Week through my iPhone: Part II

Well, it’s been almost a week since I last posted, whoops! I have some time off coming up so maybe another post will make it in there somewhere. I can’t make any promises though. I love being busy though — it makes time fly (which is sometimes good, sometimes bad…like when my weekend ends too soon).

It hasn’t technically hit 100 degrees here yet, but the heat index has been in the 100s on some days. I only hate it when I’m trying to push through a run or when it messes up my hair. Humidity+me = super sweaty hot mess. Is it any wonder I want to move to the desert?

Running has been going well. Still running between 2 and 3 miles, but trying to run almost every single day, even if it’s just a mile on the treadmill mixed with walking. I ran in the drizzle one day last week, and it was the best. I was basically alone out on the trail, and it wasn’t too hot. The above picture was from a very sunny, 90+ degree run.

I’ve been shelling over $5 for figs on the reg at Whole Foods and I’m not mad about it. Especially not since I discovered the best flavor combo ever — figs and coconut butter. The coconut butter formed a little shell on this fresh-from-the-fridge-fig and it was so creamy. Why do I have such expensive tastes? At least I never eat out!

Work is…work. Some days I wake up at 2 am ready to hit it and other times I think “I wish I could lay in bed forever”. But having little moments like this makes it better. Some videos on the NBC feed are really…weird? Yeah, I think I’ll pass on running a package about overactive bladders in my newscast, thanks.

And I’m trying to find work-appropriate things that work in the summer. The station is air-conditioned, so that means cardigans are a must (and I can’t get away with tanks anyway). I also got called out for wearing a dress that was ‘too short’ so I’ve been more cautious ever since. The dress code is casual, but apparently a dress that is more than an inch or two above the knees is not okay (but basketball shorts and a T-shirt are?).

It’s official — Alejandro is getting old. Okay, he’s only 5 years old, but he’s almost 100 K miles. Whattttt? He’s seen me through two years of college and now my new adventure in Tulsa…maybe another move on the horizon in a year? I just hope he holds out that long — Hyundais are pretty reliable!

On my last trip to Whole Foods, I was upset when I walked through the baking aisle and my beloved stevia-sweetened chocolate chips were nowhere to be found (aka sold out). I basically live off those things, so I was devastated. But when I finally spotted the new flavor of my favorite chocolate bar brand I decided to buy two bars. Well, I should have bought more because this stuff is incredible. It tastes exactly like chocolate-covered espresso beans but it just has three ingredients — cacao, fair trade coffee, and cane sugar.

I generally wear contacts because it’s just easier (especially when I’m running) and I’m lucky that my eyes can tolerate them, but sometimes you just gotta wear glasses. Or in my case, you use them as a fashion statement. I’ve been lusting after hipster glasses for years, and finally got some (real ones) of my own. These were $50, lenses and all, because I took advantage of a first pair free deal on Coastal.com. They arrived in my mailbox within just a couple days and they’re basically perfect. No, I promise I wasn’t asked to write a glowing review (or any review, period), I just really loved my first experience with Coastal.

More randomness thrown in a bowl and called a meal. This was my favorite homemade sweet potato hash with added in spinach, hemp tofu, cauliflower and topped with homemade hummus, coconut ‘bacon’, sprouted salted nut mix and spicy peppers. Colorful, balanced and oh so tasty. And easy. I haven’t been in the mood (or had the time) to make anything complicated and that’s fine with me.

A: Attached or single?

Single, at the moment. I’ve never been in a long-term relationship before, and it does feel weird to say that as an almost 21-year-old, but I just haven’t found the right guy yet. And right now, I want to focus on graduating school and starting my career…but I won’t say no if something comes up!

B: Best friend?

Definitely my little sister. She’s not so little anymore since she’s starting her senior year of high school (and she’s taller than me…) but we’ve been pretty close since we were younger and I’m really going to miss not seeing her as often once we both graduate.

C: Cake or pie?

I don’t really love either one (I prefer frozen desserts) but I’m going to cheat and say my raw cheesecake. It’s technically a cross between cake and pie and it’s so rich without being overwhelming, plus it’s totally plant based!

D: Day of choice?

I would say Friday because I had Fridays off from school last semester, as well as during this upcoming semester, and it’s a great day to relax AND get things done before the weekend officially kicks off.

E: Essential item?

My smartphone. I’m not rich cool enough to have an iPhone, but my Android is almost as good, and I bring it with me basically everywhere.

F: Favorite color?

Going to go the totally cliche girly route here and say pink. But I prefer hot pink to light pink, like this pink Kia Soul that I literally almost got last year! My parents and I were looking for a car for me to use at school and we were originally looking at late model small SUVs including a pink Soul they had at one dealership, but then I ended up with Alejandro (aka the 2008 Hyundai Santa Fe we owned).

Don’t eat ’em as a vegan, but I used to kinda like the clear gummy bears, and sour gummy worms were the best kind. But honestly, my favorite gummy candy was Gummy Lifesavers!

Shopping sprees, whether clothing or food. Last year for my birthday, I opted out of presents so I could go shopping in Denver all day. It was a dream come true for this shopaholic 😀

I would like to have twins someday, but I’m definitely considering adoption just because so many kids need a loving home and the whole idea of pregnancy freaks me out a bit.

My family. I’m excited to move out on my own and have my own life, but I can’t live without keeping in touch with my family. I’m so thankful I went to college in-state because I appreciated the distance I had, but also liked being able to come home once or twice a month.

Neither are my favorite fruit, but I have to go with oranges. To me, they’re more thirst-quenching and I love an orange slice in my water or iced tea.

One super weird phobia I have is with styrofoam. I’ve had this fear since I was little, and it’s more like a squeamish feeling than anything. I can’t stand when people touch styrofoam anything and I always have to have someone else take things out of styrofoam boxes while I’m in another room!

I love funny quotes, especially this one I just found from Jim Carrey: “Behind every great man is a woman rolling her eyes.” Classic!

R: Reasons to smile?

Sunshine, amazing in-season produce, spending time with my family, singing along to songs while driving, having an awesome workout, getting all the green lights, people that go out of their way to care about others.

It is and always will be summer. Right now it’s because it’s my birthday season, but I also love having summers ‘off’. Plus the weather is just unbeatable, and the fruit is amazing.

I used to have an obsession with crutches. My best friend was accident prone and was on crutches a lot for sprained ankles, but I never got to use crutches, even when I fractured my ankle in 4th grade. I used to put paper casts and make crutches out of pencils for my stuffed animals and pretend they were injured. I was a weird child…

V: Vegetable?

Why don’t I just name the ones I don’t like? I’m not a fan of beets, tomatoes (technically a fruit but still a veggie to me), most squash (I know, what kind of blogger am I, but I realized that I prefer sweet potatoes to most sweet squash), green beans, celery and most mushrooms. I like or love most other veggies though!

W: Worst habit?

Ripping off my nails when they get too long (and then I hate that they’re so short…um, duh!), charging my phone too often (I hate when the battery level goes below 70%), saying ‘like’ and ‘um when I get nervous…

I’ve only had x-rays done, but I’ve had quite a few, from teeth to ankles to my left wrist.

This is way harder than it seems. One of my favorites at the moment is watermelon. Especially straight from the fridge, eaten with my hands, juice dripping all over. Summer perfection.

WIAW: “Normal” Eating

This WIAW will be more ED focused than most of them, but I’ve got a few fun things to share so hopefully that’ll make up for the more serious talk!

So remember way back when (aka March) when I talked about how I was fed up with how much I was restricting? And I mentioned in other posts after that one about how I was working on making changes. Well…honestly…that didn’t happen. I didn’t make much of an effort to increase my eats, other than an extra handful of something here and there. I didn’t really make a conscious effort at all until…well, a couple of days ago. Okay, so it really started a few weeks back but lately I’ve been making big strides in eating more. And not only eating more, but feeling okay and ‘safe’ with it. Safe was one of the words my ED used to justify restriction–it felt safe and ‘normal’ to me. But now that I’ve seen the light, and realized I can eat way more and not balloon out of control well…I’m kinda saying goodbye to ED.

I know I still need to increase more. 2000+ calories seems to be the magic number for a lot of people. I’m fairly active, between walking to classes and doing daily full body workouts. But I’m also a small girl and I’m thinking I probably need fewer calories than somebody taller or wither a bigger build. But I know that what I’m eating now, even though it’s more than I was eating for too many months, still isn’t quite enough.

Anyways, enough of the chit chat. Let’s see how I’ve been normalizing my eating, and what better time to do it than WIAW?

Yes, I made this. And yes, I also have been eating it. What exactly is it? It’s coconut whipped ‘cream’, completely vegan and totally yum. I followed Angela’s method, using a little bit of maple syrup and peppermint extract to sweeten it up. While mine didn’t turn out as fluffy as hers (maybe my canned coconut milk had a defect?) it is still delicious, creamy and crave-worthy. I’ve been enjoying a spoonful here and there and enjoying my new found love of coconut.

This isn’t anything new…oh, wait, actually it kinda is! It was my first time trying beets (they had them in raw form at the salad bar) and I’m officially a fan. I’m also apparently a fan of veggies dipped in a big dollop of fresh guac and dumping tons of pumpkin seeds on my salad. Embrace the fats, people. So good.

It sure didn’t feel fall-like on Monday when I stopped into Starbucks for this new-to-me drink. But it totally got me in the mood for it. I finally gave in and tried the pumpkin spice syrup that everyone raves about. I took home my pumpkin-spiked Americano and added in some vanilla almond milk (seriously, Sbux, why don’t you have this?) It was good, but not amazing. I guess I’m more of a peppermint mocha kinda girl.

Guys, I’m sorry. But I’m officially addicted to the ‘driving selfie’. Except I always take them in the parking lot, or mayyyyyybe at a stop light if I’m feeling rebellious 😉 I just like making goofy faces and seeing the reaction of my fellow drivers.

This meal made me a tofu lover. Mixed greens/broc slaw with raspberry acai vinaigrette. Curry spiked ketchup. Tofu “fingers”. Alexia chipotle sweet potato fries.

I was never a big fan of tofu. Yes, I know I’m a crazy vegan, but it’s true. I would eat it sometimes, but never loved it. All that changed when I made Angela’s tofu nuggets over the weekend. They were crazy good on their own. But they were even better dipped in ketchup. Oh yeah, now I also like ketchup too. I found an organic brand with only 2 grams of sugar, and it’s pretty good.

This truly was a bowl of decadence, and I enjoyed every bite.

My nightly snacks are taking on a different look lately. I don’t go for cereal much anymore. Instead, I like a bunch of different flavors and textures in one bowl. Enter, this bowl of healthy vegan decadence. Healthy, because the base was a protein microwave cake, made with a plant-based protein powder, some flax and almond milk. Decadent, because it was topped with a spoonful of Whole Foods vegan chocolate mousse (just a few healthful ingredients, but tastes so rich), Nada Moo coconut milk ice cream, semisweet chocolate chips and a little of the mint coconut whipped ‘cream’. Yeah, this was just as good as it sounds and looks. I think I’ll be repeating this soon.

So close to 90,000 miles! Alejandro and I will have to throw a party when that happens.

Contrary to what Alejandro’s odometer says, he’s only 4 years old. That’s kind of a lot of miles for that few years, but a lot of long distance driving was done in Alejandro before my parents let me have him. Oh yeah, in case you didn’t know, Alejandro’s my car, a super hot red Hyundai Santa Fe. I’m not totally crazy, promise.

This was a lunch, but it’s a lot like my typical snackplates. What can I say, I love variety! My lunches lately have been more substantial, incorporating veggies, protein (usually edamame or my favorite protein powder) and fat (usually nut butter).

Breakfast is getting more delicious! Chocolate mint kale protein smoothie topped with mint coconut whipped ‘cream’ and chocolate chips.

Who says you can’t have dessert for breakfast? Okay, this wasn’t quite dessert, since it incorporated greens and protein (but I don’t exactly shy away from those things in my desserts) but the addition of the whipped ‘cream’ definitely took it over the top. And this pudding like breakfast packed 20 grams of protein, plus kale! Who wouldn’t go for that?

Sweet and salty kale salad–kale massaged with lemon juice and nooch, kalamata olives, strawberries, figs and dry-roasted edamame. Half sweet potato topped with maple-infused almond peanut cashew butter. Pumpkin spice iced Americano.

Coffee at lunch…why not? But let’s talk about this salad for a second–so good. I always love sweet and salty combos, and this was just amazing for a random mix. The sweet potato was great too. But that’s a given.

Friday Faves (August 17)

Wow, where has the week gone? I feel like I’ve been running around like crazy for most of the week and I’m not getting a break anytime soon! I got back from vacation on Sunday, left right away for FoCo for a job training session on Monday morning, came back home and started unpacking stuff from vacation, shopped for school supplies and repacked for college! I’ve just got this weekend before it’s back to the daily grind of school. I can’t believe the summer’s almost over, but I’m pretty pumped for this school year!

Favorite Change: New hair (color & style)

I think the last time I had anything done with my hair was over spring break…which was almost 6 months ago, yikes! It’s really hard to fit in hair appointments when I’m usually up at school but I’m just glad I got it done before I go back. My bangs really needed to be reshaped and cut and my color needed refreshing. Now I’m all ready for a new school year!

Favorite First Time Breakfast: Tropical French Toast

Alvarado Street California-style sprouted toast topped with fresh pineapple, Bear Naked Fit vanilla almond granola and organic maple syrup (side of frozen mango).

This might sound crazy, but I don’t think I’d ever had French toast before a couple days ago. I know, who am I? Obviously this was a veganized version (meaning no eggs) but I think it turned out delicious, especially for my first time making/eating it. And being the pineapple lover I am, I went for a pineapple upside down inspired version.

Tropical French Toast (vegan, can be gluten-free)

1 or 2 slices sprouted toast or gluten-free toast (like millet or rice bread)

1/4 cup unsweetened vanilla almond milk

cinnamon and ginger, to taste

vanilla stevia drops, to taste

handful small pineapple chunks

In a small pan, heat up some nonstick cooking spray or coconut oil over medium heat. In a small bowl, whisk together almond milk, spices and stevia until combined. Dip both sides of the toast in the milk mixture until it soaks in. Place toast on pan and heat on both sides until golden brown and crunchy. Before flipping, add pineapple chunks to top side of toast and then flip to cook. Serve French toast with granola, coconut butter, maple syrup, fresh fruit or whatever you want. Serves 1.

Meet Alejandro, my ‘new’ baby!

As I’ve mentioned several times before, I didn’t have a car at college the past two years. With the job I have this upcoming semester, along with my off-campus housing, my parents realized that I do need a car. Over the summer, we were considering getting me a newer model used car, then a brand new car, then they finally decided to let me have our red 2008 Hyundai Santa Fe. It has a lot of miles on it for its age (because of my mom driving back and forth from home and my college town on weekends) but I really love it because A) it’s red and B) I’ve driven it a lot, especially this summer. I really love the look and feel of the car and I’m already used to it so it’ll be no big deal to take it up to school with me. And because I love him so much, I named him Alejandro (like the Lady Gaga song)!

Favorite Addiction: The Newsroom

I really need to get all caught up on this show!

I am so glad we moved to a new house back in June, because DirecTV gave us three free months of HBO…meaning I get to watch The Newsroom, which has become one of my new fave shows. I just watched the most recent episode and I’m hooked for part 2! I love how crazy and action-packed the show is.
