Wants & Needs

I’m totally guilty of mixing up needs with wants. Especially when it comes to clothes. “Oh, but I need those shoes!” “I really need to buy that cute shirt.” #firstworldproblems. So maybe some of my needs on this list aren’t really needs but they’re definitely a lot more important than the swimsuits on my wishlist or the new food products I want to try.

I know you can’t tell from the picture, but the dress has little birds all over it…cute, right? I’ve been eyeing it since I first saw it in February (side note: I hate how stores stock all their spring clothing in winter when I can’t wear it for another 2 months). It’s finally on clearance…well, if you count 10% a discount. Maybe I’ll wait until it’s even cheaper.

I need… to stop getting sucked in to good deals at Target.

Who else gets sucked into the black hole that is Target and emerges half an hour later with half the store in your cart? I mean, you’ve gotta admit they have some pretty good clearance offers and even their regular priced stuff is a steal, but it’s an issue when I can’t leave the store without at least one impulse buy. This time, I was planning on just buying contact solution, but I left with a pair of aqua oxfords (to be fair, I’d been wanting them for awhile) and a sample mini-bag of cinnamon nut coffee. But shit, it was 99 cents It was literally only 99 cents and I thought it was cool that they offered samples of their flavored coffee so I didn’t waste $6 on a full size bag. At least I didn’t buy any of those clearance watches I was eyeing…or the mini dipping bowls…or the nail polish.

I want… to have enough extra money to buy all the cool food items I see at Whole Foods.

I could spend all day browsing the aisles of WF, and it’d be even better if I could stock my kitchen with all the foodie products I spot there. Things like fruit-flavored balsamic vinegars and fresh-made juices and endless salad bar lunches and raw cashew gelato and all the fancy chocolate bars. I try to stick with one or two ‘splurges’ per trip (less expensive things like kale chips and raw desserts) but if I ever have the money, I’ll definitely be trying some of those fancier things.

I need… it to stop snowing every week.

Come on Colorado. It’s April, get your act together and stop snowing on a regular basis. It makes me mad and messes up my week. I don’t appreciate it snowing, and then melting the next day, warming up for a day or two and then snowing again. I know that April is technically one of the snowier months, but I’d appreciate it if it’d start feeling like spring most of the time, instead of once a week. Thanks!

I want… an iPhone when my plan expires in December.

I currently have a Droid, and love it for the most part, but the only reason I got it instead of an iPhone is because my family has T-Mobile and up til now, they didn’t offer any of the iPhones. Well, rumor has it that that’s going to change soon, hopefully before our contract expires, because I really want in on the iPhone trend. Mostly for the cute cases, but also because I’ve heard such good things about the phone.

I need… to figure out my summer plans.

Right now, I know I’m going to be doing another internship at a different local TV station (this time, it’ll be in their weather department, which is where I want to get a job after college) and I’m super excited about that. But after signing up for classes for what’s hopefully my last semester of college in the fall, I realized that I’m still 2 credits short. I’d rather not take an extra semester to finish those up, so I’m probably going to end up doing an online class over the summer. I’ve just gotta figure out which one sounds the most interesting and hopefully easiest.

WIAW: On and Off

Sorry about the lack of posting lately! But it’s back-to-school time and this year means moving into my own apartment and getting all settled into a new routine. But now I’m back and ready for another WIAW!

This week, I’ve just got a random assortment of what I’ve been eating and doing, on and off campus. Even though I’m finally living off campus this year, I’m spending more time on campus with all my classes, working at the campus TV station 2 nights a week and a possible new job.

Almond peanut cashew butter mixed with maple syrup and chocolate chips, protein cereal bowl (Nature’s Path sunrise vanilla and PB Puffins mixed with Plant Fusion vanilla pro powder, u/s almond milk and raisins).

Protein powder is a must on my busy days for getting protein in. Now I love mixing it in the bottom of my cereal with some almond milk and enjoying the extra flavor and texture boost.

Pretty flower on campus!

My sister and I headed to campus a few days early to hunt down my class locations (some were in buildings I’d never been to before!) and we saw this awesome flower on our walk. I obviously love how pink it is!

Quinoa pasta and vegan ravioli mixed with basil merlot pasta sauce, mini bell peppers, olives and nooooooooch!

I can’t get enough of the nooch lately, seriously. It might be a problem, but it’s a good problem 😉

A pool? A short walk away? Yes please!

Yes, there is a pool at my apartment. Have I gone in yet? No, but I did spend some time tanning by it with my sis over the weekend. Let’s just say it’s a prime tanning and hang out spot.

Hummus and fresh veggie salad on a pita.

My mom and I tried a new-to-us place just down the street from my apartment. It was super fast, super fresh and really yum. I didn’t eat the pita part of this pita, but the hummus and veggies were outta this world!

3 minute carrot cake protein oats.

This was so good, for a super quickie snack! I mixed thick rolled oats with Truvia, almond milk, chopped carrots, raisins, cinnamon, vanilla protein powder and ground flax and topped it with Nature’s Path sunrise vanilla cereal (so good, and gluten free!) and almond peanut cashew butter.

Can I just say I love having a car? Not only does it make things more convenient, I can also take awesome selfies in it. Alejandro, you’re the best!

My reward after my first day of classes: grande passion iced tea (unsweetened).

I was in desperate need of some Starbies love after my first day of classes. I hit the nearest one up right after my 4 pm class for one of my fave summer drinks and enjoyed it in the sunshine.

Easy breakfast: chocolate mint protein muffin topped with homemade almond butter cup, grapes.

I’ve definitely been getting my kitchen experimenting on, now that I actually have a kitchen! So far, I’ve made no bake peppermint patty bars, mint chocolate almond butter cups and mini buckwheat corn muffins. The bars and cups are the best though–I’ve been on a mint chocolate kick lately.

First dinner in my new place: vegan nachos! Made with Late July multigrain chips, pinto beans, spicy guac, peach mango salsa, kale sauteed in coconut oil and nooch.

I finally got over my fear of the white stuff and bought some coconut oil. I’ve heard so many good things about the health benefits of it and was sick of avoiding recipes because they included it. I accidentally got the refined kind, but next time I’ll know to get the extra virgin kind for coconutty flavor!

WIAW: Back at It+Obsessions

Well guys, I’m finally back at school and ready to start off second semester! I really enjoyed having a full month off to be at home with my family, and not gonna lie, it was hard coming back. Besides missing my family, I also miss the comforts of home, having a car and a kitchen to cook in. Spring break is only a month and a half away though, so I’m looking forward to that!

Peas and Crayons

This WIAW, I thought I’d show you some of the food I’ve been obsessed with lately while I was home, as well as a few other recent ‘obsessions’.

Breakfast: raspberry mocha protein waffle, frozen grapes, spicy veggie sausage

I really wanted waffles the other day, since I haven’t had one in a couple of months, but I wasn’t feeling a boxed mix. Instead, I whipped up my own raspberry mocha protein waffles, and they did not disappoint, especially with 6 grams of protein per waffle! I had one as my last breakfast at home 😦 along with a spicy veggie sausage and frozen grapes (another obsession).

Raspberry Mocha Protein Waffles (vegan, high protein)

1/2 cup oat flour (or ground rolled oats)

1 scoop Soytein cappuccino protein powder

handful frozen raspberries

1 tbsp vegan chocolate chips

sweetener, to taste (I used Truvia)

water, to thin

Process oats in a food processor or blender til mostly ground. Mix oats, protein powder and sweetener in a bowl until combined. Add water until desired consistency is reached; stir in chocolate chips and raspberries. Heat a waffle iron (or make into pancakes) and cook until browned (makes about 4 small waffles). 

I'mma office supply nerd!

I just stocked up on new pens for the upcoming semester, and of course, I scored the most colorful kind! I’m obsessed with organizing my notes by color, so these will be well-used.

Lunch: summer rolls, edamame in the shell, fresh pineapple, "poor girl's" spicy mustard (yellow mustard mixed with Sriracha)

My parents and I went to Pei Wei on Friday for lunch. I got my usual, the Vietnamese summer rolls, but when I asked them to leave out the chicken, they said they couldn’t do that! Most places are usually pretty accommodating to vegetarians, so this was a shock, especially since Pei Wei has plenty of veg options. I still got the rolls and just picked out all the chicken, which wasn’t easy, but it was totally worth it for the delicious summer rolls (with a side of in the shell edamame). Next time, I’d get an actual vegetarian option, despite my fear of ordering noodle dishes in restaurants.

Snack: in the shell edamame, small Pink Lady apple, handful organic cinnamon crunch cereal, PF paste

Snack plates are my favorite, whether for snacks or even lunch (I’d love to do one for dinner, too). I’m so indecisive so I like my meals to have many components so I don’t get bored. This was a pretty random one, but it fulfilled my craving for something sweet (cereal), something green (edamame), something crunchy and fresh (apple) and something delicious and protein-packed (peanut flour).

Outfit of the day: cream cropped sweater (Hollister), navy ruffled tank (Hollister), multi floral skirt (Hollister), grey polka dot tights (Target), grey corduroy booties (ALDO)

Sorry that I look super-pissed in the picture above–I always make the stupidest faces when I self-time. And, yes, I did just take this picture on Saturday and yes, I still have my mini Christmas tree up. What can I say, I like to make the holidays last as long as possible 😉 I’m in love with the booties that I got just before Christmas, but they’ve still yet to make a debut at school. I blame the snow and ice that randomly dumped on campus on Monday afternoon!

Dinner: Gardein beefless tips stir fry (with asparagus, mixed veggies and edamame), frozen mango chunks, freeze-dried strawberries

While I was still at home, I discovered a TON of frozen Gardein products in the freezer. I went through a phase over the summer where I was obsessed with them, but then I got kinda burned out. I rekindled my love for their meatless goodness over Christmas break and it was wonderful. The beefless tips weren’t as good as I remembered, though…

Dessert: carrot cake oats topped with almond peanut cashew butter and raisins

I don’t know why, but I’ve been obsessed with the carrot cake flavor combo lately. I’ve been loving the raw carrot cake bites I made and I’ve enjoyed quite a few bowls of carrot cake oats recently. I just love the mix of carrots, raisins and nut butter! Another awesome, new-to-me combo is coffee oats, topped with peanut flour paste and crushed Annie’s bunny pretzels–sweet and salty is the best!

Heeeeeeey there! Glad to see there was a lot of Whole Foods lovin’ going on around here. I will hopefully be getting my cook/bake on in less than 2 weeks and making some or all of those things.

So lately in my life there’s been a lot of new stuff, which is always fun and exciting. So obviously, I had to make a little play on words (get it–who knew…who new…new things?) because that’s how I roll. So lets run down the list of new-ish things, shall we?

Who new…voluminous oats could change my life?

 Ever since I discovered the joy of oats, I’ve been hooked. I’ve been whipping up overnight oats almost every day since this May, and I haven’t gotten sick of them yet. But…no more. I found CCK’s Voluminous Oatmeal Trick and I’ve abandoned my beloved overnighters in favor of thick, fluffy, volume-filled oats. Sure, I still eat them cold (for some reason, they are just SO good that way) but now they actually take a little prep work, which I don’t mind at all. Sure, they tend to spill in the micro which is annoying, but who wouldn’t want double the oats for the same amount of calories? I was shocked at the amount of oats my usual 1/4 cup made when I used this method. And the texture is pure awesomeness. Do I miss my overnighters? Well, yeah, but not enough to quit my addiction to voluminous oats!

Who new…Iron Chef America would do a challenge with oatmeal?

Okay, okay, so this episode isn’t exactly new (I found out it was from the 2010 season) but I just saw it for the first time on the Food Network a week or so ago. Usually, they do things like exotic veggies or something, but oatmeal? So cool to see for a self-proclaimed oats lover like me.

Who new…I’d have issues signing up for next semester’s classes?

My schedule so far. I'm still waiting on one class...

 Honestly, making your class schedule in college is way less stressful than in high school, at least at my university. But this year, I was freaking out because I need this one class to get an internship at a TV station this summer, and it’s a class mostly for juniors and seniors. I’m a sophomore. So I had to sign up for classes later, because of my class standing. A few days before my sign up date, there were only 4 slots out of 18 left. The day before, there were 2. And when I finally signed up for it, there was exactly one left. Yep, I got the last spot! I was so ecstatic to get it that I texted my dad about it. But signing up for other ones was more of a hassle. I need an additional comp class, and it’s a 300 level, so I thought I’d be able to get in no problem. Well…it wouldn’t let me, since I’m not a junior or senior. Urgh, what classes do they expect me to take then? I’ve already got most of my graduation requirements done or currently being finished. A lot of upper level journalism classes were already filled or didn’t work with the class I already signed up for. In the end, I’m taking two American history classes (for my option area, which is like a minor but less official), broadcast news and a weather and climate class (I’m considering being a TV meteorologist!). I also finally got into a TV studio production class that I needed an override for and I’m waiting on a business reporting workshop class to open up. If I get that, my spring semester looks pretty decent, no real math or science classes and a lot of journalism and history, which I love.

Who new…you can make a healthified sopapilla with just two ingredients?

 I can’t remember if I’ve ever actually had a sopapilla (maybe in a Spanish class fiesta a long time ago), but it wasn’t on my agenda to recreate one…but I did. A few nights ago, I was having a brown rice tortilla and on the side I had a little bit of honey. I was planning on making a wrap with the tortilla, honey, almond butter and butternut squash, but then I remembered how easily the tortillas fall apart. So I just ended up putting the honey in the tortilla, folding it over and well, it reminded me of a sopapilla for some reason! I mean, it actually does seem pretty similar to one, only way more healthy. Brown rice tortillas are pretty chewy like fried dough and putting honey on it sweetens it up just like with a real sopapilla. But you can feel good about eating this 2 ingredient “sopapilla” because it’s gluten-free, not fried and sweetened with just a little raw honey (well, if you use the ingredients I did). It makes a perfect little sweet snack.

Who new…cauliflower could be purple?

 I gotta admit, I was pretty weirded out myself when I first saw it at Whole Foods. But they were giving out samples of raw colored cauli and I just had to try it. It’s actually the same as regular cauliflower, just prettier. I always eat my cauli raw because it’s delish that way, especially dipped in spicy salsa!

Who new…I’d actually order something from iHerb?

I’ve been dying to try ordering something from iHerb, but never got up the nerve until I saw a $5 off code I could use on my first order. Well, I knew right away what my first purchase would be–PB2! I have always wanted to try it, but didn’t really want to pay a lot for shipping and stuff on Amazon. With the $5 off, the chocolate PB2 was basically free, except for a measly $2 for shipping. Not half bad! And the verdict: so yummy! I think it’s fairly similar to peanut flour (probably my next purchase) and the chocolate doesn’t overpower the peanutty taste. And I love that it was so cheap. Overall, I really had a good experience with iHerb…and they included a little freebie in my package–some weird mushroom-infused coffee. Ermmmm, what? I guess I’ll try it, but I’m expecting to gag 😛

A Pain in the…Foot?

Hey Puffins! 😀  How has your week been? Mine’s been going by pretty fast, which is GREAT, ’cause I’m going home for the weekend today! I can’t wait to be able to actually eat food that’s been cooked (a microwave doesn’t count baha). I honestly love my living situation this year, but sometimes I just love spending a weekend at home with the fam. I’m also super-pumped that today is sunny and warm-ish, because the past 2 days have been rainy almost nonstop, and that is no bueno for me. I live in a very dry state, so getting that much rain is crazy and just downright bizarre. I’m just happy I can wear shorts again because it’s still summer after all!

Another amazing (colorful) breakfast: triple chocolate protein overnight oats (topped with sprinkles!), date, veggie sausage, gummy vitamins. I'm not kidding when I say this was a very candy-filled breakfast. Sprinkles are def candy, gummy vitamins are candy-ish and dates are nature's candy!

So a little background on the post title. Starting back in March, I had some foot pain in the top of my left foot. I never figured out what it was from, but I think it came from doing cardio stuff in shoes that weren’t the best fitting. The pain was on and off until May or June, and then one day–poof!–it disappeared. I was so glad it did because it was getting annoying, especially during the school year when I’m walking every day.

Outfit of the day: off-the-shoulder sweatshirt (Hollister), brown twill shorts (A&F), owl pendant (AE), nerdy glasses. The spice shades are back for fall and I couldn't be happier!

Then just yesterday, I noticed that I was starting to get intense pain on the outer side of my right foot, on the sole. At first I thought it was just temporary, like I just twisted it or something and it would feel okay soon. But…it hasn’t! In fact, I can barely stand on it without any pain. I really just don’t know where this pain came from. And not walking on it is NOT an option. I’ve already had to walk 30 minutes to classes today, and another 30 minute round-trip is coming this afternoon. I figured out that if I try to just walk on the ball of my foot, I can walk fairly normally (I’m not sure if it looks totally weird, though 😛 ). I’m so glad I’m going home this weekend so maybe my mom can figure out what’s going on, and I can at least get an Ace bandage around it.

I know y'all appreciate my cheesiness. I added in that lime green arrow to show where on my foot the pain is. Please ignore the millions of bandaids--one is for a blister, the other is for this weird pain on the ball of my foot. Yeah, I've got lots of issues with this foot at the mo.

I researched my symptoms on good old WebMD, and at first  I was kind of thinking that it might be plantar fasciitis (that word is spelled so weirdly). But that is apparently on the inner edge of the foot (like where the arch is), not on the outer edge where my pain is. Maybe the pain started because I think I tend to underpronate (my foot turns out sometimes), which apparently is more common for people with higher arches, which I have. But I would really just love to know what’s up, and how to stop the pain. I really really really don’t want to end up on crutches or have a boot or anything. Walking is an essential part of my week that I can’t just give it up. Though I’d love to be able to skip my classes once in awhile haha.

I just love my mocs to death, and have been missing them all summer. Welcome back, moccasins. I love you, even though you gave me a blister yesterday. Sorry about the awkwardness of this pose. I thought it was the best way to show you my mocs.

So does anyone out there have any advice for me? I’m worried that it might be like a hairline fracture in my foot, which would be really bad. Hopefully it’s not anything serious and it can heal on its own. So…send good thoughts and any advice my way 😀
