. Well, without the ice cream, of course, but it’s a good raw substitute.

Afternoon snack: Pink Lady apple, handful raw pecan pieces.

Having just fruit and nuts for a snack isn’t something I usually do, but it was actually really tasty. I drizzled the pecans with a little raw honey and they were even tastier. I think pecans are my new favorite nut–sorry, almonds.

Dinner: sprouted quinoa bowl with raisins, shredded carrots and raw walnut butter, blood orange.

Sorry about the awful photo quality–I eat dinner around 7 pm so it’s pretty dark, aka no natural lighting so I just wing it. Instagramming the photos usually helps somewhat though! Anyway, this was my first time trying sprouted quinoa and I gotta say, it was a little weird at first, since I’m used to fluffy cooked quinoa but the crunchiness was interesting. I mixed it up with some raw walnut butter, carrots and raisins, making a carrot cake sprouted quinoa bowl of sorts, and I had some water and a blood orange on the side. The quinoa was pretty bland, but I’d like to try using sprouted quinoa in some kind of salad with a good dressing.

Dessert: frozen banana slices drizzled with raw honey.

No day would be complete without a nighttime snack! Of course, I love the combo of frozen bananas and raw honey, so I definitely enjoyed this dessert. Sweet, simple and cold. It was worth shivering the rest of the night–yes, I eat frozen stuff in the middle of winter!

Overall–I had plenty of energy to get through the day, and it made me feel refreshed and ‘clean’. However, there were definitely some foods I missed (namely peanut flour, sweet potatoes and oats), so obviously this raw food thing is not going to become a daily occurrence. I think cooked foods have a place in a healthy diet, and I don’t want to deprive myself of foods I love just to be completely raw. I do like that the challenge helped me get out of food ruts and try out some new combos, and it also challenged me to overcome my fear of fats (most raw foodism is based on using nuts, which have lots of healthy fats). I didn’t like that I wasn’t able to get as much protein as I usually can, and I don’t even normally eat a ton of protein, usually between 35-50 grams per day, and on my raw day, I only got 18 grams. Yeah, not so good but it was just one day so I’m not sweating it. So basically, there are some aspects I liked about the challenge and others weren’t my favorites but I feel good about mixing it up and trying something new. I would consider doing another ‘day of raw’ challenge in the future if I had more options, since being in a dorm I was mostly limited to fruits and nuts. In the future, I’m going to stick with my usual mix of raw and cooked foods, and also try out new raw food recipes occasionally.

WIAW: Back at It+Obsessions

Well guys, I’m finally back at school and ready to start off second semester! I really enjoyed having a full month off to be at home with my family, and not gonna lie, it was hard coming back. Besides missing my family, I also miss the comforts of home, having a car and a kitchen to cook in. Spring break is only a month and a half away though, so I’m looking forward to that!

Peas and Crayons

This WIAW, I thought I’d show you some of the food I’ve been obsessed with lately while I was home, as well as a few other recent ‘obsessions’.

Breakfast: raspberry mocha protein waffle, frozen grapes, spicy veggie sausage

I really wanted waffles the other day, since I haven’t had one in a couple of months, but I wasn’t feeling a boxed mix. Instead, I whipped up my own raspberry mocha protein waffles, and they did not disappoint, especially with 6 grams of protein per waffle! I had one as my last breakfast at home 😦 along with a spicy veggie sausage and frozen grapes (another obsession).

Raspberry Mocha Protein Waffles (vegan, high protein)

1/2 cup oat flour (or ground rolled oats)

1 scoop Soytein cappuccino protein powder

handful frozen raspberries

1 tbsp vegan chocolate chips

sweetener, to taste (I used Truvia)

water, to thin

Process oats in a food processor or blender til mostly ground. Mix oats, protein powder and sweetener in a bowl until combined. Add water until desired consistency is reached; stir in chocolate chips and raspberries. Heat a waffle iron (or make into pancakes) and cook until browned (makes about 4 small waffles).

I just stocked up on new pens for the upcoming semester, and of course, I scored the most colorful kind! I’m obsessed with organizing my notes by color, so these will be well-used.

Lunch: summer rolls, edamame in the shell, fresh pineapple, "poor girl's" spicy mustard (yellow mustard mixed with Sriracha)

My parents and I went to Pei Wei on Friday for lunch. I got my usual, the Vietnamese summer rolls, but when I asked them to leave out the chicken, they said they couldn’t do that! Most places are usually pretty accommodating to vegetarians, so this was a shock, especially since Pei Wei has plenty of veg options. I still got the rolls and just picked out all the chicken, which wasn’t easy, but it was totally worth it for the delicious summer rolls (with a side of in the shell edamame). Next time, I’d get an actual vegetarian option, despite my fear of ordering noodle dishes in restaurants.

Snack: in the shell edamame, small Pink Lady apple, handful organic cinnamon crunch cereal, PF paste

Snack plates are my favorite, whether for snacks or even lunch (I’d love to do one for dinner, too). I’m so indecisive so I like my meals to have many components so I don’t get bored. This was a pretty random one, but it fulfilled my craving for something sweet (cereal), something green (edamame), something crunchy and fresh (apple) and something delicious and protein-packed (peanut flour).

Outfit of the day: cream cropped sweater (Hollister), navy ruffled tank (Hollister), multi floral skirt (Hollister), grey polka dot tights (Target), grey corduroy booties (ALDO)

Sorry that I look super-pissed in the picture above–I always make the stupidest faces when I self-time. And, yes, I did just take this picture on Saturday and yes, I still have my mini Christmas tree up. What can I say, I like to make the holidays last as long as possible 😉 I’m in love with the booties that I got just before Christmas, but they’ve still yet to make a debut at school. I blame the snow and ice that randomly dumped on campus on Monday afternoon!

Dinner: Gardein beefless tips stir fry (with asparagus, mixed veggies and edamame), frozen mango chunks, freeze-dried strawberries

While I was still at home, I discovered a TON of frozen Gardein products in the freezer. I went through a phase over the summer where I was obsessed with them, but then I got kinda burned out. I rekindled my love for their meatless goodness over Christmas break and it was wonderful. The beefless tips weren’t as good as I remembered, though…

Dessert: carrot cake oats topped with almond peanut cashew butter and raisins

I don’t know why, but I’ve been obsessed with the carrot cake flavor combo lately. I’ve been loving the raw carrot cake bites I made and I’ve enjoyed quite a few bowls of carrot cake oats recently. I just love the mix of carrots, raisins and nut butter! Another awesome, new-to-me combo is coffee oats, topped with peanut flour paste and crushed Annie’s bunny pretzels–sweet and salty is the best!

Too Much Fruit?

Can I just tell you how excited I am for Thanksgiving break? I know, I know, I’ve pretty much mentioned it in at least my last 5 posts probably, but it’s really exciting. 9 days away from school–woooo! Now, I do love having a room all to myself, but as I’m one of the only sophomores in my hall, let’s just say that I’m getting really sick of all the immature freshman being loud at the worst possible hours. Like last week, they all decided to chat out in the hall right by my room…at 3 AM! Okay, I know I’m a granny when it comes to bedtime, but staying up til 3 is ridiculous, especially on a school night. Can’t wait for them to grow up and stop screaming and giggling constantly. Needless to say, I’m looking forward to the relative peace and quiet of home, seeing my family for over a week, as well as unlimited access to the kitchen. That is for sure the best part!

Anyways, today I have sort of a rant for you guys, so if you’d rather not read, I understand. But honestly, it’s not really that negative, just something that’s really bothered me lately. And it’s about fruit, my favorite food group.

I love fruit on its own...

Who doesn’t love fruit? I’ve loved it my entire life–I was never one of those kids who had no idea what a fresh apple looked like or whatever. We always had fruit around my house, and I’d probably have it at least once or twice a day. Today, I’m such a fruit freak it’s not even funny. I probably have it 4 times a day, at almost every meal or snack. Seriously, I love it that much! I always have to have grapes, bananas, apples, various dried fruits and sometimes even frozen fruit in my dorm because I can’t go a day without it. And you know what, I always thought it was really healthy. I mean, we’re supposed to get like 3 to 5 servings each of fruits and veggies a day, and while I’m sometimes slacking on the veggies, I never neglect my beloved fruit. But now with all this talk about diabetes and obesity, a lot of people are encouraging cutting down on fruit.

Say what? Fruit is nature’s candy–it’s naturally sweet, with plenty of vitamins and antioxidants and fiber. Most are low in calories and fat, so how can it be that bad? Well, apparently, all the sugar in them. I just recently started using this MyFitnessPal app to track my food (just as an experiment to see how much I’m really eating/burning, NOT to restrict) and I’ve been shocked at how high my sugar intake has been.It’s usually around 60 grams, and they recommend only 25 in a day. I freaked out, but then decided to really look at the numbers. I realized that most of it was coming from fruit. I usually have an apple per day–there goes 10 grams of sugar! Half a banana has basically the same amount, and dried fruit has a TON. But really, it’s not like I’m overdosing on the fruit or anything. I loved dried fruit, but I usually even eat less than the serving size. Having a serving of fruit 4 times a day isn’t really that bad, is it? Well according to this app, I’m probably going to become a diabetic soon.

Honestly, I think it’s completely ridiculous. They should have a disclaimer or something saying that the 25 grams is added sugars only, not the natural ones found in fruit and some veggies. Otherwise, some people might start cutting fruit out of their diets, which isn’t good. Fruit is so healthy for you, in moderation, and some people still don’t even eat the recommended amount. With all this hype about sugar being so bad for you, everyone’s going to start shunning fruit!

When I subtract the sugars I’m getting from the fruit I eat, I actually end up around their recommended 25 grams. And I love my fruit, so I’m not going to give it up. I don’t care what all these ‘so-called’ experts say–if I want to enjoy an apple with my lunch, or some berries with breakfast, I will! Recovering from an ED, I have enough fear foods as it is without adding fruits to my list. That’s just ridiculous. #rantover

WIAW: I Can Almost Taste Thanksgiving!

Purple cauliflower fans unite! Oh, hi guys, sorry I was just excited about all the great responses to my last post! I love seeing that you could relate to my stressage about signing up for classes and all the foodie-type things I included in the post.

Anyways, on with this week’s WIAW. I was lucky enough to get to go home this weekend sorta unexpectedly, because I have a humongo stats test on Friday that I’m pretty sure I’ll fail without getting some help, so I recruited my math-whiz dad. But the weekend wasn’t all studying, because how blah would that be? Basically though, it was just like a mini tease of Thanksgiving break, which is making me really anxious for break to start. Unlike a lot of weekends at home, it was pretty chill, which was exactly what I needed before this crazy week hit. Why do professors/teachers assign so much the week before a break? It makes me nuts! But, let’s just move on to the WIAW and weekend recap and talk about school craziness latah!

Peas and Crayons

Friday afternoon started out with me taking a stats quiz (ick) and then finally getting picked up by my mom and sissy. We headed straight for the campus bookstore, to pick up some Christmas gifts for my g-parents. Since we were already at the student center, my mom suggested we eat at the food court and use my RamCash, which is basically money the school gives you to spend on laundry, food at the food court, etc. I barely use it, besides every once in awhile for laundry, so I have a buttload on my card, since they add more every semester. My mom first told me that only Panda Express was open on Friday evenings, and I wasn’t too excited about that. They apparently have nothing that’s certified vegetarian, since things get mixed around and veggies may touch meat, plus their food is just greasy and ugh.  But luckily, the soup and salad place was still open, so I got a cup of winter squash soup. It was pretty decent, not the best I’ve had from there (their vegetarian chili is BOMB!) but I definitely prefered it to Panda. My mom and sister got it though, and it ended up costing $16! Call me crazy, but that’s a lot for two people’s dinners at a fast food-type place. But we enjoyed our dinners in the awkwardness that was the empty food court. Usually it’s packed with people, but who wants to eat there on a Friday night when almost everything else is closed?

Not soup (obviously) but my hodgepodge dinner from last week: plain Greek yogurt mixed with cinnamon, Pink Lady, chocolate PB2 sauce, baby carrots, pumpkin protein frosting. So weird but really hit the spot.

Back at home, it wasn’t too late so I had dinner part 2, since I didn’t finish the soup and I was starving. I had my first sweet potato in probably 3 weeks (it was a happy reunion, that’s for sure 😀 ) topped with some PB2 that I brought home. Okay, is this sad or what–I’ve gone through most of the jar in basically 5 days! 2 tablespoons of it is supposed to be 15 servings, what a lie! I’ve mostly been having 1 or maybe 2 tablespoons of it per day, and it’s almost gone! What?

Saturday I could barely make myself sleep in til 8. I think my schedule this semester has been screwing me up, I used to be able to sleep in til 9 easily if I stayed up past 11 or so. Well, I’m not complaining, 8 is fine with me! I hate sleeping in so late that I feel like the day is wasted, so I totally don’t get people that sleep in past noon or whatever. I had a nice breakfast of leftover pumpkin chocolate chip pancakes and my usual veggie sausage, alongside a homemade Starbucks peppermint mocha! I’ve been totally craving Starbucks, and since I rarely go (that’s gonna change in less than a week 😉 ) I wanted to make a drink that’s almost as good. My mom got some Silk Mint Chocolate soy milk (best stuff ever!) so I steamed it and added it to some Starbucks VIA.

For lunch, I ended up burning the last 2 pieces of tempeh bacon (whoops) while I was cooking my second sweet potato in two days. Obviously, they have been very missed. I topped it with more PB2 (addicted much?), and plated it and the burned bacon with some frozen raspberries. Oh so good.

Who can beat a nut butter topped sweet potato? Especially with tempeh bacon and frozen raspberries?

After lunch, my dad and I headed out to the store. Well…stores! I was only planning on getting some apples and grapes to tide me over for the 5 days I’d be on campus before break, but knowing me, I got a lot more. Well, not a lot more, but definitely some. But it was all needed, so it’s justified. I did get the apples and grapes I needed, plus some Silk Pumpkin Spice (haven’t tried it yet), Whole Foods fresh-grind crunchy almond butter, butternut squash cubes, my crack Late July green mojo chips, peanut butter pows cereal (apparently renamed peanut butter balls?), full moon brownie kid Clifs, dates, rolled oats, vegan chorizo taquitos and my personal favorite, Oikos frozen Greek yogurt! I’ve been dying to try it since I saw it on Tara’s blog awhile back. I got it in chocolate, and it is heavenly. Better than their original chocolate froyo, since it’s a little tangy just like Greek yogurt. Plus it’s got a little more protein, which is always a win. I can’t wait to try the blueberry and honey…and I hope they come out with superfruits, because that is my favorite flavor of their yogurt! Whole Foods was pretty lame this time as far as samples go, but I think I found a good vegan alternative to the Thanksgiving turkey–Field Roast Grain Meat loaves. They’re made from vital wheat gluten and veggies and they look pretty decent. I hope I can convince my mom to buy it for me, since my dad seemed to think it looked good.

I dressed up my first bowl of Oikos froyo with frozen raspberries and PB balls cereal. Love the mix of textures and flavors.

Then my wonderful daddy surprised me with some Pinkberry. I was so excited when it first came to my city, and I loved the watermelon froyo I got the first time around, all the way back in June! Unfortunately, I hadn’t been back there since but I got my fix this weekend. If you’ve never been to a Pinkberry, they only have 6 flavors at a time, but they rotate based on season, and their yogurt is better quality than most froyos. I’m such a sucker for all things seasonal, as you probably know by now, and peppermint is by far my favorite seasonal flavor–especially paired with dark chocolate! So when I saw the peppermint froyo on the front door, I knew exactly what I wanted to get. I also decided to branch out (and piss off my ED a bit) and topped it with some peppermint bark, which was the perfect pairing. Usually, I only stick with fruit as a topping, but I have no regrets getting the bark instead. And I don’t care what ED says about it, it was crazy good and I didn’t get fat overnight by eating it. So there!

The rest of the night was devoted to church, eating Amy’s cheeseless pizza with a side of Silk Mint Chocolate (can’t get enough of the mint/chocolate combo obvi!), showering, studying up on stats with the padre and watching some SNL. Emma Stone was the host, she’s so funny and I love her voice. It makes me less self-conscious for having a deeper voice than most girls 😛

Sunday was pretty leisurely. Breakfast and lunch were had over the Sunday pap-ah, I went for a nice walk with my dad and sister and then it was sadly time to head back. Most times when I have to go back, I’m a little sad, since I won’t get to see my family for 2 weeks, but this time I wasn’t because I knew I’d be seeing my madre’s lovely face again on Friday–for a whole 9 days, in fact! I was just annoyed with the fact that I had a full 5 days of school to deal with 😦 Before dropping me off, we had a delicious dinner at Garbanzo, my favorite fast-casual place. I think I’ve mentioned it about a bazillion times already, but it’s just that good. Mediterranean food is my all-time fave.

So there you have it, my weekend-before-Thanksgiving-break in a (big) nutshell. I always make these recap things way too long, guess it shows how excited I am about the weekends I get at home. Now I’ve just gotta focus on studying for my Friday stats test and…PACKING! I love packing, so I can’t wait!
