Week through my iPhone: Part II

Well, it’s been almost a week since I last posted, whoops! I have some time off coming up so maybe another post will make it in there somewhere. I can’t make any promises though. I love being busy though — it makes time fly (which is sometimes good, sometimes bad…like when my weekend ends too soon).

It hasn’t technically hit 100 degrees here yet, but the heat index has been in the 100s on some days. I only hate it when I’m trying to push through a run or when it messes up my hair. Humidity+me = super sweaty hot mess. Is it any wonder I want to move to the desert?

Running has been going well. Still running between 2 and 3 miles, but trying to run almost every single day, even if it’s just a mile on the treadmill mixed with walking. I ran in the drizzle one day last week, and it was the best. I was basically alone out on the trail, and it wasn’t too hot. The above picture was from a very sunny, 90+ degree run.

I’ve been shelling over $5 for figs on the reg at Whole Foods and I’m not mad about it. Especially not since I discovered the best flavor combo ever — figs and coconut butter. The coconut butter formed a little shell on this fresh-from-the-fridge-fig and it was so creamy. Why do I have such expensive tastes? At least I never eat out!

Work is…work. Some days I wake up at 2 am ready to hit it and other times I think “I wish I could lay in bed forever”. But having little moments like this makes it better. Some videos on the NBC feed are really…weird? Yeah, I think I’ll pass on running a package about overactive bladders in my newscast, thanks.

And I’m trying to find work-appropriate things that work in the summer. The station is air-conditioned, so that means cardigans are a must (and I can’t get away with tanks anyway). I also got called out for wearing a dress that was ‘too short’ so I’ve been more cautious ever since. The dress code is casual, but apparently a dress that is more than an inch or two above the knees is not okay (but basketball shorts and a T-shirt are?).

It’s official — Alejandro is getting old. Okay, he’s only 5 years old, but he’s almost 100 K miles. Whattttt? He’s seen me through two years of college and now my new adventure in Tulsa…maybe another move on the horizon in a year? I just hope he holds out that long — Hyundais are pretty reliable!

On my last trip to Whole Foods, I was upset when I walked through the baking aisle and my beloved stevia-sweetened chocolate chips were nowhere to be found (aka sold out). I basically live off those things, so I was devastated. But when I finally spotted the new flavor of my favorite chocolate bar brand I decided to buy two bars. Well, I should have bought more because this stuff is incredible. It tastes exactly like chocolate-covered espresso beans but it just has three ingredients — cacao, fair trade coffee, and cane sugar.

I generally wear contacts because it’s just easier (especially when I’m running) and I’m lucky that my eyes can tolerate them, but sometimes you just gotta wear glasses. Or in my case, you use them as a fashion statement. I’ve been lusting after hipster glasses for years, and finally got some (real ones) of my own. These were $50, lenses and all, because I took advantage of a first pair free deal on Coastal.com. They arrived in my mailbox within just a couple days and they’re basically perfect. No, I promise I wasn’t asked to write a glowing review (or any review, period), I just really loved my first experience with Coastal.

More randomness thrown in a bowl and called a meal. This was my favorite homemade sweet potato hash with added in spinach, hemp tofu, cauliflower and topped with homemade hummus, coconut ‘bacon’, sprouted salted nut mix and spicy peppers. Colorful, balanced and oh so tasty. And easy. I haven’t been in the mood (or had the time) to make anything complicated and that’s fine with me.

Wow, I’ve been gone for awhile! Obviously, it’s that time of the year–midterms. Luckily I’ve just got one more left and then tomorrow afternoon starts my spring break! I won’t be doing anything too exciting (unless you consider going home for over a week to be exciting) but it’ll be great to see my family again…and possibly mooch off them for groceries? Haha it’s the little things!

I just noticed this for the first time this weekend at Whole Foods, and I had to snag this flavor. Um, this is spot on like a sparkling mojito!

I had to take advantage of the nice weather and wear a tee without a sweater for the first time in months. Rumor has it it will be in the 70s on Friday…hell to the yes!

Eating fresh pineapple makes me want to take a beach trip real badly. Too bad I’m a college student with no extra money.

I can’t get enough of kelp noodle stirfrys. You can just make them so many different ways it’s impossible to get bored with them.

This was actually a pretty successful dinner, though the veggie burger didn’t hold up too well. The eggplant fries were sooooo good though–coated in almond flour, sprinkled with sea salt and dipped in homemade BBQ sauce (basically unsweetened ketchup mixed with stevia and liquid smoke).

There was no budgeting post this weekend, but I managed to stay around $50 for the week, buying just stuff from Whole Foods with a few splurges! I’m excited to try the new Vega One bar, 15 grams of clean vegan protein in a chocolate-covered bar!

Five for Friday

I haven’t completely given up on Friday Faves posts, even though it probably seems like it! I just felt like going with a different approach this Friday so hopefully it’s just as fun as usual!

Five Things I Have to do This Week

1) Call in for jury duty. Ummmmm, yeah, I totally got assigned jury duty next Monday. No bueno, but luckily I don’t have any major assignments due then. I am really really hoping I don’t actually get called in because it’s super inconvenient, probably boring and I have to pay $1 an hour for parking. Uh, what?!

2) Write a 2100 word paper. I know I’m doing a liberal arts major and minor, and I don’t mind writing, but that’s a lot of words, plus it requires research. It’s a little dumb too because it’s for a journalism class and I know for a fact that as someone going into the broadcast field, I will never have to write anything even close to that many words. Try more like 50 words or less per story. Oh well…

3) Prepare my first weather forecast. I am really pumped for this one! Because of special programming the last two weeks, I wasn’t assigned to do weather on my news night. But this week is my first week going live, and I’m super excited. Hopefully I can write up a script that is at least somewhat decent…but honestly, I’d rather ad lib the weather like I did for our practice week.

4) Grocery shop. Is it lame that I’m excited about this too?! Whatever, I like to go grocery shopping. I have to finalize my list tonight and then tomorrow’s the big day. I’m hoping I won’t stray too far from the list…

5) Meal prep. Another exciting one, and my first time actually purposely prepping food for multiple meals. I don’t always have time during the week to whip up a single serving lunch or dinner, so making some things ahead of time will be a big time saver. A few things on my list to make: tofu nuggets, pumpkin maple bean cornbread casserole, pineapple coconut flour shortbread squares and dark chocolate-covered edamame. Yes, I realize two of those things on that list are desserts–gotta keep my priorities straight, right 😉

Five New Finds I’m Loving

1) Whole Foods vegan chocolate mousse. Okay, if you see a little cup of this in the prepared desserts section of your Whole Foods, buy it. Immediately. I’m not kidding. This stuff is straight-up, chocolate-y crack. It’s mind-blowingly creamy and rich, so you only need to eat a little at a time. And it’s only $2.99, so it’s fairly cheap. I’m thinking it’ll make the perfect frosting for my protein microwave cakes.

2) Mrs. Dash fiesta lime seasoning. This stuff is a great way to add Mexican flair to everything (I love it on black beans) without any salt.

3) Coconut flour. I got mine in bulk from Sprouts, so it was extremely cheap. It works great in protein cakes, smoothies and I want to try it in pancakes and waffles. I know it’s hard to use in vegan recipes, but that doesn’t mean I’m not gonna try to make it work.

4) Almond Breeze unsweetened almond coconut milk. I’ve been on the lookout for this since I first heard about it and I finally found it at Target. It’s a little thicker than almond milk, with a hint of coconut taste. I really wish they’d come out with an unsweetened vanilla version in refrigerated though.

5) Kelp noodles. I’ve enjoyed these three ways: Italian (red sauce, nooch, olives and crumbled veggie burger), Asian (peanut flour sauce, peppers) and cheezy (nooch, cashews). The Italian was definitely my fave, but I really loved them all. The noodles really take on whatever flavors you mix them with, and they’ve got a slight crunch which is cool.

Five Frustrating Things

1) Bicyclists who run red lights. Seriously, guys, us drivers have to constantly be watching out for you, and it’s not cool when you ignore traffic rules.

2) Having random pains. Since Wednesday, my right ankle hurts when I go downstairs, and now my lower back aches, and there’s some pain behind my left knee sometimes when I walk or workout. Yeah, I’m kind of a mess right now. Luckily I can still do all my normal stuff but it’s just annoying.

3) So many assignments due next week. I get it, the semester’s already underway and all that, but I’d like a little break from all the homework, readings and papers.

4) Getting sucky parking spaces. I’ve actually been pretty lucky this week with parking. I parked in the garage most of the week for school and usually got a space on the third level, so it was nice and covered. But parking at the apartment complex can be hell. I lucked on out Wednesday night and got a decently close spot, even though I got back around 8:45 pm. But most days, if I get back anytime after 3 (which happens pretty much every day), I have to park kinda far away. Not a big deal, just annoying.

I don’t like having to park Alejandro far away from me…

5) Super hot classrooms. Seriously, I have class in this one room that feels like 110 degrees. No joke. It’s hot enough outside but even hotter inside. We should just have class outside. I always crank up my A/C once I get back to my apartment after that class.

WIAW: On and Off

Sorry about the lack of posting lately! But it’s back-to-school time and this year means moving into my own apartment and getting all settled into a new routine. But now I’m back and ready for another WIAW!

This week, I’ve just got a random assortment of what I’ve been eating and doing, on and off campus. Even though I’m finally living off campus this year, I’m spending more time on campus with all my classes, working at the campus TV station 2 nights a week and a possible new job.

Almond peanut cashew butter mixed with maple syrup and chocolate chips, protein cereal bowl (Nature’s Path sunrise vanilla and PB Puffins mixed with Plant Fusion vanilla pro powder, u/s almond milk and raisins).

Protein powder is a must on my busy days for getting protein in. Now I love mixing it in the bottom of my cereal with some almond milk and enjoying the extra flavor and texture boost.

My sister and I headed to campus a few days early to hunt down my class locations (some were in buildings I’d never been to before!) and we saw this awesome flower on our walk. I obviously love how pink it is!

I can’t get enough of the nooch lately, seriously. It might be a problem, but it’s a good problem 😉

A pool? A short walk away? Yes please!

Yes, there is a pool at my apartment. Have I gone in yet? No, but I did spend some time tanning by it with my sis over the weekend. Let’s just say it’s a prime tanning and hang out spot.

My mom and I tried a new-to-us place just down the street from my apartment. It was super fast, super fresh and really yum. I didn’t eat the pita part of this pita, but the hummus and veggies were outta this world!

3 minute carrot cake protein oats.

This was so good, for a super quickie snack! I mixed thick rolled oats with Truvia, almond milk, chopped carrots, raisins, cinnamon, vanilla protein powder and ground flax and topped it with Nature’s Path sunrise vanilla cereal (so good, and gluten free!) and almond peanut cashew butter.

Can I just say I love having a car? Not only does it make things more convenient, I can also take awesome selfies in it. Alejandro, you’re the best!

I was in desperate need of some Starbies love after my first day of classes. I hit the nearest one up right after my 4 pm class for one of my fave summer drinks and enjoyed it in the sunshine.

Easy breakfast: chocolate mint protein muffin topped with homemade almond butter cup, grapes.

I’ve definitely been getting my kitchen experimenting on, now that I actually have a kitchen! So far, I’ve made no bake peppermint patty bars, mint chocolate almond butter cups and mini buckwheat corn muffins. The bars and cups are the best though–I’ve been on a mint chocolate kick lately.

First dinner in my new place: vegan nachos! Made with Late July multigrain chips, pinto beans, spicy guac, peach mango salsa, kale sauteed in coconut oil and nooch.

I finally got over my fear of the white stuff and bought some coconut oil. I’ve heard so many good things about the health benefits of it and was sick of avoiding recipes because they included it. I accidentally got the refined kind, but next time I’ll know to get the extra virgin kind for coconutty flavor!

Friday Faves (August 17)

Wow, where has the week gone? I feel like I’ve been running around like crazy for most of the week and I’m not getting a break anytime soon! I got back from vacation on Sunday, left right away for FoCo for a job training session on Monday morning, came back home and started unpacking stuff from vacation, shopped for school supplies and repacked for college! I’ve just got this weekend before it’s back to the daily grind of school. I can’t believe the summer’s almost over, but I’m pretty pumped for this school year!

Favorite Change: New hair (color & style)

I think the last time I had anything done with my hair was over spring break…which was almost 6 months ago, yikes! It’s really hard to fit in hair appointments when I’m usually up at school but I’m just glad I got it done before I go back. My bangs really needed to be reshaped and cut and my color needed refreshing. Now I’m all ready for a new school year!

Favorite First Time Breakfast: Tropical French Toast

Alvarado Street California-style sprouted toast topped with fresh pineapple, Bear Naked Fit vanilla almond granola and organic maple syrup (side of frozen mango).

This might sound crazy, but I don’t think I’d ever had French toast before a couple days ago. I know, who am I? Obviously this was a veganized version (meaning no eggs) but I think it turned out delicious, especially for my first time making/eating it. And being the pineapple lover I am, I went for a pineapple upside down inspired version.

Tropical French Toast (vegan, can be gluten-free)

1 or 2 slices sprouted toast or gluten-free toast (like millet or rice bread)

1/4 cup unsweetened vanilla almond milk

cinnamon and ginger, to taste

vanilla stevia drops, to taste

handful small pineapple chunks

In a small pan, heat up some nonstick cooking spray or coconut oil over medium heat. In a small bowl, whisk together almond milk, spices and stevia until combined. Dip both sides of the toast in the milk mixture until it soaks in. Place toast on pan and heat on both sides until golden brown and crunchy. Before flipping, add pineapple chunks to top side of toast and then flip to cook. Serve French toast with granola, coconut butter, maple syrup, fresh fruit or whatever you want. Serves 1.

Meet Alejandro, my ‘new’ baby!

As I’ve mentioned several times before, I didn’t have a car at college the past two years. With the job I have this upcoming semester, along with my off-campus housing, my parents realized that I do need a car. Over the summer, we were considering getting me a newer model used car, then a brand new car, then they finally decided to let me have our red 2008 Hyundai Santa Fe. It has a lot of miles on it for its age (because of my mom driving back and forth from home and my college town on weekends) but I really love it because A) it’s red and B) I’ve driven it a lot, especially this summer. I really love the look and feel of the car and I’m already used to it so it’ll be no big deal to take it up to school with me. And because I love him so much, I named him Alejandro (like the Lady Gaga song)!

I am so glad we moved to a new house back in June, because DirecTV gave us three free months of HBO…meaning I get to watch The Newsroom, which has become one of my new fave shows. I just watched the most recent episode and I’m hooked for part 2! I love how crazy and action-packed the show is.

Saturday Seven: Counting Down Already?

Hi guys! It’s my first weekend back at school and I can already say that I think I may be overwhelmed this semester! Not that I haven’t thought that pretty much every semester of my school career, but this one looks like it might kick my butt if I don’t stay on top of things.

The classes, while probably difficult, are at least hopefully interesting. I’ve got a broadcast news class–what I’m majoring in and want to do with my life (and apparently it’s a very popular class…there’s a gigantic waiting list)–a business reporting class, a studio production workshop class, an American environmental history class, a class on the history of U.S. national parks and a weather & climate class. So, all things I’m interested in (journalism, U.S. history and weather) but this is my first semester taking all 300 and 400 level classes, aka I’m one of the only sophomores in most of them! Which is fine, but I can definitely predict them being a challenge.

1. Colorado’s getting a Trader Joe’s!

I actually mentioned this in one of my most recent Saturday Seven posts and just the other day on my Twitter. I was sooooo upset that TJs had no future plans for a store in Colorado, but then a few nights ago on the news and two days ago on the Coloradoans for Trader Joe’s Facebook page, it’s apparently official that they’re coming to good old CO sometime soon. Of course, the first location will be in Boulder, but I don’t care that it’s 2 hours from home (or an hour from my college campus)–I am dragging my parents there as soon as it opens! I can’t wait to try all the amazing products that everyone in the blog world raves about!

2. I’m already counting down to spring break

This is where I spent my spring break 2 years ago--any guesses where I was?

Yes, I’m fully aware that school just started, but can you blame me for wanting a break already? The weather here, despite being fairly warm for winter, still isn’t as great as spring (or summer) weather and I’m longing for the days when I can wear skirts with bare legs again, and reunite with my flip-flop collection. Until then, I’ll just be inside, bundled up, counting down the days til spring break (only 35 school days left!)

3. I need this puppy in my life…stat!

I got a daily calendar of cute animals for Christmas, and this is by far the cutest thing I’ve seen in it! I just want to keep this little guy forever and ever. I used to think I hated little dogs, but this is one of the most adorable dogs ever! If I can’t have a greyhound (dream dog), I’ll settle for a cute Chihuahua!

4. I have a new drink obsession

I used to be a hardcore hot tea hater. I could only stand iced tea, which is ironically my drink of choice during the summer (preferably flavored and sweetened only with Truvia). Once I tried the Celestial Seasonings candy cane lane and sugar cookie sleigh ride teas, however, I was hooked! Before heading back up to school, I grabbed the fruit variety pack sampler and hoped these teas would be just as amazing. And…they are! I especially love the peach one, since it reminds me of summer, but the true blueberry and wild berry zinger ones are also winners. The acai mango zinger flavor is on my list of flavors to try!

5. I’m really loving this song right now

I don’t know why, but this song just makes me super happy! It doesn’t hurt that Enrique is a super-sexy beast 😉 I just bought it the other day, and every time I listen to it, I pretend that I’m the star of a movie and this song is the soundtrack. Anyone else ever do that with songs? It’s just me then?

6. Trying out new products is the highlight of my life

Ever since NaNeFoMo, I’ve been more motivated than ever to try out new foods! On my back-to-school shopping trips, I bought a bunch of new-to-me things, including blood oranges, Amy’s bistro burgers and vegan soups, organic refried pinto beans with chile and lime, Lightlife vegan smart bacon, Ezekiel sprouted corn tortillas and Archer Farms frozen grilled peppers. What I’ve tried so far has been amazing, and I can’t wait to sample the rest. The only way you can find out if you like something is to try it!

7. The only two things on my wishlist: an apartment and a car

Even though I signed the lease for my apartment next year a month or so ago, I’m still nervous that something will fall through and I’ll have to do the dorm thing again, which is NOT okay with me. I did it for a year and a half, and I’m already so done with it. I need a kitchen and more independence, ya know? And a car…well, that’s also a big one. I could live without it if I had an apartment, but I’d prefer to have one so I could actually go places on my own without relying on other people. Of course, I have a few cars on my dream list, but I’d be perfectly okay with any safe, working car!
