Friday Five: Foodie Edition

Thanks for all the helpful words on my last post! It’s hard to deal with well-meaning but unhelpful advice from family and friends, but it’s a good reminder that we have to take those words with a grain of salt and do what’s best for our health.

I wanted to bring back the Friday Five posts again and this week, I’m focusing on some fun food things for all my fellow foodies out there!

1. I found some new Larabar flavors…at Target!

You all know my love for Target and Larabars…so put the two together and it’s a perfect match! I actually generally don’t buy my Larabars from Target since they don’t usually have a huge selection like Whole Foods and Sprouts do. But since they have a lot of New Years resolution health stuff right now, they had some Uber bars on sale for $1 each, including 2 new-to-me flavors! You definitely can’t beat that–and they sound downright delicious too.

2. I’m obsessed with making grain-free flatbreads. 

First, it was this flatbread made into grain free stuffing. Then it was my staple socca. Now it’s this focaccia, which happens to be egg-free also! If you think grain free baking is hard, try it without eggs. It’s really fun to experiment with grain-free flours and when something turns out delicious, it’s even better.

3. I’m really craving the produce of spring and summer. 

Winter is hard enough as it is, with plenty of cold days, snow and the general feeling of blah-ness once the holidays are over. At least I didn’t get hit with the crazy cold weather here in Colorado (we’ve been in the 40s and 50s, which I can’t complain too much about) and we get over 300 days of sunshine each year, so my mood stays the same. The one thing I crave (other than warmer weather) is spring and summer produce. I miss all the berries, the watermelon, the peaches and cherries, the asparagus and the artichokes. Winter produce just isn’t cutting it–I’m already sick of squashes and citrus. At least I still have my beloved pomegranate…only 68 days until spring arrives!

4. I haven’t had peanut flour in over 6 months…and I kinda want it again.

Remember when I was addicted to ordering food from iHerb? Yeah, me neither since the last time I ordered from them was last May! I don’t know what happened, but I guess I got more budget-conscious and my monthly orders stopped happening. I used to eat peanut flour AT LEAST once per day, and I haven’t had it since June. I just miiiiight end up ordering some more with some of my graduation money, but then again, it might all go towards clothes #sorrynotsorry

5. I’m debating going back on the raw foods train.

I actually did this for quite a while last summer and then I stopped once school started back up and fall came and there was less good produce around. I’m not planning on going 100% raw anytime soon, but I’d like to reincorporate more raw foods into my diet. I’m a big fan of eating whole, minimally-processed foods and this just takes it an extra step. This might be more realistic once spring happens, because there will be more produce, and I love loading up my plate with plenty of fresh fruits and veggies, but in the meantime, I’m going to be buying more raw things, like nuts/seeds and making my own almond milk and stuff like that. I have a lot more time on my hands now that I’m just looking for a job, so I have tons of time to experiment in the kitchen!

Meal Prep Monday

Remember my ‘vegan on a budget’ posts from last year and earlier this year? I was planning on bringing them back once school started back up in the fall but it’s been…3 months since school started and I haven’t done one of those posts yet. Oops. Anyways, it’s a little late to do them again now since I only have 4 more weeks left, including finals! Crazy talk.

I’ve still been keeping up with my grocery budgeting and meal prepping, though, and I wanted to showcase a little of that, especially because I did a LOT of it this weekend. I managed to spend under $70 total for the week at 3 different grocery stores, which is way better than I was doing last semester, and I’ve been loving my long weekends (I only have classes Monday through Thursday, so 3 days weekends every week for this girl…enjoying them while they last!) because they give me plenty of time to go shopping and get my food prep done for the week. Taking an almost full course load means that I don’t have a ton of time during the week to do this, so it’s a blessing to have 3 days to catch up on stuff, including prepping my meals.

Anyways, here’s what I’ve been up to in the kitchen lately!

I wasn’t planning on going to Sprouts this weekend, but when my friend said she needed to swing by there for a few things, I decided to tag along. I ended up getting some cheap organic Pink Lady apples (my favorite kind), Ataulfo mangoes (also my favorite) and Medjool dates. All for under $10. Afterwards I stopped at Natural Grocers, mostly because they’re the only store in my area that carries black bean pasta, which is a new high-protein staple for me. Unfortunately, they were all out but I still ended up buying a few things I needed wanted, like my favorite Hail Merry miracle tart, xylitol-sweetened gum, pumpkin seeds and sunflower seed butter–for under $15.

Whole Foods is a given, but luckily it hasn’t been a budget breaker lately. I’ve been able to spend under $50 there consistently if I also shop at another store, and I only spend around $60 if that’s the only place I shop for the week. I can’t complain! This week I bought two more expensive items (the stevia-sweetened chocolate chips and Skinnycrisps) but the chocolate chips were on sale and the Skinnycrisps I hadn’t had in months and I wanted to bring them home to have over Thanksgiving break. I was planning on buying Tessemae’s BBQ sauce (sweetened only with dates!) so I could make this ‘pulled’ BBQ cauliflower but they were all out so I just had to nix that recipe for this week. As usual, I got a ton of produce (bananas, pomegranates and persimmons on sale, romaine hearts, lime, cilantro, Hannah yams) and some other things I needed for recipes like organic peanuts from the bulk section (on sale!), raisins and yeast. And of course, a few Larabars for quick snacks during the week. This was all just under $45, score!

Meals

Some of these things I made before I did my grocery shopping, so I was kinda using up some things and getting creative. I ran out of nut butter on Wednesday I think so that was fun trying to find other fat sources in my pantry. It was nice to finally restock and have more fruit and snack-y stuff again.

I already plowed through one of the Garden of Life protein powder tubs my dad bought me late last month and I’m onto the second. I definitely recommend this brand, especially their new coffee flavor (it’s only available at Whole Foods right now, though)–decent consistency, especially mixed with coconut flour, and great stats for a raw protein powder.

This was another recent breakfast, when I ran out of bananas so I couldn’t have my usual banana ‘softserve’, which is what I have like 90% of the time. Instead, I took some romaine hearts and filled them with dates, raisins and the last of my PB. The date/lettuce combo is seriously killer! I know it sounds weird, but it’s really good. I also had some Garden of Life protein powder mixed with almond milk on the side.

Before my grocery trips this weekend, my lunches were getting pretty random. I was basically throwing together some leftovers, like the black bean noodles and pumpkin curry sauce, with some add-ins like pomegranate seeds and sauerkraut. These lunches were actually really tasty and filling–I just love the sweet and salty combos!

Finally a more put-together meal! This was my take on Angela’s Thai-style veggie burger. I made a few changes to it though–I nixed the oats in favor of almond flour to make it grain free, I didn’t really measure anything, I only added in the spices/veggies that I had on hand like curry powder and cilantro and I topped mine with a sunflower seed butter sauce. These were pretty crumbly, but the flavor was spot-on and definitely the best homemade veggie burger I’ve ever had! I’m looking forward to leftovers all week..

As for the rest of meal prep, I cut up and stored the 2 organic pomegranates I scored at Whole Foods for just $2.50 (they were on sale 4 for $5)–always messy work but I’m obsessed with pomegranates so it’s all good–made another batch of homemade sweet potato fries out of one of the Hannah yams I bought, made some more PB&J bites and some healthy ‘rice krispies’ (cacao brown rice cereal made with coconut sugar+sunflower seed butter+1 tbsp maple syrup+1 scoop protein powder+some almond milk made into bars) to use up some brown rice cereal I had and I also made the chocolate-covered fruit and nut clusters above. It’s so simple it doesn’t even really need a recipe, and I have no idea where I came up with it, but it’s basically raw mixed nuts (mine were from Whole Foods) and raisins topped with the Lily’s stevia-sweetened dark chocolate chips and set in the freezer to harden. I used the stevia chocolate so these would be sugar free, but feel free to use whatever dark chocolate you have on hand. These are really good, and they’d be the perfect simple holiday dessert, maybe made more festive with dried cranberries instead of raisins and peppermint-flavored dark chocolate?

Happiness

What is happiness? I think it means different things for everyone, but there are some universal things that make most of us happy in some way or another. With that, I’m sharing a fun little list Emily posted the other day…feel free to repost with your own answers!

8 Things Every Happy Woman Should Have 

  • A go-to drink: For me, it’s sangrias (love the white wine versions especially), cider on the rocks (I had a really good one a few weeks ago) and homemade margs. And for daily drinks, water always.
  • A go-to karaoke song: Anything Lady Gaga. Her songs just pump me up like no other.
  • A uniform: colored skinny jeans (especially burgundy), faux leather jacket, riding boots, statement necklace or loop scarf
  • A hair stylist they love: I’ve switched stylists a lot over the years, so I’m going to change this one to hair style. I love my hair in big curls with full bangs.
  • An exercise routine: At home workouts 7 days per week, with some walking thrown in as well.
  • A hobby: Grocery/clothes shopping, blogging, yoga, cooking.
  • A best friend: my sister, always and forever. And at the moment, a really close friend I’ve made through working together and having classes together. I’m going to miss her a LOT when I graduate but we’re hoping someday we end up at the same TV station!
  • A healthy sense of self: I feel like I’ve really grown a lot in the past year. Maybe it’s partly because I’m almost a college grad (scary!) but I’ve been maturing and becoming more independent and focusing less on things I used to freak out about. I can’t say I don’t worry about things anymore, but I’m trying to let life happen and just being okay with whatever comes my way. And I’m excited for the future.

Saturday Seven: Good Things Come in Threes

Hi everyone! So here we are again at the end of another week…and it’s almost halfway through April! I feel like I’ve said this a million times before, but time is really flying by! It’s almost kinda scary, considering how much stuff I still have to finish before I can say adios to this semester. Oh well, that’s pretty much the status quo for the end of any semester.

I haven’t done a Saturday Seven in…um, 2 months?! Yeah, let’s fix that right now!

1. The countdown is SO on!

As the title of this post suggests, there are only 3 weeks left in my semester. Technically, there are 4, but I only have one real final (the rest are papers or projects, which I kinda prefer) so I’m planning on peacing out the weekend before finals and just popping back up here on that Thursday to take that final. This is the first time I’ve ever had only one final in my college career so I am definitely going to appreciate it! Plus going home a few days early is always a plus.

2. I have a shopping addiction…

Obviously I suck at being creative!

Online shopping, that is. It’s where I get all these new-to-me food products that I never seen in stores or that are a little too expensive when I do see them. The latest purchases are from Amazon, where I got some Vega vanilla almondilla shake and go protein powder, xanthan gum and liquid vanilla stevia, all for under $40 and free shipping! I’m really excited to try the Vega powder because I’ve been on the hunt for some good, fairly inexpensive vegan protein powder that is free of soy protein, and this fits the bill! The xanthan gum is something I’ve been wanting for awhile, after seeing everyone post amazing-looking, super thick smoothies. And the stevia I’ve had before, but now it’s in a bigger bottle so I’ll get to use it more.

3. I’m actually being creative with my hair

I almost never, I repeat NEVER put my hair up. But three times in the past week, I’ve put it in a side ponytail. Who am I? Twice this last week, it was curly (and in a side pony one of those days), then it was wavy for two days and finally straight for two days (once as a side pony). It’s actually been fun switching up my hairstyles, because I used to only have it wavy or straight, and down. I’m going to experiment with a side braid next.

4. It’s supposed to SNOW this weekend

I already know that Colorado is a bizarre state, after living here for 17 years of my life. But this unusually warm spring has thrown me for a loop, and now I’m expecting it to continue to stay warm until October. Yeah, too bad it’s still April, one of the snowiest months here. We don’t get spring showers, we get spring blizzards. Luckily they are usually short-lived, and warmer temps return the next day, but snow is still no fun.

5. I’m becoming a Larabar lover

My second-ever Larabar...almost as good as the first.

I used to say I wasn’t a fan of Larabars–not sure why, as I’d never tried them before a couple of weeks ago. But I actually do love ’em…a lot! So far, I’ve tried the cappuccino (mmmm!) and the chocolate chip brownie, which reminded me of a chocolate brownie Pure bar, except with the addition of fair trade chocolate chips. It was good, but I think I’d stick with the Pure bar version in the future, since it has more protein. That’s my only complaint–most Larabar flavors have barely any protein. But I think some of the more unique flavors might be worth the lack of protein, and a few actually do have 5-7 grams, so it’s not too big of an issue. I just love how simple they are, yet really tasty!

6. I’m really missing the food at home

Yeah, dorm room food isn’t cutting it anymore. Every time I go home for the weekend, I remember how much I love being able to cook for myself. And no, the microwave and blender don’t count. This is another big reason why I’m so ready for it to be summer–I can finally cook again. Plus I love summery foods, like berries, asparagus (okay, this is more springy but whatevs) and grilled veggie burgers so that makes cooking even more exciting.

7. I’m all ready for next semester

Registering for classes is always really stressful, but it wasn't too awful this time around.

Next semester is going to be SO different than my past 4 semesters have been. Mostly because I’ll be living off-campus for the first time, and I’ll be taking the bus everyday to classes. So I’ve gotta learn the bus routes and schedules. I also tried to schedule my classes in a way that would either give me big breaks (so I can catch a bus back to my apartment) or really small breaks so I can stay on campus in between them. I’ll definitely have to do more meal planning, even more than I already do with my current schedule, but I’m excited for a change. I think I’ll feel even more independent than I currently do.

WIAW: Goals for March

Hi everyone! I am so glad we’re halfway through the week! This weekend, I’m going home for the last time before spring break (which is in 16 days, heck to the yes) and I can’t wait. Not just because I love any opportunity to go home, but also because this Saturday is the annual father daughter dinner dance in my city. My dad and I have gone every year since I was in seventh grade, and the past 4 or 5 years my little sister has gone with us too. I love getting to get all glammed up and have fun dancing the night away with my dad and sissy. I will definitely be posting a recap early next week, so look for that!

For this week’s WIAW party, I wanted to share my goals for next month. I got the idea from Emily to do a 30-day health challenge. I think it’s a really good idea, because we all have things we can improve on. I’m deciding to start it in March, rather than right now, because I have spring break coming up and while I generally eat pretty healthy as it is, it can be hard to implement changes while living in a dorm and having a busy schedule most weeks. Once I’m home, I have access to a real kitchen, meaning I can eat even healthier and try new things! So here are a few of my goals for next month, some food-related and some not. And of course, some random eats from throughout the week!

Peas and Crayons

1. Eat more veggies!

I love veggies, and I’ve even tried some new ones on recent weekends at home (kale chips and parsnips are some of my new faves) but it’s really hard to cook/prep veggies in a dorm with just a microwave. Basically, I live on carrots, cubed butternut squash and frozen grilled pepper strips and while I love them all, it gets pretty boring. I also happened to basically run out of veggies this week, besides sweet potatoes, so that’s been pretty pathetic! Over spring break, I want to work on eating a big salad once a day (probably at lunch) as well as trying new veggies and prep methods. It might be a little late for Love Your Veggies Month, but it still counts, right 😉

2. Work towards getting a summer internship

This one is probably non-negotiable, at least to my dad. We’re allowed to have 2 for-credit internships while in college, and the school-organized one is next summer, so this summer I have to find one on my own. It’s probably going to be maybe a 5-10 hour per week commitment, which isn’t a huge deal, it’s just finding one that might be a hassle. I think I’m going to be emailing the TV stations around me over break so I can give them a heads-up for summer. After all, my summer break starts less than 2 months after spring break!

3. Cook more

Honestly, I really miss cooking when I’m up at school. I definitely appreciate having an oven, stove and grill while I’m at home so I want to take advantage of them. My mom and sister have different spring breaks than me, so I’ll have the house to myself that week from 8:30 to 2:30. Perfect for recipe experimentation! I have a few plans for what I want to make, like more kale chips, pecan milk and vegan “butter chicken” but I want to attempt to make at least one thing every day I have off. That might mean a lot of leftovers, but as long as they’re delicious, I don’t mind!

I won a Coach's Oats giveaway on Facebook, but I was totally blown away when they sent me this Hugh Jass bag of oats. Guess I'm stocked up for awhile!

4. Work on budgeting

I am still not the best at this, but I do want to learn! Right now, I am getting paid monthly for my work as an editor for my campus’ faculty newsletter and since it’s still a relatively new thing to me, I get super excited about seeing money in my bank account, and then I end up buying things on impulse. While I do end up using these things (like peanut flour, Hollister purchases, etc.) I would like to think out my purchases more and not just buy things because I can. This might be hard, especially considering my huge wishlist of spring clothing, but I know it’ll be worth it in the future when I have a real job.

5. Avoid food ruts whenever possible

Most of the time, I don’t really think of them as ruts, because I enjoy what I’m eating and for many things (like oats, dried fruit, almond peanut cashew butter), I don’t get burned out on them–they just become favorites that I come back to over and over. But sometimes I do get into ruts and unfortunately, I eventually lose interest in that item, which is a shame, because I want to get a variety of things in my diet. So I want to work on mixing up my daily staples, trying out new products (including ‘fear foods’) and giving other ones a small break so I don’t get burned out.

2011 in Review

Hi guys, can you believe that there is just one day left in 2011? Time really flies, doesn’t it, especially at the end of the year!

I decided to do a recap of my year since I started this blog just a little over seven months ago. So much has happened since then, so I thought I’d give a little breakdown of the most memorable parts of each month, along with a couple of my favorite photos from that month.

I first started AlmostVegGirlie on May 24, just a couple of weeks after I finished my freshman year of college. I have had a couple of blogs before (and still have a fashion-focused one on Blogger) but never a food-related one, and since I was really starting to get into cooking a lot, I decided to finally start one after discovering the healthy living blogging community. Besides starting my blog, I also celebrated my mom’s birthday (and Mother’s Day the week before) and went to a U2 concert up in Denver!

I biked in my first real biking event (with my dad). It was only seven miles, but it really helped me discover my love for biking and inspired me to compete in future events. One of the best parts (besides the ride itself) was all the free samples tents set up after the ride.  Not gonna lie, that was super awesome 😉 I also started my volunteer job at the local library that continued all summer.

July was a great month for me! I started it out with a family trip to Estes Park which was so much fun and a great little getaway for the fourth of July weekend.The excitement continued with my first trip to the Whole Foods hot/cold bar and my 19th birthday on the 27th. I loved being one of the first people in Colorado’s first IKEA store, plus it was nice to get a gift card for going there on my birthday!

I want to go back and have this all over again!

The month started out with a lot of active things, from bike rides to playing tennis to hiking in the mountains. I went on a couple of shopping trips before school started again towards the end of the month. I moved into a single dorm room and loved having even more independence.

Labor Day weekend was a whirlwind of activities, from going to see a production of a play my dad wrote to a day trip to Breckenridge (which was filled with tons of good food). School was…school. I discovered a few new foods, like deep chocolate Vitatops, Halo bars and of course, many new oats combos.

I like to call this the month that I rediscovered my creativity in the kitchen. I think I cooked more new things this month than I did all summer! I spent a couple of weekends at home, which helped fuel my passion. I made quite a lot of pumpkin-related things, but what can you expect for October? I also went to urgent care to check out the pain in my foot that started in September and found out I have plantar fasciitis. Oh, and I officially started my first-ever real job as the news managing and PR editor of my college’s staff newsletter! I love what I do (and I love the fact that I get paid to do it!)

I promise you I'm actually really more excited about my new cookbook than I look like I am.

The stress of finals, projects and packing really got to me this year, but before I knew it, I was home! This month, I’ve enjoyed seeing lots of snow (even some on Christmas), playing games with my family, trying out new recipes, sledding, shopping and so much more.

Post of the Month: Jumping on the Bandwagon

It’s definitely been a very good year for me. Despite my struggles in school and with my eating disorder, I would have to say that I had more ups than downs. If you had told me at the beginning of 2011 that I’d be riding in a real bike event, go mostly vegan, get my first job, try something called ‘peanut flour’ (total life-changer, BTW), injure my foot and make raw desserts, I would have told you no way. But life’s funny that way–the things we least suspect always seem to happen. So here’s to 2012…whatever it may bring!

Oh We Need a Little Christmas [Inspiration]

OMG! Can you believe that Christmas Eve is tomorrow and then it’s Christmas? And in a little over a week, we’ll all be embarking on a brand new year! How crazy is that? 

I have definitely been getting into the Christmas spirit lately, between watching classics like “Rudolph the Red-Nosed Reindeer” and SNL’s “A Very Gilly Christmas” TV special (okay, not so much a classic but I adore SNL!) and stocking up on groceries for the big day. But there’s also a big part of me that almost can’t believe it’s so close to Christmas already. That’s where my little inspiration board comes in!

Okay, so a few of the things don’t seem so Christmas-y, but trust me, they are! I really want a pair of booties for Christmas (like in the lower right hand picture), and that cheetah scarf would make a nice stocking stuffer. Oh, and those bejeweled nails would just be great to have any time 😉

I don’t want to leave you with a post that’s completely food-less so I’ll share some of what I’m planning on eating in the next couple of days!

Vegan butternut squash ravioli? Ummmm yes!

I discovered vegan ravioli over the summer and it was goooooood! I decided to try this brand this time around and the butternut squash kind sounds like it’ll turn out delicious. This is going to be my Christmas Eve dinner, topped with some kind of curry sauce that I’m planning on making myself. Hopefully my peanut flour will arrive before then so I can use that!

Continuing on my raw dessert kick, I’m planning on making these raw pecan pie tartlets for Christmas Eve or Day dessert. They’ve only got 5 ingredients, are completely raw and healthier for you than traditional pie. Plus who wouldn’t want a cute little “pie” of their own?
