College Vegan on a Budget: Lots O’ Newness

A series of posts highlighting my progress in budgeting my plant-based, clean-eating grocery trips.

Happy Sunday, guys! I know the East Coast is getting hit hard by Nemo, but we’re also (semi) buried in snow here in CO–so if you’re anywhere that’s gotten snow this weekend, hope you’re staying warm and safe.

So you all know how obsessed I am with trying new products, right? Yeah, it’s kind of a problem. Well, not really because I’m adding more foods into my rotation and figuring out what I really love, but it can be a problem for my budget. This week, I spent a little over $100 which I’m trying not to do (my goal is $80 or under) but I actually didn’t do too much damage at Whole Foods, which is good. However, I did buy a bunch of new-to-me items, all of which I’m loving so far. Not all of them will be regulars on my lists but they’re all winners for sure.

Verdict: New-to-Me Items–raw honey, Vega bars (berry flavor). Usually I can spend $30 or less at Sprouts, but the dates and honey really put me over my usual amount. Not that I’m complaining though–the honey is really good and dates are a staple in my life, and cheaper here than anywhere else. The produce was where I definitely saved a lot though.

Verdict: New-t0-Me Items–granola (love that it’s only sweetened with coconut sugar and made with ancient GF grains), kale chips (mmm, but expensive), Kit’s bar (haven’t tried yet), crystallized ginger (hopefully good for when I have stomach issues), raw walnuts (also good), dark chocolate bars (when is chocolate ever bad, and the ingredients are Ashley-approved). See, I didn’t do too badly at Whole Paycheck, and that’s even with a few higher-end purchases. The kale chips won’t be a regular purchase, as I can make them easily at home, but I was feeling lazy and really wanted an easy snack.

Friday Five: Online Shopping Addict

Hi guys! Sorry I’ve been a little absent lately–the semester’s starting to get busy and I literally have next to no time during the middle of the week for anything but sleeping and getting homework done. But I’m more thankful than ever to have three day weekends every week–it’s seriously my lifesaver.

Anyways, I didn’t want to let a whole week go by without another post so I’m throwing a little Friday Five fun in here!

Five Things I’ve Eaten Recently

  •  The best vegan restaurant pizza I’ve ever had. It’s hard to find vegan pizza in restaurants. It’s even harder to find amazing vegan pizza. I’m not one for fake cheese (don’t get the Daiya appeal) so I always go cheeseless. The other toppings are the best part anyways, especially in this case. My mom and I tried out a new-to-us restaurant in my college town called Restaurant 415. They aren’t specifically vegan, but they have plenty of gluten free and vegan options and focus on locally-sourced and organic ingredients. My kinda place for sure! I ordered The Woodland pizza sans the cheese and I was pleasantly surprised by how good it was. The crust was not too thin or too thick, and it came topped with garlic & olive oil, mushrooms, deliciously salty & crunchy kale (when do you ever see kale on a pizza?!), dried figs (ditto), caramelized onions and a balsamic glaze. The sweet and salty flavors worked together perfectly and I was in vegan pizza heaven.

  • Banana softserve…with a twist. Who doesn’t love banana softserve, aka frozen bananas all blended up until they look like ice cream? Seriously, one of my favorite blog food finds ever. Well, I also discovered a little trick recently: mix almond butter (or nut butter of choice) with a little  coconut oil and drizzle over banana softserve…homemade magic shell! You can even add cacao powder or whatever you want to make it even better. I like topping my softserve and shell with cacao nibs for the perfect healthified dessert.

  • Raw jalapeno poppers.  I’ve been eating them whole, putting them in salads…basically just loving them. I should have made more but I’ll definitely be stocking up on jalapenos this weekend!

  • Brown rice sushi from Whole Foods. I’ve mentioned before how disappointed I am in the salad bar at the WF in my college town. However, when I discovered their brown rice sushi, I just couldn’t resist. I’ve never had brown rice sushi before, let alone vegan-friendly brown rice sushi. I got the avocado carrot cucumber roll and it was great dipped in coconut aminos and as a salad topping.

  • Salads…on salads on salads. I’ve had a salad-a-day streak for at least the last three weeks, and I don’t want it to end anytime soon. I’ve discovered what makes a really great homemade salad–chopping the greens, shaking everything up to mix it around and letting it sit for at least half an hour in the fridge. It all makes for a very tasty salad. The toppings and dressings are what makes them, though.

Five Things I’ve Bought This Week

  • A set of weights. Yep, finally jumped on the strength training trend, and I gotta say, I really love it! I’m definitely not lifting heavy yet, but it’s good to start out light. And besides, I’m not so much wanting to build muscle as I am wanting to lean out. So lighter weights+more reps=(hopefully) a leaner body!

  • A geology textbook and cacao nibs from Amazon. Random, yes, but I needed to get the super saver shipping so the cacao nibs were a much-wanted add-on item. The textbook is obviously for the geology class I’m in–I took it because it’s supposedly a prereq to the meteorology program I want to get into after graduation and I don’t really love it so far (mostly because of the professor) but I have a friend in it so that helps a lot!
  • A massive iHerb order. They used to offer free shipping in the U.S. for any order over $20 or $25 I think, but now it’s for orders over $40. I hate paying for shipping so I just stocked up my online cart more than usual. I got a few new-to-me items (raw buckwheat granola, a new brand of coconut flour) and some other things I can’t get in store (namely, peanut flour). I think I’ll be set with new products for awhile…

  • Some new-to-me Whole Foods finds. Yes, I love shopping online for things I can’t get near me, but there’s nothing like a good old-fashioned shopping trip to the grocery store. On my last trip to Whole Foods, I got a bunch of new-to-me items and I’m loving them all so far. The best is the Thai coconut curry hummus by Hope Hummus–it’s a local brand, but they might have it in WFs across the country so definitely check them out if you ever see them near you. This is the best hummus flavor I’ve ever tried, period. I also got a couple new Larabar flavors, unsweetened ketchup, coconut oil spray, dark chocolate Nuttzo (it was on sale!) and WF brand pickles (because other brands have not-so-good ingredients).

Five Sites I’m Loving This Week

  • Chicnova. It’s an online store I just discovered that has a ton of cute, affordable clothes in all kinds of styles. I haven’t ordered anything (yet) but there’s quite a few things I’m drooling over.
  • Warby Parker. Notice the online shopping trend? Okay, so I haven’t bought from here either but I love the concept: you get to choose prescription glasses to try on at home, and you send back the ones you don’t like. I’m a sucker for hipster style glasses, so the next time I need a new pair, I’ll definitely be hitting up this store.
  • DAMY Health. I don’t follow their nutrition plan by any means, but the recipe section has all sorts of amazing-looking vegan, gluten free and raw desserts. I kinda want to make them all…
  • PicMonkey. The best free editing site I’ve come across. I just wish I could use all the upgraded features.
  • Weather Channel. Yep, I’m a weather nerd and proud of it (that’s why I’m going into meteorology!) Besides just the forecasts, they also have weather stories and articles that are really interesting. For example, I found out the other day that Denver is in the top 6 cities for most snowfall. I actually don’t believe it, because for the past few years we haven’t gotten much snow at all!

College Vegan on a Budget: Back to Budgeting

A series of posts on my adventures in balancing a college-sized grocery budget with my obsession with Whole Foods. 

So if you hadn’t noticed, I haven’t done a CVB post in awhile because of Christmas break. While at home, my parents were amazing and bought most of my groceries for me so I haven’t had to work on my budgeting skills in over a month. But school has officially started up again and it’s time for more grocery posts!

I won’t show you my huge Whole Foods haul (because I already put everything away) but I also hit up Sprouts on Sunday for a few items I couldn’t find at WF and I got a lot for (relatively) little.

What I Got: The Good Bean roasted chickpea snacks (so glad I finally found these), Pure chocolate brownie bars*, dried mango slices, Amazing Grass green superfood packets (for those busy days when I can’t get my greens in), Alvarado Street essential flax 50 calorie bread, Vega Vibrancy bar, soft tofu, Bob’s Red Mill ground flax meal (love the huge package), bulk almonds and salted in-shell pistachios, Frontera hot sauce (the cleanest hot sauce brand–no added sugar!)

What I Spent: $33.01

Verdict: I’ve said it once and I’ll say it again–Sprouts is really amazing for my budget. They offer some things I’ve never seen at Whole Foods, and often for a lot less. The store in my city is a lot farther away than WF but it’s worth it to make trips there weekly to save some money.

WIAW: The Last One?

As much as I love the weekly party known as WIAW, I probably won’t be participating in it for awhile. Why? Well, other than being busy with school again (I just started up yesterday and I think this semester will be crazy, in a good way) I’m just getting bored with posting my daily eats. I tend to go in waves with things that I eat, so a lot of my WIAWs look pretty similar. Nothing wrong with that, it’s just not that exciting to me anymore. I will still be checking out all your WIAW posts though, no worries!

I went to Sprouts the other day for a few things, and finally found the bread I’d been looking for–Alvarado Street essential flax sprouted bread. I liked the ingredients (for the most part), the nutrition stats and the fact that it’s smaller bread so it makes for better sandwiches. I don’t know about you but I like my sammies to be all about the filling–I prefer open-faced sandwiches but those aren’t so portable. So this 50 calorie per slice bread is perfect, and has simple ingredients for being a lower-cal bread, unlike most brands. It also made the perfect PB&J inspired French toast. I just dipped two toasted slices of the bread in peanut flour thinned with almond milk, cooked it, and topped it with crunchy almond butter and microwaved frozen blueberries. This is as good as it gets for a breakfast made at 7 am. That might not seem that early, but it is to me #collegeproblems

I’ve been having salads a lot lately for lunch, and the key to a great homemade salad is shaking all the ingredients up so they get coated in the dressing. Today, I just mixed nutritional yeast with a little apple cider vinegar and thinned with water, then tossed in some dino kale, olives and some new-to-me roasted chickpeas. I love these things, they’re way too addicting. I also had some unpictured salted in-shell pistachios (amazing!) and a date stuffed with chocolate coconut butter. I don’t know what it is about that combo, but it’s delicious. I just discovered it yesterday, and now I need more dates to enjoy the combo on a daily basis.

Snack: homemade trail mix with spicy chickpea crackers, dry roasted edamame, raisins, freeze dried tropical fruit and mini chocolate chips.

Trail mix in a baggie–how classy. This is going to be a go-to snack this semester on my busier days when I don’t have time to swing by my apartment to have a snack. I love making trail mix myself because I can add in whatever weird stuff I like. The chickpea crackers in this one were a new addition to my normal mix–I made them the other day and they’re actually really good and basically just made from chickpea flour, nooch and spices.

Why do the most random creations turn out to be the tastiest? I was tired after my first day of classes (a long day, BTW) and didn’t want to think too much about dinner so I threw together some stuff to make a sauce for my typical kelp noodle stirfry. For the record, I combined Whole Foods brand crunchy PB (the only PB I can stand), Hope Hummus coconut curry hummus, Frontera hot sauce and coconut aminos with almond milk to thin and it made the most delicious sauce. I don’t know why, but it was amazing. This will be repeated nightly weekly.

This has been my usual dessert for probably two weeks and I’m still not sick of it. I like to have some protein before bed to keep me from getting hangry so this does the trick while also giving me my sweet fix. I also had an unpictured square of dark mint chocolate (Alter Eco brand, natch) and another cacao bliss-stuffed date. Told you I’m obsessed.

The Best Products (I’ve Tried) of 2012

Can you guys believe we’re just a little over two weeks away from a new year? Craziness. When it gets to be this time of year, all I’m thinking about is how excited I am for Christmas, enjoying my time off from school and all the things I accomplished over the past year.

And if you’re a foodie like I am, you might also be reminiscing about the new food you’ve tried over the past 12 months…I know I am! With that said, here are a few of the best things I’ve tried since January 2012!

Zevia

Before I sucked it up and finally bought my first (overpriced) can of this amazing stuff in May, I’d heard lots of good things about it. I’ve never been a big soda fan, but I used to enjoy diet sodas on occasion. So having an all-natural diet soda was a definite treat! Since then, I’ve tried the ginger root beer, cream soda, cola, orange and lime cola (the orange is the only gross one) and I can’t wait to try more. Like a lot of things I love, these are very pricey so I buy a 6 pack when they’re on sale or maybe once a month at most and make them last.

This was another blogger-hyped product that I was on the lookout for since last fall. I didn’t find one until this October and haven’t found it very often since (but I stocked up on two last weekend!), but it’s my favorite squash by far (other than delicata). I prefer the texture and taste over any other and it’s delicious with peanut flour paste, almond butter or ketchup.

I’ve seen these around for awhile, but because of my previous fear of fat, I never gave them a try until March but they’ve become my bar of choice since then. I love the flavor variety and the fact that they’re made from whole foods, like dates and nuts. My favorite flavors are cappuccino, pineapple upside down cake, peanut butter chocolate chip, chocolate chip brownie and the Uber banana bread.

Can you believe I never tried Vega products until earlier this year? Vegan blasphemy, for sure. They have good quality (though expensive) protein powders, simple protein bars and I’m obsessed with their latest product, the dark chocolate-covered saviseed which is packed with protein and Omega-3s.

This stuff is incredibly versatile, and easy to make. Basically you just soak raw cashews overnight or for several hours, and then it’s ready for blending. I’ve made a raw cheesecake (see above), nacho ‘cheez’ dip, mascarpone ‘cream’ and savory cashew cream filling–it really is good for anything!

Even if you eat dairy, you need to try this vegan ice cream, it is out-of-this-world good! The healthy coconut fat makes it incredibly rich but not overly indulgent, and stores like Whole Foods carry a million and one flavors so you don’t have to feel limited to chocolate and vanilla. So Delicious and NadaMoo are my favorite brands, but there are definitely more out there–there’s a variety for everyone!

Kale

I think I actually tried kale for the first time last year (it was when I first tried the Whole Foods salad bars) but I didn’t fall in love with it until this year. I know a lot of people say it’s bitter, and it can be, but I’ve found lots of ways to make it tasty and craveable. Homemade kale chips (they’re best made in the dehydrator), crispy sauteed kale, ‘pizza’ kale (kale cooked with pasta sauce and olives), raw massaged kale salads, kale/almond milk smoothies…I’ll eat it almost any way, and I try to eat it at least once a day! Bonus: it’s an amazing superfood.

I used to say I hated coconut, partly because I didn’t like the texture of shredded coconut but also because I was deathly afraid of the fat in it. I avoided saturated fats like the plague but once I became pretty much 100% vegan, I realized that plant-based saturated fats were totally healthy and necessary. One of the first coconut products I bought was coconut flour–I wasn’t sure if I’d like it but I do! I really love it mixed with baking powder and almond milk and microwaved for a minute to make a crumbly coconut flour muffin but I also want to experiment more with it in baked goods. It’s hard to bake it into things without using eggs but I want to try it out.

If you’ve ever seen these before, they’ve probably grossed you out just a little. They weirded me out too the first time I bought them but I really wanted to try a raw noodle substitute and I’d heard good things. Unlike shirataki noodles, these are made from a seaweed so they’re more of a whole food, they don’t smell weird and they soak up the flavors in anything. They make the perfect low-cal sub for pasta and I especially love them mixed with pasta sauce, nooch, a crumbled veggie burger, kale and olives. I also included them in a stirfry the other night and they were amazing–recipe coming soon!

I’ve tried a lot of vegan protein powders, from the (not-so-good) cheapo soy-based powders to the delicious but expensive Vega and Sunwarrior. But I think Garden of Life is my fave. First, it’s made from a blend of raw sprouted plant-based proteins, like quinoa and sunflower seed. It’s also pretty high in protein (17 grams per serving) and is a bit cheaper than some other higher-quality brands, it’s sweetened only with stevia but best of all, it’s delicious. I love both the chocolate and vanilla chai (only available at Whole Foods) flavors and the lovely team at Garden of Life was nice enough to send me some samples of the regular vanilla too so I can’t wait to try that one! Look for a review soon and possibly a giveaway in early 2013!

It actually makes me really sad that fig season is over–it became my new favorite fruit over the past few months. It pairs so well with both sweet and savory things and though they are a bit expensive, they’re worth every dollar. They’re out of season now but at least I can settle for dried figs!

College Vegan on a Budget: “Nuttzo” for New Finds

A series of posts on my adventures in buying vegan health foods as a college student.

I know I said last time that I wasn’t going to be buying anything else before the end of the semester. Welllllll…that was before I ran out of nut butter and had to go without it for about a week. And I came back to no fruit other than some pomegranate seeds and frozen banana slices. Not acceptable. So I had to make a quick trip today which worked out perfectly because I had one final around noon and I headed to Whole Foods right after that. Let me just say that shopping at WF on a weekday afternoon is a lot better than going on a Saturday afternoon. Other than a shrieking baby, my trip was pretty pleasant and quick. But most importantly, I left with everything I needed…and more.

Verdict: I don’t really want to talk about how much I spent on the Nuttzo but it really is hard to find cheap nut butter that doesn’t have added oil or sugar (but does have a little sea salt, because it brings out the nut flavor) but everything else was pretty cheap. And the chocolate bar, rice cakes and nut butter will last a while so I’m not too worried.

College Vegan on a Budget: Last Stock-Up

The latest installment in a series of posts on sticking with a college-sized budget with expensive, vegan tastes and a love for cooking.

My last week of classes officially started today, and I am beyond excited to go home for Christmas break! I don’t wanna brag, but my college is giving us 5 whole weeks of break this year–usually we only get 4, so I feel really blessed. Thanksgiving break came and went too quickly so I’m planning on enjoying every moment of Christmas break.

This weekend is (hopefully) the last shopping trip of the semester while I’m at school. I bought a lot of stuff, but I can bring it back with me when I go home so I’m not too worried about it. As usual, I picked up a couple new-t0-me things because, well, why the heck not? Some of the things I bought are specifically for recipes I’m planning on making so if they turn out amazing, I’ll be sure to let you know!

Verdict: I’m excited to try the squash and the bread. I’ve been on the lookout for a really good sprouted bread without unnecessary ingredients (Ezekiel is okay, not my fave, and Alvarado Street is a little too processed) and I was excited to see that they sell Silver Hills bread in CO. I love their simple, whole ingredients so I’m super excited they sell it here. Now I need to look for their Little Big Bread and their gluten free breads!

Verdict: I wasn’t expecting to spend this much, but then again I spent under $50 last weekend and I was running low on protein powder, which is a major chunk of the total (even with a coupon). I bought the coconut nectar because I needed more maple syrup and it was the same price for a larger amount, but I’m not sure I love it yet. I think I’ll use it in recipes, but save my beloved maple syrup for waffles and almond butter.

College Vegan on a Budget: Stocking Up

A look into my adventures of learning how to budget shop for healthy vegan groceries.

After my refrigerator fiasco of last week (BTW: I got a new fridge out of the deal, score!) I had to throw out a bunch of my food. Normally I don’t mind tossing things that I didn’t love or whatever, but now that I’m buying almost all of my own groceries, it kinda hurts to have to waste so much, especially not by choice. I just didn’t want to risk getting sick! However, I was excited to do a big restock of my fridge and freezer. Yeah, I get excited over grocery trips. Lame, maybe, but I don’t care! Anyways, I went on a couple shopping trips this weekend while I was at home and my dad was nice enough to buy a few things for me so I won’t be counting those things in my budget list, but I am pumped to try them. I got my first ever kabocha squash and after hearing so many amazing things about them I am roasting mine ASAP, and I also got a chocolate raspberry Raw Revolution bar that sounds so good.

This is all the stuff I bought for myself to restock my fridge, freezer and pantry. I missed a few things, but I’ll be making a trip back next weekend for some extras. (*=organic)

What I Got: kale*, garnet yams*, black grapes*, black figs*, brussel sprouts, baby carrots*, Jazz apples, bulk nutritional yeast (nooooooch!), raisins*, unsweetened vanilla almond milk*, sprouted tofu*, bulk maple almonds (ob-sessed), garbanzo beans*, virgin unrefined coconut oil*, harissa hummus, pineapple upside down Larabar, frozen sweet potato puffs, kelp noodles, NadaMoo! mint chocolate coconut milk ice cream, dry roasted edamame, pumpkin puree in a box*, Justin’s vanilla almond butter squeeze packs, olive bar olives, black bean dip, fresh guacamole, hot sauce dressing (ummm, yes please), Truvia

What It Cost Me: $81.84 (pretty good for having some higher priced items in there)

Verdict: So glad it came in under $100. I had to do a bunch of restocking since my fridge was basically empty, but I got a bunch of things that will last me a while like the nooch, coconut oil, hummus and sweet potato puffs. I only spent over $5 on 3 items, which is a great way to save money. Those more expensive items add up!

Now I’m all restocked and ready to go for another week here at my apartment! I’ll be doing some meal prep throughout the week and will hopefully come back sometime with some recipes for you to try out. Tonight I’m making socca pizza for the first time…with a twist!
