WIAW: Coffee Burns & Giant Veggies

Happy Wednesday, ladiesssss 😀 I have been loving all your responses to part 2 of my story–they have truly been making my day(s).

So what have I been up to since last WIAW? Oh, nothing much, just slowly dying a painful death doing a crap ton of studying and homework that’s all due this week. I don’t really have midterms, per se, just two tests this week, a quiz on Friday and several other random assignments. So you could say this is my crazy midterm week. I just can’t wait til it’s over. But on the bright side, my semester is officially HALF over as of today! Wooooooohoooooo 😛 Just 5 1/2 more weeks til Thanksgiving break and only 8 more until Christmas. Wow time really does fly when you’re having fun super busy!

Enough blabbing, let’s get on with what I know you came here for–the food! This week, I’ve just got a random assortment of my eats of the past week or so, plus some random survey questions. Lessssss go!

Trail mix-topped oats, spicy veggie sausage, golden and regular raisins, AWESOME gummy vitamins. I know you want some...

 What is your favorite drink from Starbucks? Year-round, the skinny hazelnut/vanilla latte. Iced or hot, depending on the season. I always get tall because anything bigger makes me feel sick and get a huge headache–no fun 😦 My favorite seasonal drink is the peppermint mocha light Frappuccino. I never got a Frap before I realized you could get it made with skim milk and no whip. It’s still totally delish. But I haven’t been able to get my Starbs fix lately, so I’ve had to resort to making my own with VIA packets. I love em, even though I’ve already totally burned my tongue off. Ah, fall 😉

A random lunch I had last weekend back at home: sweet potato tots, veggie sausage, half a nanner, Sriracha. No worries, I didn't dip the banana in the Sriracha!

What did you do this weekend? Oh, it was SO much fun (not!). I did laundry, went out in the pouring rain/cold/wind to pick up some gum and applesauce (just the essentials 😉 ) from the dining hall express store, tons of studying and homework, organized my dresser, made my outfit list for next week and my packing list for the weekend and watched the new SNL. Fun stuff, no?

I was attacked by a giant cauliflower! No seriously, this was just one piece from a mix of broccoli and cauliflower, but it's almost as big as a whole head of cauli. Scary stuff!

 What is your favorite dessert? Gelato, no question. Guys, if you’ve never had it before, doooooo itttttt. Now. Seriously, even if you’re lactose-intolerant or vegan, ’cause the fruit flavors are dairy-free. It’s 100000 times better than ice cream and even froyo. I love this little place in my college town called Gelazzi, even though they’re expensive, because they have like 30 flavors at a time. My personal faves are soy chocolate and birthday cake. So. Good.

A breakfast way out of my norm, but still so good: date with almond peanut cashew butter, homemade mocha made with Starbucks instant coffee and unsweetened chocolate soymilk, plain Oikos mixed with raw wildflower honey.

Have you ever been run over? YES. Just last Wednesday, I was walking innocently across an intersection with tons of other college students when BAM, this chick on her bike ran into me. I ended up riding along on her front tire for a few feet and then I found myself on the street underneath her bike. WTH? Anyways, she apologized over and over, and I ended up with two nasty scrapes on my legs. I’m so tough 😛

Oats in a jar time! I finally finished the almond butter (it took forever, because I fell head-over-heels for almond peanut cashew butter...) and decided to make carrot cake over(hours) oats for dinner. Cinnamon, APCB, date and carrots (duh) mixed in, apple on the side.

 What is the best thing you’ve made/ate this week? Sweet potato protein frosting say whattttttt?! Yeah, so basically I wanted to use up some sweet potato puree I had on hand so I thought, why not make a dip/frosting out of it? It’s so simple, you just mix 1/2 a cup sweet potato puree (from a can) with a scoop of vanilla protein powder and a tablespoon of nut butter of your choice (I used almond peanut cashew butter, aka APCB, the new love of my life). Stir it up and you’ve got yourself a nice “frosting” for pita bread, apples or whatever. Plus it’s got like 4 grams of protein per spoonful!

Sweet potato protein frosting (see recipe above)! You can substitute pumpkin for the sweet potato, use whatever kind of vanilla protein powder you prefer and any nut butter. The combinations are (almost) endless.

 What are you most looking forward to in the next two months? Ummmmm Christmas and Thanksgiving fo sho. And New Year’s, I love the holiday season. There’s still like 5 1/2 weeks til Thanksgiving break, but I get 9 days off, including weekends! I’ll be cooking up a storm, definitely. And Christmas is a month-long break 😀 Gosh I love being in college.

My outfit on Saturday, aka randomly cold and extremely windy day. Brown zip-up hoodie (Hollister), orange babydoll tank (Hollister), brown striped leggings (American Eagle), brown Bearpaw boots. Yep, I totally did the whole leggings-boots college girl thing, but with my own twist.

 What is your favorite protein-type bar? Gosh, I absolutely love Clif Mojo bars, especially the mountain mix (I love all the random nuts, seeds, raisins, pretzel pieces and chocolate chips of course). I also really love Pure bars, the chocolate brownie has my heart, and in my opinion, SO much better than Lara bars. I’ve also started to love Halo bars, in s’mores and nutty marshmallow. True story, I used to be obsessed with mini Clifs but then they changed the formula and now they taste totally nast. So I pretty much only buy Clif C and Mojo bars, but when the seasonal ones come my way, you better believe I’m buying them all up!

Saturday Seven

Hey hey hey! Thanks for all the wonderful comments on my bucket list/WIAW post! I always love seeing new faces around here, so stick around if you like what you see 😀

I’ve been seeing a lot of Friday Five type posts lately (well, duh, it was just Friday!) so I wanted to do my own version of that: Saturday Seven! Basically it’s the same as the Friday Five, except it’s Saturday and there’s two more things–bonus!

1. Rekindling my love for yoga

I love my purple yoga mat--plus it matches my room!

 I love yoga, and I do it on a daily basis, but lately I haven’t been really into it. I pretty much forgot about my yoga mat since it’s been in my closet, so some of the poses haven’t been as comfortable, but with my mat back in action, I should be ready to get my yoga on!

2. Obsessing over new foodie products

This list will be added to, for sure!

 Not sure if you can read that list (my camera is sometimes weird with taking pics) but I’m currently on the lookout for Oikos frozen yogurt, Clif Peppermint Stick (new seasonal flavor–heck to the YES!) and White Chocolate Macadamia Mojo bars and Silk Mint Chocolate and Nog soy milks. I know that those last 2 exist, but it’s not quite time for them to reappear in stores–why can’t it be November already? The other things I have yet to see and they need to be in my life ASAP!

3. Resting my foot

 The foot pain on my sole has yet to disappear, but since it’s the weekend and I have no classes to be at, I decided to take a break from walking on it and see if it speeds up the healing process. I’m also planning on icing it. I’m still really hoping it’s not a stress fracture…

4. Finishing off my almond butter

 For once, I actually have a jar of almond butter. I usually get my AB from the grinders at Whole Foods, so it just comes in a little flimsy plastic container. This time, I got some AB from Super Target so it came in a jar…and it’s almost out! OIAJ time later this week 😀 I’d love to try the Almond Cashew Peanut butter next time–have any of you tried it yet?

5. Plowing through my to-do list

Augh, I'm buried in homework 😦

 I just get done with 2 tests in one day and now I’ve got another test on Tuesday, a bunch of homework and a paper due in 2 weeks? Yay school 😦 I’ve got most of the take home exam done, plus I organized my closet, vacuumed my room and did my online homework. All that’s left to do today is watch the new SNL 😉

6. Rockin’ my real glasses

You know you're jealous of me...

 While I wish my “nerdy” 3D glasses were my real glasses, they don’t have any lenses. And I actually need glasses. Usually I wear contacts but I was feeling kinda lazy and kinda smart today, so I decided to wear my glasses. I think they’re flippin’ awesome!

7. Organizing my closet

...and this is only part of it!

 Yes, I’m one of those obsessive, anal people who needs to have their closet organized by color. When I first unloaded all my crap stuff into my room at the beginning of the school year, I just hung things up based on category (like tanks, sweaters, shorts, etc.). But I was getting annoyed with that, so I organized it by color, just like it was at home. Now I feel so much better 😉

WIAW: The Bucket List

Peas and Crayons

This week, I decided to share my “bucket list in progress” with you all. A lot of these I’ve been thinking about for awhile, but they slipped my mind and I just thought of them again, and decided to create a bucket list. Some of these are more realistic than others (and are more likely to happen in the nearish future) but I think it’s just a fun way to share my dream goals!

Attend a New York Fashion Week. If you know how obsessed I am with fashion, ’nuff said. Plus I’ve never been to NY, which is just pathetic.

You can never have too many versions of PB&J Remix oats. This one included organic grape jelly (my new love!), fresh red grapes and PB Puffins. So. Good.

Adopt a child from a third-world country. I would love to someday adopt a little girl from Asia or Eastern Europe. I know the process must be ridiculous, but I’d really love to do it…when I’m married, of course!

Own a greyhound. Gosh, these are my favorite doggies ever and I’ve wanted one for a few years. As soon as I move into a pet-friendly apartment, I’m getting one! Plus it might motivate me to start running more often 😛

Lunch on-the-go = story of my life this year. Today's was my first Cripps Pink apple of the season (second fave kind after Pink Lady) and a Clif Mojo Mountain Mix bar. I'm dying to find the White Chocolate Macadamia Mojo bar though...

Visit every U.S. state. This one, I’m not sure how specific I’ll be with it. I’ve driven through a lot of states, but I’m not sure if it counts as visiting it. I think it does, considering how many hours I spent in the car, and it’s not like I just flew over in a plane. So far I’ve been to Colorado (duh, I live here), California (3 times I think), Arizona (first two years of my life, and then again for spring break last year), New Mexico, Nebraska, Iowa, Texas, Wisconsin (several times since my grandparents live there), Florida and Illinois. So that’s 10 down, 40 to go…

Eat at a vegan restaurant. This one is def realistic and I hope it happens very soon! I’m jealous of all the bloggers who regularly dine at these kinds of places because the food looks so darn good.

I'm rediscovering my love for cereal, and it's loving me back, clearly. Kashi Honey Sunshine and PB Puffins (can I go a day without these? I think not.) topped with freeze-dried cinnamon apples. Bring on the fall.

Have a beach wedding. I could go shoe-less 😉 Oh, and preferably a beach in Cali or Hawaii.

Meet a U.S. president. How cool would this be, especially if they were an awesome prez?

A cozy, almost-fall outfit of the day: burgundy cardi (Hollister), grey lace tee (Hollister), owl pendant (American Eagle), burgundy floral skirt (Hollister), sparkly blue tights (American Eagle). I'm a bit obsessed with the tights and sweater combo, can ya tell? 😉

Go to a Lady Gaga concert and meet her. I think I’d die right on the spot if this happened 😉

Appear in a movie. Of course, I’d love to star in a movie, but getting any kind of part where my name would be in the credits would be le-git.

Dinner and the Denver Post food section? Yes please! Mini EVOL veggie fajita burrito (vegan!), leftover salad greens with guacamole, red grapes. I love salads, but this one was unfortunately lame since it's been in the fridge since Sunday. I hate when salad greens get slimy.

Go snorkeling. I’m scared to go scuba diving, but snorkeling just seems so relaxing and fun.

Be in a flash mob. Come on, I’m not the only one who wants to, right?

Me + dried fruit = BFFs. Raisins and freeze-dried cinnamon apples. Love in a (tiny) bowl.
