(Almost) Wordless Weekend

I feel like I haven’t blogged in forever, but really, it’s only been 5 days. It’s been quite the whirlwind of 5 days though and a LOT has changed, though it doesn’t quite feel like it yet…

Instead of boring you with the details of my (amazing) weekend, I’ll just share some of my favorite pictures from the last 3 ish days. It’s still crazy to me that Christmas is in less than 2 days now, since I just moved out of my apartment this morning and I’m finally home for the holidays. I’m planning on ‘celebrating’ tonight with some Whole Foods salad bar action 😉

I am so thankful I had the opportunity to attend the school that I did, have an amazing experience there, and was able to graduate in 3 1/2 years without too much stress! This weekend was incredibly fun (and busy) so I’m ready for Christmas and some down time before I start the job search. I still can’t believe I’m living the post-grad life haha.

As you can see, I’ve changed my blog design yet again! I am a little obsessed with page design but I didn’t want to shell out money that I don’t have to get one of the premium designs or find a professional blog designer so this is what I went with and I like it–I love the colorful, bold look!

Anyways, here’s the latest edition of Currently. These kinds of posts are always my favorite to write because they’re more personal but in a fun way!

Current Book: Am I ever reading a book I actually like, instead of something I have to read for school? No such thing! Again, currently reading this book (on my tablet) for my post-WWII history class. I really like that class, and the books are pretty interesting, so no complaints.

all soulsCurrent Music: I’m patiently awaiting the arrival of Christmas music on Sirius XM (editor’s note: actually found out it started on Tuesday, so I’m officially listening to it on the drive to and from school) and I will be listening to that nonstop until New Year’s. What can I say, I love the Christmas season!

Current Guilty Pleasure: Starbucks 1x per week. I’ve been hitting up the ‘bucks almost every week for awhile now, especially now that the red cups are back. Seriously, it’s a problem but not really because I’m working my way up to gold card status and I never order those crazy fancy expensive drinks. Tall Americanos and blonde roasts for me, please and thank you, with the occasional addition of soy or sugar free syrups.

Current Nail Color: This pretty forest green color from OPI that I got last Christmas. It came in the cutest mini-size bottle and somehow I still have some left.

Current Drink: I feel like I say water every time (boooooring!) so I’ll switch it up and say tall Americano from Starbucks with 3 pumps sugar free peppermint, in a red cup of course. I got this drink the other day when I was at Starbucks for a group project meeting, and it was surprisingly good and not overly sweet.

Current Food: Lettuce wraps for lunches on campus, random salads at home, homemade PB & J bites (basically raisins blended with peanut butter from the Whole Foods bulk section), black bean pasta (soooo good, and I love the protein it has), protein banana softserve, pomegranates and persimmons.

Current TV Show: I’m not watching any show regularly, aside from SNL every week. A lot of the cast is brand new this season, but I’ve liked most of the shows so far. I still miss Kristen Wiig and Bill Hader, though.

Current Wishlist: Basically, all I want is to make it to Thanksgiving break alive (I am crazy busy with school stuff) and then make it to graduation with good grades. I’m in the home stretch, and I’m freaked out and not at the same time. #senioritis

Current Needs: More time in my day to get shit stuff done, a break from school (Thanksgiving break in T-minus 8 days!), a little bit more money in my budget to get me through the rest of the semester.

I also need to find more persimmons, to feed my addiction.

Current Triumphs: This may sound weird, but learning to like the color black. Before this year, I owned basically nothing black in my closet. I was not a fan of black in any way. I finally branched out and bought a few black pieces to add into my wardrobe and I’m finally starting to love it, in small doses, paired with other colors. I just love how chic and edgy it can be!

Current Bane of Existence: School, my skin situation (I still have acne, and it’s not going away easily), stress about finding a job after graduation.

Current Indulgence: These homemade PB cups I made last week. Okay, maybe they weren’t that indulgent, being made with stevia-sweetened dark chocolate and organic, no-salt no-sugar PB, but they were really good and I’m planning on making them again once I get more chocolate chips and PB.

Current Blessing: Having the support of my family, forever and always. I’ve said it before, but I love my family. Even when they get on my nerves, I still love them and I will be forever grateful that they’re so supportive and loving. My mom’s been helping me pay for groceries lately since I’ve been running low on money, and my dad’s helped me figure out some school stuff, and my sister’s just been there to cheer me up with some new Lady Gaga music 😉

Current Outfit: This was something I wore last week, but a red peplum shirt from Forever 21, my new black jeggings from American Eagle (I’m obsessed with these, and they were $12!) and sparkly black flats from Target.

Current Excitement: ARTPOP, the new Lady Gaga album, is finally out. It’s a lot different than some of her older stuff, and I still think I prefer her Born This Way album, but the new songs are really catchy and fun.

20 Questions, Health Style

It’s that time of year again for all us college kids–finals! I actually only have a few finals this semester but a lot of other crap to do before Christmas break like writing papers and such so saying that I’m stressed is definitely an understatement. So this is where fun little surveys come in! Plus I always love talking about food and health so here we go…

1. What did you eat for breakfast?

Today I had a super-unconventional breakfast, at least for me. I had a rice cake (new obsession) topped with raw vanilla chai protein frosting and raisins, with a side of candy cane coffee (courtesy of Target–so good!) and some sauteed cinnamon kale. I usually go for breakfasts on the sweet side and this was, but definitely not my norm, especially with the addition of the kale.

2. How much water do you drink a day?

Not enough! I get headaches a lot (like at least once a week) and I think it may have to do with being a little dehydrated. I live in a really dry state so that doesn’t help but I really need to start drinking more. Water is really the only thing I drink during the day but I don’t get in a lot.

3. What is your current favorite workout?

Any of the workouts in this workout app I have on my iPod Touch. I really love the ab-focused ones, I always feel the burn!

4. How many calories do you eat a day?

I honestly don’t want to get into this. Yes, I count calories religiously (unfortunately…) but I really really want to stop. I’d rather focus on the nutrients and ingredients in my food rather than calories so I’m working towards that. The calories thing still bugs me though because I know I’m probably slightly restricting but I have no idea how many calories I really need to function at my best. Which is why I want to stop counting calories.

5. What are your favorite healthy snacks?

Fruit, dried and fresh and frozen. Rice cakes topped with pumpkin butter. Peanut flour paste. Almond butter mixed with maple syrup. Kale chips. Raw cauliflower dipped in salsa. Roasted squash dipped in nut butter. Dark chocolate…what? Who said it isn’t healthy?!

6. What do you usually eat for lunch?

I try to get in a big bowl of kale in some form, or some veggie. Other than that, I don’t really have anything I eat a lot with lunch. I like to mix it up!

7. What is your favorite body part to strength train?

I don’t do typical strength-training–I don’t lift weights or anything but I like bodyweight exercises. But I like to train my abs and arms, that’s where I feel the most progress and burn.

8. What is your least favorite body part to strength train?

Legs. I don’t feel like it does as much as arms or abs.

9. What are your ‘bad’ food cravings?

I don’t really crave unhealthy foods, but since I have a sweet tooth, some days I go a little crazy with the dark chocolate, maple syrup and dried fruit. All healthy things, but not as nutritionally amazing as veggies  obviously!

10. Do you take vitamins or supplements?

I finally found a gummy vitamin without gelatin and I love it! It’s also supplemented with a variety of veggies and fruits which is great for those days that I can’t get in as much produce as I’d like.

11. How often do you eat out?

A few times per month, mostly when my mom picks me up for the weekend and we have to swing by Panera or Chipotle or whatever for a quick lunch or dinner. We don’t go out to real restaurants a lot, mostly because they don’t have tons of vegan options, but Tasty Harmony is my favorite sit-down place because it’s all plant-based and made from scratch. Plus the Whole Foods salad bars are always amazing!

12. Do you eat fast food?

Unless you count places like Chipotle, then never. I haven’t in many years and I don’t really want to. I like fast casual places because they have lots of healthy, vegan options but fast food places do not appeal to me at all.

13. Who is your biggest supporter?

My family, for sure! My mom has been driving 200 miles a couple of times per month throughout my college career to bring me home on some weekends and always has great advice. I can talk to my dad about anything and he has supported my dreams and expensive tastes. My sister is my best friend and fashion consultant (I’m hers too!). I don’t know what I’d do without them.

14. Do you have a gym membership?

No, but I’ve always wanted to. I actually think some of those gym machines look really fun!

15. How many hours of sleep do you get a night?

I always aim for at least 8 and I usually get that…and more! I’m lucky to be such a great sleeper and getting 9 or 10 hours of sleep feels great.

16. Do you have a ‘cheat’ day?

Nope. I have enough disordered thoughts in my life without thinking I need to ‘cheat’ and eat ‘badly’ on a certain day. For the most part, I eat what I like (which is mostly healthy anyways), try to get a good balance of macros and vitamins and that’s that. I try not to overthink indulgences and stuff like that.

Was this healthy? Not really (it was vegan and from Whole Foods though so not totally bad) but it was my birthday and I wanted cake!

17. Do you drink alcohol?

Not regularly, as I’m not quite legal, but I did enjoy a few cocktails on Thanksgiving and I think I’ll have to do the same over Christmas break!

18. Do you have a workout buddy?

Not really, but my dad and I play tennis together sometimes which is so fun.  We haven’t played in awhile so that needs to change!

19. What is the best thing that has changed about your life since committing to a healthy lifestyle?

I started eating healthier around 14 but then I fell into an eating disorder and now I’m coming out on the other side as a vegan and healthier than ever. I think I’ve started to discover balance–balancing healthy eating with exercise, sleep, work and fun. It’s not always easy, but getting that balance is key to being happy.

20. What was the last healthy thing you did?

Put on a sweatshirt because I was cold. That sounds totally silly, but it’s no fun to sit around freezing and it feels good to respect my body by not ignoring its cries for warmth 😉

This weekend was Homecoming/Family weekend on the CSU campus so my dad made the drive up to spend the weekend with me. Two years ago my mom and sister were also able to come up but since I was still living  the dorm life then, we had to stay in a hotel. But now that I’m in a single lady pad (aka a one bedroom apartment) I can actually have people spend the weekend with me. We had tons of fun, despite the less-than-stellar weather. And by that, I mean it was literally in the 30s for most of the weekend. Not normal for October but it was still a good weekend.

On Friday night, my dad and I had a late dinner at Tasty Harmony, a mostly-vegan restaurant downtown. It was our first time eating there, but luckily it won’t be our last because it was so good! My dad isn’t a vegan or even vegetarian but he’s definitely willing to eat more plant-based foods. He got a garlicky hummus and veggie sandwich but I went with something a little more adventurous–the raw enchiladas. It was my first time eating a raw entree in a restaurant and it definitely didn’t disappoint. It was made with flax tortillas and filled with raw pepita “cheese”. It came with guacamole, salsa, cashew cream, a side of “rawfried” beans and a really good mixed greens salad. The beans were the real star of the plate–they literally tasted like refried beans, but our waiter said they were made with a mix of nuts and seeds.

Now normally I don’t order dessert in a restaurant, partly because they rarely have a vegan option but also because it’s a big ED fear of mine. Well, I was really wanting one of their desserts because they all sounded so good, plus they were all wheat and refined sugar free. So my dad and I split a piece of carrot cake and it was literally the best cake I’ve ever had! Carrot cake is the only kind of cake I really like but I’d never had a vegan version until Friday. It was so cinnamon-y and just fresh tasting, plus not heavy at all. Well, that makes sense because Tasty Harmony makes everything from scratch, uses purified water to make their food and drinks (they even have a bar!) and most of their menu is vegan and gluten free. So it was definitely my kind of place and I hope to go back soon. My dad even wants to go back again!

Saturday morning we ran a bunch of errands, like filling up my car tires with air (sooooo fun, especially in the cold…NOT!), getting gas and grabbing some snacks at Whole Foods for the tailgate. Of course I couldn’t go a week without going to Whole Foods 😉 I got a few really tasty things, like black bean dip and veggie chips, plus some old favorites I was running low on. Then we had a quick lunch (Whole Foods’ sweet spinach salad is a total winner!) and headed out for the tailgate. Little did we know how cold we’d be! I was wearing a pair of skinny cords, a sweatshirt, a jacket, boots with thick socks and I brought mittens but I was still freezing, even with a thick blanket over me for the entire game! It didn’t go below freezing but it almost did. Of course, today it was back to the 70s…that’s Colorado for ya!

The game itself…well, let’s just say that CSU sucked. As usual. I’ve only been to two of their games (the other one being the homecoming game 2 years ago) and they only won that first one. They only win a few games each season but it was still fun to cheer them on. The stadium was probably halfway full (since it was so cold out) but by the 4th quarter it felt more like a high school game by how few people were left! CSU was playing against Fresno State and both teams had pretty awful offensive lines so Fresno only got a few touchdowns, but CSU was scoreless until the end of the 4th quarter. They finally made a touchdown, so it was totally worth it to see them get a score right at the very end.

On Sunday we ran a couple more errands, went for a long walk around campus and checked out some flowers (that were sadly dead) and had gelato for lunch. Yep, sometimes it’s totally acceptable to skip lunch in favor of the best gelato in the world. At least in my opinion! Guess what flavors I got? Pumpkin and soy chocolate. I am so predictable 😉 But seriously, I couldn’t not get pumpkin this time of year, and it was just begging to be paired with chocolate. My dad also got pumpkin and we agreed that it was perfect. We even got to eat them outside since it was way warmer, like in the mid 50s. Yeah, totally not warm but it felt like a heat wave after Friday and Saturday!

Before my dad had to head back home, I made dinner for the two of us. I used some Whole Foods multigrain pizza dough (love that stuff) to make us a pizza. It was half red sauce with artichoke hearts, half vegan creamy garlic sauce with navy beans and kale. My dad went for the red sauce side and I went for the garlic side. He loved it, so I got him to eat two meatless meals this weekend and he loved both of them. I’d call that a major win!

Now it’s back to normal…or maybe not. I have a lot to do this week, like a midterm on Wednesday and a group video project to work on. Plus my fridge has been acting up and not keeping things cold enough. A repairman came by earlier and said he fixed it but I haven’t noticed much of difference yet. We’ll see though. Hopefully it’ll be fixed soon since I can’t live without a fridge!

Weekend Food & Fun

Ya wanna know what my least favorite part of the weekend is? When it’s coming to an end. I hate that feeling you get on Sunday night when you realize that the weekend’s pretty much over and tomorrow it’s back to the daily grind. Can you tell that I’m sick of school already? 😉 I know how sad that sounds, I mean come on, I’m only like 5 weeks in! Honestly, I actually love school this year (nerd alert!) but sometimes you just want a nice little break. Especially when you’ve got a crazy busy next few weeks ahead–in my case, 2 tests this Friday (eek!), 2 tests next week and a paper due in 3 weeks. Gosh, these professors are insane!

 But the point of this post is not to complain about school but to talk about my weekend! It started out when my mom picked me up around 6:30 on Friday. We grabbed dinner at Garbanzo, which is this really awesome fast casual Mediterranean place. It was a little too awkward taking a picture of my amazing dinner, so I’ll just explain it: baby greens, tabbouleh salad, fresh red cabbage, hummus, falafel topped with spicy cilanto sauce and grilled eggplant slices on top. It was drool-worthy.

I finally changed my nail polish! My sis got the shatter polish for homecoming, so I def had to try it out once I got home. Verdict: love it! And every time, it's a different design!

Saturday started out bright and early (if you consider 8:15 early, which sadly I don’t anymore since I’m used to being up by 7) with some Kashi Honey Sunshine-topped overnight oats. Oh how I’ve missed Honey Sunshine! I haven’t had it for months and forgot how much I loved it. Topped with frozen nanner slices and mango chunks, it was heaven in a bowl.

Please take me back, Honey Sunshine! I can't live without ya 😉

Around 11:30, my mom turned on the TV so we could cheer on my college’s football team in their big annual rivalry game. The Rammies did so well in the first quarter, but then they lost a lot of steam after the half. It was getting way too depressing so I stopped watching 😦 Luckily, my dad and I ended up going to see “Crazy Stupid Love” (I was shocked it was still in theatres) so it ended up being a great afternoon. I love comedies, and it was  really good one, so definitely see it if you have the chance. Then my dad took me to get froyo nearby–how could I pass that up? Despite the fact that I was freezing cold all day (seriously, the weather changed so drastically!), I still enjoyed my frozen yogurt. I got a new-t0-me flavor, apple pie. It tasted as good as it sounds 😀 Perfect for an almost fall day.

After a Target run, we got home and I was able to make my own dinner–for realsies this time, I actually used the oven, which totally counts as cooking. I miss being able to do real cooking, but I’ve got a whole lineup of recipes that I want to make come Thanksgiving break. Everyone better stay outta my way–the kitchen will be mine 😆

I also appreciate the slightly better lighting I get at home! My dinner was a Gardein veggie burger topped with General Tso sauce, baby carrots, chipotle seasoned sweet potato fries and sweet potato tots. I think I OD'd on the orange.

The rest of the night was pretty low-key: SNL-watching, shower-taking, beating my dad at an UNO tournament. I am beast at UNO–no really!–I mostly always end up winning against my dad.

I think a big trend for me this fall will be layering--I love how cozy I felt in this outfit. Grey knit duster cardigan (A&F), burgundy plaid tunic (A&F Kids), navy culotte shorts (A&F), navy sparkle tights (AE).

Today was even more chill–at least until I had to head back up to school. When we finally got up here, my mom suggested Larkburger for dinner. It’s basically this pretty simple place with all-natural gourmet burgers and fries and such. Usually I end up getting the portobello burger but I wasn’t too hungry tonight and settled for the field greens salad topped with a grilled tuna filet and some edamame on the side. The tuna was amazing and the edamame was too (of course!) but the salad wasn’t great, mostly because they served it in this plastic container that was extremely hard to eat out of, plus the tamari ginger dressing  that sounded so promising, turned out to be totally nast. I hate when that happens, but I pretty much usually expect restaurant dressings to be sub-par. Luckily, it was on the side so I could just toss it without having the whole salad be ruined. I ended up saving the salad to eat sometime this week–in a more convenient way, like on a plate!

Now it’s back to the real world 😕 Oh well, not every day can be a blast and I know I’ll have some awesome days in the near future!

Oh, P.S. an update on my foot. Thanks so so so much for the well wishes! It’s still in pain, I wrapped an Ace bandage around it and hope it might help–hey, if it doesn’t, at least people will know why I’m limping around 😀 Plus I feel cool with it on, please don’t ask me why!

Strawberry Melon Gazpacho

Summer is my favorite season EVER! I love the warm weather, the sunshine (which has annoyingly been missing the past week and a half in my neck of the woods 😦 ), the cute clothes (shorts, tanks, dresses and flip-flops…YES!) and the food. I love all the fresh, yummy produce that summer brings like berries, watermelon and apricots. Summer is usually the season when I eat the healthiest, because my daily diet is packed with fresh fruits and veggies (fruits mostly…I have a huge sweet tooth 😉 ). I love incorporating all this yumminess into the recipes I make. So without further ado, I introduce you to…gazpacho!

It’s a cold soup usually with a tomato base that’s perfect for hot summer days. It’s the perfect side to a veggie burger, pasta or a big salad. Since I’m not a huge fan of tomatoes, I’ve been on the lookout for a gazpacho that didn’t have them. I searched the Whole Foods website (love that store and their recipes) and found lots of gazpacho recipes but one caught my attention: strawberry melon gazpacho. I LOVE strawberries and melons, and I thought it sounded really yummy.

 Into the food processor went 2 cups cubed watermelon (make sure to take out the black seeds first!), 1 pound strawberries, 1/4 of a large cucumber (peeled and chopped) and some lime juice. Then I pureed it until it was smooth with some chunks.

I served mine with some grilled mahi mahi topped with a strawberry pico de gallo (recipe to come!)
