Week through my iPhone: Part II

Well, it’s been almost a week since I last posted, whoops! I have some time off coming up so maybe another post will make it in there somewhere. I can’t make any promises though. I love being busy though — it makes time fly (which is sometimes good, sometimes bad…like when my weekend ends too soon).

It hasn’t technically hit 100 degrees here yet, but the heat index has been in the 100s on some days. I only hate it when I’m trying to push through a run or when it messes up my hair. Humidity+me = super sweaty hot mess. Is it any wonder I want to move to the desert?

Running has been going well. Still running between 2 and 3 miles, but trying to run almost every single day, even if it’s just a mile on the treadmill mixed with walking. I ran in the drizzle one day last week, and it was the best. I was basically alone out on the trail, and it wasn’t too hot. The above picture was from a very sunny, 90+ degree run.

I’ve been shelling over $5 for figs on the reg at Whole Foods and I’m not mad about it. Especially not since I discovered the best flavor combo ever — figs and coconut butter. The coconut butter formed a little shell on this fresh-from-the-fridge-fig and it was so creamy. Why do I have such expensive tastes? At least I never eat out!

Work is…work. Some days I wake up at 2 am ready to hit it and other times I think “I wish I could lay in bed forever”. But having little moments like this makes it better. Some videos on the NBC feed are really…weird? Yeah, I think I’ll pass on running a package about overactive bladders in my newscast, thanks.

And I’m trying to find work-appropriate things that work in the summer. The station is air-conditioned, so that means cardigans are a must (and I can’t get away with tanks anyway). I also got called out for wearing a dress that was ‘too short’ so I’ve been more cautious ever since. The dress code is casual, but apparently a dress that is more than an inch or two above the knees is not okay (but basketball shorts and a T-shirt are?).

It’s official — Alejandro is getting old. Okay, he’s only 5 years old, but he’s almost 100 K miles. Whattttt? He’s seen me through two years of college and now my new adventure in Tulsa…maybe another move on the horizon in a year? I just hope he holds out that long — Hyundais are pretty reliable!

On my last trip to Whole Foods, I was upset when I walked through the baking aisle and my beloved stevia-sweetened chocolate chips were nowhere to be found (aka sold out). I basically live off those things, so I was devastated. But when I finally spotted the new flavor of my favorite chocolate bar brand I decided to buy two bars. Well, I should have bought more because this stuff is incredible. It tastes exactly like chocolate-covered espresso beans but it just has three ingredients — cacao, fair trade coffee, and cane sugar.

I generally wear contacts because it’s just easier (especially when I’m running) and I’m lucky that my eyes can tolerate them, but sometimes you just gotta wear glasses. Or in my case, you use them as a fashion statement. I’ve been lusting after hipster glasses for years, and finally got some (real ones) of my own. These were $50, lenses and all, because I took advantage of a first pair free deal on Coastal.com. They arrived in my mailbox within just a couple days and they’re basically perfect. No, I promise I wasn’t asked to write a glowing review (or any review, period), I just really loved my first experience with Coastal.

More randomness thrown in a bowl and called a meal. This was my favorite homemade sweet potato hash with added in spinach, hemp tofu, cauliflower and topped with homemade hummus, coconut ‘bacon’, sprouted salted nut mix and spicy peppers. Colorful, balanced and oh so tasty. And easy. I haven’t been in the mood (or had the time) to make anything complicated and that’s fine with me.

The Best Products (I’ve Tried) of 2012

Can you guys believe we’re just a little over two weeks away from a new year? Craziness. When it gets to be this time of year, all I’m thinking about is how excited I am for Christmas, enjoying my time off from school and all the things I accomplished over the past year.

And if you’re a foodie like I am, you might also be reminiscing about the new food you’ve tried over the past 12 months…I know I am! With that said, here are a few of the best things I’ve tried since January 2012!

Zevia

Before I sucked it up and finally bought my first (overpriced) can of this amazing stuff in May, I’d heard lots of good things about it. I’ve never been a big soda fan, but I used to enjoy diet sodas on occasion. So having an all-natural diet soda was a definite treat! Since then, I’ve tried the ginger root beer, cream soda, cola, orange and lime cola (the orange is the only gross one) and I can’t wait to try more. Like a lot of things I love, these are very pricey so I buy a 6 pack when they’re on sale or maybe once a month at most and make them last.

This was another blogger-hyped product that I was on the lookout for since last fall. I didn’t find one until this October and haven’t found it very often since (but I stocked up on two last weekend!), but it’s my favorite squash by far (other than delicata). I prefer the texture and taste over any other and it’s delicious with peanut flour paste, almond butter or ketchup.

I’ve seen these around for awhile, but because of my previous fear of fat, I never gave them a try until March but they’ve become my bar of choice since then. I love the flavor variety and the fact that they’re made from whole foods, like dates and nuts. My favorite flavors are cappuccino, pineapple upside down cake, peanut butter chocolate chip, chocolate chip brownie and the Uber banana bread.

Can you believe I never tried Vega products until earlier this year? Vegan blasphemy, for sure. They have good quality (though expensive) protein powders, simple protein bars and I’m obsessed with their latest product, the dark chocolate-covered saviseed which is packed with protein and Omega-3s.

This stuff is incredibly versatile, and easy to make. Basically you just soak raw cashews overnight or for several hours, and then it’s ready for blending. I’ve made a raw cheesecake (see above), nacho ‘cheez’ dip, mascarpone ‘cream’ and savory cashew cream filling–it really is good for anything!

Even if you eat dairy, you need to try this vegan ice cream, it is out-of-this-world good! The healthy coconut fat makes it incredibly rich but not overly indulgent, and stores like Whole Foods carry a million and one flavors so you don’t have to feel limited to chocolate and vanilla. So Delicious and NadaMoo are my favorite brands, but there are definitely more out there–there’s a variety for everyone!

Kale

I think I actually tried kale for the first time last year (it was when I first tried the Whole Foods salad bars) but I didn’t fall in love with it until this year. I know a lot of people say it’s bitter, and it can be, but I’ve found lots of ways to make it tasty and craveable. Homemade kale chips (they’re best made in the dehydrator), crispy sauteed kale, ‘pizza’ kale (kale cooked with pasta sauce and olives), raw massaged kale salads, kale/almond milk smoothies…I’ll eat it almost any way, and I try to eat it at least once a day! Bonus: it’s an amazing superfood.

I used to say I hated coconut, partly because I didn’t like the texture of shredded coconut but also because I was deathly afraid of the fat in it. I avoided saturated fats like the plague but once I became pretty much 100% vegan, I realized that plant-based saturated fats were totally healthy and necessary. One of the first coconut products I bought was coconut flour–I wasn’t sure if I’d like it but I do! I really love it mixed with baking powder and almond milk and microwaved for a minute to make a crumbly coconut flour muffin but I also want to experiment more with it in baked goods. It’s hard to bake it into things without using eggs but I want to try it out.

If you’ve ever seen these before, they’ve probably grossed you out just a little. They weirded me out too the first time I bought them but I really wanted to try a raw noodle substitute and I’d heard good things. Unlike shirataki noodles, these are made from a seaweed so they’re more of a whole food, they don’t smell weird and they soak up the flavors in anything. They make the perfect low-cal sub for pasta and I especially love them mixed with pasta sauce, nooch, a crumbled veggie burger, kale and olives. I also included them in a stirfry the other night and they were amazing–recipe coming soon!

I’ve tried a lot of vegan protein powders, from the (not-so-good) cheapo soy-based powders to the delicious but expensive Vega and Sunwarrior. But I think Garden of Life is my fave. First, it’s made from a blend of raw sprouted plant-based proteins, like quinoa and sunflower seed. It’s also pretty high in protein (17 grams per serving) and is a bit cheaper than some other higher-quality brands, it’s sweetened only with stevia but best of all, it’s delicious. I love both the chocolate and vanilla chai (only available at Whole Foods) flavors and the lovely team at Garden of Life was nice enough to send me some samples of the regular vanilla too so I can’t wait to try that one! Look for a review soon and possibly a giveaway in early 2013!

It actually makes me really sad that fig season is over–it became my new favorite fruit over the past few months. It pairs so well with both sweet and savory things and though they are a bit expensive, they’re worth every dollar. They’re out of season now but at least I can settle for dried figs!

College Vegan on a Budget: “Nuttzo” for New Finds

A series of posts on my adventures in buying vegan health foods as a college student.

I know I said last time that I wasn’t going to be buying anything else before the end of the semester. Welllllll…that was before I ran out of nut butter and had to go without it for about a week. And I came back to no fruit other than some pomegranate seeds and frozen banana slices. Not acceptable. So I had to make a quick trip today which worked out perfectly because I had one final around noon and I headed to Whole Foods right after that. Let me just say that shopping at WF on a weekday afternoon is a lot better than going on a Saturday afternoon. Other than a shrieking baby, my trip was pretty pleasant and quick. But most importantly, I left with everything I needed…and more.

What I Got: Mother’s plain salted rice cakes, Nuttzo mixed nut/seed butter (new to me!), Hail Merry raw maple vanilla almonds (always a winner), brown figs (I can only get these at the WF near me at school, needed my fix before break!), small superfoods kale salad, Heavenly Organics dark chocolate ginger honey patties (can’t believe these only have three ingredients!), Theo dark chocolate orange bar

What I Spent: $28.32 (mostly because of that Nuttzo…)

Verdict: I don’t really want to talk about how much I spent on the Nuttzo but it really is hard to find cheap nut butter that doesn’t have added oil or sugar (but does have a little sea salt, because it brings out the nut flavor) but everything else was pretty cheap. And the chocolate bar, rice cakes and nut butter will last a while so I’m not too worried.

WIAW: Loving Lately

Happy WIAW! I swear, this year’s gonna be over before I know it. I can’t believe I’m already almost done with midterms, am about to sign up for classes for next semester and Christmas is almost 2 months away. I’m one of those crazy people who can’t wait for it to be the holiday season so I’m already counting down to Thanksgiving. But can you blame me, I need a break!

Spooky Snacks and Healthy Halloween Treats

Unlike my most recent WIAWs, this one isn’t documenting what I ate on a certain day. I used to like doing that but then I always ended up posting similar items each week. I don’t feel like I eat the same things all the time, but I almost always end up taking pictures of the same things. So this week is all about what I’ve been loving on lately.

Apple nachos. Half a sliced Jazz apple. Peanut flour drizzle. Mini chocolate chips. Raisins. Maple almonds.

Not much to say about these, except you’ve gotta try them. They take apples to a whole new level!

One minute coconut flour carrot cake. Coconut flour. Chopped carrots. Cinnamon. Chopped dates. Ground flax. Almond milk. Peanut flour paste.

This was a microwave cake, but I’m working on a vegan, grain free coconut flour based carrot cake for the oven. Stay tuned!

Coffee roasted squash seeds. Ground coffee. Kabocha seeds. Maple syrup. Coconut oil.

These were even better than the original squash seeds. But then again, anything coffee-flavored is.

Dirty chai waffle. Buckwheat and almond flours. Cinnamon and nutmeg. Ground coffee. Raw cacao powder. Topped with raw pumpkin chocolate protein frosting, mini chocolate chips, fresh figs and maple syrup.

What’s dirty chai? Apparently it’s chai tea mixed with espresso, and this waffle was inspired by that delicious combo. The best part of any waffle is the toppings though!

This snackplate style lunch was perfect right before class. This week I roasted my first kabocha and I’ve gotta say that now I understand the addiction. The texture is a little weird but it’s so tasty!

I don’t really talk macros on here much, but I really love tracking mine. Usually my carbs are around 45%, protein at 20% and fat at 35%, it’s just what works for me. But there are a few days that I definitely love my protein and fats more. Who says you can’t get enough protein as a vegan?!

Who knew I’d end up loving kelp noodles even more than my beloved quinoa pasta? It’s really just so cool how kelp noodles are pasta-like but are made from a sea veggie instead of grains. I love having them any way, but the Italian way is my fave. Bring on the olives and the nooch!

I wish this weren’t true, but the Whole Foods salad bar at my home WF is so much better than the one at the WF near school. I love the store near school, but the salad bar rarely has many tasty vegan options like the one at home has. As you can probably guess, this particular box was from a weekend trip home.

WIAW: What I Ate (& Made) Monday

Most of my WIAW posts are a random assortment of food pics I happened to take through the week. But not this week, no, I was actually on top of things and managed to take a picture of everything (well, basically everything) that entered my mouth on Monday. Plus I’ve got a recipe to share with you so it should be one of my better WIAWs in awhile. Let’s do it to it!

Most people are either “pancake people” or “waffle people”. I am most definitely a waffle person. Not frozen waffles, of course, but I love whipping up a homemade waffle for breakfast. I like pancakes, but I am horrible at making them turn out perfectly fluffy and circular. So I’m sticking with waffles, which are more foolproof. Except that one time I tried making a coconut flour-based waffle and it got majorly stuck to the waffle iron. Let’s just say that vegan pancakes and waffles don’t work so well made with coconut flour. This waffle was amazing though and it didn’t get stuck to the iron at all. Win win. Yes, I am obsessed with all things pumpkin. But it’s even better combined with chocolate.

Lunch was faux stir fry with a side of figs dipped in AB and a square of chocolate.  The stir fry was faux because it wasn’t really stir-fried but it tasted like a peanutty stir fry. Kelp noodles are amazing, because they totally soak up the flavors of whatever sauce you pour on them, and they are pretty similar to noodles, without the calories and carbs but with all the nutrients of sea vegetables. The chocolate, well, I swear, I can’t not eat chocolate in some form for most of my meals or snacks. It’s kind of a problem.  Oh, and BTW, if you have access to fresh figs and Justin’s vanilla AB, please try them together. It’s a magical combo.

Those apple ‘nachos’ are my favorite snack discovery. They are a million times better than regular nachos, obviously health wise, but they also taste great for being so simple. Basically you slice an apple (I used a Pink Lady, my fave) really thin, microwave it for 30 seconds and then top it with whatever you like. I went with drippy almond butter, chocolate chips, granola and pumpkin seeds. So. Good. And then there are the usual suspects, a microwave protein muffin (easy to make and a great way to get in some extra protein) and a square of one of my favorite chocolates. Missing from the pictures is a little bit of some dry roasted edamame I ate during my late class.

I was obsessed with making rawnola (raw granola) over the summer when I got my dehydrator. But since being at school, I’ve only lugged it out once to make some kale chips. That obviously had to change, since I missed homemade granola. Like everyone else, I’ve been loving pumpkin lately (which is weird ’cause I didn’t like it much last year) so I decided to make a pumpkin-y rawnola. If you don’t have a dehydrator, you can totally make this in an oven, set to a low temperature.

Pumpkin Spice Latte Quinoa Rawnola (vegan, gluten-free, raw)

1/2 cup dry Alter Eco organic royal rainbow quinoa, soaked for a few hours

1/2 cup rolled oats (can sub buckwheat groats to make raw)

1/4 cup canned pumpkin puree

2 tbsp raw agave or maple syrup

1 tbsp ground coffee (I used Archer Farms caramel apple coffee)

2 tbsp raisins

2 tbsp chopped nuts and seeds

In a large bowl, mix oats and soaked quinoa until combined. Add in coffee, raisins, nuts and any other mix-ins you’d like. Stir in agave and pumpkin until mixture is a little sticky and thick. Spoon granola mixture onto wax paper lined dehydrator trays (or use reusable dehydrator liners, if you have them) and dehydrate for 4-6 hours. Turn off dehydrator and let rawnola sit uncovered for several hours or overnight. Serve with almond milk or on top of fruit. Makes about 1 cup.

Like how I threw in a random outfit shot there? Yeah, it looks so dark ’cause I forgot to take one until it was already nighttime. Oops. Dinner on Monday was a winner, though. I reheated some spicy veggie chili my mom made a couple weeks ago and sent with me to freeze for future dinners. So if I can’t make it to the grocery store, I guess I’ll be set for a few days! Lately I’ve been loving yellow squash–I bought it randomly at Target and I can’t get enough of it sauteed with a little coconut oil and seasoned with chili powder and cinnamon. But the giant corn muffin was the best part of the dinner, obviously. I don’t know how it turned out so giant, I just made it with 2 tbsp of corn meal, 2 tbsp of coconut flour, some water, salt, stevia, baking powder and flax. Whatever, I’m not complaining. It was so good, especially for being thrown together, and it actually wasn’t too crumbly for a grain-free vegan microwave cake.

College Vegan on a Budget: Bulk Bonanza

Part of an ongoing series of my adventures in learning how to grocery shop on a budget, almost exclusively at health food type stores.

I’m back with another budgeting post after a weekend grocery haul and I can proudly say that I spent a lot less than last time. Like, I spent less than half the amount I did last time! This girl is definitely learning how to budget. Or maybe it’s just because I was extremely limited in funds this time around, with just over $50 to spend. Luckily I didn’t have to make any major purchases since my lovely mom was nice enough to buy me some much-needed items last weekend so this was mostly a fill-in type trip for things I am about to run out of or needed for recipes.

This week, I happened to do a lot of bulk buying. This is a great thing for budgets–you can just stock up on what you need, and generally things in bulk cost less ounce for ounce than things that are prepackaged. The bulk bins at Whole Foods and Sprouts have saved me a ton of money on must-try items like coconut flour, flavored nuts and nutritional yeast. Now let’s check out the goods!

Sprouts

I just stopped in for a few items I was hoping they’d have for less than Whole Foods, and they delivered. Well, kinda. The unsweetened coconut shreds I bought actually turned out to be a bit cheaper at WF, which kinda made me mad but I’ll know next time!

What I Got: Let’s Do Organic reduced fat unsweetened coconut shreds, So Delicious Greek-style vanilla coconut yogurt (finally they had this flavor!)

What It Cost Me: $4.99 (I paid with a 5 dollar bill, woo for having cash for little purchases)

Verdict: If only every shopping trip could be this cheap!

Whole Foods

I whittled down my original list to just a handful of must-have items and I did really well with sticking with my budget. I actually ended up with just under $10 left, which is awesome. I got 15 items here pretty cheaply, because I bought a bunch of bulk stuff and did some price comparisons for similar items.

What I Got: bulk almond flour, bulk raw macadamia nuts (I only bought about 1/8 of a pound, so they were super cheap), bulk nooch, bulk spelt flour (I was going to buy packaged buckwheat flour but it was $5 and this was just $2 per pound and pretty comparable, nutrition wise), vegan semisweet chocolate chips, Navitas Naturals raw cacao powder (a splurge at $10, but worth it), 2 Justin’s vanilla almond butter squeeze packs, 2 Vega One protein powder samples (running low on protein powder but didn’t have enough money to buy a full container), Hail Merry raw vanilla almonds (super cheap at just $3 for a raw product!), bulk loose spinach, Hannah yams (these look like regular potatoes but they’re apparently sweet potato-like), vegan cookie from bakery area, black figs (on sale for $3.99/pound, I got half a pound!). 

What I Spent: $36.87 (under budget…yay!)

Verdict: I was really smart about my Whole Foods trip this time around. I bought in bulk to save some money, weighed my bulk items to estimate how much they’d cost me and didn’t buy anything not on the list. Yes, there were some things I took note of that I wanted to buy another time–like, ahem, raw macaroons!–but I didn’t feel like I needed to get them since I know they’ll be there when I have more money to spend. 

I am definitely getting better at this budgeting thing. It feels fun to me now, instead of like a chore. I love doing comparison shopping and balancing out my purchases so they don’t end up surprising me at the register. And I’m learning the difference between splurges and staples, which is something that used to get me all the time. Some weeks, there’ll be more room for splurges and other times I’ve gotta stick with the list. And I feel like this week, I struck the perfect balance between getting the basics that I need and getting to try new-to-me items, like the almond flour and yams and almonds.

WIAW: “Normal” Eating

This WIAW will be more ED focused than most of them, but I’ve got a few fun things to share so hopefully that’ll make up for the more serious talk!

So remember way back when (aka March) when I talked about how I was fed up with how much I was restricting? And I mentioned in other posts after that one about how I was working on making changes. Well…honestly…that didn’t happen. I didn’t make much of an effort to increase my eats, other than an extra handful of something here and there. I didn’t really make a conscious effort at all until…well, a couple of days ago. Okay, so it really started a few weeks back but lately I’ve been making big strides in eating more. And not only eating more, but feeling okay and ‘safe’ with it. Safe was one of the words my ED used to justify restriction–it felt safe and ‘normal’ to me. But now that I’ve seen the light, and realized I can eat way more and not balloon out of control well…I’m kinda saying goodbye to ED.

I know I still need to increase more. 2000+ calories seems to be the magic number for a lot of people. I’m fairly active, between walking to classes and doing daily full body workouts. But I’m also a small girl and I’m thinking I probably need fewer calories than somebody taller or wither a bigger build. But I know that what I’m eating now, even though it’s more than I was eating for too many months, still isn’t quite enough.

Anyways, enough of the chit chat. Let’s see how I’ve been normalizing my eating, and what better time to do it than WIAW?

Yes, I made this. And yes, I also have been eating it. What exactly is it? It’s coconut whipped ‘cream’, completely vegan and totally yum. I followed Angela’s method, using a little bit of maple syrup and peppermint extract to sweeten it up. While mine didn’t turn out as fluffy as hers (maybe my canned coconut milk had a defect?) it is still delicious, creamy and crave-worthy. I’ve been enjoying a spoonful here and there and enjoying my new found love of coconut.

Another Whole Foods salad bar box? #sorryimnotsorry

This isn’t anything new…oh, wait, actually it kinda is! It was my first time trying beets (they had them in raw form at the salad bar) and I’m officially a fan. I’m also apparently a fan of veggies dipped in a big dollop of fresh guac and dumping tons of pumpkin seeds on my salad. Embrace the fats, people. So good.

Tall iced Americano. With 2 pumps pumpkin spice syrup and a splash of u/s vanilla almond milk. Welcome, fall.

It sure didn’t feel fall-like on Monday when I stopped into Starbucks for this new-to-me drink. But it totally got me in the mood for it. I finally gave in and tried the pumpkin spice syrup that everyone raves about. I took home my pumpkin-spiked Americano and added in some vanilla almond milk (seriously, Sbux, why don’t you have this?) It was good, but not amazing. I guess I’m more of a peppermint mocha kinda girl.

Guys, I’m sorry. But I’m officially addicted to the ‘driving selfie’. Except I always take them in the parking lot, or mayyyyyybe at a stop light if I’m feeling rebellious 😉 I just like making goofy faces and seeing the reaction of my fellow drivers.

This meal made me a tofu lover. Mixed greens/broc slaw with raspberry acai vinaigrette. Curry spiked ketchup. Tofu “fingers”. Alexia chipotle sweet potato fries.

I was never a big fan of tofu. Yes, I know I’m a crazy vegan, but it’s true. I would eat it sometimes, but never loved it. All that changed when I made Angela’s tofu nuggets over the weekend. They were crazy good on their own. But they were even better dipped in ketchup. Oh yeah, now I also like ketchup too. I found an organic brand with only 2 grams of sugar, and it’s pretty good.

This truly was a bowl of decadence, and I enjoyed every bite.

My nightly snacks are taking on a different look lately. I don’t go for cereal much anymore. Instead, I like a bunch of different flavors and textures in one bowl. Enter, this bowl of healthy vegan decadence. Healthy, because the base was a protein microwave cake, made with a plant-based protein powder, some flax and almond milk. Decadent, because it was topped with a spoonful of Whole Foods vegan chocolate mousse (just a few healthful ingredients, but tastes so rich), Nada Moo coconut milk ice cream, semisweet chocolate chips and a little of the mint coconut whipped ‘cream’. Yeah, this was just as good as it sounds and looks. I think I’ll be repeating this soon.

So close to 90,000 miles! Alejandro and I will have to throw a party when that happens.

Contrary to what Alejandro’s odometer says, he’s only 4 years old. That’s kind of a lot of miles for that few years, but a lot of long distance driving was done in Alejandro before my parents let me have him. Oh yeah, in case you didn’t know, Alejandro’s my car, a super hot red Hyundai Santa Fe. I’m not totally crazy, promise.

Leftover tofu fingers with ketchup. Kale massaged with nooch and lemon juice. Fresh figs. Almond peanut cashew butter mixed with maple syrup and chocolate chips.

This was a lunch, but it’s a lot like my typical snackplates. What can I say, I love variety! My lunches lately have been more substantial, incorporating veggies, protein (usually edamame or my favorite protein powder) and fat (usually nut butter).

Breakfast is getting more delicious! Chocolate mint kale protein smoothie topped with mint coconut whipped ‘cream’ and chocolate chips.

Who says you can’t have dessert for breakfast? Okay, this wasn’t quite dessert, since it incorporated greens and protein (but I don’t exactly shy away from those things in my desserts) but the addition of the whipped ‘cream’ definitely took it over the top. And this pudding like breakfast packed 20 grams of protein, plus kale! Who wouldn’t go for that?

Sweet and salty kale salad–kale massaged with lemon juice and nooch, kalamata olives, strawberries, figs and dry-roasted edamame. Half sweet potato topped with maple-infused almond peanut cashew butter. Pumpkin spice iced Americano.

Coffee at lunch…why not? But let’s talk about this salad for a second–so good. I always love sweet and salty combos, and this was just amazing for a random mix. The sweet potato was great too. But that’s a given.
