WIAW: Ashley Lately

Hi guys! Sorry I’ve been so MIA lately–my Thanksgiving break started on Thursday afternoon and since then I’ve been busy writing papers (why do professors make assignments due right after break?), cleaning the house before my grandparents come for T-day (I haven’t seen them since my high school graduation 2 1/2 years ago!), doing a butt load of grocery shopping and just enjoying my time off. I definitely needed to come back in time for WIAW though! Especially since it’s just before American Thanksgiving and I have a couple of recipes to share :D

How appropriate–my most loved veggie shaped like a heart!

Garnet yams and sweet potatoes are my fave veggie right now, other than kale. Or maybe cauliflower. Anyways, I think I love sweet potatoes because they’re one of the few veggies where it’s totally normal to top them with sweet things. I went with raisins and maple almond butter this time, and it was a great combo.

Not food, but I can’t resist cute Christmas things!

I am such a sucker for all things Christmas, whether it’s a limited edition holiday coconut milk drink, or an adorable decorated Kleenex box. I realize these things tend to be overpriced, but Christmas only comes once a year. Why not live it up with a snowman tissue box ;)

Halfway through the longest paper I’ve ever had to write!

As much as I like to write, I don’t like it enough to be able to breeze through a 4000 word term paper. Ironically, this is for one of my journalism classes and in all journalism, specifically broadcast journalism which is my (hopefully) future career, the writing is very short and to the point. None of this 20 page paper bull shit  crap. At least I’m interested in the topic I’m writing about, it’s just incredibly time-consuming. But I literally only started this paper on Friday, so I’ve gotten pretty far. This calls for a coffee break…

Speaking of Christmas…my favorite Starbucks holiday drink.

Most people even hate or love peppermint. I personally love it, especially combined with chocolate. So it’s no secret that I love Starbucks’ soy peppermint mocha. And now I love it even more that they offer a skinny version. I like sweet things, but their normal version is way too sweet so I like that they have a sugar-free version so it’s not too overpowering.

I love the Christmas Pandora stations.

Speaking of Christmas, it’s definitely not too early for me to start playing Christmas music. I started a week ago, when Sirius XM started playing their holiday stations again and now I’m listening to it daily, almost non-stop. It just puts me in a good mood, even when I’m mad because I got a crap ton of work to do over break.

Another take on the easy-as-pizza cinnamon roll.

Remember when I made cinnamon rolls out of pizza dough? Cinnamon rolls have always intimidated me but when you make them with fresh dough, they are beyond easy to make and customize. This time I went with a pumpkin chocolate chip combo and it was even better than the original maple pecan rolls.

Pumpkin Chip Cinnamon Rolls (vegan)

half ball of fresh multigrain dough (can use gluten-free)

1/4 cup pumpkin puree

1/2 tbsp maple syrup (or agave or coconut nectar)

sprinkle cinnamon, to taste

powdered stevia, to taste

1/2 tbsp mini chocolate chips or cacao nibs

Preheat oven to 375.  Mix dough with sweetener to taste. Roll out dough on floured cutting board until about 1 inch thick and rectangular in shape. Mix pumpkin, maple syrup and cinnamon in a small bowl until thick and paste-like and spread on dough. Sprinkle with chocolate chips and roll into a thick log, pinching ends. Cut into 6 small rolls with a floured knife and place in sprayed baking dish. Bake for 20-25 minutes or until starting to brown on top. Serve warm from the oven topped with pumpkin butter, protein frosting or more maple syrup.

The return of the hipster glasses…

Remember when kids used to be made fun of for wearing glasses? I find it so funny that now it’s actually fashionable to wear them. These aren’t my real glasses, but they are my new favorite accessory. They add a nerdy chic touch to any outfit and I just think they’re fun.

Latest dinner obsession: pineapple fried quinoa.

I hope I never get sick of this dinner, because it is just so damn good! I think if I keep mixing around the ingredients, I could eat this forever. I’ve had it three times since last Wednesday and each time it’s been a little bit different. One time I topped it with peanut flour paste and had red cabbage and kale in it, then I had cauliflower in it and the other time I had sweet potato chunks and kale in it. Sooooooo good, so easy.

With gorgeous weather like this, I can’t complain too much.

If you’ve never been to Colorado, you probably think we’re the land of snow and cold, at least in the fall and winter. That couldn’t be further from the truth. Sure, the mountains get dumped on but here on the Front Range, we get temps in the 60s into November and December sometimes (I remember a couple of days this past January that were nearly 70!). We almost never get a white Christmas (we’re more likely to get a white Easter) and Thanksgiving Day is usually pretty warm. It’s been sunny and gorgeous all week and I’m loving it. As much as I want to move somewhere like California or Arizona for even warmer weather, I do love it here. And I get to see the beautiful mountains every day!

Can you believe I’m just trying spaghetti squash now? Crazy talk.

Guys. Why did I never try spaghetti squash until now? It’s so good, and really interesting. I like pasta and noodle dishes, but it’s all about the sauce and toppings. Spag squash makes for a great noodle replacement because it’s a fiber-filled veggie with a light taste that goes with red sauce, Asian sauces and pretty much anything. This version featured cauliflower, a spicy peanut flour-based sauce and sprouted pumpkin seeds. Gooooooooood stuff!

My latest lotion obsession: BBW sweet cinnamon pumpkin.

I go crazy over seasonal scented lotions. Bath and Body Works is my lifesaver–they have so many yummy scents at a decent price and they introduce new ones all the time. This one was new this year, and I hope they never stop making it. It’s just great, period. Please go smell this now if you haven’t.

WIAW: Strange Combos

I’ve been doing a lot of pre-scheduled posts lately because I am actually in the process of moving! Well obviously not just me but my mom, dad and sister too. I don’t want to go into too many details about the move, but it’s not really major since we’re just moving about 20 miles from where we are now. It’s kinda bittersweet, though, since I’ve lived in this house since I was 12 and I’m in love with everything about the house, especially the location (it’s in a forested area that’s pretty quiet and secluded but gorgeous and nature-y). But since I’m now spending most of the year living in my college town, my sister’s off to college in two years and all the crappy bad economy stuff going on, my family’s downsizing and moving into town to save money on gas and house costs. It definitely makes sense but it’s gonna be hard getting used to sharing a bathroom with my sister and having a smaller kitchen!

Enough with the boring stuff, let’s move on to WIAW! I’ve been kinda slacking on the photo taking with all the packing and moving shenanigans I’ve been involved in but I have some random food pics that all have something in common–weird combinations. Sometimes I experiment and combine really strange foods together and it actually works out!

Breakfast: peanut flour brownie batter pancakes, blue corn blueberry pancakes with Amande blueberry almond milk yogurt and granola.

Pancakes–normal. But pancakes made with blue cornmeal? I decided to try out the blue cornmeal I bought to make quinoa cornbread in some mini pancakes. I mixed the cornmeal with oat flour and added some blueberries into the mix. They actually turned out tasty and had a different texture than typical pancakes. The almond milk yogurt on top was my first experience with nondairy yogurt and it was pretty good, but the texture is definitely different. It’s got a lot of calcium though–30% DV–which is always something I’m trying to get more of.

Lunch: multigrain pizza pita bread, baby carrots, green chile hummus, kalamata olives, artichoke hearts with nooch, tamari pumpkin seeds.

I was going for a Mediterranean-inspired lunch snackplate here. The tamari pumpkin seeds kinda threw that off since they’re more Asian though. The pizza pita bread was from some leftover Whole Foods multigrain pizza dough that I cut into thin-ish pieces. The hummus also isn’t really Mediterranean, and it’s not my favorite hummus either. I’m still on the hunt for the perfect hummus that I can pair with anything…any suggestions?

Alvarado Street sprouted sourdough toast topped with Crofter’s mango jam, sunny “raw”nola and maple macadamias.

This was kind of a tropical take on toast. The mango jam is the best jam I’ve ever had and it went perfectly with the macadamias and granola pieces. Kinda weird to have crunchy things on toast but I don’t care, it was delicious.

Dinner: spicy mac ‘n cheez (quinoa pasta, spicy nacho cashew cheez sauce, Mexican chipotle Field Roast vegan sausage), random kale salad with Bragg’s aminos/lemon juice, nooch, raisins and sunflower seeds.

The mac ‘n cheez isn’t the weird part, the kale salad is. I really don’t know how I came up with this combo but it worked. I took raw kale, massaged lemon juice into it, spritzed it with Bragg’s liquid aminos, dumped nooch on top and sprinkled on raisins and sunflower seeds. Completely random, but totally winning.

Pancake Party!

I get into breakfast ruts a lot. For most of my life, I ate cereal with skim milk and possibly a side of waffles for breakfast basically every single morning. I’ve never been a savory breakfast kind of girl, because I’ve always hated eggs, bacon and sausage. Within the past year, though, I’ve moved away from having cereal for breakfast. First, I was on an overnight oats kick that started about a year ago. I was obsessed and came up with a million different combos. I still love overnight oats, but now I’ve been having them for snacks more often than for breakfast. Just a couple of weeks ago, I started having a smoothie-in-a-bowl basically every single day, topped with fruit or crushed cereal. So good. But since I’ve been home for the summer, there’s been only one thing on my mind–pancakes.

Before a week ago, I don’t think I’d ever made pancakes from scratch. Sometimes on the weekends I’d whip my family up a batch made from an Archer Farms mix. While they have tons of awesome flavors, they aren’t super healthy (or vegan–why do so many things have to have milk in them?) Earlier last week, I made my first homemade, single-lady pancake batch and I was hooked!

If you’re intimidated by making your own pancakes completely from scratch, fear not. They are super simple to make, take practically no time at all (maybe 10 minutes at the most, if you make a batch for just yourself) and are totally customizable. Here’s the basic formula I’ve been using…

3 T to 1/4 cup flour (I like peanut flour or oat flour)

1/2 t baking powder

1/2 to 1 T flax seed, ground and made into flax egg

2-4 T unsweetened almond milk (any flavor) plus extra water to thin

sweetener (I’ve been using Truvia packets or flavored liquid stevia)

Stir flour and baking powder together in a small bowl until combined. Add in liquid ingredients until mixed well. The batter should be thin enough to drip off a spoon but thick enough to hold together. Makes 3-4 small pancakes.

The baking powder is really the only thing you can’t substitute. You can use any flour you like, gluten-free or whatnot. If you’re not vegan or don’t have flax on hand, sub in egg whites or chia seeds. You can use all water, or all almond milk, or any kind of milk you want. If you don’t have a sweet tooth, you can leave out the sweetener or you can use a liquid sweetener like maple syrup or honey. And of course, any add-ins  and toppings you like! You can even play around with the texture. I love mine really thick and fluffy, so I make tiny, pillowy pancakes.

I’m sharing some of my favorite combos that I’ve made so far–all of them have been amazing and so much better than pancakes made from mixes!

Carrot cake pancakes made with oat flour and shredded carrot/fresh pineapple chunks/cinnamon/raisins, topped with peanut flour sauce and raisins.

PB&J pancakes made with peanut flour and topped with homemade strawberry jam and sunflower seed butter.

Cookie dough pancakes made with oat flour and chopped vegan chocolate chips, topped with honey vanilla agave syrup.

Tiramisu pancakes made with oat flour and Starbucks instant coffee powder, topped with homemade cashew ‘mascarpone’ cream, dusting dark cocoa powder and honey vanilla agave syrup.

Cashew ‘Mascarpone’ Cream (vegan, gluten-free, no added sugar)

1/4 cup cashew pieces, soaked in water overnight

2-3 T unsweetened almond milk (vanilla or plain)

5-6 drops liquid vanilla stevia, to taste

Drain water off cashews and pour into food processor or high powered blender. Add in almond milk and stevia and process until mostly smooth and creamy. Serve on top of pancakes/waffles, as a dip for fresh fruit or as sandwich filling. Makes about 1/4 cup.

WIAW: A Day of Red & Pink

Hey everyone! I hope you all had fabulous weekends! Mine was really good, since I spent it at home, and actually a little longer than usual, because of a snowstorm that kept me here for another day. But I’m not complaining ;)

Anyways, I really wanted to thank every single one of you who commented on my last post. I loved that you guys spoke your mind in a very respectful way and I really liked the conversation that the post sparked. I really do believe that every person is totally different and as such, they have completely different nutritional needs and we should all be respectful and understanding of that, which you all did. So thanks again!

Peas and Crayons

Moving on to WIAW for this week! I decided to do mine a little early, since I wanted to do a special Valentine’s Day edition and V-Day is today! Basically, my meals were pretty pink and red (and chocolate-y) today in honor of the holiday. I’m not a huge fan of V-Day, but I also don’t hate it. I mean, my parents are basically the best Valentines ever, since they got me the sweetest card, a pink carnation plant and a cute American Eagle scarf. And after all, the day’s a good excuse to wear pink which is exactly I did. But more on that later!

Breakfast: raspberry mocha smoothie in a bowl topped with Kashi GoLean, peanut flour paste, gummy vitamins and a couple vegan chocolate chips.

This was my first attempt at a smoothie in a bowl and while it was super tasty, it wasn’t thick. At all. More like cold soup, which is alright but I want a super thick smoothie. Looks like I have to invest in some xanthan gum…Anyways, the smoothie was just a mix of some frozen raspberries, cocoa powder, u/s vanilla almond milk (my personal fave brand is Pacific Naturals) and a little Starbucks instant coffee powder. I love the little caffeine burst+coffee flava in the morning without shelling out $4 for some ‘bucks. Speaking of which…

My dad and I hit up the ‘bucks on Sunday for some afternoon coffee and I was soooooo excited, because I’d heard about the special V-Day cups. I am such a sucker for all things seasonal so this did not disappoint. I also tried out a new-to-me drink, the skinny caramel macchiato with soy and it was delicious and caramel-y without being too rich. Definitely a repeat order.

Outfit of the day: hot pink cropped cardi (A&F), pink ruffled tank (A&F Kids), tan corduroy jeggings (Hollister), pink plaid scarf (American Eagle), pink polka dot headband (American Eagle).

I was honestly surprised by how few people were wearing red or pink on campus. I guess I just like to be festive ;) The pants look like a nasty color in the photo, but trust me, they’re actually a caramel color, not a gross mustard yellow. The lighting in my dorm is pretty pathetic!

Lunch: butternut squash cubes with cinnamon, chocolate brownie Pure bar, raisins.

Who says you can’t eat a brownie for lunch? It is Valentine’s Day, after all! And of course, the chocolate brownie Pure bar is super-healthy, so it’s alright. I enjoyed this lunch on-the-go between classes as per usual.

Snack: raspberry zinger tea, superfruits Oikos.

My favorite Oikos flavor, hands down, would have to be the superfruits. It’s an amazing mix of pomegranate, raspberry and acai and I just love it. I haven’t had it in literally months, though, because the stores me never seem to stock it. When my lovely mom picked up groceries for me last week, she found it and knowing how much I love it, got it for me. Now I get to enjoy it three more times!

Dinner: dark chocolate raspberry "cheesecake" oats, smart bacon.

I love love LOVE having oats for dinner…with some protein and a fruit or veggie to balance it out, of course. Tonight I went for a really sweet oats combo of dark cocoa powder and frozen raspberries with a spoonful of plain Greek yogurt stirred in. The yogurt made the oats really creamy and reminded me a little bit of cheesecake. A healthy cheesecake, of course!

Snack: bunny pretzels, organic strawberry jam, almond peanut cashew butter, peanut flour paste.

Of course I had to use my heart-shaped bowl at least once today. I’m not really sure how this snack is related to Valentine’s Day, except that it’s in the bowl and it has strawberry jam. It’s just one of my favorite snack combos at the moment!

WIAW: A Day of Raw Challenge

Hey ladies, how is February treating you so far? I’m just glad we’re that much closer to March–I can’t wait to bust out the dresses and flip-flops again!

As I promised in last week’s WIAW, I have a special edition of the weekly foodie party for you this week. As you might know, I’ve recently become interested in raw foodism. Let me just clarify that I am not considering eating 100% raw–I like the principles behind it and its health benefits, but I feel good right now with my current ‘almost vegan’ lifestyle and I feel like at this point in my ED recovery, I shouldn’t be excluding all cooked foods, because they are nutritious (not to mention delicious)! However, I do like making raw treats from time to time and I also love things like raw fruits and veggies (I actually prefer my veggies raw!) and nuts so I thought I’d try eating totally raw for one day and share my experience on here for a WIAW post. So here goes!

Breakfast: raw carrot cake bite topped with raw walnut butter, red grapes, dried mango slice.

Normally, I love my oat-filled breakfasts, usually with a side of veggie bacon or veggie sausage, or sometimes just a bowl of plain Greek yogurt and fruit, but this was a good way of switching things up. However, this meal didn’t have quite enough staying power (aka protein), so it’s not an ideal breakfast but still tasty.

Lunch: chocolate brownie Pure bar, baby carrots, freeze-dried mixed fruit.

However, I did get a little more protein at lunch with the delicious Pure bar! I love Pure bars, because they are basically bigger Larabars with a little bit fewer calories and more protein (7 grams in this flavor). I almost can’t believe they’re raw, they’re so good! The chocolate brownie is my favorite flavor, hands-down, plus I really needed my chocolate fix for the day since I couldn’t have my usual daily dose of  a handful of dark chocolate chips. I think I should invest in cacao nibs because they’re raw–I’ve heard they take some getting used to, though. The carrots and dried fruit were good for crunch and overall, this was a pretty balanced meal.

Post-lunch dessert: Medjool date stuffed with raw pecan halves.

I also had some unpictured frozen pineapple chunks during my weather and climate lab. The date and nut combo is amazing, it tastes exactly like a turtle sundae. Well, without the ice cream, of course, but it’s a good raw substitute.

Afternoon snack: Pink Lady apple, handful raw pecan pieces.

Having just fruit and nuts for a snack isn’t something I usually do, but it was actually really tasty. I drizzled the pecans with a little raw honey and they were even tastier. I think pecans are my new favorite nut–sorry, almonds.

Dinner: sprouted quinoa bowl with raisins, shredded carrots and raw walnut butter, blood orange.

Sorry about the awful photo quality–I eat dinner around 7 pm so it’s pretty dark, aka no natural lighting so I just wing it. Instagramming the photos usually helps somewhat though! Anyway, this was my first time trying sprouted quinoa and I gotta say, it was a little weird at first, since I’m used to fluffy cooked quinoa but the crunchiness was interesting. I mixed it up with some raw walnut butter, carrots and raisins, making a carrot cake sprouted quinoa bowl of sorts, and I had some water and a blood orange on the side. The quinoa was pretty bland, but I’d like to try using sprouted quinoa in some kind of salad with a good dressing.

Dessert: frozen banana slices drizzled with raw honey.

No day would be complete without a nighttime snack! Of course, I love the combo of frozen bananas and raw honey, so I definitely enjoyed this dessert. Sweet, simple and cold. It was worth shivering the rest of the night–yes, I eat frozen stuff in the middle of winter!

Overall–I had plenty of energy to get through the day, and it made me feel refreshed and ‘clean’. However, there were definitely some foods I missed (namely peanut flour, sweet potatoes and oats), so obviously this raw food thing is not going to become a daily occurrence. I think cooked foods have a place in a healthy diet, and I don’t want to deprive myself of foods I love just to be completely raw. I do like that the challenge helped me get out of food ruts and try out some new combos, and it also challenged me to overcome my fear of fats (most raw foodism is based on using nuts, which have lots of healthy fats). I didn’t like that I wasn’t able to get as much protein as I usually can, and I don’t even normally eat a ton of protein, usually between 35-50 grams per day, and on my raw day, I only got 18 grams. Yeah, not so good but it was just one day so I’m not sweating it. So basically, there are some aspects I liked about the challenge and others weren’t my favorites but I feel good about mixing it up and trying something new. I would consider doing another ‘day of raw’ challenge in the future if I had more options, since being in a dorm I was mostly limited to fruits and nuts. In the future, I’m going to stick with my usual mix of raw and cooked foods, and also try out new raw food recipes occasionally.

Too Much Fruit?

Can I just tell you how excited I am for Thanksgiving break? I know, I know, I’ve pretty much mentioned it in at least my last 5 posts probably, but it’s really exciting. 9 days away from school–woooo! Now, I do love having a room all to myself, but as I’m one of the only sophomores in my hall, let’s just say that I’m getting really sick of all the immature freshman being loud at the worst possible hours. Like last week, they all decided to chat out in the hall right by my room…at 3 AM! Okay, I know I’m a granny when it comes to bedtime, but staying up til 3 is ridiculous, especially on a school night. Can’t wait for them to grow up and stop screaming and giggling constantly. Needless to say, I’m looking forward to the relative peace and quiet of home, seeing my family for over a week, as well as unlimited access to the kitchen. That is for sure the best part!

Anyways, today I have sort of a rant for you guys, so if you’d rather not read, I understand. But honestly, it’s not really that negative, just something that’s really bothered me lately. And it’s about fruit, my favorite food group.

I love fruit on its own...

Who doesn’t love fruit? I’ve loved it my entire life–I was never one of those kids who had no idea what a fresh apple looked like or whatever. We always had fruit around my house, and I’d probably have it at least once or twice a day. Today, I’m such a fruit freak it’s not even funny. I probably have it 4 times a day, at almost every meal or snack. Seriously, I love it that much! I always have to have grapes, bananas, apples, various dried fruits and sometimes even frozen fruit in my dorm because I can’t go a day without it. And you know what, I always thought it was really healthy. I mean, we’re supposed to get like 3 to 5 servings each of fruits and veggies a day, and while I’m sometimes slacking on the veggies, I never neglect my beloved fruit. But now with all this talk about diabetes and obesity, a lot of people are encouraging cutting down on fruit.

Say what? Fruit is nature’s candy–it’s naturally sweet, with plenty of vitamins and antioxidants and fiber. Most are low in calories and fat, so how can it be that bad? Well, apparently, all the sugar in them. I just recently started using this MyFitnessPal app to track my food (just as an experiment to see how much I’m really eating/burning, NOT to restrict) and I’ve been shocked at how high my sugar intake has been.It’s usually around 60 grams, and they recommend only 25 in a day. I freaked out, but then decided to really look at the numbers. I realized that most of it was coming from fruit. I usually have an apple per day–there goes 10 grams of sugar! Half a banana has basically the same amount, and dried fruit has a TON. But really, it’s not like I’m overdosing on the fruit or anything. I loved dried fruit, but I usually even eat less than the serving size. Having a serving of fruit 4 times a day isn’t really that bad, is it? Well according to this app, I’m probably going to become a diabetic soon.

Honestly, I think it’s completely ridiculous. They should have a disclaimer or something saying that the 25 grams is added sugars only, not the natural ones found in fruit and some veggies. Otherwise, some people might start cutting fruit out of their diets, which isn’t good. Fruit is so healthy for you, in moderation, and some people still don’t even eat the recommended amount. With all this hype about sugar being so bad for you, everyone’s going to start shunning fruit!

When I subtract the sugars I’m getting from the fruit I eat, I actually end up around their recommended 25 grams. And I love my fruit, so I’m not going to give it up. I don’t care what all these ‘so-called’ experts say–if I want to enjoy an apple with my lunch, or some berries with breakfast, I will! Recovering from an ED, I have enough fear foods as it is without adding fruits to my list. That’s just ridiculous. #rantover

Okay, this is random, but isn't this like the cutest thing ever? I found this website called cutestpaw.com and it has the most adorable animals on it!

My Foodie Staples

Aren’t there a few many things you can’t live without? I’m sure we all have them, I know I do! They tend to change every once in a while, but I definitely have some items I’d prefer to not go without. With that being said, here’s my current list of foodie staples!

Cereal: Right now, I’m loving on the PB Puffins (hope I never get sick of those!), Kashi Honey Sunshine, 365 Organic Honey Crunch & Oats and Cascadian Farm Cinnamon Crunch. I also really like Bear Naked Fit granola (especially triple berry crunch–what’s with all these cereals and having crunch in their name?) and Udi’s cranberry granola. I generally don’t have cereal at breakfast (I used to everyday, though) but it makes an amazing snack…or small dinner?

Fruit: Gosh, no way could I ever live without this! I love almost all fruits I’ve tried, except for plums and pears. In my dorm, it’s hard to have some of my favorite fruits, like pineapple and berries, so I’m sticking with some tried-and-true varieties, like bananas, black grapes and apples. They’re all pretty versatile and easy to take with me to classes.

Veggies: I also love veggies, but I don’t really have a way to cook it, so raw it is. Luckily, I love raw cauliflower, and it’s pretty easy to eat. I also discovered butternut squash, which is amazing and simple to heat up in the micro. Plus it comes pre-cut (thanks, Whole Foods!) so it’s perfect for someone without a sharp knife handy. Baby carrots are also a good option.

Dried fruit: Mmmmmm, yes! Dried fruit is the bomb.com and even less of a hassle to bring to classes. I love Medjool dates, raisins (golden and regular), dried pineapple, freeze-dried fruit…the list goes on and on. I just look for dried fruit without any added sugar or chemicals and I’m good to go!

Mini frozen burritos: I have 2 small fridges with tiny freezer compartments, so I need all the space I can get. EVOL makes mini burritos, which are perfect as a snack or part of dinner/lunch. I love the veggie fajita kind, since it’s vegan and yummy. Score!

Sweet potatoes: I’ve been missing these guys like crazy lately, but luckily, they’re back in my life again. They heat up quick in the micro and taste so so good topped with almost anything–nut butter, trail mix, honey, guacamole, chili powder…

Spices: Speaking of chili powder, girl’s gotta have her spices. All I got right now is curry powder, ground cinnamon and hot Mexican chili pepper, but it’s good enough for me! Those are probably my 3 fave, and they can ‘spice’ up anything from coffee (the cinnamon, of course) to veggies.

Truvia: I like things sweet, but I don’t want to add real sugar to some things, ya know? That’s where Truvia packets come in. They’re easy to carry around in case I get an unsweetened iced tea on-the-go and I always add a packet to my oats to sweeten them up. I love that they’re a natural sub for fake sugar.

Almond/nut butter: Where would we be without nut butter? As I’ve said several times before, PB is not my fave (sorry!). But I absolutely adore almond, and lately, almond peanut cashew. Nut butters are soooooo good on sweet taters, as an oats topper, on wraps/sandwiches, with fruit (especially dates) or even off your finger ;)

Morningstar spicy veggie sausages: I have one of these almost every morning, and have for probably the last year. Somehow, I’m not getting bored of them. I’m definitely not a savory person, especially at breakfast, but they’re a great source of vegetarian protein, they’re easy to make (except when your micro burns them…) and they taste so darn good. I like anything spicy, like I’ve said millions of times before.

Organic jelly: It’s kinda upsetting how many jellies have high fructose corn syrup in them. I mean, come on, why can’t they just have simple, natural ingredients? When I found Smucker’s Organic line of jellies, I fell in love. Sure, there’s still sugar in them, but it’s real sugar, and it’s natural and organic. There aren’t any weird ingredients in it either. Is it weird that I like it with nut butter and crackers????? It’s also delish as an oats topper.

Starbucks VIA instant coffee: I can’t live without my ‘bucks fix every once in awhile. But when you’re a college student with no car, it’s kinda hard to get. Lucky for me, they came out with instant coffee packs that are almost as good as their brewed stuff. Not only do I love it in homemade skinny lattes, but it’s amazing mixed in with overnight oats. Talk about an energizing breakfast :P

Protein bars: I’m no athlete, but I still eat these like it’s my job. Kidding, but I do love ‘em. I don’t get the huge ones, like regular Clifs (I usually cut them in half to have as a snack), I prefer the Mojo kind which are like trail mix bars, and Pure and Halo bars. They make a perfect on-the-go lunch alongside some fruit and they come in so many varieties. My faves at the moment are Mojo white chocolate macadamia and mountain mix, Pure chocolate brownie and Halo s’mores and nutty marshmallow. I try to get bars that have at least 6 grams of protein (the Halo ones don’t, but they’re good for a snack) and only natural sugar.

Almond milk: I switched to soy last May, and I liked it for a while, but now I prefer almond. I still have soy milk every so often (the Silk seasonal kinds are SO good) but now I’m trying to buy almond more often. I really love the Pacific Naturals unsweetened vanilla, but the plain Whole Foods brand is also good. It lasts longer in the fridge than soy and has a nice, light nutty taste.

Rolled oats: Of course I have these! I probably have oats in some form every single day…well actually, I pretty much just eat them in overnight oats :D Unlike a lot of people, I prefer overnighters to cooked oats. But anyways, oats are incredibly versatile, easy to prepare and so healthy. I don’t even want to start to explain my overnight oats, so just check out my page devoted to them!

 Greek yogurt: Another “duh” if you read my bloggy regularly! Oikos is my one true Greek yo’ love, but sometimes I go off and have an affair with Fage mango guanabana or blueberry acai. Shhhhhh, don’t tell ;)

WIAW: Compare & Confess

Hi everyone :D How was your weekend? Ehhhh, mine was nothing special but sometimes stuff’s gotta get done and it’s not fun but it feels so much better when you finish it.

Peas and Crayons

Do you ever have weeks when you take food pics and you think, “Awwww man, I gotta pick just ONE of these pictures for each meal! But a lot of them are really good!” That’s how I feel a lot, so I decided that for this weeks WIAW, I’m going to do a little ‘comparison game’ or whatever and post 2 pictures for each meal instead of just one. And for even more fun, I’m gonna add in a little confession session that I saw on Amanda’s blog recently. So here we goooooooooo!

Monday's breakfast: carrot cake overnighters topped with drippy AB and raisins, spicy veggie sausage, gummy vitamins. Yurmmmmm ;)

Tuesday's breakfast: cake batter oats (with sprinkles!), spicy veggie sausage (do I even have to mention this?), gummy vitamins, gummy calcium chew. I felt like a kid eating this breakfast, because it had sprinkles and gummies! No shame, though.

Confession: I don’t like PB. Errrrrr…please don’t attack me 8O !!!!!!!! I honestly have not had peanut butter in years, probs since elementary school, and even then I wasn’t a huge fan. I actually prefered just-jelly sandwiches to just-peanut butter ones. Yes, crazy I know but that’s just me. But I’m not a nut butter hater by any means–almond butter wins my heart! It’s just…IDK, so much richer and yummier than PB, in my opinion.

Sunday's lunch: Amy's low-sodium Cali veggie burger spiked with curry powder, with carrots, raisins and frozen nanner slices on the side. A more traditional lunch.

Monday's lunch: Oikos Greek yogurt cup in honey, peanut butter Puffins (addiction!) and date. Sometimes (errrr, all the time?) you just gotta satisfy the sweet tooth.

Confession: I’m not a runner. I know that it seems to be some sort of prerequisite or something to be a health/food blogger, but I’m just not into running. I really admire people that are hardcore runners for XC teams or do marathons all the time, but it’s not for me. My “sports” of choice are tennis, mountain biking and yoga. And that’s okay, ’cause everyone’s different (and I’m totally not dissing running, bee-tee-dubs). Whatever floats your boat is what I say.

Outfit of the day, as per usual: cropped denim jacket (birthday present), red floral romper (Hollister). I thought I looked cute, until I had to go to the bathroom, and realized I had to take off the jacket and the romper. Yikes. Talk about high maintenance.

...and, random tickets to the gun show! Bahaha, just kidding. I'm not sure why this is in here, but I'll roll with it. I still struggle with thinking my arms are HUGE, but I'm working on it. Body by yoga, people!

Confession: I actually read the newspaper on a daily basis. Call me crazy, but I like to stay informed. Plus I basically only read the lifestyle, food, fitness and comic sections :P Plus I’m a broadcast journalism major, can ya blame me? Of course this means I watch the TV news too!

Monday's afternoon snackie: Late July Mild Green Mojo multigrain chips (aka my crack), frozen nanner slices (when will these run out?) and homemade Greek yogurt/guac dippage. Sometimes my savory tooth comes out of hiding and I gotta tame it.

Tuesday's afternoon snackie: PB Puffins (told ya they're addicting) alongside a dark chocolate almond butter fudgie. You can't go wrong with this flavor combo.

Confession: I would usually rather do something with my family than with people my own age. Since high school’s been over, it’s been kinda hard for me to really connect really well with other people that are the same age as me. I feel like a granny compared to them, because I’d rather go to bed early (11 pm or midnight) and wake up early-ish (8 am…well, early compared to most college kids) and I absolutely hate partying. Unfortunately, I’ve mostly found that everyone around me wants to party down every weekend. Different strokes for different folks, I guess. No thanks, I’d rather remember my college years and actually get a career when I graduate, so partying is a no-go for me, plus it’s not that fun. Plus, I really love my fam–they are amazing, they ‘get me’ and we always manage to have fun together.

Monday's later-than-usual dinner (due to random floor meeting): Whole Foods spicy black beans, half toasted Ezekiel tortilla topped with spicy guac, side of mango and pineapple. I thought I'd love the beans, but I wasn't a fan. They weren't so much spicy as they were, um, tomato-y. Disappointed, but next time I'll just rinse off all the sauce and call it good.

Tuesday's dinner (sorry about the awful lighting, it's starting to get dark when I eat!): big honkin' sweet potato topped with agave almond butter dip and trail mix, frozen tropical fruits. I wonder why I haven't turned orange yet, with all the carrots/sweet taters/mango I eat?

Confession: I have a weird addiction to medical mystery shows like Mystery Diagnosis. I think a part of me wants to be a doctor of some sort, but the other part of me totally hates math and science so…nah! I just find these shows so fascinating, but they also kind of make me go all OCD and worry that I might have some of the same symptoms and wait years for a correct diagnosis. Yeah, I’m a big worrier!

Monday's dessert: second ever experience with deep chocolate Vitatops...sooooo amazing! I love how the chocolate chips get all melty when you heat up the muffin. A side of raisins for good measure (plus I'm obsessed with them).

 

Um, sometime-last-week's dessert: dark chocolate overnighters topped with chocolate apple crunch trail mix, with the ever-popular frozen nanner slices on the side. You can't go wrong with chocolate, trail mix and banana.

Confession: I have a may-jah sweet tooth. But, uh, I think y’all already knew that ;)

As if you needed more evidence of my sweet tooth (seriously, I must have something sweet at every meal, whether it's just fruit or cereal or something), here's Sunday's entire dinner: PB&J Remix overnighters (topped with PB Puffins and raisins, for the PB and jelly), bloobs on the side. I don't do oats for dinner usually, but I gotta admit that I love them.
