Currently…

Hi guys, long time no see huh? It’s getting to be that time of the year again…back-to-school time! So I’ve been pretty busy the past few days getting everything packed and ready for second semester. I’m actually really excited to go back–my classes seem interesting, I’m ready to do weather anchoring again and I can’t wait to be back in my apartment so I can do whatever the heck I want. Don’t get me wrong, I love my family to pieces, but I need my alone time sometimes and having my own kitchen again will be nice.

Since life’s been cray over here, I’m gonna borrow a little survey I spotted on Amanda’s blog the other day so enjoy…and I’ll be back next week with some updates!

Current Books: Erm…uh…I’m actually not a big book reader (please don’t hate me!). I do have some books I love, like Dave Barry (he is hilarious!) and the Sisterhood of the Traveling Pants series, but I haven‘t actually read them in awhile. I am loving Veganomicon though–so many delicious vegan recipes I need to try out.

Current Music: Anything by Foster the People. Love them. I just added their station to Pandora and I’m addicted. Right now I can’t get Houdini out of my head.

Current Guilty Pleasure: Lotions from Bath & Body Works. Seriously, can I just buy them all?! They smell so delicious…

Current Nail Color: OPI’s Giftcards for Everyone. Oh, and Sally Hansen’s Posh Plum on my ring fingers. I got the OPI color as a mini giftset for Christmas and the colors are perfect for winter.

Current Drink: I can’t go without my (almost) daily ACV morning cocktail. 1 tbsp unfiltered apple cider vinegar, English toffee stevia drops to taste, cinnamon and water to dilute. It tastes like a sour apple pie.

Current Food: I’m loving the sweet potato+sunflower butter+peanut flour paste+raisins+chocolate chips combo, as I mentioned on WIAW. Sounds weird, tastes heavenly and never gets old.

Current Favorite Show:  I heard the new season of WNTW (What Not to Wear) is on so I really need to start watching that again, I really missed my Clinton & Stacy fix. Other than that, I think 1600 Penn is hilarious and I love Chopped on the Food Network.

Current Wishlist: I would love some Starbucks and iTunes gift cards because I’m cheap and don’t want to pay for my own coffee and music #collegeproblems

Current Needs: Not sure if this is more of a need or a want, but dumbbells. I really want more muscle and bodyweight training alone isn’t cutting it. I’m really wanting to start a strength training routine so I’m planning on hitting up Target soon to pick up some cute and colorful weights.

Current Bane of My Existence: The fact that everyone is coming down with the flu, and I reaaaaaaallllly don’t want to get it. No such thing as hand sanitizer overload during flu season.

Current Celebrity Crush: Bradley Cooper. He was amazing in Silver Linings Playbook, and he doesn’t look half bad ;)

Current Indulgence: My recent trip to Whole Foods. A little over $100…yikes. Yes, it was a restock-my-apartment-because-it’s-foodless trip but still. Hope they’ll last me awhile!

Current Blessing: No snow in the forecast for awhile. I know we could really use the moisture but I’m already sick of winter and snow. Bring on summer!

Current Slang: Whatevs. I know that’s so old and lame but I don’t care, I still use it.

Current Excitement: My family’s spending the day with me tomorrow at my apartment and it’s gonna be fun! We’re going out to eat at my favorite vegan restaurant (which my omni family all love) and my sister and I will probably do some hardcore shopping and jamming out in the car. We’re so cool…

Fashion Friday: Christmas Clothes

Remember when you were younger, and all you wanted for Christmas was toys? Some of my favorite presents from Christmases past include a dollhouse, an Easy Bake oven and Beanie Babies…good times ;) As I’ve grown up, though, my Christmas wishlists have been pretty much been devoted to one thing–clothes. As an aspiring fashionista, I have an obsession with clothes shopping and I feel like I could never have too many outfits. This year, as in recent years, I got quite a few wonderful things not on my wishlist (such as pink-colored office supplies–my dad knows me too well–and a new blingy phone case) but most of what I received was clothing-related, or could be used towards buying clothes. And you better believe I was thrilled about our family’s post-Christmas shopping trip in Denver!

This was the outfit I unwrapped on Christmas. They were actually wrapped up separately but they go well together. I’m planning on wearing this during the winter paired with grey tights and my grey wedge booties and in the spring sans tights with a cute pair of flats.

These were two unexpected fashion-related gifts but I love them! I was in desperate need of a new makeup bag as my old one was starting to rip, and this calendar is perfect for the designer bag-lover in me.

Once I unwrapped these, my Christmas was complete. I’ve been wanting a nice pair of riding boots since at least last Christmas, but haven’t been able to track down the perfect, inexpensive pair. My mom got these from Macy’s and they’re just the right color and style to go with everything.

I’m a sucker for cheap, quality jewelry, especially rings. American Eagle used to be my go-to but now I prefer Forever 21 and ALDO Accessories for their wider selection. This ring was under $4! The only thing I hate about shopping for rings is finding my size–I wear a 6, which is sometimes even too big so I always have to try before I buy.

This jacket is probably one of my favorite purchases from my haul, or possibly one of my favorite buys ever. I almost convinced my sister to buy it but I ended up with it, and for under $25 too! Forever 21 is a lifesaver wallet saver for sure. My only issue with shopping there is the ridiculous selection–it’s such a giant store.

I love the detailing on this jacket. It makes me feel like a bad ass ;) More like a bad ass vegan who likes the look of leather but not the cruelty aspect of it!

Hollister was having a huge post-Christmas sale (50% off everything in clearance!) and I had a gift card there so I went a little crazy. Okay, not really, I only bought 4 things but I only ended up having to pay $10 for it so that was a nice surprise. The PJ shorts might not get too much wear until spring but I love them so much that I might be willing to freeze my legs off to wear them earlier. The sweater is a basic but I like the looser fit and it’ll look great with anything.

Another basic–you can’t go wrong with a white tank, especially when it has some sparkly details. I’m planning on pairing this with my burgundy jeggings and my brown faux leather jacket.

Another favorite buy–I just love the bright color of this sweater! Besides getting a lot of sweaters for Christmas, they’re also all easy fit sweaters which I like because they’ll look great paired with skinnies and jeggings. Loose+loose and tight+tight are no-nos but pairing a looser top with tighter fitting bottoms definitely works! And this sweater isn’t too heavy either so it’ll work into the spring months.

WIAW: Ringing in the New Year

After missing out on WIAW last week (being sick for a few days=no delicious food photos, or food period) I was itching to join in on the foodie party this week!

New Year’s Day is always a bit depressing for me–it marks the official end of the holiday season and it’s back to the daily grind and blah-ness of the winter season. Not that I’m complaining about getting back into a routine (I’m also not technically back into my normal routine for another 3 weeks when spring semester starts up again) but January is a bit of a letdown after the holidays. This year I want to be more excited about January so I’m soaking in my last few weeks of Christmas break and just enjoying the month for what it can be–a fresh start.

The usual post-Christmas shopping spree was on Sunday. The fam and I headed up to Denver for the day and my dad checked out the Van Gogh exhibit at the art museum while us girls shopped the afternoon away. Other than the clothes shopping (I’ll be sharing some of my purchases later this week!), I also convinced my mom to stop at Nooch Vegan Market, a fairly new addition to the city. It’s a small, all-vegan grocery store that stocks a lot of products that not even Whole Foods offers. I could have bought so many things, but I just left with some garlic Parma (a nut-based ‘cheese’ sprinkle), pico de gallo bean chips and a super-delicious dark chocolate chipotle caramel bar. The combo of coconut milk caramel, chipotle powder, dark chocolate and pecan/peanut pieces is incredible–I wish I had gotten more than one!

While shopping I sipped a short soy skinny peppermint mocha. I’ve never gotten a short at Starbucks before but it’s a good size option for when I don’t want to be too filled up by the drink. I’m sad about this picture though because I’m thinking that might be the last time I drink out of a red cup until November :(

I have a new obsession with bok choy. It is sooooo good sauteed in a little coconut oil and topped with a thin sauce made from red curry paste, citrus juice and coconut aminos. It gets all wilty and delicious in the pan. New favorite veggie over here!

This was a weird (but good) snack. I love cutting up sweet potatoes into fry shapes and then baking them with some spices and then dipping them in everything and anything. Organic ketchup and peanut flour paste are the best options, of course.

I generally don’t make things from cookbooks, but that’s only because I never had a vegan cookbook before this year. I was lucky enough to get two great vegan cookbooks for Christmas and I’ve already tried a couple recipes from them. Last night I made eggplant muffaletta sandwiches from Veganomicon for my family and they loved them.  It was literally one of the best sandwiches I’ve ever had, probably because I love the combo of olives, spinach and really good bread. I haven’t had bakery bread in at least a year (it’s a huge fear food of mine) but I got some ciabatta bread from Whole Foods specifically for this recipe and it did not disappoint. I guess eating bread, especially quality bread, every once in awhile won’t kill me!

This was a coffee-lover’s dream cocktail. It tasted like a hazelnut latte! Like I’ve said before, I’m not a huge drinker (and I’m not planning on becoming one when I turn 21) but it’s great to enjoy a nice cocktail every once in awhile, especially for special occasions.

My last meal of 2012: Whole Foods salad bar goodies including Indian coleslaw, homemade tortilla chips, coconut curry tofu, chipotle orange sweet potatoes, roasted brussels sprouts and lentil dal.

My dad and I made a quick stop at WF for some NYE snacks and I just couldn’t pass up the salad bar–they had a bunch of vegan Indian food options. I got some of my usual items, and then loaded up on the Indian coleslaw (not at all like traditional coleslaw but way better), green garbanzo curry, lentil dal and some battered veggies. It was an amazing last meal!

You knew I couldn’t go more than a week without trying out my new donut pan! I made some so-so pumpkin protein donuts over the weekend but I finally made some delicious (and healthier) donuts that I just had to share. They are pretty much like banana bread in donut form…

Banana Bread Donuts (vegan)

1 tbsp ground flax+3 tbsp warm water, for flax “egg”

1/4 cup unsweetened almond or coconut milk

1 tbsp coconut oil

1 banana, mashed

1 packet stevia (optional)

2 tbsp coconut sugar (or other natural sugar)

3/4 cup spelt flour

1/4 cup vanilla Sunwarrior protein powder (or other protein powder, or more spelt flour)

1 tsp baking powder

1/2 tsp salt

1 tbsp dark chocolate chips (I used Enjoy Life mini)

Preheat oven to 35o degrees. Spray a donut pan (I used a 6-cavity pan) with nonstick spray. In a large bowl, mix flax and water; stir and set aside to gel into an “egg”. Stir in all ingredients through coconut sugar. Add in spelt flour, protein powder, baking powder, salt and chocolate chips until a batter forms. Spoon batter into donut pan, filling each to the top, and bake for 10-12 minutes or until just set. Remove from pan and set out on wire rack to cool. Makes 6 donuts.

These donuts are a healthier morning option, made with whole grains and about 6 grams of protein per donut, and they’re made with natural sugars and not overpoweringly sweet. I’m still trying to experiment with gluten free and vegan donut recipes so hopefully I can have one up soon for all you GFrs.

How I Spent My Thanksgiving Break

The title totally sounds like a middle school English class essay you had to write after coming back from Thanksgiving break, doesn’t it? Haha guess I just love reliving my younger years ;)

My break isn’t quite over which I am very thankful for–the last three weeks in the semester are always the hardest because you just got a taste of freedom but then you have to go back and get ready for finals and write papers. Not fun. But this is how I’ve been spending the past few days, with a mix of the successes and struggles I’ve had along the way.

Struggles

Still dealing with ‘disordered’ thoughts. 

Thanksgiving is a tough holiday for a recovering anorexic. And as a vegan, I’m not that thrilled by the usual selection of holiday foods. So I did struggle a bit on Thanksgiving Day. For one, I didn’t have breakfast. Yep, I wasn’t exactly planning on it (I love breakfast and never miss it!) but I wanted to have a pumpkin waffle with plenty of real maple syrup but my mom ended up using my waffle maker to make waffles for the rest of my family, and I freaked out about the ingredients she used in the waffles and decided not to make a waffle. But I didn’t end up making breakfast at all because I just got stuck in my disordered eating thought patterns and was getting anxious about Thanksgiving. I also didn’t eat lunch, because our family just does a lot of snacks in the afternoon. So I did enjoy some snackage (homemade guac I made myself, rice cake with pumpkin butter/chocolate chips, raw carrots and cauliflower, amazing spicy salsa). I also had a few adult beverages but we’ll save that for the successes part! I think I did an okay job eating once the big meal went around and I even tried some of the vegan stuffing my mom made. But I definitely struggled with feeling okay with being a little full. The feeling of fullness still scares me to death so that was hard to deal with. I also had some issues with exercising. I told myself I’d take a day or two off from working out this week but that hasn’t happened. It’s still too scary for me to take full-blown rest days.

Never being able to make a really delicious dessert from scratch.

Lately, I haven’t been able to make a dessert from a recipe that I actually like enough to eat. For some reason, I like it when I’m tasting it in the cooking process but then once it’s made, it doesn’t quite live up to my expectations. And then it goes in the trash. I can’t keep wasting food, but I can’t figure out why I can’t make an amazing dessert. I guess I should just stick with my simple, throw-it-together desserts like coconut milk ice cream or ‘banana bread’ protein bowls. Those are always satisfying.

Body image issues.

This kinda goes along with the first one, but lately I’ve been really having a hard time accepting what I see in the mirror. I always go through phases where I either like what I see or I’m totally disgusted by it, and right now I’m dealing with the latter. Anyone who’s ever dealt with this knows how much this sucks, but I’m hoping I start moving out of this phase soon.

Going back to classes after break.

Not gonna lie, I’m already burned out by school. The hardest time for me is always the three weeks between Thanksgiving and Christmas breaks, especially this year when I’m buried with a million assignments. I’m simultaneously freaking out and feeling passive about finishing up the semester.

Successes

Enjoying alcohol without worrying about the calories. 

I’m not quite 21 yet (just 8 months to go!) and I’ve never been one of those people who partied hard in college but lately I’ve been more interested in drinking, at least on special occasions. On Thanksgiving, I tried some cake vodka mixed with a little vanilla almond milk (to die for!) and I also had some green apple liqueur at dinner and I enjoyed them both. I did NOT get drunk or anything but it was nice to be able to sip my drinks and not freak out about drinking OMGsomanycalories.

Getting a lot of assignments done.

I was kind of dreading Thanksgiving break, because I had a lot of schoolwork to do during it. But I’ve been splitting it into manageable chunks and working on a little each day and I’ve definitely been making progress.  I’m still stressing out about some of them, but I’ve got a few more days to finish them up.

My break hasn’t been all work and no play though. Yesterday we went up to Denver for the day for some window shopping, a cheap lunch at Garbanzo (they were offering a buy one get one deal all day) and checking out a cool German Christmas festival. We also played tourist with my grandparents and went to Garden of the Gods and Old Colorado City the other day. It’s kinda fun to explore the sites in your own city even if you’ve seen them a hundred times.

The weather was gorgeous and so were the views.

Random Ramblings

Hi guys! How was your weekend? As you might be able to tell, I’m a little lacking on blog content lately but I’ve been itching to post something so luckily the lovely Amanda recently posted a fun survey over on her blog and as per usual, I can’t resist taking part in surveys. So here goes!

A is for age: 20, baby! I kinda want to be 21 already though because I’m excited to feel more adult-like. I’m not planning on drinking all the time or anything but it’ll be nice to be able to legally order a nice cocktail in a fancy restaurant :D

B is for breakfast today: raw chocolate protein powder topped with cacao nibs, cinnamon Puffins and apple slices. I wish I could have had one of my homemade waffles but I was still at home with my fam and my waffle maker was 2 1/2 hours away.

C is for currently craving: A giant healthy vegan cookie and some cute knee-high riding boots. Random, but I am both a foodie and a fashionista!

D is for dinner tonight: I had Panera with my mom, the Thai chopped salad without chicken or wontons, and a side of their black bean soup. That salad is the bomb, I never order anything different!

E is for favorite type of exercise: Either tennis with my dad, or a major shopping spree. I just went on one this weekend and while I didn’t do much damage to my wallet, my feet were killin’ me after a couple hours of walking around malls. It didn’t help that I wore (adorable) wedge ankle booties…

F is for irrational fear: I have a lot, but one of my main ones is dying from a brain aneurysm. I get headaches a lot (once or twice a week, usually) and while they’re never usually big ones, I do get some that don’t go away after taking medicine and it freaks me out.

G is for gross food: I’m a picky eater, but I’ve gotten better about it. Ironically, going vegan has made me more adventurous. But now I just think gross things are anything meat and dairy-related (and I’ve always hated eggs) and all the unnatural ingredients and preservatives in most packaged food. I’m such a label reader, but there are just some things I’d rather not put in my body, vegan or not.

H is for hometown: Reppin’ the Phoenix, AZ area ;) I only lived there for the first 2 years of my life but when I went back for vacation a few years ago, I fell in love and I want to move back to the land of cactus and 110 degree weather. Some people might call me crazy but living in CO and AZ all my life I couldn’t live anywhere with high humidity. I just love it dry and hot. I’m such a desert rat haha!

I is for something important: My family. I know they would do anything for me, and they already do so much. My mom in particular is extremely supportive–for the past 3 years I’ve been going to college 2 1/2 hours away from home, she’s been willing to drive 5 hours straight 1 or 2 weekends per month to come bring me home for the weekend. She is seriously amazing.

J is for current favorite jam: I like the fruit-sweetened superfruits jam from Crofter. Such a good blend of fruits, and no extra sugar!

K is for kids: Someday, I’d love to have a set of twin girls. I just think it would be so fun to have twins! Actually, I want to be a twin…

L is for current location: The couch in my second-floor apartment, with a zebra-striped blanket on my lap and the TV set to Breaking Amish. Such a great show. (P.S. I wrote this post on Sunday night)

M is for the most recent way you spent money: At Whole Foods, restocking my fridge and cupboards for the week. I spent a lot, but I got a crap ton of produce which is great!

N is for something you need: A break from school. Luckily, Thanksgiving break is in T-minus 15 school days…

O is for occupation: Junior year broadcast journalism student by day, blogger and part-time weather anchor by night. Someday I want to be a full-time weather anchor, preferably at a TV station in CO, AZ or CA.

P is for pet peeve: People on bikes. I’m all for bike riding for recreation or competition or whatever, but when you’re a college student riding a bike like you’re invincible, that’s when I get pissed. When I’m driving, they run through the red lights so I always have to be watching, and they don’t have lights on them at night. Stupid. And when I’m walking, I have to listen to the telltale sign of their chains to make sure I don’t become roadkill. Seriously, they ride all over the streets and sidewalks here. It’s nuts.

Q is for a quote: “She doesn’t even go here!” Mean Girls, anyone? Sorry, I’m hopelessly obsessed with that movie.

R is for a random fact about you: According to my dad, I have weird problems. I get the most random pains and sensations all over my body and when I tell him about it, he always laughs and says that. My latest issue is that the top of my left foot hurts when I point it, and I have to bend it against the floor to make it feel better. So weird!

S is for favorite healthy snack: Dry roasted edamame, flavored dark chocolate squares (give me anything mint flavored and I’m happy), frozen grapes, sweet potatoes with almond butter and protein powder microwave cakes. I try to make all my snacks somewhat healthy though!

T is for favorite treat: Food-wise, I love coconut milk ice cream. It’s ridic expensive, but so worth it for it’s dairy-free creaminess. Fashion-wise, I go for the accessories. I love dressing up my outfits with statement necklaces, random rings, scarves and cute shoes.

U is for something that makes you unique: As a baby, I had blonde hair and blue eyes. As I grew up, my hair darkened to light brown and my eyes changed from brown to hazel. Even though a lot of people think blue eyes are the prettiest, I like my hazel eyes because they make me different!

V is for favorite vegetable: This changes with the season, but right now I’m all about the squash, especially kabocha and acorn, pumpkin and sweet potatoes. And kale, that’s a favorite year round.

W is for today’s workout: I didn’t do as much as I usually do, which gave me some exercise anxiety, but I did some walking in a few stores buying groceries and such and I did a couple short circuit workouts.

X is for x-rays you’ve had: Too many to count! The obligatory dental/orthodontic ones, one on my right ankle, one on my right foot, one on my left wrist and an MRI on my right ankle. I’ve had some strains and sprains and plantar fasciitis  here and there but only one major injury: a fractured ankle.

Y is for yesterday’s highlights: Shopping in Denver with my family, my first vegan ice cream experience in an ice cream place (it was good, but not great) and having dinner in a really cool, veg-friendly restaurant. It was a long, exhausting day but so worth it.

Z is for your time zone: Mountain. I always feel like no one cares about the Mountain Time Zone but it’s awesome.

College Vegan on a Budget: Under $50

A series about shopping for vegan groceries on a college budget, without compromising my values or health standards.

Another budget post? Yep, I’m just having a lot of fun doing these things and most importantly, I’m definitely improving on my budgeting skills. At least when it comes to grocery shopping. I needed another pair of jeans, so I hit up my city’s (lame) mall and ended up spending over $60 on a pair of burgundy jeggings at Hollister and a set of headbands at American Eagle. I didn’t need the headbands but they were so calling my name ;) So obviously I’m still not great at saying ‘no’ when clothes shopping but what can you do when you’re a fashionista? Plus I justified it by saying I haven’t shopped for clothes in almost 3 months, so I was in desperate need (and still am) of some new pieces to freshen up my closet.

Anyways, this post is about groceries, not clothes. I was able to spend under $50 this weekend, and I shopped at two stores! This just goes to show that you can buy healthy, vegan foods at specialty stores and not burn a hole in your wallet. Obviously this was more of a stock-up-on-a-few-extras type of trip but it’s inspired me to try to pare down my regular shopping trips as well. I’m making a plan not to buy more than 1 or 2 special items a week–these things add up and I can’t afford to be buying multiple things over $5 or $6 each trip. So if one week I need more maple syrup, I’ll forgo buying some fancy nut butter or coconut aminos or whatever (I still want to buy those, BTW, but it’s $7 per bottle). I know that most of these more expensive items last longer, which is great, but I still can’t be buying them right and left.

What I Got: Medjool dates (much cheaper than at WF), plantain, garlic*, Bob’s Red Mill garbanzo bean flour (socca, here I come!), Metromint chocolate mint water, raw cashews, pomegranate, dried apple rings

What It Cost Me: $22.80

Verdict: I just really love Sprouts for their produce deals. The plantain was 99 cents, the pomegranate was $2.50 (and huge!), and the dried fruit is pretty cheap for having no added sugars or oils. There were a few more things I was planning on buying but decided not to to save money. But next time, I am definitely trying Zico pineapple coconut water!

What It Cost Me: $25.50

Verdict: The bulk bins save me again! I only have to buy what I need, so I end up saving a ton. Buying almond flour prepackaged costs about $8, but getting a quarter of a pound only cost me $1.20. And cacao nibs are usually very expensive but I got a small amount for just 98 cents! I prefer buying this way because I only make single lady meals, so I want my foods to stay fresh and by buying only what I need, I know it’ll stay fresh when I need it. 

I am super proud of my budgeting skills this week and I know I can make future shopping trips this cheap by watching what I’m spending my money on.

A New Decade (Birthday Weekend Recap)

Hi everyone! Did you all have fab weekends? Mine was the best I’ve had probably all summer, and as promised, I’ve got a recap of my birthday weekend for ya! (Warning: Plenty of photos ahead!)

I woke up on Friday to this–my mom taped it up there while I was asleep, how sweet is that?! My morning continued with an unpictured homemade chocolate chip oat flour waffle topped with fresh raspberries and chocolate protein frosting.

I love having a summer birthday because I can always wear a cute dress on my big day!

Most of the morning and afternoon were low-key. My mom and I stopped at the store to pick up a few things she needed and then we headed downtown for a special Olympics event they were holding. We got there around 4, which was when it was supposed to start, but not much was going on when we first got there. There were some cool things set up, like a giant trampoline, BMX ramps, a mini tennis court and a synthetic ice rink but no one was really doing anything. We did end up getting on TV though–one of the guys I know from my TV internship saw us and he interviewed my mom! And I also got some free Starbucks (unsweetened iced coffee) so it was worth it.

For my birthday dinner, I chose the Whole Foods salad bars! I am obsessed with the one near me, they always have the best stuff and they change it a lot so I can always get something new. My mom got some of the Mexican things they had, I got a random mish-mash of cold salads and my dad got a seafood sandwich (my sister was at her rehearsal for the theatre camp she’s at, so she missed out on the WF fun). Oh, and we of course watched the Olympic opening ceremonies! The best part is watching all the countries come in and making fun of their outfits.

My first birthday cake in a couple years! Totally vegan, and totally yummy!

I’m usually not a huge fan of cake. I’ll eat it if it’s a really interesting flavor, but I definitely prefer giant warm cookies or vegan ice cream for desserts. In fact, the last couple of years for my birthday, I’ve requested gelato instead of cake. But this year, I was super excited to try one of Whole Foods’ vegan cakes. I was planning on getting a slice of raw cheesecake but (full disclosure) the fat and calorie content kinda freaked me out. I loved how simple the ingredients were (cashews, coconut oil, raw chocolate) but I ended up with a slice of their vegan chocolate raspberry cake. And I was not disappointed at all! I split this giant square with my dad, who also loved it. With most cakes, I scrape the frosting off immediately because I’ve never been a fan. But this vegan frosting was so rich and delicious that I couldn’t skip it.

Saturday wasn’t too exciting. I had work in the afternoon, but after dinner, my dad and I watched The Descendants. George Clooney and Shailene Woodley were perfect in it and it was a really great movie. Funny in some parts, and super sad in others. Plus it made me realize that I need to move to Hawaii!

Ready for a day of shopping!

Sunday was the day I was really looking forward to. I decided to forgo birthday presents in favor of a parent-funded shopping spree in Denver. I live for shopping, seriously! I just love looking through all the stores I love, laughing at some of the weirder items and finding the perfect outfits. We started out at the Pavilions at the 16th Street Mall and hit up H&M and Forever 21. Both of those stores are HUGE at that location so it can be kinda hard to find something you want to buy, but it’s still super fun. And I bought my first-ever item at H&M!

We also went to my favorite mall on the south side of Denver. My sister and I ventured off on our own and ended up going to a bunch of stores: Hollister, American Eagle, ALDO Accessories, Bath & Body Works and Abercrombie & Fitch. It sucked though because it was a Sunday, and we got to the mall around 4:30…and all the stores started closing at 6. We got to Abercrombie as soon as they were closing, so we had to rush around trying to find something to buy and I left the store empty-handed. We’ve never gone up there on a Sunday, so it was weird being kicked out of the stores so early, but we’ll know better next time.

Garbanzo is one of my fave places to go! I ordered a plate with falafel, tabbouleh, cilantro sauce, grilled eggplant, lettuce, red cabbage and hummus.

Unfortunately, we didn’t get to go to the vegetarian restaurant because it was a little pricey but I’m planning a visit to a vegetarian/vegan restaurant in my college town sometime soon. We did go to Garbanzo, though, which I could eat at every week. They have a lot of vegan options too which I love and everything there is so fresh and pretty cheap. Their tabbouleh and hummus are my favorite of any Mediterranean place I’ve been to!

So that’s pretty much my entire birthday weekend. I had such a fun time, treated myself a few times and did some major shopping. I couldn’t have asked for a better 20th birthday!

Friday Faves (July 13)

Well it’s Friday the 13th…anyone experiencing any bad luck today? I’m really not a superstitious person so I think bad things (and good things too) can happen any time regardless of the day on the calendar. Plus I’m feeling pretty darn lucky today anyway–my birthday’s in exactly two weeks and I went to the dentist yesterday and came back with no cavities. Yay!

(Soon to be) Favorite Starbucks Drink: Refreshers

It’s like a limeade with a caffeine boost!

It’s no secret that I love Starbucks, but sadly I haven’t been in a couple of weeks, even though we just moved within a 5 minute driving distance of one. But now I have an even better reason to go–their new Refreshers drinks! P.S. They’re giving them away free today between noon and 3 pm so get one now. They have different versions of the drinks–two iced ones in their stores, three sparkling water kinds and instant VIA packets at grocery stores. I’ll be keeping my eye out for those the next time I go shopping and I’m hoping I enjoy my free one!

Favorite App: Phonto

Just in case you didn’t know, this was a lunch. Steamed edamame, squirt of sriracha, baby carrots, blueberries, sprouted toast topped with blueberry chia jam and cashew cream cheese.

I can’t say enough good things about the LabelBox app, but now there’s another photo editing app I love–Phonto. As a self-professed font nerd, I like being able to add a caption directly to my photos in a million different fonts and colors. From now on, if my photos aren’t LabelBox’d, they’ll be Phonto’d. Just warning you ;)

Favorite Fitness Move: Planks

Not this kind of planking, but isn’t this adorable?

Until maybe a year ago, I had no idea what planks were. And now, I’m hooked. I do them a couple of times per day in addition to my other fitness routines and I’ve been working on holding them for a long time. Right now I can only do them for 2 minutes straight, but I want to get up to 5 minutes soon! They’re such a good fitness move since they pretty much work everything–arms, core and even legs.

Favorite Day I’m Looking Forward To: July 27th

From my birthday last year…apparently I was proud of this tiny strawberry I grew on my strawberry plant!

I’ve tried not to talk about it too much on the blog, since people don’t really care too much about other people’s birthdays, but I’m definitely excited to turn 20 in exactly two weeks! It’ll probably feel really weird to finally be out of my teenage years but I’m ready to be one year closer to legal drinking age ;) Actually, I’m just more excited about the plans I have for my birthday this year. On the actual day, I’m gonna get Whole Foods salad bar for dinner (and hopefully some bakery-made vegan dessert) and watch the opening ceremonies of the Olympics and who knows what else. And over the weekend, I’m planning on going up to Denver for a day of shopping and going out to eat at (hopefully) a completely vegetarian or vegan restaurant for the first time ever. Possibly even Native Foods Cafe, which just opened in Boulder! Shopping, good eats and the Olympics–doesn’t get much better than that for me!
