On Fullness, Rest Days and Intuitive Eating

You might be thinking right now, “Wow, 3 super-taboo blog world topics in one post? This girl is cray.” I can’t necessarily dispute that last statement ;) but as much as I think these issues have been discussed to death lately, I needed to provide my own views on the topics. Amanda had a great post on this last week and it really got me thinking about how bloggers put too much emphasis on what they’re putting into their mouths and how much they’re moving their bodies. Health is important of course, but not when it becomes obsessive.

So first, my thoughts on feeling full. I have to admit, I don’t have the best relationship with this feeling. I have always had a small stomach capacity, so I’ve never been able to eat much without feeling fuller sooner than others. I’ve mostly resolved this issue by eating 5-6 small meals every day and this works for me. But, I still experience very negative emotions when I do get full. Generally, I only feel truly full after meals out, since restaurant portions tend to be larger, and even if I don’t eat the full amount, it can still be overwhelming, no matter what it was I ‘filled up’ on. Let’s look at two examples from this weekend. On Thursday night, my family came up to my apartment because my sister had a college visit at a college nearby and they wanted to save money on a hotel. We went out to eat at one of my favorite restaurants up here, and I had a delicious, individual-sized pizza with kale, garlic, figs and grilled onions on thin crust. I ate 4 out of 6 slices, along with a small orange cream vegan and gluten free cupcake following. After eating, I felt satiated but not too full. Usually, I would feel quite full for maybe half an hour, and feel some guilt over eating ‘that much’ but we ate fairly late and I hadn’t had much to eat in a few hours. However, the following day my mom and I got Qdoba for lunch. I had my usual, the naked veggie salad with black beans, habanero salsa and lots of guacamole. I ate most of the salad, and when we ran errands afterwards, I could sense that I was full, and it messed with my mind for most of the afternoon. Why was I feeling so full after basically just eating lettuce, beans and avocado? I felt guilty for eating most of my lunch, even though it was healthy and balanced.

Basically, I just have guilty feelings associated with being full, no matter what I got full from. I don’t think this is a healthy relationship to have–I’m not saying feeling full after every meal is necessarily good either, but it’s okay to feel full from a meal every once in awhile,  especially if you enjoyed it while eating. And some days, we just aren’t as hungry, and can get filled up from even little meals, and we shouldn’t beat ourselves up about it.

About rest days. I’m bad about taking them myself, but I absolutely believe they’re essential for everyone, from pro athletes to casual exercisers. Since I’ve been exercising regularly (for about the past 2 years), I’ve rarely gone a day without some form of a workout. There were a few days when I was out all day and didn’t get in a traditional workout, but I was on my feet all day running errands or shopping and I counted that as my workout, since it was pretty strenuous after a full day. But even on the days when I exercised a little less than the day before (usually because I was too busy), I freaked out. I would love to say I work out just for the good feeling it gives me, but that’s not entirely true. I also do it for the calorie burn, and because it makes me feel okay with eating. Sad, but true. But on Friday, I worked on my exercise guilt. Since my family was up here, and then we headed back to the Springs after my sister’s college visit, I couldn’t fit in a lifting session or even a quick ab workout. I wasn’t completely sedentary (my mom and I ran errands around town for an hour or so) but I didn’t do much other than that, and surprisingly, I was kinda ok with taking a rest day. Sure, I got right back into my routine on Saturday, but it helped me realize that a rest day here and there isn’t the end of the world. In fact, it might help with exercise burnout, and in preventing overuse injuries. I’m not sure if I’m ready to take a full rest day every week, but I’m hoping to get there soon.

Finally, onto intuitive eating. This one has been discussed so much lately, so I don’t want to go into too much detail here. But I do think it’s been misconstrued a lot. I think moving away from calorie/macro counting and measuring is a great thing (and something I’ve been doing since the beginning of the year) but not when it turns into something that isn’t intuitive at all…orthorexia. I know, because I’ve fallen into it myself. I’ve become more hyper-focused on the ingredients in the foods I’m eating, and it’s been obsessive at points. It might seem healthier than calorie counting, but it can be just as destructive. When people start saying they’re eating intuitively, yet still stick with ‘safe’ foods, that could be a red flag for orthorexia. When someone’s obsessed with clean ingredients to the point that they get anxious about eating foods they don’t know the ingredients for (I’m guilty as charged), it could be a sign of orthorexia. Intuitive eating isn’t about stuffing your face with cake or ignoring all healthy eating guidelines, but it isn’t about eating ‘clean’ 24/7. It’s about being flexible, sensing fullness, enjoying your food and not letting it rule your life. I feel like I was pretty good about eating intuitively this weekend. I had everything from fancy vegan pizza, to nori wraps, to Larabars, to a vegan gluten-free cupcake, lots of guac and roasted veggies to protein smoothies. I ate pretty balanced everyday, enjoyed all of my food, didn’t freak out too much when I felt a little fuller than usual and didn’t overthink my choices as usual. I know this is something I’ll still struggle with, but feeling more free is a great thing!

WIAW: Easter Weekend

It seems like Easter was weeks ago, but nope, it was just a couple of days ago! Obviously I’m great at procrastinating on posting about it ;) But seriously though, it’s getting to be that busy time of the semester, when everything is just starting to pile up so apologies if I go missing around here for a few days!

Easter weekend was one of the best weekends I’ve had in awhile. I really needed the long weekend after a rough post-spring break week back at school, so the fun and rest was much appreciated. I’ll break it all down for you in some pics I snapped over the weekend.

Thursday started out with morning classes, and then my mom drove up to bring me back home. She got up to my apartment around noon so we stopped for lunch before hitting the road. We went to Wahoo’s, one of our old favorites that we now can’t get back home since all the locations shut down. Luckily my college town still has one–Wahoo’s has the best guac, hands down. I got a surprisingly amazing salad topped with guac, salsa and roasted veggies.

Fast forward a couple of hours. My parents were both in a Holy Week play at our church so my sister and I went to go watch them. For not having many rehearsals, everybody was really good and a lot of the monologues were very emotional.

Friday morning I got to sleep in a little, and then after lunch my mom and I went out to find birthday presents for my dad. Shhhh, don’t tell him I told you but he’s turning the big 5-0 today! Anyways, we also hit up Whole Foods as per usual so I could pick up groceries for the week ahead. I got a few new things as usual too–the Sunwarrior chocolate was ordered by my dad off Amazon, but everything else was bought by me. So far, I loved the sweet potato apple fruit strip–it was delicious and only a couple of grams of sugar–the nori sheets (perfect for raw wraps) and the kale chips. Seriously, the Kale Krunch brand is the best, I’ve loved all their flavors I’ve tried.

This may seem weird as a clean eating vegan, but I LOVE pizza! By pizza, I don’t mean mass-produced Domino’s or frozen pizza with greasy cheese and no veggies. I love good quality, hand tossed pizza from authentic restaurants topped with classic Mediterranean toppings like olives and artichokes and thin crispy crust. And of course, no cheese! Even when places offer vegan cheese, I never order it because I like to keep my pizzas focused on the veggies. We ate dinner pretty late since we went to the Good Friday service at our church before (always a very moving service) but surprisingly, I wasn’t too freaked out about eating dinner around 9. I even ate 4 out of 6 of the slices…and had two leftover for a great dinner on Saturday!

Who needs to dye eggs when you can accessorize them? At my house, we’ve decorated Easter eggs since I was little and I can’t imagine not doing it. This year, I convinced my mom to buy the diva decorating kit from Target rather than the usual glitter and dye kits. Yes, I’m still 5 years old :D My sister and I had a blast glamming out our eggs to be rocker chicks on Saturday night. Easter eggs have never been this cool!

What’s better than homemade pancakes on Easter morning? Ok, for me, waffles would win, but my waffle maker lives at my apartment while I’m at school so sadly I couldn’t make them. But I settled for carrot cake pancakes, made with almond and buckwheat flours (so technically grain free, since buckwheat is a seed, like quinoa), shredded carrot, raisins and topped with peanut flour paste and cashew butter and more raisins, dipped in real maple syrup. If only I could make pancakes every morning!

I didn’t realize it until looking at my photos from last year, but I wore the same dress last Easter. Oh well, I’m sure no one but me noticed. Easter is usually snowy and cold here for some reason (April is one of our snowiest months, go figure) but this year we had no snow at all and it was actually sunny and in the 60s. So I could wear a dress without bundling up in a coat and sweater too!

Sprouts is my savior…first they had the ALT Larabars, now they have strawberry Zevia. And unlike the grape, which I only sorta liked, this one was delicious and almost tasted like watermelon (always a good thing). And I just love the light pink can color!

Another Easter tradition that never gets old? Hiding Easter baskets! My mom hid one for me, my sister and dad this year and I still loved searching all over the house for it. And I was pleasantly surprised to find that she had filled it with my favorite nail polish color, great smelling lotion and vegan candy from Whole Foods. Now, to be 100% honest, I’m still a little wary about this candy–it’s healthier than most but it still doesn’t have completely ‘clean’ ingredients up to my ridiculous standards. However, I know she wanted me to be able to enjoy some candy, so I’ll try to get over my fear and enjoy a little of it every day. It’s not even that unhealthy, to be honest, just another issue I’m still dealing with.

Easter dessert was something I haven’t had in awhile–ice cream! I love coconut milk ice cream, but again, it was something I pushed aside because it wasn’t totally ‘clean’. However, I really like the no sugar added kind by So Delicious and it’s really not that processed so I enjoyed a small bowl of the vanilla with blueberries and a homemade chocolate PB bunny on the side (recipe to come).

Easter weekend was extra long because I didn’t head back up to school until early Monday morning. Once back at my apartment after classes, I whipped up another batch of the homemade chocolate PB bunnies (this time I made ‘eggs’) and also experimented with making a carrot cake inspired version. Both kinds turned out amazing, so look for those recipes very soon! Both recipes have no added sugar, and are super easy to whip up.

Friday Faves (November 2): Vegan MoFo Style

Hey guys! So I haven’t done a Friday Faves post in awhile, but I really wanted to recap some of the best things I ate last month in honor of Vegan MoFo. Seeing as I’m basically 99 percent vegan, all of my food is vegan, but I had a few exciting meals and recipes from October that I want to share with you guys again. So here goes!

 

Best Vegan Meal in a Restaurant: Raw Enchiladas with “Rawfried Beans”, Tasty Harmony

 

When my dad came up for Homecoming/Family Weekend at the beginning of the month, I had to drag him to Tasty Harmony, after practically drooling over their entire menu. Before you think I’m weird, this was the first time I’d ever gone to an entirely vegetarian (and mostly vegan) restaurant so I was excited. I ordered my first ever raw entree in a restaurant too, and I loved it. The “beans” were exactly like refried beans, only they were made with nuts and seeds. And the carrot cake my dad and I shared was to die for. I want to know how they made it, so I can make it at home. The best part was, my dad loved his meal too and wants to go back…hopefully when my family visits me next weekend!

Best New Snack: Apple Nachos

 

A lot of you have mentioned that you think these are super creative. I’m not sure where I got the idea from, but I love them too! They’re easily customizable and are packed with fiber, healthy fat (if you top with nut butter) and protein (if you top with protein frosting).

Best Weeknight Dinner: Socca Pizza

 

I’m so mad I only just discovered socca…because I could have been devouring it for years! It’s just so good, and deceptively easy to make. My favorite toppings for it are either traditional pizza toppings: nooch, red sauce, kale and kalamata olives; and I also like vegan creamy garlic dressing and kale for a take on spinach white pizza.

Best Money-Saving Grocery Trip

 

Yes, this was all bought at Whole Foods on one trip, and yes, it cost me under $30. How is that for being vegan on a budget? Especially for a picky, health-conscious vegan like me, it can be tricky to stay under budget (especially since I’m a sucker for impulse buys, especially seasonal items) but I’ve been learning a lot by doing my budgeting posts and I’m getting better at it. This just goes to show that you can buy “splurge” specialty items, organic products and produce without emptying your wallet.

Best Recipe: Pumpkin Macaroons

 

I didn’t get to post as many recipes as I would have liked to during Vegan MoFo, but I did get a few good ones in there. These macaroons were surprisingly easy to make and really good for a little snack. Unfortunately, I had to toss most of them because I made them around the same time as the fridge debacle (aka my fridge broke and I got a new one) so they didn’t end up staying fresh. But I want to experiment more with macaroons and recipes in general. I’ve been in a food rut lately and I need some new, delicious things to make!

I can’t say enough good stuff about this product–even if you do dairy, please try this! It’s a lot better for you than the traditional holiday-type drinks and if you love the mint chocolate flavor combo, you will love this.

WIAW: Weekend Fashion & Monday Food

I’m baaaaack after a semi-relaxing weekend and a busy start to the week. You know how it goes. But I’ve got a major countdown going on until Thanksgiving break…only 23 days until no school for a week and a couple days! Yeah, that’s 23 days totalincluding weekends. Where has the semester gone? There’s only 5 1/2 weeks left, not counting finals week. Not that I’m complaining though. I’m in desperate need of a break!

Spooky Snacks and Healthy Halloween Treats

This week’s edition of everyone’s favorite party features what I ate on Monday, along with a few extra pics from the weekend. I’ve been taking more fashion photos lately so enjoy those!

Can I pull off the hippie look?

Sometimes I think I could almost be a hippie. Vegan? Check. Liberal leaning? Yup. Long hair? Of course. Love of boho fashion? Sure. I don’t do the whole drug thing or ‘natural’ hygiene habits (I like my showers and trips to the salon, thankyouverymuch) but I think I could fit in with the hippie crowd just fine. Plus I have a newfound love for their headbands. I just think they add a cute touch to almost any outfit. But are sparkles considered hippie?

Or maybe I’m more of a hipster, writing a paper in Starbucks…

I spent a few hours on Sunday at my favorite FoCo Starbucks. Not because I love coffee so much (though I do) but because I had a paper to write and I thought I’d be less distracted at ‘bucks. Well, turns out that a change of scenery did me good. I was able to finish the paper, enjoy a tall Americano with sugar-free hazelnut and do some people watching while jamming out to Pandora. It was a great, productive afternoon.

I finally invested in some garbanzo flour (it was only $2.50 at Sprouts…score!) so I could try out the blogger fave, socca. And I’ve gotta say, it makes a great gluten-free grain-free sub for pizza crust. However, I’m warning you–don’t taste test the socca batter before you cook it. The flavor reminded me of when I used to get bloody noses, it was so metallic-y. But once cooked (I did the skillet method) it tastes great. Especially if you mix it with plenty of spices.

Saturday’s errands outfit: navy striped crop tee (Hollister), dark wash jeggings (American Eagle), silver bangles (American Eagle).

I’ve been wearing flip-flops, tees and shorts on a regular basis…and yes, it is October. I know some of you may have already gotten snow, but this is why I love Colorado. Our weather is so unpredictable this time of year, but it can definitely be summer-like into October. Sadly this streak is coming to an end soon–snow is in the forecast for tomorrow into the weekend :(

Breakfast

Monday breakfast: pumpkin vanilla protein pudding. Topped with pomegranate seeds and maple pecans.

Like I said, it’s been warm enough here even in the mornings to not want warm breakfasts quite yet. I still have to do smoothies and protein puddings so I don’t overheat. But I still want my meals to be fall-inspired, so Monday’s breakfast fulfilled both requirements. Pomegranate tastes awesome with pumpkin and pecans and maple. It’s like all the flavors of fall in one bowl.

Lunch

Lunch plates for the indecisive girl. Coconut oil roasted brussels sprouts (with organic ketchup), coconut flour microwave muffin crumbles, sweet stuffed acorn squash, peanut flour paste, almond butter, Alter Eco mint chocolate bar.

I haven’t been doing snackplates as much lately but I have been doing them for lunches! One of my go-tos is a coconut flour microwave muffin. It’s so simple to make, just add some coconut flour (1 or 2 tbsp), baking powder, salt/stevia and almond milk to a microwave safe bowl and let it cook for a minute or so. It turns out really crumbly, but totally voluminous and cake like. It’s crazy that a grain free flour turns out like a tasty muffin, but it just does. And I love it!

I realize the seeds are called arils, but I don’t like that word. Seeds sounds better. I can’t believe how obsessed I am with these little guys. They were so worth almost staining my skin and every surface of my kitchen ;)

Monday’s outfit: navy pullover sweatshirt (Gilly Hicks), brown woven leather belt (Abercrombie), burgundy twill shorts (Abercrombie).

I don’t wear my glasses often in public (I usually wear contacts) but some days they’re just necessary. Like when one of your contacts is seriously bothering your eye and you realize that it’s illegal for you to drive without contacts or glasses. I can’t believe how bad my vision has gotten since I first got contacts/glasses 4 years ago. I hope I can eventually get laser surgery, but it’s kinda scary too…

Afternoon Snack

Yes, I like weirdly green food. Mint chocolate buckwheat waffle made with kale, topped with mint kale infused protein frosting.

I love love love homemade waffles, in case you couldn’t already tell. My waffle maker is my most-loved kitchen appliance for sure, it gets used almost every day whether for breakfast or a snack. I prefer making my own because ones from the store don’t taste that great, they aren’t as healthy and with homemade ones I can add in only the ingredients that I want and make them whatever crazy flavors I’d like! Plus they’re almost as convenient as store bought, so why not?

Dinner

Sepia-ified nachos. Sweet potato multigrain chips topped with 1/4 vegan Mexican chipotle seitan sausage, coconut oil-sauteed plantain slices, guacamole, crispy kale and nooch.

I love healthy nachos for a quick and easy dinner. The best part is, they’re totally customizable. Monday night’s version included delicious plantain slices, my favorite vegan sausage (it’s so spicyyyy and I love that it’s made with simple ingredients), pan-crisped kale and fresh guac. My nacho base is always Late July multigrain chips, which are great because they’re healthier than the typical chips, gluten free and packed with chia and flax seeds. So nachos can definitely be considered a ‘health food’…well, if you use the right ingredients :P

Nighttime Snack

My latest favorite nighttime snack: chocolate peanut butter protein microwave cake, made with raw chocolate protein powder, peanut flour, almond milk, baking soda and topped with almond butter and vegan mousse.

I have a strange addiction to microwave protein cakes lately. They’re just so foolproof and you can make them almost any flavor. And they just call for toppings, dontcha think?! I recommend coconut milk ice cream, coconut whipped cream or almond butter!

This weekend was Homecoming/Family weekend on the CSU campus so my dad made the drive up to spend the weekend with me. Two years ago my mom and sister were also able to come up but since I was still living  the dorm life then, we had to stay in a hotel. But now that I’m in a single lady pad (aka a one bedroom apartment) I can actually have people spend the weekend with me. We had tons of fun, despite the less-than-stellar weather. And by that, I mean it was literally in the 30s for most of the weekend. Not normal for October but it was still a good weekend.

On Friday night, my dad and I had a late dinner at Tasty Harmony, a mostly-vegan restaurant downtown. It was our first time eating there, but luckily it won’t be our last because it was so good! My dad isn’t a vegan or even vegetarian but he’s definitely willing to eat more plant-based foods. He got a garlicky hummus and veggie sandwich but I went with something a little more adventurous–the raw enchiladas. It was my first time eating a raw entree in a restaurant and it definitely didn’t disappoint. It was made with flax tortillas and filled with raw pepita “cheese”. It came with guacamole, salsa, cashew cream, a side of “rawfried” beans and a really good mixed greens salad. The beans were the real star of the plate–they literally tasted like refried beans, but our waiter said they were made with a mix of nuts and seeds.

Now normally I don’t order dessert in a restaurant, partly because they rarely have a vegan option but also because it’s a big ED fear of mine. Well, I was really wanting one of their desserts because they all sounded so good, plus they were all wheat and refined sugar free. So my dad and I split a piece of carrot cake and it was literally the best cake I’ve ever had! Carrot cake is the only kind of cake I really like but I’d never had a vegan version until Friday. It was so cinnamon-y and just fresh tasting, plus not heavy at all. Well, that makes sense because Tasty Harmony makes everything from scratch, uses purified water to make their food and drinks (they even have a bar!) and most of their menu is vegan and gluten free. So it was definitely my kind of place and I hope to go back soon. My dad even wants to go back again!

Saturday morning we ran a bunch of errands, like filling up my car tires with air (sooooo fun, especially in the cold…NOT!), getting gas and grabbing some snacks at Whole Foods for the tailgate. Of course I couldn’t go a week without going to Whole Foods ;) I got a few really tasty things, like black bean dip and veggie chips, plus some old favorites I was running low on. Then we had a quick lunch (Whole Foods’ sweet spinach salad is a total winner!) and headed out for the tailgate. Little did we know how cold we’d be! I was wearing a pair of skinny cords, a sweatshirt, a jacket, boots with thick socks and I brought mittens but I was still freezing, even with a thick blanket over me for the entire game! It didn’t go below freezing but it almost did. Of course, today it was back to the 70s…that’s Colorado for ya!

The game itself…well, let’s just say that CSU sucked. As usual. I’ve only been to two of their games (the other one being the homecoming game 2 years ago) and they only won that first one. They only win a few games each season but it was still fun to cheer them on. The stadium was probably halfway full (since it was so cold out) but by the 4th quarter it felt more like a high school game by how few people were left! CSU was playing against Fresno State and both teams had pretty awful offensive lines so Fresno only got a few touchdowns, but CSU was scoreless until the end of the 4th quarter. They finally made a touchdown, so it was totally worth it to see them get a score right at the very end.

On Sunday we ran a couple more errands, went for a long walk around campus and checked out some flowers (that were sadly dead) and had gelato for lunch. Yep, sometimes it’s totally acceptable to skip lunch in favor of the best gelato in the world. At least in my opinion! Guess what flavors I got? Pumpkin and soy chocolate. I am so predictable ;) But seriously, I couldn’t not get pumpkin this time of year, and it was just begging to be paired with chocolate. My dad also got pumpkin and we agreed that it was perfect. We even got to eat them outside since it was way warmer, like in the mid 50s. Yeah, totally not warm but it felt like a heat wave after Friday and Saturday!

One of the best gelato flavor combos!

Before my dad had to head back home, I made dinner for the two of us. I used some Whole Foods multigrain pizza dough (love that stuff) to make us a pizza. It was half red sauce with artichoke hearts, half vegan creamy garlic sauce with navy beans and kale. My dad went for the red sauce side and I went for the garlic side. He loved it, so I got him to eat two meatless meals this weekend and he loved both of them. I’d call that a major win!

Now it’s back to normal…or maybe not. I have a lot to do this week, like a midterm on Wednesday and a group video project to work on. Plus my fridge has been acting up and not keeping things cold enough. A repairman came by earlier and said he fixed it but I haven’t noticed much of difference yet. We’ll see though. Hopefully it’ll be fixed soon since I can’t live without a fridge!

WIAW: Fall Flavors

As much as I hate to admit it, I’m excited for fall. I vowed to not wear long pants until fall officially arrived…yeah, that didn’t happen. I wore them twice in the past two weeks because it got randomly chilly for a couple days. I’ve embraced my moccasins again (and I’m looking for another pair to buy). And I’ve been enjoying the flavors of fall. Here they are, WIAW style!

Caramel apple coffee? Uh, heck to the yes!

You know me, I’m a sucker for anything seasonal or limited edition. I recently inherited my dad’s coffeemaker and I was planning on buying the coconut macaroon flavored coffee from Target, but when I saw this, there was no stopping me. I mean, you can’t go wrong with caramel and apple in coffee. Especially when it’s made with vanilla almond milk.

I’ve finally got a recipe for y’all! I made this last week when I got down to the end of my first can of pumpkin. I also had a bit of a leftover sweet potato so I decided to mix them up with a few other things and it turned out surprisingly really good.

Pumpkin Coconut Mash (vegan, gluten-free)

1/4 cup canned pumpkin puree

1/4 sweet potato (or another 1/4 cup pumpkin)

1 tbsp coconut flour

drizzle agave or maple syrup

maple or vanilla extract

unsweetened vanilla almond milk, to thin

cinnamon, raisins, protein frosting, etc. for topping

In a bowl, mash together pumpkin, sweet potato (if using) and coconut flour. Add in liquid sweetener and extract to taste and pour in almond milk until mixture is thick and wet. Microwave on high for 1-3 minutes, or until combined and hot. Drizzle with more maple or agave, cinnamon, raisins, protein frosting or whatever you want. Makes 1 serving.

Coconut oil makes everything better!

This was my attempt at homemade plantain chips. I’ve always wanted to try them, but I’m not a fan of deep-fried things or weird oils. So I bought a plantain, put a little coconut oil in a pan and cooked up the slices. I also sprinkled cinnamon on them while they were cooking. They turned out really delicious, but not crispy at all. Next time I think I’ll cook them first and then dehydrate them.

Have any of you ever had “white” pizza? I think it’s usually an alfredo-based sauce topped with wilted spinach. I haven’t had it in years but I really wanted to recreate it, healthy vegan style, and I was totally successful. I topped some Whole Foods multigrain pizza dough with Follow Your Heart vegan creamy garlic dressing, shredded kale leaves and navy beans. Super simple, but it turned out great. The dressing kinda soaked into the crust and it tasted even better that way. The pumpkin pizza I made wasn’t quite as good, but I made an amazing pumpkin pizza last year, so I’ll just have to tweak this sauce next time.

Have you ever seen a donut with these ingredients? I’ll admit, neither had I until the other day. I really think it’s awesome that Whole Foods made a healthier donut. Who could say no to garbanzo beans, coconut, almonds and pumpkin in their donut? Of course I had to buy it to try it out!

And the verdict is….amazing! This donut was perfectly moist and fudgy, like the perfect chocolate cake. I’m not even a fan of cake and I liked this. I was only disappointed because it claimed to be a pumpkin donut, and it was basically all chocolate. But I don’t complain about chocolate, ever.

I’ll miss being able to wear strapless tops with no jacket…

I’ve been switching up my workouts lately with an app called Skimble Workouts. Most of the stuff on there is free, and they’ve got a ton of pre-made workout routines of different lengths and intensities. I’ve been getting great ab, leg and arm workouts lately and they’re lots of fun. Obviously I wanted to show off my hard work with a progress pic of sorts. Can you see that baby bicep?

So I was going to end this post with a video of my first weather forecast ever from last week but the video wouldn’t load. I should be able to get either this week or last week’s forecast up in the next few days though. I’d love any and all feedback you guys have for me!

Almost Wordless Vacation Recap

So I haven’t been on the computer in a week, and it honestly felt so freeing to just forgo technology (well, besides my phone and iPod) and just enjoy a few days of fun with my family. I also had an extra day away because I had to go up to my college town for some job training for my weather anchor position at the school’s TV station. I’m actually starting to get pumped up for school to start in just a week–well, maybe not school but having my own apartment and being on TV.

Anyways, here’s my mostly wordless vacation recap of my trip to Estes Park, CO with some words at the end about my intuitive eating/exercise experiment!

First time trying vegan sushi! I had the sweet potato rolls filled with Japanese sweet potato, avocado and cucumber. And I loved the pickled ginger on the side.

I think I honestly kicked some serious ass on my self-imposed intuitive eating and exercise challenge. I didn’t record any of my meals or exercise in the calorie counting app I have since last Tuesday and I didn’t freak out (too much) about my macro balance. I feel like I ate more than I usually do, which I know is still probably not enough, but it was definitely a start. I feel like my meals out were pretty balanced–the first night, I had a small vegan pizza covered in veggies; the second night I had a Sunshine veggie burger (without the bun) topped with fresh guacamole; the third night I had sweet and sour tofu and veggies with a little brown rice on the side; and the last night I had a strawberry, spinach and walnut salad with balsamic and some vegan sushi. I honestly loved all the dinners that I had and didn’t have too much of a problem finding something healthy and vegan at the restaurants we went to. I challenged myself to try the Coconut Bliss brand of coconut milk ice cream despite it being higher in calories and saturated fat than my tried-and-true brand. I skipped my usual cardio circuits but was not a couch potato–I played tennis with my dad for an hour one day, walked around town a lot, went on a hike and did some swimming in the condo’s pool. I felt a little more comfortable in my skin than I usually do at home, despite wearing just a swimsuit a lot of the time. I tried a lot of new-to-me things, had some old favorites (veggie straws, baby carrots and PB Puffins, say what?!) and didn’t try to think too much about the food. Overall, the 5 days I spent intuitively eating were some of the best days I’ve had in awhile, and I want to try to keep eating the same way. Now that I’m home, I have more access to veggies, protein, etc. but that doesn’t mean I can’t keep eating more adequately and enjoying my food. And while I’m excited to go back to my regular exercise, I realize that a few days with less intense workouts won’t kill me. So I’m going to try to live every day like I did on my vacation–without the pool time, of course ;)

Saturday Survey

Thanks for all the good thoughts and well wishes on my last post! A quick update on the fire–it’s now 15% contained, which is a lot better than the 5% it’s been since last weekend and some people have been allowed to return home and to work (including my dad–his office was in the evacuation area and he had off of work since Wednesday) but unfortunately, over 300 homes have been destroyed. Keep thinking of us out here and pray for rain!

On another note, sorry there wasn’t a Friday Faves post this week! I was pretty busy this week–I was at my internship on Tuesday between 2 and 10 pm answering phone calls about the fires and running little errands for the anchors, reporters and producers; I went grocery shopping (more on that later!), to the post office, played tennis with my dad (one perk to him having a few days off) and some other stuff and it kinda just slipped my mind. But I didn’t want to forget about posting this weekend altogether so here’s a survey I filled out awhile ago. I found it on a vegan blog, so a lot of the questions are vegan-related but I hope you still enjoy it anyway!

What is one food you thought you’d miss when you went vegan but you don’t?

Greek yogurt. My mom was still buying it for me a month or so ago and I just can’t do it anymore, it’s not as appealing to me.

What is a food or dish you wouldn’t touch as a child, but enjoy now?

Pretty much most veggies. I liked carrots and lettuce and bell peppers, but that was about it. Now I love a lot of them, like kale, eggplant, portobellos, sweet potatoes and spicy peppers.

What vegan food or dish do you feel like you should like, but don’t?

Almost all tofu. I like it from the Whole Foods hot/cold bars, but that’s about it. It’s also okay if it’s sliced really thin, but otherwise it’s just gross to me. Luckily I like tempeh a lot, so it’s no loss.

Spice/herb you would die without?

Nooch…I put that s**t on everything! When I first bought it (because everyone else was doing it), I thought it was bizarre but now I just can’t get enough.

Seitan, tofu or tempeh?

Tempeh allllllll the way! I can even eat it raw, is that weird? I just love its nutty flavor! Tofu is my second favorite. Generally, it’s a meh for me though. And I’ve only tried seitan once but it was just not my thing at all.

What’s one food or dish you tend to eat too much of when you have it in your home?

Dried fruit, or just fruit in general. It’s so addicting grabbing a handful of fresh pineapple, or making a Medjool date stuffed with nut butter. I always choose dried fruit without anything added so I know it’s not unhealthy, but sometimes I fill up on fruit before the meal even starts!

What ingredient or food do you prefer to make yourself despite it being widely available prepackaged?

Desserts. I love healthier prepackaged desserts, but it’s so much more satisfying eating something you made yourself.

What ingredient or food is worth spending the extra money to get “the good stuff”?

Nut butter, maple syrup, flavored dark chocolate, stevia-sweetened soda…yeah, I have expensive tastes ;)

What are your favorite vegan pizza toppings?

Kalamata olives are a must, as are artichoke hearts. I love kale, jalapenos and tempeh bacon too. Nooch is almost always dumped on top.

What’s on your grocery list this week?

I just went to the store on Thursday, but this was some of what was on my list: kale (weekly purchase), Medjool dates, oat flour, chia seeds (first time buying them!), maple almonds, protein powder samples, brown rice Pad Thai noodles, vegan curry sauce, Larabars (still can’t find the chocolate chip cookie dough or Jocalat flavors, grrrr…), coconut milk ice cream (another first time purchase) and multigrain pizza dough.

What is the best salad dressing?

The Ginger People hot jalapeno ginger. It’s technically a sauce, but it’s so good.

What is your favorite thing to put on toasted bread?

Peanut flour with cacao nibs, or mango jam with a crackle of sea salt. Don’t knock it til you try it.

Alvarado Street sprouted sourdough (new fave bread), Field Roast Mexican chipotle sausages, NadaMoo! maple pecan coconut milk ice cream.

I still have yet to have a vegan cupcake, but I so want to. I would love a carrot cake kind with vegan cream cheese frosting, or maybe a s’mores kind.

What is your most-loved “weeknight meal”?

Kale and tempeh tacos.

What is one dish or food you enjoy, but can’t get anyone else in your household to eat?

Most of my dessert things, surprisingly. My family’s used to super sweet, super rich desserts I guess (and crappy packaged stuff) so more natural, lower sugar stuff isn’t appealing to them. Oh well, more for me!

Favorite vegan chocolate/candy?

I love Chocolove’s dark chocolate in different flavors, especially raspberry, orange and peppermint. The peppermint kind tastes like a peppermint patty!

Most extravagant food item purchased lately?

Coconut milk ice cream from NadaMoo!. It’s like 5 bucks a pint, but totally worth it.
