My Foodie Staples

Aren’t there a few many things you can’t live without? I’m sure we all have them, I know I do! They tend to change every once in a while, but I definitely have some items I’d prefer to not go without. With that being said, here’s my current list of foodie staples!

Cereal: Right now, I’m loving on the PB Puffins (hope I never get sick of those!), Kashi Honey Sunshine, 365 Organic Honey Crunch & Oats and Cascadian Farm Cinnamon Crunch. I also really like Bear Naked Fit granola (especially triple berry crunch–what’s with all these cereals and having crunch in their name?) and Udi’s cranberry granola. I generally don’t have cereal at breakfast (I used to everyday, though) but it makes an amazing snack…or small dinner?

PB & Chocolate Puffins, Bear Naked Fit granola

Fruit: Gosh, no way could I ever live without this! I love almost all fruits I’ve tried, except for plums and pears. In my dorm, it’s hard to have some of my favorite fruits, like pineapple and berries, so I’m sticking with some tried-and-true varieties, like bananas, black grapes and apples. They’re all pretty versatile and easy to take with me to classes.

Red grapes, giant Honeycrisp apple, bunch 'o bananas

Veggies: I also love veggies, but I don’t really have a way to cook it, so raw it is. Luckily, I love raw cauliflower, and it’s pretty easy to eat. I also discovered butternut squash, which is amazing and simple to heat up in the micro. Plus it comes pre-cut (thanks, Whole Foods!) so it’s perfect for someone without a sharp knife handy. Baby carrots are also a good option.

Cubed b-nut squash, baby carrots, cauliflower

Dried fruit: Mmmmmm, yes! Dried fruit is the bomb.com and even less of a hassle to bring to classes. I love Medjool dates, raisins (golden and regular), dried pineapple, freeze-dried fruit…the list goes on and on. I just look for dried fruit without any added sugar or chemicals and I’m good to go!

Organic Medjool dates, raisins, organic dried pineapple

Mini frozen burritos: I have 2 small fridges with tiny freezer compartments, so I need all the space I can get. EVOL makes mini burritos, which are perfect as a snack or part of dinner/lunch. I love the veggie fajita kind, since it’s vegan and yummy. Score!

Sweet potatoes: I’ve been missing these guys like crazy lately, but luckily, they’re back in my life again. They heat up quick in the micro and taste so so good topped with almost anything–nut butter, trail mix, honey, guacamole, chili powder…

Cinnamon and almond butter topped sweet potato

Spices: Speaking of chili powder, girl’s gotta have her spices. All I got right now is curry powder, ground cinnamon and hot Mexican chili pepper, but it’s good enough for me! Those are probably my 3 fave, and they can ‘spice’ up anything from coffee (the cinnamon, of course) to veggies.

Ground cinnamon and hot Mexican-style chili powder

Truvia: I like things sweet, but I don’t want to add real sugar to some things, ya know? That’s where Truvia packets come in. They’re easy to carry around in case I get an unsweetened iced tea on-the-go and I always add a packet to my oats to sweeten them up. I love that they’re a natural sub for fake sugar.

Big box o' Truvia packets

Almond/nut butter: Where would we be without nut butter? As I’ve said several times before, PB is not my fave (sorry!). But I absolutely adore almond, and lately, almond peanut cashew. Nut butters are soooooo good on sweet taters, as an oats topper, on wraps/sandwiches, with fruit (especially dates) or even off your finger 😉

Archer Farms almond peanut cashew butter

Morningstar spicy veggie sausages: I have one of these almost every morning, and have for probably the last year. Somehow, I’m not getting bored of them. I’m definitely not a savory person, especially at breakfast, but they’re a great source of vegetarian protein, they’re easy to make (except when your micro burns them…) and they taste so darn good. I like anything spicy, like I’ve said millions of times before.

Organic jelly: It’s kinda upsetting how many jellies have high fructose corn syrup in them. I mean, come on, why can’t they just have simple, natural ingredients? When I found Smucker’s Organic line of jellies, I fell in love. Sure, there’s still sugar in them, but it’s real sugar, and it’s natural and organic. There aren’t any weird ingredients in it either. Is it weird that I like it with nut butter and crackers????? It’s also delish as an oats topper.

Starbucks VIA instant coffee: I can’t live without my ‘bucks fix every once in awhile. But when you’re a college student with no car, it’s kinda hard to get. Lucky for me, they came out with instant coffee packs that are almost as good as their brewed stuff. Not only do I love it in homemade skinny lattes, but it’s amazing mixed in with overnight oats. Talk about an energizing breakfast 😛

Date with almond butter, homemade Starbucks VIA latte, Greek yogurt with raw organic honey

Protein bars: I’m no athlete, but I still eat these like it’s my job. Kidding, but I do love ’em. I don’t get the huge ones, like regular Clifs (I usually cut them in half to have as a snack), I prefer the Mojo kind which are like trail mix bars, and Pure and Halo bars. They make a perfect on-the-go lunch alongside some fruit and they come in so many varieties. My faves at the moment are Mojo white chocolate macadamia and mountain mix, Pure chocolate brownie and Halo s’mores and nutty marshmallow. I try to get bars that have at least 6 grams of protein (the Halo ones don’t, but they’re good for a snack) and only natural sugar.

Clif Mojo Mountain Mix & White Chocolate Macadamia, Clif Z-Bar Chocolate Chip and Full Moon Brownie, Pure Cherry Cashew and Chocolate Brownie, Halo Nutty Marshmallow and Clif C Blueberry

Almond milk: I switched to soy last May, and I liked it for a while, but now I prefer almond. I still have soy milk every so often (the Silk seasonal kinds are SO good) but now I’m trying to buy almond more often. I really love the Pacific Naturals unsweetened vanilla, but the plain Whole Foods brand is also good. It lasts longer in the fridge than soy and has a nice, light nutty taste.

Rolled oats: Of course I have these! I probably have oats in some form every single day…well actually, I pretty much just eat them in overnight oats 😀 Unlike a lot of people, I prefer overnighters to cooked oats. But anyways, oats are incredibly versatile, easy to prepare and so healthy. I don’t even want to start to explain my overnight oats, so just check out my page devoted to them!

Carrot cake overnight oats

Greek yogurt: Another “duh” if you read my bloggy regularly! Oikos is my one true Greek yo’ love, but sometimes I go off and have an affair with Fage mango guanabana or blueberry acai. Shhhhhh, don’t tell 😉

Oikos organic plain, Fage Total 0% blueberry acai, Oikos organic caramel

Of course, there are many many more products I’ve (sadly) had to leave out ’cause I didn’t wanna bore y’all with it, but these are what I have most often and love the most!

What are your foodie staples?

It’s Okay…

Hey guys! I want to take a little bit of a different approach with this post, so I hope you enjoy (and relate)!

It’s okay…that I prefer almond butter to peanut butter–hands down!

Sorry, PB, you aren’t it for this girl!

It’s okay…that I like to mostly eat healthy foods, even supposedly disordered “diet food” like veggies and nonfat yogurt. Just because I’m in recovery doesn’t mean I can’t enjoy these things.

I love salads (even without dressing)…no shame!

It’s okay…to eat a mostly-vegan diet but still have Greek yogurt (a lot!) and froyo/gelato every so often.

You can’t say that doesn’t look delicious…

It’s okay…that I can’t live without Whole Foods. I’d probably be broke if I was spending my own money 😉

I love the salad bars especially! This delicious mess was Asian kale salad, curried tofu, roasted sweet potato and curried quinoa pilaf.

It’s okay…that I’ve never made oats on the stove. Overnight oats are where it’s at for me!

One of my favorite overnighters combos to date: PB&J remix oats, topped with black grapes and PB Puffins.

It’s okay…that I LOVE carbs!

Nothing beats cereal and dried fruit!

It’s okay…that this is my lunch when I’m on-the-go–and I love it!

Quick, easy & good: Pink Lady and Clif Mojo bar!

It’s okay…to sometimes have breakfast for dinner–with some squash on the side.

I love breakfast so much…so why not?

It’s okay…that I’ve never had a Lara bar. Because I love Pure bars instead!

They’re almost as simple as Lara bars, but they’ve got way more protein!

It’s okay…that I can take way better pictures at home than I can at school.

This is one of my favorite pics ever, I actually got a pretty good closeup of this salad. Compare this to my lame photos now with crap lighting.

Answer your own “It’s okay…” question!

WIAW: A Day in the Life

Have you ever wanted to see what someone else does in a day? I mean, WIAW is one thing (a good thing) but have you ever been curious about what a blogger does besides eating? Are you kidding me–all we do is eat 😉 Just kidding!

You asked for it (not really!) and here it is…a typical day in my life (inspired by Tara’s post last week)! Plus the usual WIAW eats in the appropriate spots throughout the day!

DISCLAIMER: My life is really not all that exciting so be warned 😉 Oh, and this is what a typical Tuesday/Thursday looks like (since it’s my busier day)…Monday/Wednesday/Friday and weekends are totally different.

7:00 a.m. Wake up. Get mad at my iPod alarm (just kidding!). Do my biz-nass (aka bathroom) and probably crawl back in bed for like 5 minutes.

7:20 ish to 8:15. Make and devour breakfast. Have the Today Show on tv but don’t really watch it (yeah, idk why I do this, but it feels better than just getting ready in silence). Brush teeth, makeup, hair, get dressed. I usually plan my outfits a week in advance ’cause I’m cool like that!

A day without overnight oats at least once...does not happen for me! Dark chocolate overnighters topped with half a Kashi cherry vanilla cereal bar. The toppings are always the best part!

8:15 to 8:35. Catch up on blog reading. Pack up all my school stuff. Check, recheck and recheck again that I have my keys (don’t wanna risk getting locked out!). Walk down 3 flights of stairs and head out to my first class.

9 to 9:50. Stats class. Ugh, can I just say how much I wish I was done with math already? I thought the basic math class I took last year was it, but nooooooo! I’m almost 99% positive this will be my last math class, though.

Yes, I'm totally rolling my eyes at stats class. Ugh, get me outta there 😦

10 to 11. Turn in stats recitation work. I never go to recitation (’cause it’s so lame and not required) so I always have to turn in the homework on Tuesday. Then I walk around campus until my next class, or end up stuck in the library printing something off for another class. I’m pretty much printing something every other day. I need to get a life printer.

11 to 12:15. American West Since 1900 class. So far, I’m liking this class. I love U.S. history, and Western history is even more exciting for me. Unfortch, we have a hugh jass paper due the week before Thanksgiving, but otherwise it’s okay.

12:15 to 12:50. Read blogs and eat lunch. I always go over to the building next door because it’s close and it has a bunch of awesome comfy seating. The internet kinda sucks in there, but oh well. I always have to eat on-the-go on Tuesday and Thursday since it doesn’t pay to walk all the way back to my room for like 10 minutes and then have to walk back. I usually pack a bar of some sort (my faves are Clif Mojo Mountain Mix and Pure Chocolate Brownie bars) since they’re not messy and some fruit and carrots. I’m so glad it’s apple season because apples are totally portable.

I love random lunch combos. Lately I've been feeling the AB&J vibe, so I paired Archer Farms almond butter with organic grape jelly, Kashi crackers and frozen nanner slices. All eaten on my colorful bed.

1 to 2:50. Newswriting class. If you think this class sounds really long, you’re right. It’s because it includes a “lab” component, which is not really a lab in our case, but more like newswriting assignments and practice. I actually love the class, because it’s for my major. Plus we do fun things like go on “field trips” and my professor is so chill. Love it!

2:50 to 3:05. Head back to my room. My walks have sucked a little bit lately, because of my foot pain. It’s gotten a little better, so I hope it’s healing and not a serious injury.

3:10 to 3:45. Snack time. I also squeeze a “cardio blast” circuit workout in there, and some minutes of yoga.

I just realized that they make the superfruits Oikos flavor in a 4 pack so I had to get it. It's my current fave flavor of Greek yogurt.

3:45 to 6. Homework. Well, in an ideal world this is what I’d be doing. In the real world, however, I usually end up looking up random things on the internet, like recipes or clothes, and then realize how much time has passed. Then I actually start doing homework.

6:30 ish to 7. Dinner time. It really depends on when I’m feeling hungry, but 6:30 is usually it. Now I can actually sit down and enjoy a meal without rushing. Of course, I can’t really cook (besides in the micro which doesn’t count) but at least it’s something. Oh, and btw, I almost always make my own dinner vs. going to the dining hall. I tried it a lot last year and I didn’t love it. When I do go, I usually end up grabbing something from the express area which is like a healthier convenience store or just get a salad from the salad bar.

If you think this dinner is bizarre and random, you are obviously not me! Raw broccoli and cauliflower (only way I will eat them is raw..try em dipped in salsa!), a few green mojo multigrain chips, AB&J overnight oats, with a side of People StyleWatch, aka my favorite fashion/celeb mag.

7:30 to 8. Shower. I’m one of those weirdos who showers at night. I’d rather not have to wake up any earlier than I already do to wait for my hair to dry, blah blah blah.

8 to 9. Blog reading and maybe watch TV. I just tend to put the TV on and not actually watch it–I like it for the background noise–but I will sometimes watch if it’s a show I love, like The Office or What Not to Wear.

9 to 9:15. Night time snack. I love having cereal, or maybe a Vitatop. Just something sweet and small to end my night.

Awh, my cereal ❤ s me! Well, I ❤ you too! Bear Naked Fit (triple berry) with frozen bananas. Can you tell I'm lovin' on the frozen bananas? Best. Fruit. Ever!

9:15 to 9:30. Get ready for bed. Brush teeth, PJs, all that.

9:30 to 11. Text my mommy. We text each other every night for like an hour and a half. It’s the highlight of my day.

Outfit of the day: lime green/white striped boat neck tee (American Eagle), slouchy skinny jeans (American Eagle). I love baggy jeans, y'all!

11 p.m. Go to bed (hopefully). I like to get 9 hours of sleep, so an early-ish bedtime is a must. Plus I get tired around this time anyway. Good night!

What is your favorite brand of Greek yogurt (I am a tried-and-true, hardcore Oikos fan! I also like Fage mango guanabana)?

What kind of jeans do you rock (I’m partial to slouchy and boy fit jeans but I’d love to try some skinnies–any tips on how to rock them? I’m still kinda scared to wear them.)?

What’s one part of your day that’s always the same?

WIAW: The Bucket List

Let’s start with a shout-out to all my new (and old!) readers and commenters! You ladies rock my world 🙂

A lot of my WIAW posts include a survey, or random facts about me. Here’s another one: I can’t do a WIAW straight-up. Okay, I can, I just don’t want to. It’s more fun this way, right? Right 😀

Peas and Crayons

This week, I decided to share my “bucket list in progress” with you all. A lot of these I’ve been thinking about for awhile, but they slipped my mind and I just thought of them again, and decided to create a bucket list. Some of these are more realistic than others (and are more likely to happen in the nearish future) but I think it’s just a fun way to share my dream goals!

Attend a New York Fashion Week. If you know how obsessed I am with fashion, ’nuff said. Plus I’ve never been to NY, which is just pathetic.

You can never have too many versions of PB&J Remix oats. This one included organic grape jelly (my new love!), fresh red grapes and PB Puffins. So. Good.

Adopt a child from a third-world country. I would love to someday adopt a little girl from Asia or Eastern Europe. I know the process must be ridiculous, but I’d really love to do it…when I’m married, of course!

Own a greyhound. Gosh, these are my favorite doggies ever and I’ve wanted one for a few years. As soon as I move into a pet-friendly apartment, I’m getting one! Plus it might motivate me to start running more often 😛

Lunch on-the-go = story of my life this year. Today's was my first Cripps Pink apple of the season (second fave kind after Pink Lady) and a Clif Mojo Mountain Mix bar. I'm dying to find the White Chocolate Macadamia Mojo bar though...

Visit every U.S. state. This one, I’m not sure how specific I’ll be with it. I’ve driven through a lot of states, but I’m not sure if it counts as visiting it. I think it does, considering how many hours I spent in the car, and it’s not like I just flew over in a plane. So far I’ve been to Colorado (duh, I live here), California (3 times I think), Arizona (first two years of my life, and then again for spring break last year), New Mexico, Nebraska, Iowa, Texas, Wisconsin (several times since my grandparents live there), Florida and Illinois. So that’s 10 down, 40 to go…

Eat at a vegan restaurant. This one is def realistic and I hope it happens very soon! I’m jealous of all the bloggers who regularly dine at these kinds of places because the food looks so darn good.

I'm rediscovering my love for cereal, and it's loving me back, clearly. Kashi Honey Sunshine and PB Puffins (can I go a day without these? I think not.) topped with freeze-dried cinnamon apples. Bring on the fall.

Have a beach wedding. I could go shoe-less 😉 Oh, and preferably a beach in Cali or Hawaii.

Meet a U.S. president. How cool would this be, especially if they were an awesome prez?

A cozy, almost-fall outfit of the day: burgundy cardi (Hollister), grey lace tee (Hollister), owl pendant (American Eagle), burgundy floral skirt (Hollister), sparkly blue tights (American Eagle). I'm a bit obsessed with the tights and sweater combo, can ya tell? 😉

Go to a Lady Gaga concert and meet her. I think I’d die right on the spot if this happened 😉

Appear in a movie. Of course, I’d love to star in a movie, but getting any kind of part where my name would be in the credits would be le-git.

Dinner and the Denver Post food section? Yes please! Mini EVOL veggie fajita burrito (vegan!), leftover salad greens with guacamole, red grapes. I love salads, but this one was unfortunately lame since it's been in the fridge since Sunday. I hate when salad greens get slimy.

Go snorkeling. I’m scared to go scuba diving, but snorkeling just seems so relaxing and fun.

Be in a flash mob. Come on, I’m not the only one who wants to, right?

Me + dried fruit = BFFs. Raisins and freeze-dried cinnamon apples. Love in a (tiny) bowl.

What’s one thing on your bucket list (if you have one)? What’s your favorite apple variety (mine is Pink Lady!)?

Weekend Food & Fun

Ya wanna know what my least favorite part of the weekend is? When it’s coming to an end. I hate that feeling you get on Sunday night when you realize that the weekend’s pretty much over and tomorrow it’s back to the daily grind. Can you tell that I’m sick of school already? 😉 I know how sad that sounds, I mean come on, I’m only like 5 weeks in! Honestly, I actually love school this year (nerd alert!) but sometimes you just want a nice little break. Especially when you’ve got a crazy busy next few weeks ahead–in my case, 2 tests this Friday (eek!), 2 tests next week and a paper due in 3 weeks. Gosh, these professors are insane!

This is my "You've gotta be kidding me, 2 tests in one day?" face.

But the point of this post is not to complain about school but to talk about my weekend! It started out when my mom picked me up around 6:30 on Friday. We grabbed dinner at Garbanzo, which is this really awesome fast casual Mediterranean place. It was a little too awkward taking a picture of my amazing dinner, so I’ll just explain it: baby greens, tabbouleh salad, fresh red cabbage, hummus, falafel topped with spicy cilanto sauce and grilled eggplant slices on top. It was drool-worthy.

I finally changed my nail polish! My sis got the shatter polish for homecoming, so I def had to try it out once I got home. Verdict: love it! And every time, it's a different design!

Saturday started out bright and early (if you consider 8:15 early, which sadly I don’t anymore since I’m used to being up by 7) with some Kashi Honey Sunshine-topped overnight oats. Oh how I’ve missed Honey Sunshine! I haven’t had it for months and forgot how much I loved it. Topped with frozen nanner slices and mango chunks, it was heaven in a bowl.

Please take me back, Honey Sunshine! I can't live without ya 😉

Around 11:30, my mom turned on the TV so we could cheer on my college’s football team in their big annual rivalry game. The Rammies did so well in the first quarter, but then they lost a lot of steam after the half. It was getting way too depressing so I stopped watching 😦 Luckily, my dad and I ended up going to see “Crazy Stupid Love” (I was shocked it was still in theatres) so it ended up being a great afternoon. I love comedies, and it was  really good one, so definitely see it if you have the chance. Then my dad took me to get froyo nearby–how could I pass that up? Despite the fact that I was freezing cold all day (seriously, the weather changed so drastically!), I still enjoyed my frozen yogurt. I got a new-t0-me flavor, apple pie. It tasted as good as it sounds 😀 Perfect for an almost fall day.

I have so many froyo pics on this blog, it's a bit ridic. But each one is unique and a piece of art (baha). Apple pie froyo topped with raspberries and blueberries.

After a Target run, we got home and I was able to make my own dinner–for realsies this time, I actually used the oven, which totally counts as cooking. I miss being able to do real cooking, but I’ve got a whole lineup of recipes that I want to make come Thanksgiving break. Everyone better stay outta my way–the kitchen will be mine 😆

I also appreciate the slightly better lighting I get at home! My dinner was a Gardein veggie burger topped with General Tso sauce, baby carrots, chipotle seasoned sweet potato fries and sweet potato tots. I think I OD'd on the orange.

The rest of the night was pretty low-key: SNL-watching, shower-taking, beating my dad at an UNO tournament. I am beast at UNO–no really!–I mostly always end up winning against my dad.

I think a big trend for me this fall will be layering--I love how cozy I felt in this outfit. Grey knit duster cardigan (A&F), burgundy plaid tunic (A&F Kids), navy culotte shorts (A&F), navy sparkle tights (AE).

Today was even more chill–at least until I had to head back up to school. When we finally got up here, my mom suggested Larkburger for dinner. It’s basically this pretty simple place with all-natural gourmet burgers and fries and such. Usually I end up getting the portobello burger but I wasn’t too hungry tonight and settled for the field greens salad topped with a grilled tuna filet and some edamame on the side. The tuna was amazing and the edamame was too (of course!) but the salad wasn’t great, mostly because they served it in this plastic container that was extremely hard to eat out of, plus the tamari ginger dressing  that sounded so promising, turned out to be totally nast. I hate when that happens, but I pretty much usually expect restaurant dressings to be sub-par. Luckily, it was on the side so I could just toss it without having the whole salad be ruined. I ended up saving the salad to eat sometime this week–in a more convenient way, like on a plate!

More Kashi Honey Sunshine? Yep, I'm a woman obsessed.

Now it’s back to the real world 😕 Oh well, not every day can be a blast and I know I’ll have some awesome days in the near future!

Oh, P.S. an update on my foot. Thanks so so so much for the well wishes! It’s still in pain, I wrapped an Ace bandage around it and hope it might help–hey, if it doesn’t, at least people will know why I’m limping around 😀 Plus I feel cool with it on, please don’t ask me why!

What fun things did you do this weekend? What is your dream froyo flavor?

Foodie Newbie

I love love love trying out new products! I’m the girl who sees the label New! on a product and instantly drops said product into the cart. I’m such a sucker for anything I’ve never tried before. I usually have high expectations for the item, and sometimes they are met, other times not so much. But I rarely regret trying something new. It’s just…exciting!

I’ve gotten a lot of new-to-me products lately, and I wanted to share my (unbiased) reviews of them here. I was not given these products to try by the companies themselves (I wish they would have, though!)–I bought them all myself my parents bought them for me.

Kaia Foods Sprouted Sunflower Seeds (Cocoa Molé)

I’m not a huge fan of sunflower seeds, but when I saw these on a random solo trip to Whole Foods, I decided to try them. The flavor combo really grabbed me, and the nutritional stats weren’t too shabby (7 grams of healthy fat, 80 calories per serving, some Vitamin E). I was a little thrown off by the soft texture, but these were pretty decent. Not quite cocoa-y or spicy enough (one of the ingredients is organic cayenne pepper) but not bad at all. I would probably try a different flavor (like sweet curry or teriyaki) in the future.

I'm really getting into raw foods like these!

Oikos 0% Peach Mango and Honey Fig Greek Yogurts

Oikos is my Greek yogurt brand of choice, and these new flavors did not disappoint! The peach mango was reaaaaaaally sweet, but definitely tasted like peach and mango. There were even real chunks of fruit in the bottom 😀  The honey fig is super-creamy and not watered down at all by the real organic honey and fig juice (the fig juice is actually the 3rd ingredient!) I love that this brand is always organic, and in general, I love Greek yogurt for its creaminess and amazing protein stats.

I'm always drawn to colorful packaging

PB Puffins+new Oikos flavor? Yes please!

Whole Foods Hot/Cold Bars

My fam went on an impromptu picnic this weekend, and we stopped at (where else?) Whole Foods to grab lunch. I’ve always wanted to try the hot and cold food bars they have there and I’ve gotta say, I can see why so many bloggers love to eat there. They have such a good selection of stuff, and it’s so. good. I got curried tofu salad, curried quinoa salad (lots of curry-lovin’ for this girl), Asian kale salad and roasted sweet tater chunks. Even though it all ended up mixing together in the box, it was all still amazing! Definitely gonna go back ASAP!

I definitely got my "rainbow of produce" in with this lunch!

Barbara’s Bakery Peanut Butter Puffins

After seeing this pop up on so many blogs, I decided to hop on the bandwagon. Best decision ever! I’m not the biggest PB fan, but I love the slightly soft, slightly crunchy texture of these babies, and their strong peanut taste. I love them as an overnighters topper (coffee maple oats topped with these are my new go-to combo) and in Greek yogurt. Mmmmmm…

There's so many ways to eat Puffins, but this is my favorite--as an overnight oats topper! Crunchy and creamy...

Whole Foods 365 Individual Vegan Pizza with Whole Wheat Crust

I miss their larger onion-sauce based vegan pizza, but this is also good. It’s topped with tons of roasted veggies, and the sauce is very flavorful. It’s tiny, but I don’t have a big appetite anyway 😛

Tons of veggies and NO cheese make for one happy Ashley 🙂

Late July Mild Green Mojo Multigrain Chips

On my recent vacay, I brought along a new-to-me product, Late July Sea Salt by the Seashore Multigrain chips, and I loved their simple salty flava. I liked them better than regular tortilla chips. Then I saw this flavor, and I just knew I had to get them. However–I didn’t realize until I brought them home that they had cheese as an ingredient. Yikes! I was a tad upset, but I decided to try them anyway and…well, they were so so good! They honestly don’t taste cheesy to me at all (more like these ranch-flavored soy crisps I’ve had before) and have a little bit of kick to them. I tried them as a crunchy topper on a black bean salad and lets just say that I’m gonna be having this salad for lunch for awhile 😉

It's easy being green if you're also super-delish!

What is the best new thing you’ve tried lately?

WIAW: I <3 Instagram!

Looks like it’s time for another WIAW!!!!!!! I hope you all enjoyed your weekend and week so far…today (Tuesday) is the first day of summer! WOOOOOOOOOOO 🙂 Summer is hands down my fave season and I’m so glad today was warm and summery…unlike yesterday. It was cloudy, windy and crappy pretty much all day. It would have been okay if it had rained more than a quarter of an inch (we REALLY need the rain here because there are already burn bans in place throughout the state since it’s so incredibly dry) but oh well. I got to put in some quality tanning relaxing in the sun time today so it’s all good 😉

Peas and Crayons

Alright, let’s do it to it! This WIAW I thought I’d shake things up with a little use of my new favorite app, Instagram. If you have an iPhone/iPod Touch with camera, please please please get this app. It’s a life-changer, at least for me. Okay, maybe not that extreme, but it’s really cool. You take a picture and then choose one of several filters and–voila!–you have a “vintage” looking photo. It really makes anything look awesome, so I thought why not make my food look pretty?

365 Honey Crunch & Oats cereal, bloobs

Outfit of the day: Hollister cream knit sweater, olive green cami, Hollister burgundy floral skirt

Vegan taquito salad with soy chorizo taquito, homemade black bean hummus, mango chunks and spinach

Mixed Crunchies (freeze-dried fruit), last slice of my raw brownie pie with banana almond fudge 'frosting'

Tanning while jamming to Lady Gaga...oh yeah!

1/2 container Fage 0% with Mango Guanabana (soooo good!) mixed with 1/4 cup Bear Naked Fit berry granola (unpictured date)

Soy milk, dark unsweeteened cocoa powder, banana, Amazing Grass smoothie

Vegan curry pilaf, carrots, fresh pineapple and frozen mango (unpictured handful Udi's cranberry granola because I didn't eat all the pilaf)

Mocha "overnight" oats (actually made after dinner!), 1 tsp almond butter, freeze-dried blueberries

What is the best thing you’ve eaten recently? Do you like Lady Gaga?

WIAW: Short & Sweet

After last week’s word barf very detailed WIAW, this one’s gonna be short & sweet. Hopefully the pictures speak for themselves but if not, I included captions 😉

Peas and Crayons

(Thanks Jenn for being such a lovely host week after week 🙂 )

P.S. This is actually everything I ate on Tuesday. My first two WIAW’s were what I actually ate on Wednesday, but I realized that most people do their Tuesday eats. So I’m gonna roll with that. Also, I am actually posting everything I ate, minus some watermelon chunks that went undocumented…

Breakfast:

Banana Almond Apricot Overnight Oats (1/4 c thick rolled oats, water, 1 tsp organic apricot jam, 1/2 banana, topped with 1 tsp crunchy AB)

1/2 homemade cake batter waffle (recipe soon!) and Morningstar hot & spicy veggie sausage

 Lunch:

Spinach salad with 1 tbsp mango vinaigrette, 2 Gardein chik'n nuggets and mango chunks
