Friday Five: Foodie Edition

Thanks for all the helpful words on my last post! It’s hard to deal with well-meaning but unhelpful advice from family and friends, but it’s a good reminder that we have to take those words with a grain of salt and do what’s best for our health.

I wanted to bring back the Friday Five posts again and this week, I’m focusing on some fun food things for all my fellow foodies out there!

1. I found some new Larabar flavors…at Target!

You all know my love for Target and Larabars…so put the two together and it’s a perfect match! I actually generally don’t buy my Larabars from Target since they don’t usually have a huge selection like Whole Foods and Sprouts do. But since they have a lot of New Years resolution health stuff right now, they had some Uber bars on sale for $1 each, including 2 new-to-me flavors! You definitely can’t beat that–and they sound downright delicious too.

2. I’m obsessed with making grain-free flatbreads. 

First, it was this flatbread made into grain free stuffing. Then it was my staple socca. Now it’s this focaccia, which happens to be egg-free also! If you think grain free baking is hard, try it without eggs. It’s really fun to experiment with grain-free flours and when something turns out delicious, it’s even better.

3. I’m really craving the produce of spring and summer. 

Winter is hard enough as it is, with plenty of cold days, snow and the general feeling of blah-ness once the holidays are over. At least I didn’t get hit with the crazy cold weather here in Colorado (we’ve been in the 40s and 50s, which I can’t complain too much about) and we get over 300 days of sunshine each year, so my mood stays the same. The one thing I crave (other than warmer weather) is spring and summer produce. I miss all the berries, the watermelon, the peaches and cherries, the asparagus and the artichokes. Winter produce just isn’t cutting it–I’m already sick of squashes and citrus. At least I still have my beloved pomegranate…only 68 days until spring arrives!

4. I haven’t had peanut flour in over 6 months…and I kinda want it again.

Remember when I was addicted to ordering food from iHerb? Yeah, me neither since the last time I ordered from them was last May! I don’t know what happened, but I guess I got more budget-conscious and my monthly orders stopped happening. I used to eat peanut flour AT LEAST once per day, and I haven’t had it since June. I just miiiiight end up ordering some more with some of my graduation money, but then again, it might all go towards clothes #sorrynotsorry

5. I’m debating going back on the raw foods train.

I actually did this for quite a while last summer and then I stopped once school started back up and fall came and there was less good produce around. I’m not planning on going 100% raw anytime soon, but I’d like to reincorporate more raw foods into my diet. I’m a big fan of eating whole, minimally-processed foods and this just takes it an extra step. This might be more realistic once spring happens, because there will be more produce, and I love loading up my plate with plenty of fresh fruits and veggies, but in the meantime, I’m going to be buying more raw things, like nuts/seeds and making my own almond milk and stuff like that. I have a lot more time on my hands now that I’m just looking for a job, so I have tons of time to experiment in the kitchen!

Friday Five: T Minus 2 Weeks

Before I start, I want to thank everyone who commented on and emailed me about my last post. I really appreciate all the feedback you gave me about my “no added sugar” plan, and I’m working towards being more flexible with my eating and not letting food become an obsessive thing in my life. Especially around the holidays, when I’m already stressed as it is, and sometimes a girl just needs a Hail Merry miracle tart (which I’ll be treating myself to at the end of finals week).

1. There are just over 2 weeks left til the big day…graduation!

I feel like I’ve been waiting for this day for forever. Okay, maybe not, but it’s been a source of excitement and fear in my life since at least last year. I think getting the opportunity to graduate a semester early, and start my ‘real’ life will be the best Christmas present I get this year–and it just so happens to be right around Christmas. I’ve just got to get through one more week of classes, 2 real finals, 1 take home test and an online final and then I’m there! I know the next two weeks are going to fly by, but I hope I can enjoy them to the fullest. My time in college has been so much more than I could have ever imagined, so in a way, I’m going to miss it. At the same time, I’m ready to be done with school!

2. I’m obsessed with balls.

Nope, not those ones 😉 I’ve been whipping up some Larabar knock-offs in ball form and eating them for snacks, at breakfast/lunch, you name it. My latest creations are PB&J (my favorites, and literally just raisins+no salt/sugar PB), protein peppermint mocha (recipe below!) and cookie dough (almond meal+dates+stevia chocolate chips+vanilla extract). Let’s just say that my Ninja has been getting a lot of love lately!

Protein Peppermint Mocha Balls (vegan, gluten free, grain free, raw, no added sugar)

1 scoop Garden of Life RAW Marley coffee protein powder (can sub any coffee-flavored protein powder, or just chocolate and add a little instant coffee)

1 tbsp cacao powder or dark cocoa powder

8-10 pitted dates, soaked 2 hours

3-4 tbsp pumpkin seeds, soaked 2 hours

dash peppermint extract, to taste

In a food processor/high speed blender, process all ingredients until they start to come together. Roll into balls or flatten into bars and enjoy.

3. I am seriously looking into moving to California. Or somewhere else warm.

Not that I wasn’t already, but after this week, I’m considering it even more. Not only did we get 6 inches of snow (not too unusual, and it made it feel more like Christmas, but it made the roads horrible) but we’ve been having Arctic-like temperatures since Tuesday, and they will be continuing until this coming Tuesday. I’m talking daytime highs of 10 degrees at the most, and overnight lows in the negatives. That just doesn’t happen here more than a random day or two, usually in February. The strange thing about Colorado is that we still get plenty of sunshine on these frigid days, so it’s like the weather is taunting us by looking warm but feeling beyond cold. This awful weather has made me just want to stay in and watch Christmas movies #noshame.

4. Some random search terms for your enjoyment.

I haven’t looked at my search terms in awhile, so I knew there was bound to be some, erm, interesting ones. Here are some of the weirdest!

  • drinking olive oil with salt to jump start my period: I would suggest putting that olive oil and salt to better use as a dip for some fancy bread…
  • cappuccino float: I’m not even sure how that would work, but coffee+ice cream is always a winner.
  • how did i spend my thanksgiving holiday for middle school: I haven’t been in middle school for 8 years, so I can’t remember that far back what I was doing for Thanksgiving!
  • selfies gone wrong: If they’re referring to my car selfies, they couldn’t be more wrong!
  • slang saying yaaasss: I personally love slang words, so go for it.

5. My apartment is sufficiently Christmas-ified.

It’s hard being away from home during the holidays. I really struggled with this during my freshman year of college–it was my first time away from home, and I was dealing with all the typical finals-time stress, along with a not-so-great roommate. What’s made my holiday seasons since then a little better (besides living in an apartment on my own!) is having Christmas decorations up and listening to Christmas music as much as possible. My lovely mom was nice enough to decorate my place while I was at class when she dropped me off after break on Monday, and now my apartment is looking pretty festive. Having all that snow helps too (though, lets be honest, I’m sick of it already) and even though I won’t be going home for good (aka until I find a job) until the 23rd because that’s when I’m moving out of my apartment, I can still enjoy this holiday season, while looking forward to the time that I’ll get to be home with my family again. T-minus 17 days until I’m home for Christmas 😀

Friday Faves (November 2): Vegan MoFo Style

Hey guys! So I haven’t done a Friday Faves post in awhile, but I really wanted to recap some of the best things I ate last month in honor of Vegan MoFo. Seeing as I’m basically 99 percent vegan, all of my food is vegan, but I had a few exciting meals and recipes from October that I want to share with you guys again. So here goes!

 

Best Vegan Meal in a Restaurant: Raw Enchiladas with “Rawfried Beans”, Tasty Harmony

 

When my dad came up for Homecoming/Family Weekend at the beginning of the month, I had to drag him to Tasty Harmony, after practically drooling over their entire menu. Before you think I’m weird, this was the first time I’d ever gone to an entirely vegetarian (and mostly vegan) restaurant so I was excited. I ordered my first ever raw entree in a restaurant too, and I loved it. The “beans” were exactly like refried beans, only they were made with nuts and seeds. And the carrot cake my dad and I shared was to die for. I want to know how they made it, so I can make it at home. The best part was, my dad loved his meal too and wants to go back…hopefully when my family visits me next weekend!

Best New Snack: Apple Nachos

 

A lot of you have mentioned that you think these are super creative. I’m not sure where I got the idea from, but I love them too! They’re easily customizable and are packed with fiber, healthy fat (if you top with nut butter) and protein (if you top with protein frosting).

Best Weeknight Dinner: Socca Pizza

 

I’m so mad I only just discovered socca…because I could have been devouring it for years! It’s just so good, and deceptively easy to make. My favorite toppings for it are either traditional pizza toppings: nooch, red sauce, kale and kalamata olives; and I also like vegan creamy garlic dressing and kale for a take on spinach white pizza.

Best Money-Saving Grocery Trip

 

Yes, this was all bought at Whole Foods on one trip, and yes, it cost me under $30. How is that for being vegan on a budget? Especially for a picky, health-conscious vegan like me, it can be tricky to stay under budget (especially since I’m a sucker for impulse buys, especially seasonal items) but I’ve been learning a lot by doing my budgeting posts and I’m getting better at it. This just goes to show that you can buy “splurge” specialty items, organic products and produce without emptying your wallet.

Best Recipe: Pumpkin Macaroons

 

I didn’t get to post as many recipes as I would have liked to during Vegan MoFo, but I did get a few good ones in there. These macaroons were surprisingly easy to make and really good for a little snack. Unfortunately, I had to toss most of them because I made them around the same time as the fridge debacle (aka my fridge broke and I got a new one) so they didn’t end up staying fresh. But I want to experiment more with macaroons and recipes in general. I’ve been in a food rut lately and I need some new, delicious things to make!

I can’t say enough good stuff about this product–even if you do dairy, please try this! It’s a lot better for you than the traditional holiday-type drinks and if you love the mint chocolate flavor combo, you will love this.

Friday Faves (August 17)

Wow, where has the week gone? I feel like I’ve been running around like crazy for most of the week and I’m not getting a break anytime soon! I got back from vacation on Sunday, left right away for FoCo for a job training session on Monday morning, came back home and started unpacking stuff from vacation, shopped for school supplies and repacked for college! I’ve just got this weekend before it’s back to the daily grind of school. I can’t believe the summer’s almost over, but I’m pretty pumped for this school year!

Favorite Change: New hair (color & style)

I think the last time I had anything done with my hair was over spring break…which was almost 6 months ago, yikes! It’s really hard to fit in hair appointments when I’m usually up at school but I’m just glad I got it done before I go back. My bangs really needed to be reshaped and cut and my color needed refreshing. Now I’m all ready for a new school year!

Favorite First Time Breakfast: Tropical French Toast

Alvarado Street California-style sprouted toast topped with fresh pineapple, Bear Naked Fit vanilla almond granola and organic maple syrup (side of frozen mango).

This might sound crazy, but I don’t think I’d ever had French toast before a couple days ago. I know, who am I? Obviously this was a veganized version (meaning no eggs) but I think it turned out delicious, especially for my first time making/eating it. And being the pineapple lover I am, I went for a pineapple upside down inspired version.

Tropical French Toast (vegan, can be gluten-free)

1 or 2 slices sprouted toast or gluten-free toast (like millet or rice bread)

1/4 cup unsweetened vanilla almond milk

cinnamon and ginger, to taste

vanilla stevia drops, to taste

handful small pineapple chunks

In a small pan, heat up some nonstick cooking spray or coconut oil over medium heat. In a small bowl, whisk together almond milk, spices and stevia until combined. Dip both sides of the toast in the milk mixture until it soaks in. Place toast on pan and heat on both sides until golden brown and crunchy. Before flipping, add pineapple chunks to top side of toast and then flip to cook. Serve French toast with granola, coconut butter, maple syrup, fresh fruit or whatever you want. Serves 1.

As I’ve mentioned several times before, I didn’t have a car at college the past two years. With the job I have this upcoming semester, along with my off-campus housing, my parents realized that I do need a car. Over the summer, we were considering getting me a newer model used car, then a brand new car, then they finally decided to let me have our red 2008 Hyundai Santa Fe. It has a lot of miles on it for its age (because of my mom driving back and forth from home and my college town on weekends) but I really love it because A) it’s red and B) I’ve driven it a lot, especially this summer. I really love the look and feel of the car and I’m already used to it so it’ll be no big deal to take it up to school with me. And because I love him so much, I named him Alejandro (like the Lady Gaga song)!

Favorite Addiction: The Newsroom

I really need to get all caught up on this show!

I am so glad we moved to a new house back in June, because DirecTV gave us three free months of HBO…meaning I get to watch The Newsroom, which has become one of my new fave shows. I just watched the most recent episode and I’m hooked for part 2! I love how crazy and action-packed the show is.

Friday Faves (August 3)

Long time, no Friday Faves post, huh? I guess I’ve just been a little too busy these last couple of weeks, with my birthday, finishing up my internship and planning things for the upcoming school year. I’m still pretty busy these next few weeks–in fact, when you’re reading this, I’m probably up in FoCo setting up my apartment for the fall!–but I really wanted to get in a Friday Faves post.

Favorite Milestone: Finishing my first internship

When I started my internship at one of the local TV stations back in late May, I had no idea what I was in for. And, well, it was both a lot more and a lot less than what I was expecting, but I’m so glad I did it (and that I’m done on Saturday, woooo!) Now I know that being a reporter (and even anchor) is less than glamorous, but it is incredibly exciting. Unlike most office jobs, being in TV news brings new stories and new challenges every single day. Some days were crazy, others were slow-paced and almost boring. I wrote a million stories, practiced live standups (where the reporter is on the scene and reporting about the events going on, like in the above photo), tried my hand at some editing and video shooting and answered more phone calls than I would have liked to. I talked and joked around with all the reporters and photographers, stalked and admired the anchors and cussed at my supervisor under my breath. Yeah, not everything about the internship was ideal. But I learned more in just 11 weeks than I have so far in my journalism classes over the past 2 years. And now I know that I am crazy enough to want to continue in this business 😉

Favorite Vegan Re-creation: Tempeh “Crab” Cakes

Crumbly and messy, but so so good!

I honestly can’t remember ever having crab cakes in my former omnivorous life. I used to be a huge fan of seafood, but I always went for the shrimp, scallops and white fish. This vegan rehash of the classic crab cake is probably not much like the real thing, but I really liked it. Best of all, it’s pretty simple and healthier than the original.

Tempeh “Crab” Cakes (vegan)

1/4 block tempeh

1/4 cup to 1/2 cup bread crumbs (I used leftover cooked multigrain pizza dough and grated it)

handful broccoli slaw, shredded carrots, chopped celery or green onions

1 to 2 tsp Old Bay Seasoning (I didn’t really measure it out, just tasted it!)

1/2 tsp garlic salt

2 tbsp vegan mayonnaise (Veganaise or Nayonnaise)

1 tsp mustard

Chop or grate tempeh into small pieces and place in a bowl. Mix in veggies, Old Bay, garlic salt, half of the bread crumbs and 1 tbsp of the vegan mayo. Pack together with hands until mixture can mostly stick together. Form into 3 or 4 small patties and roll in the remaining bread crumbs. In a small pan sprayed with nonstick cooking spray or a little olive oil, cook patties for 3-5 minutes per side, or until slightly crispy and golden brown. In a bowl, mix the remaining vegan mayo, mustard and a little Old Bay until combined. Serve tempeh cakes topped with the vegan remoulade. Serves 1.

Favorite Thing I’m Looking Forward To: Estes Park

So gorgeous, even on a cloudy day!

A yearly trip to Estes Park, CO in the summer has been a family tradition since I was at least 10 or so…so we’ve been doing it for 10 years now! I love the gorgeous scenery and hiking trails that nearby Rocky Mountain National Park have to offer, the condo-side pool surrounded by giant mountains, quirky cool boutiques and great restaurants (with some vegan options). What’s not to love? I’m going there next week, so I may or may not have some posts lined up for the days I’ll be gone. But I’ll for sure have a recap post!

Favorite Thing I’m Doing Today: Setting up my apartment

In just a few weeks, I’ll be living on my own for the first time ever. Okay, yes, I’ve been technically living on my own for the past two years at college, but both years were spent in the dorms, meaning not a lot of freedom and minimal cooking opportunities. But now I have an apartment of my own (it’s a one bedroom) and I’m beyond excited to move in and start living independently. Well, for the most part since I’ll still be coming home on breaks and once or twice a month, and still relying on my parents financially. But it’s still exciting for me! I can’t wait to actually cook for myself every day, figure out the transportation thing (I’ll have a car, but I still will probably take the bus sometimes), go grocery shopping on my own and maybe even go on mini road trips on the weekends. Oh, and I can’t wait to start decorating the apartment too!

Friday Faves (July 13)

Well it’s Friday the 13th…anyone experiencing any bad luck today? I’m really not a superstitious person so I think bad things (and good things too) can happen any time regardless of the day on the calendar. Plus I’m feeling pretty darn lucky today anyway–my birthday’s in exactly two weeks and I went to the dentist yesterday and came back with no cavities. Yay!

(Soon to be) Favorite Starbucks Drink: Refreshers

It’s like a limeade with a caffeine boost!

It’s no secret that I love Starbucks, but sadly I haven’t been in a couple of weeks, even though we just moved within a 5 minute driving distance of one. But now I have an even better reason to go–their new Refreshers drinks! P.S. They’re giving them away free today between noon and 3 pm so get one now. They have different versions of the drinks–two iced ones in their stores, three sparkling water kinds and instant VIA packets at grocery stores. I’ll be keeping my eye out for those the next time I go shopping and I’m hoping I enjoy my free one!

Favorite App: Phonto

Just in case you didn’t know, this was a lunch. Steamed edamame, squirt of sriracha, baby carrots, blueberries, sprouted toast topped with blueberry chia jam and cashew cream cheese.

I can’t say enough good things about the LabelBox app, but now there’s another photo editing app I love–Phonto. As a self-professed font nerd, I like being able to add a caption directly to my photos in a million different fonts and colors. From now on, if my photos aren’t LabelBox’d, they’ll be Phonto’d. Just warning you 😉

Favorite Fitness Move: Planks

Not this kind of planking, but isn’t this adorable?

Until maybe a year ago, I had no idea what planks were. And now, I’m hooked. I do them a couple of times per day in addition to my other fitness routines and I’ve been working on holding them for a long time. Right now I can only do them for 2 minutes straight, but I want to get up to 5 minutes soon! They’re such a good fitness move since they pretty much work everything–arms, core and even legs.

Favorite Day I’m Looking Forward To: July 27th

From my birthday last year…apparently I was proud of this tiny strawberry I grew on my strawberry plant!

I’ve tried not to talk about it too much on the blog, since people don’t really care too much about other people’s birthdays, but I’m definitely excited to turn 20 in exactly two weeks! It’ll probably feel really weird to finally be out of my teenage years but I’m ready to be one year closer to legal drinking age 😉 Actually, I’m just more excited about the plans I have for my birthday this year. On the actual day, I’m gonna get Whole Foods salad bar for dinner (and hopefully some bakery-made vegan dessert) and watch the opening ceremonies of the Olympics and who knows what else. And over the weekend, I’m planning on going up to Denver for a day of shopping and going out to eat at (hopefully) a completely vegetarian or vegan restaurant for the first time ever. Possibly even Native Foods Cafe, which just opened in Boulder! Shopping, good eats and the Olympics–doesn’t get much better than that for me!

Friday Faves (July 6)

The festivities of the 4th are over so now it’s back to real life. Who am I kidding, summer isn’t real life, at least if you’re still a student! I still have about a month left at my internship but the majority of my weeks are spent doing whatever I want. I’m definitely appreciating that I can still do that–in a couple years, that won’t be an option!

Favorite App: LabelBox

Labels make everything more fun!

I’ve been noticing cute little labels popping up on a lot of people’s Instagram photos so I had to do a little sleuthing to figure out how they were doing this. Turns out, it’s a simple and free app called LabelBox. It’s available for iPhones/iPods and Androids and it’s so easy to use. Basically all my Instagram photos will be labeled now. #Sorryimnotsorry

Favorite Obsession: Waffles

I almost can’t remember the last time I didn’t have a waffle for breakfast! And don’t be fooled, these homemade waffles are 100 times healthier and tastier than those pathetic frozen Eggo waffles. I’ve been loving on the protein waffles mostly but when I just want a simple, fruit-packed waffle like the one above, I just use some oat flour, which gives it a perfectly fluffy texture while also packing it with fiber. And toppings are necessary, of course. I topped my 4th of July waffle with fresh raspberries and protein frosting made with Vega vanilla almondilla protein powder and water. Mmmmmmm!

Favorite New Find (that I haven’t found yet): So Delicious Greek-style almond milk yogurt

6 grams of protein and fiber ain’t too shabby for a nondairy yogurt!

The Amande almond milk yogurts are decent, but a little too jiggly and low in protein for my liking. When I popped on over to the So Delicious website and saw this gem, I knew I had to have it ASAP! The only thing I somewhat miss from my non-vegan days is Greek yogurt, and now I can get my fix in nondairy form, with more fiber and calcium than the dairy version! I just need to find it in stores first…

Favorite 4th of July Activity: Water balloon wars

I probably dropped more than I caught, but it was still fun!

What do you do on the 4th when it’s hotter than an oven outside and inside, the parade your family was planning on going to was cancelled and there are no fireworks shows within 100 miles? Have a water balloon war, of course! Filling up countless water balloons was worth the fun we had and it was actually great getting water in your face when you didn’t catch a balloon. Not that that happened to me though 😉

Friday Faves (June 22)

Before I get into the post, I’ve gotta thank everyone for your wonderful and encouraging comments on my last post! I love having the support and also knowing that some of you out there are in a similar boat as me and want to stop letting your lives be dictated by ED. It’s only been a couple of days since I decided to actually buckle down and start eating more and while it is hard to change that mindset, I’m already feeling stronger and happier.

Favorite Bath & Body Works Scent: Signature Vanillas Lemon

Since this scent first came out (either last summer or the one before), I’ve been in love with it. It seriously smells like a lemon poppyseed muffin with a hint of vanilla. It’s my daily go-to lotion and when I was at the mall the other day, I spotted the matching shower gel for only $2! If you love BBW and haven’t checked out their semi-annual sale yet, doooooo it! They’re having the best deals right now. Oh, and as if having the lotion and shower gel weren’t enough, I also have the lip gloss in this scent. Yeah, I’m kinda obsessed…

Favorite Dessert-like Breakfast

Are you sure this isn’t actually a decadent dessert?

It’s no secret that I have a major sweet tooth. I am NOT a savory breakfast kind of girl at all, but sometimes I even take my breakfasts to the extreme. Okay, not really, but this particular breakfast was pretty dessert-like. I made peanut flour flax pudding (peanut flour, ground flax and almond milk mixed together and set in the fridge overnight to thicken), added in a spoonful of dark cocoa powder and topped with fresh raspberries, chopped almonds and semisweet chocolate chips. Ummm, yeah, I could eat this every day! What other dessert boasts 10 grams of protein and flax seeds? Probably not many.

Favorite (Actual) Dessert I Want to Make: Vegan S’mores Hot Fudge Sundae

It’s been years since I’ve had an ice cream sundae, and sometimes a girl just has to treat herself to one (especially if she’s trying to eat more/gain weight). S’mores (and ice cream sundaes in general) aren’t usually vegan-friendly but this one is, thanks to the use of nondairy ice cream, ricemellow creme and soy whipped cream. Once I can track down some of the ingredients, I will for sure be trying this out…and reporting back, so you guys can try it too if you want!

Favorite Activity of the Week: Selfies

Trust me, this isn’t the only one I’ve taken this week!

Okay, actually this isn’t true. I’ve done a lot more exciting things this week but I don’t have photographic evidence of those things (such as messing around with the mannequins at Dillard’s with my sister…) so this is what I went with. Some days I just get bored, whip out my phone, pull up the Instagram app and go to town. It’s kinda fun making different faces and playing with the different effects.
