WIAW: Adios, Junior Year

First things first–yes, I did change my blog design after at least a year and a half with the previous one. I just needed something new, plus I like the sidebar ‘about me’ things everybody has and the old design wouldn’t let me do that! 

I’ve been waiting for this day all year. Well, maybe not, but I’ve definitely been for at least the past month or so! The last day of my junior year of college is TODAY…and how crazy is that? I remember when college felt sooooo far away, and now I’m really close to graduation. Scary stuff.

I know my blogging’s been pretty sporadic anyways for the past few weeks but it’s gonna get even more infrequent in the next week or so. First of all, I’m moving back a lot of my stuff this afternoon and moving home for the summer. Then my family’s driving back up here this weekend to load everything else up and my mom will be doing some epic cleaning (maybe not that dramatic) so I can turn in my keys to my complex for the summer and end my lease. It’s a pain to have to move everything out, only to move it back in again in August, but I’d rather not pay the extra rent just to keep my stuff here for the summer. And then next week is when I hopefully start my internship, so it’ll be a whirl of paperwork, a drug test and plenty of excitement. And there’s a doctor’s appointment thrown in there as well, so it all makes for quite a crazy several days. So I’m really sorry if I don’t post here too much or comment on all of your blogs but I will be back as soon as the craziness dies down.

What wasn’t too crazy was the meals I enjoyed over the past week. Well, unless you consider a lot of random experimenting to be crazy, but all I know is it was delicious. And I had plenty of fun, despite finals week and moving out looming. Hey, I only had one actual final exam this semester, so paper writing and projects were the name of the  game, and a little less stressful than studying.

I’m doing my best to embrace the healthy grains again. I have to say I prefer the ‘ancient’, gluten free, psuedo-grains such as quinoa and buckwheat, for their stellar nutritional profile and higher protein, not to mention their deliciousness. I had some leftover quinoa in my fridge from a couple of weeks ago, and I remembered how much I used to love this random stirfry I threw together for the first time last year around my birthday. The best part about it is it’s totally customizable, so I threw in the last of my frozen edamame (I’m trying to finish up or toss things that aren’t as easily transportable before I move home), orange cauliflower, spinach, curry powder, coconut aminos (way better than soy sauce!) and fresh pineapple was a given. Not too far off from the original, and topped with sprouted pumpkin seeds and cashew butter, it was a total winner dinner.

And the little bit I had leftover made the perfect nori filling for lunch one day. I think I’ve been loving on the Asian and Mexican flavors a lot lately, between my homemade guac obsession to constantly resupplying my pantry with those addicting Thai lemon curry cashews. Maybe I could combine the two and create a Mexican stirfry or an Asian taco…

My apartment complex does have a pool, but they’ve been slacking on opening it up (uh, kinda late there, management. Almost everyone’s moving out this week…) so when my friend invited me to her complex’s pool on Monday, I jumped on the chance to lay out. Honestly, I usually just lay out by the pool versus actually swimming, but I did go in it a few times just to cool off. Guys, I’m so happy. We finally have my dream weather, aka 80s and sunny. With afternoon thunderstorms. Basically, it’s finally summertime in Colorado.

I don’t get how some people make their protein pancakes look so perfect. I do okay with multiple, small-sized pancakes but a full size one is just asking for trouble. I thought I waited long enough to flip, but part of the top crumbled off so I cooked it in two pieces. It luckily didn’t burn, but it certainly wasn’t round or anything, and parts of the inside were still undercooked. It tasted great, but my pancakes skills need some work…

…which is why I stick to waffles. Sometimes they don’t quite hold up, but if I get the ratios just right, they turn out pretty perfect and intact. This one was a bit crumbly, but it mostly stayed together, and it tasted great, which is what really counts. Protein waffles are hard to make vegan, so I’m proud that most of mine aren’t complete disasters.

I’m glad I stuck through the crappy weather we got in April (and foot of snow on May 1st…thanks but no thanks, Mother Nature!) because it is absolutely gorgeous now! Like I said, 80 degree temperatures, lots of sun, minimal wind (but enough of a breeze to keep you cool) and the trees are blooming after being freaked by weird cold weather. And the grass, at least here in my college town, is nice and green after getting enough precipitation last month. If you’ve ever been to Colorado, you know that the grass here is generally brown because it’s basically a high altitude desert. I’ll be going back to brown lawns today (my hometown wasn’t blessed with as much snow) but I’m hoping we get some nice afternoon rains to keep the fire danger low and makes the grass nice.

I can’t remember where I first saw the idea for a sweet avocado, but I was really intrigued by it. I’ve really only used avos in guac, and had them raw in salads, but topping my avo with something other than lime juice or salt seemed weird. But I decided to try it with one of my favorite flavor combos (PB+cacao nibs+coconut) and it was actually really amazing. The key is a perfectly ripe avocado, so the flavor isn’t too overpowering. I still don’t like avocados plain (to me, they either need salt or something sweet to taste like anything) but now I have a new way of enjoying them!

Kelp noodles are still a favorite of mine, but especially now that it’s so warm and I prefer to do as little cooking as possible. I love that kelp noodles are raw, and they work out perfectly in salads, like this one. I used up some of my PB2 for the dressing (I finally finished the jar, and I’m glad it’s over because I did not like it, especially compared to real peanut flour), and added in carrots and romaine lettuce, aka the last of the produce I had until I went grocery shopping later that day.

The problem with poolside selfies is that A) I’m wearing a bikini which is super awks in a photo (and already sporting a sunburn) and B) I can’t really see my phone screen in the sun, so I end up taking them from a weird angle and usually have a weird face in them. #firstworldproblems

This is like a super-rich mousse, but the best part is that it’s perfectly acceptable for breakfast, because it’s protein-packed. There was 16 grams alone in just the Sunwarrior, plus a few extra grams from the other ingredients and toppings. It’s also no added sugar, just the natural sugars from the fruits (the Kit’s bars are just date sweetened, like Larabars) and the stevia in the Sunwarrior, so it makes for a healthy dessert option that isn’t too sweet. And it’s so easy to make if you have a food processor, just add in the protein powder, coconut cream and frozen bananas (optional, but add a little sweetness and coldness) to the processor, blend, and top away! I’ve enjoyed this twice this week, once as a dessert and once as breakfast and it was perfect for either occasion. I only wish I had more coconut cream to make it again!

Wow, I’ve been gone for awhile! Obviously, it’s that time of the year–midterms. Luckily I’ve just got one more left and then tomorrow afternoon starts my spring break! I won’t be doing anything too exciting (unless you consider going home for over a week to be exciting) but it’ll be great to see my family again…and possibly mooch off them for groceries? Haha it’s the little things!

I can’t get enough of kelp noodle stirfrys. You can just make them so many different ways it’s impossible to get bored with them.

This was actually a pretty successful dinner, though the veggie burger didn’t hold up too well. The eggplant fries were sooooo good though–coated in almond flour, sprinkled with sea salt and dipped in homemade BBQ sauce (basically unsweetened ketchup mixed with stevia and liquid smoke).

There was no budgeting post this weekend, but I managed to stay around $50 for the week, buying just stuff from Whole Foods with a few splurges! I’m excited to try the new Vega One bar, 15 grams of clean vegan protein in a chocolate-covered bar!

Embracing Fall

Let me start out by saying I am a “summer” girl all the way. My birthday is smack dab in the middle of summer (July 27th to be exact) and I always loved never having to go to school on my birthday, plus the added perk that I could spend my special day at my favorite water park. When I was younger, summer also meant camping, sleepovers, swimming and visiting my grandparents, so it was always a special time of year. Now I love summer not only for my birthday, but for the amazing produce, warm weather, the fourth of July and getting a break from college life. So I was kinda sad when the first day of fall rolled around this year–no more summer for another 9 months. Luckily here in CO, summer’s decided to stick around for a while because we’ve had amazing weather since the autumnal equinox. Plenty of sunshine with most days in the mid 70s to low 80s…can you say ideal? It’s definitely helped me ease into fall but also embrace the season that follows my absolute favorite. This year, I’m actually excited for fall traditions like carving pumpkins and taking pictures of the changing leaves and of course all the delicious seasonal foods.

I’m starting to embrace fall with my wardrobe. I would be an extremely happy girl if I could wear flip-flops and dresses year-round, but that isn’t going to happen here. So I’m transitioning from shorts and swimsuits to sweaters and scarves, while keeping the still-warm weather in mind. I like pairing tights and ankle booties with shorts, or jeggings and a light cardigan with moccasins. I’m still incorporating the bright shades I love, but trying to tone them down by mixing them with darker hues.

I am loving fall-inspired foods this year, more than ever before. Remember this post from last year? Yeah, that was like fall overload and it was the first time I really started embracing fall foods. This year, I’m already on pumpkin overload, incorporating it into pretty much everything and I have no shame. I just bought one of the sweet stuffed squashes they’re selling at Whole Foods by the other pre-wrapped veggies and fruit and I’m excited to roast my first squash. I also got some frozen cranberries which I’ve never had before but I really want to try them out. And I’m excited for my favorite Pink Lady apples. Last year the apples I got were not that great but they seem to be way better this year! So look forward to a lot of fall-ish recipes in the near future :D

And the house we moved into a couple of months ago actually has trees with leaves, so some leaf pile jumping will be in order sometime soon ;)

Saturday Seven: Good Things Come in Threes

Hi everyone! So here we are again at the end of another week…and it’s almost halfway through April! I feel like I’ve said this a million times before, but time is really flying by! It’s almost kinda scary, considering how much stuff I still have to finish before I can say adios to this semester. Oh well, that’s pretty much the status quo for the end of any semester.

I haven’t done a Saturday Seven in…um, 2 months?! Yeah, let’s fix that right now!

1. The countdown is SO on!

As the title of this post suggests, there are only 3 weeks left in my semester. Technically, there are 4, but I only have one real final (the rest are papers or projects, which I kinda prefer) so I’m planning on peacing out the weekend before finals and just popping back up here on that Thursday to take that final. This is the first time I’ve ever had only one final in my college career so I am definitely going to appreciate it! Plus going home a few days early is always a plus.

2. I have a shopping addiction…

Obviously I suck at being creative!

Online shopping, that is. It’s where I get all these new-to-me food products that I never seen in stores or that are a little too expensive when I do see them. The latest purchases are from Amazon, where I got some Vega vanilla almondilla shake and go protein powder, xanthan gum and liquid vanilla stevia, all for under $40 and free shipping! I’m really excited to try the Vega powder because I’ve been on the hunt for some good, fairly inexpensive vegan protein powder that is free of soy protein, and this fits the bill! The xanthan gum is something I’ve been wanting for awhile, after seeing everyone post amazing-looking, super thick smoothies. And the stevia I’ve had before, but now it’s in a bigger bottle so I’ll get to use it more.

3. I’m actually being creative with my hair

I almost never, I repeat NEVER put my hair up. But three times in the past week, I’ve put it in a side ponytail. Who am I? Twice this last week, it was curly (and in a side pony one of those days), then it was wavy for two days and finally straight for two days (once as a side pony). It’s actually been fun switching up my hairstyles, because I used to only have it wavy or straight, and down. I’m going to experiment with a side braid next.

4. It’s supposed to SNOW this weekend

I already know that Colorado is a bizarre state, after living here for 17 years of my life. But this unusually warm spring has thrown me for a loop, and now I’m expecting it to continue to stay warm until October. Yeah, too bad it’s still April, one of the snowiest months here. We don’t get spring showers, we get spring blizzards. Luckily they are usually short-lived, and warmer temps return the next day, but snow is still no fun.

5. I’m becoming a Larabar lover

My second-ever Larabar...almost as good as the first.

I used to say I wasn’t a fan of Larabars–not sure why, as I’d never tried them before a couple of weeks ago. But I actually do love ‘em…a lot! So far, I’ve tried the cappuccino (mmmm!) and the chocolate chip brownie, which reminded me of a chocolate brownie Pure bar, except with the addition of fair trade chocolate chips. It was good, but I think I’d stick with the Pure bar version in the future, since it has more protein. That’s my only complaint–most Larabar flavors have barely any protein. But I think some of the more unique flavors might be worth the lack of protein, and a few actually do have 5-7 grams, so it’s not too big of an issue. I just love how simple they are, yet really tasty!

6. I’m really missing the food at home

Yeah, dorm room food isn’t cutting it anymore. Every time I go home for the weekend, I remember how much I love being able to cook for myself. And no, the microwave and blender don’t count. This is another big reason why I’m so ready for it to be summer–I can finally cook again. Plus I love summery foods, like berries, asparagus (okay, this is more springy but whatevs) and grilled veggie burgers so that makes cooking even more exciting.

7. I’m all ready for next semester

Registering for classes is always really stressful, but it wasn't too awful this time around.

Next semester is going to be SO different than my past 4 semesters have been. Mostly because I’ll be living off-campus for the first time, and I’ll be taking the bus everyday to classes. So I’ve gotta learn the bus routes and schedules. I also tried to schedule my classes in a way that would either give me big breaks (so I can catch a bus back to my apartment) or really small breaks so I can stay on campus in between them. I’ll definitely have to do more meal planning, even more than I already do with my current schedule, but I’m excited for a change. I think I’ll feel even more independent than I currently do.

Saturday Seven: Home Sweet Home

Well, by the title of my post I’m pretty sure you can guess that I’m home :D I have been since about 9 on Thursday night and I’ve had so much fun so far! I’ll explain this in my Saturday Seven, so let’s do it to it (sorry I’m such a dork ;) )

1. I can’t wait to wear these booties!

I am ob-sessed with these!

Ever since I bought my brown tall boots I’ve been totally head-over-heels (haha, get it?) in love with boots of all kinds. And I’ve had my heart set on these Aldo Pirnie booties in particular since earlier this fall. When my grandpa sent me an Amazon gift card for an early Christmas present, and I saw they had these boots for $28, I snapped them up. They came on Tuesday, and they were probably the reason I was most excited to come home (just kidding!) I finally got to try them on on Thursday night and they fit perfectly and look super adorable. The only problem is, my dad said I can’t wear them til after Christmas, since they are technically a Christmas present. Boooooo :( Dads just don’t understand that we girls want to show off our new clothes :P

2. I’m on a salad kick, and loving it

Monday night when my mom dropped me off after my weather anchor audition (I spent a long weekend at home), we hit up my favorite salad place, Mad Greens, and I got the Don Quixote, which is one of my fave salads there. It had lettuce (duh), mango chunks (yes please!), fresh avocado, corn and black beans. Not a fan of corn at all, but the salad was still good. On Thursday night my mom and I grabbed dinner at Qdoba on our way outta town, and I got the naked vegetarian taco salad. The naked part just means it is in a bowl instead of a taco shell. I was starving, so I went to town on that baby! It was basically lettuce, black beans, corn salsa, habanero salsa (which was soooo hot, but soooo good!) and their fat free picante ranch dressing. That dressing is so delicious, but definitely not overpowering, and it made for a delicious dinner. Then yesterday, my sister and I had a nice lunch at Panera, where I got the Thai Chopped salad, minus the chicken and wontons. The peanut sauce, edamame and cashew clusters really make the salad and again, I devoured it. No shame! I’ve been craving salads like crazy, since at school I mostly just eat in my dorm and don’t have space for lettuce. You best believe I am stocking up on salad greens ASAP to make my own salad creations at home!

3. Need someone to unpack your stuff? Just call me!

Friday morning, I went to town unpacking the two giant suitcases I brought back half my life in. I think it took me like 20 minutes at the most, and it’s all unpacked. I think you just gotta get in the groove, and it doesn’t feel like work. If you put it off, it’ll just suck when you finally get around to it. Plus, I’m somewhat of a neat freak, and can’t stand having too many things out on the floor. Drives me nuts.

4. Colorado doesn’t get white Christmases

That picture above was taken last year on Christmas Eve…does it looks like snow to you? Ummmm, no. Seriously, we have a much better chance of it snowing on Easter than on Christmas here. And Halloween, too. Bizarre weather much? Apparently in the last 100 years, only 13% of the time has Colorado had a white Christmas, where it either snowed on Christmas day, or there was snow on the ground on the day. How sad is that? I’m hoping it snows this year, or at least the snow that’s still on the ground sticks around for another week…

Don’t ask about the weird  image that’s with the song. But anyways, my mom told me that she heard this song for the first time the other day (it’s called “This Year’s Santa Baby”) and since then, I’ve heard it twice. It has the same melody, but new and kinda funny lyrics. But apparently, it was never a hit, which is probably why it’s rarely played. But if you have Sirius XM radio, definitely check out the Holiday Traditions station because they’ve been playing it a lot!

6. I could totally live in a bottle of Bath & Body Works’ Vanilla Bean Noel lotion

Uh, yeah, don’t mind me over here smelling my lotion bottle like a crazy person. I can’t help it, BBW has the best lotion scents. This one is truly amazing. Don’t tell anyone, but I kinda want to eat it…

7. I really want lace shorts for Christmas

I’m kinda obsessed with the shorts and tights (with boots!) trend for winter, and what better way to dress up the combo than with lacy shorts? I think they’re completely cute and I’m really hoping I get them. I like these grey ones, since white seems too summery and I already have a pair of navy shorts.

Simply Having a Wonderful Weekend Time!

Heya everyone, thanks for all the input on my fruit and sugar post. Of course, I know fruit is good for me, but with all my eating disordered tendencies, it can be really hard to push all these silly “diet tips” out of my brain and do what’s right for my body. I really love what you all had to say on the subject though!

Now onto more fun :D Sorry about my really lame title, can you tell I’m in the Christmas spirit? I’ve officially been home for Thanksgiving break for 63 hours as I’m writing this (yes, I really did count!) and it’s been the best two days so far!

Friday was a crazy-busy day as I got ready to leave campus for break while also having classes and a test to go to :( I was running back and forth between class and my dorm and then I finally met my mom back in the parking lot after my last class. I was so excited to see her, even though I had just been home the weekend before. But I haven’t been home for more than 2 days since summer break back in August so it’s definitely been awhile since I could just take some time to relax at home. We headed straight for this nearby apartment complex that I recently applied to for next year. I am so ready to get out of the dorms after almost a year and a half so I was super pumped when I found out that they accepted my application. So we went on a little tour of the place, and it seems pretty cool. I’m planning on moving into a one-bedroom (because of my horrible roommate fiasco of last year) and the one bedrooms actually are pretty large. My mom seemed to like the place too, and it’s not too expensive, plus it’s on the bus line to campus which is awesome as I might not have a car next year. Oh, and it has an outdoor pool–holllllla! I’m crossing my fingers that we can sign a lease soon. An apartment with a real kitchen, here I come!

After that, I had to take a stats test (so ready to be done with that awfulness) and then my mom treated me to some gelato! I haven’t had some in months and I’ve been craving it, even though it’s been cold out, so it was a nice little snack. I got my usual soy chocolate, and some pumpkin. Seriously, the combo of pumpkin and chocolate is up there with peppermint and chocolate. Just so darn tasty!

After grabbing all my stuff from my room, we headed home, what we thought would be a 2 and half hour drive as usual. Well…it actually turned out to be a 3 hour and 15 minute drive, because of all the horrible traffic. Seriously, drivers in northern CO are the worst–they slam on their brakes for almost anything. Cars pulled off on the shoulder cause major pile-ups and end up making the relatively short drive home way too long. Luckily, we did get home safely and we listened to Christmas music the whole way down, so it wasn’t too awful :P

On Saturday morning, I totally savored the family time at breakfast. On the weekends, we almost always all have breakfast together, and it is the best, with the newspaper all over the table! We are big newspaper readers fo sho, even though I usually only read the lifestyle section and the comics ;) Then I dragged my dad outside so we could get the mail…because I was expecting something big! Well, not really, but I was excited. I ordered……….peanut flour! Heck ya, you better believe I was chomping at the bit to try it! I’ve seen it on like a billion blogs, and never got to try it, since I have no Trader Joe’s in my state :( Come on TJs, come to Colorado, pretty please? I ordered mine off iHerb and I couldn’t wait to dig in. For lunch, I was really feeling some veggie chili, so I heated up some Amy’s black bean chili and I really wanted cornbread on the side. Of course, I didn’t want to make a huge batch of it in the oven, so I thought why not make a microwave corn muffin? And add peanut flour to the mix–genius! It was soooooo good, you’d think it was actually cooked in the oven, but it only took a minute in the micro to puff up nicely.

Veggie chili + corn muffin = best cold day lunch.

Peanut Corn Muffin for One (vegan if Greek yogurt omitted, high protein)

1 tbsp yellow corn meal

1 tbsp peanut flour

1/4 tsp baking powder

water, enough to make smooth

1/2 tbsp plain Greek yogurt (can use pumpkin or applesauce to make vegan)

sweetener, to taste (I used a packet of Truvia)

Mix dry ingredients together in a small microwave-safe ramekin or nonstick cooking sprayed coffee mug. Add wet ingredients and stir til smooth and blended. Place in microwave on high for one minute; add additional time if necessary. Serve with veggie chili or topped with nut butter.

I am definitely making more microwave mug cakes with peanut flour–it adds a nice light peanutty taste, not to mention lots of protein!

After this delicious lunch, we were off–to Starbucks! They were having a deal this weekend between 2 and 5 pm where you could buy one holiday drink and get another one free. I love their holiday stuff, and couldn’t wait to try their new skinny peppermint mocha so I dragged my dad and sister along. Just kidding, they love Starbucks as much as I do! First, we made a stop at the mall nearby. It was cool to see it all decked out for Christmas–the crowds on the other hand were not so cool. I guess they’re normal around this time of year though. After a brief swing through Hollister (mine and my sister’s favorite clothing store), we hit up Bath and Body Works. I ran out of the vanilla bean noel lotion awhile back, and since I love their holiday lotions, I wanted to stock up. I got a mini vanilla bean noel lotion, a mini pink sugarplum lotion (one of their new ones, and SO good) and another pink sugarplum lotion for my sister since they were 3 for 10. I love Bath and Body Works–lotion is one of my addictions for sure and theirs are the best.

Starbucks was also crowded, but it was worth the wait to get my tall skinny peppermint mocha latte–in a red cup, my first of the season! The red cups always make me feel so cozy and excited for the holidays. I was really glad I got a hot drink yesterday, too. It was so windy and cold out that the drink definitely warmed me up. The verdict? I loved the drink. I’ve mentioned before that I always get the skinny versions of their drinks, and this one did not disappoint. Peppermint and chocolate (plus coffee!) is my favorite seasonal flavor combo, and this drink might become my go-to this season. Plus I didn’t get a headache or feel sick afterwards, so that was a win. I’ve found that if I get anything larger than a tall, I get all queasy and feel crappy the rest of the day, which is no bueno. So tall it is for me!

Saturday night, we saw my wonderful daddy in a play. Seems like every time I come home, I’m seeing someone in a play. I guess my family is very theatrical :P Actually, it’s usually only my sister, though I used to be really into acting in middle school and high school, and my parents used to run kids acting classes. Now my dad mostly just writes plays in his free time, but he got corralled into acting in one of the short plays. The one he was in was pretty funny, as was another one of the plays. The other two were…well, bad, but luckily they were short!

A random lunch that was actually great: vegan quesadilla (jalapeno almond cheese on brown rice tortilla), dark chocolate peanut mug cake, cinnamon-spiked butternut squash.

Sunday was grocery shopping part uno. You all know how much I love grocery shopping, and shopping in general. My mom and I went to Bath & Body Works (again!) to find some lotions that we ended up having to order online, but we did get hand massages in the store! Then we went to Super Target, aka my favorite grocery store after Whole Foods. Since Thanksgiving is only a few days away, it was busier than usual, and we ended up spending almost 2 hours walking all over the store. Shopping is my favorite form of cardio for sure ;) By the time we got out of there, our cart was filled to the brim, and I ended up getting some ingredients I need for some things I’m planning on making (recipes to come very soon), as well as a dress, pair of heels and tights for an audition/interview I have with my school’s TV station (I want to be a weather anchor!) and also some Christmas window clings for my window at school. Definitely a successful shopping trip!

I really wanted some oats this morning, and since I’ve been really into volumized oats lately, I had to plan in advance, so I whipped up a batch of dark chocolate peppermint oats! I think I ended up adding a little bit too much peppermint extract, but they were still nice and minty and refreshing.

Today seemed to be the day of making new, simple recipes. At dinner, I made a smoothie with Silk Nog, organic pumpkin puree and peanut flour (yes, I’m already obsessed) and it actually turned out awesome. Peanut flour really does go with almost everything, it was definitely a smart purchase. Then I made pumpkin s’mores. Oh yeah, get excited! Pumpkin and chocolate is an amazing combo, I love s’mores in general so I thought it would be awesome. And I was not disappointed!

Pumpkin S’mores (can be made vegan, makes 1)

1 graham cracker square, halved

vegan chocolate chips (I used a teaspoon)

vegan or regular mini marshmallows (I used a tablespoon)

1 tbsp pumpkin puree

Place chocolate chips on one side of a graham square and microwave for 15-20 seconds on high until the chips start to melt. Add marshmallows on top and microwave for 10 more seconds. Spoon pumpkin onto other graham square and place on top of chocolate and marshmallow side. Don’t forget the napkins!

Besides my random experiments in the kitchen, I also did some more grocery shopping (this time at Whole Foods–yay!) as well as boot shopping and a hair cut. I always love how my hair looks right afterward until I shower, but then I can never style it the exact same way again. And the boot shopping was also a huge success–I’ll show you guys my new boots in action sometime soon, but for now, here’s a photo from the DSW website, where I got them from. There were a little bit more expensive than I would have liked, but they’re very cute and comfortable, even with a 2 inch heel. I think they’ll get a lot of use and I can’t wait to show them off on campus.

I love my new hair, too!

So my weekend was definitely action-packed, but I wouldn’t have it any other way. I had so much fun and I can’t wait for the rest of Thanksgiving break. And no worries, I’ll be getting back to you all with a few recipes very soon!

WIAW: Halloween (Weekend) Edition

Hey guys, how were all of your Halloweens? Mine was basically like any other school day: classes at 10 and 1, then an editorial meeting with staffers at 3. Oh yeah, not sure if I mentioned this or not, but I’m the editor for my campus’ faculty & staff newsletter! I’m so stoked because it’s a paid job and it’s in journalism, which is my field. I was dreading trying to look for some lame minimum wage job but I’m so glad I got hired for this. It was a long process of interviewing and paperwork, but it’s finally coming together. Me and another girl (the other editor) get along really well, and even though we’re pretty confused and overwhelmed at this point since we have a deadline this week and only just hired our writers, we’re still loving the position. So yeah, I officially have my first ever job :D But anyways, yeah, my Halloween was pretty boring…but Halloween weekend is a totally different story!

Peas and Crayons

Mi madre picked me up around 2 on Friday and we were off! Unlike most weekends that I go home, she was able to get me earlier which meant I got to eat a home cooked meal. Score! Sure, I like going out to fast casual places, but they can get repetitive and expensive after a while, and I’ve missed being able to use the oven. So that’s exactly what I did–I made Gardein meatless ‘chicken’ nuggets and Alexia sweet potato tots (best thing ever!) alongside some green beans (ick, but decent with some spicy three-pepper mustard) for dinner. It was basic but gourmet compared to my dorm meals. Though I can get pretty creative with those… ;)

Friday night was so much fun, because we all carved pumpkins and watched some reallllllly old (from the early 90s!) Disney Halloween cartoons. Those 2 things are basically a Halloween tradition in our house, and I love it. I ended up carving a pumpkin in my pumpkin because I thought a face was too cliché haha. It was so much easier than carving a face too, and the only part that sucked was digging out all the seeds. The insides of all the pumpkins were freezing cold so it hurt our hands after a while to get all the seeds out. But trust me, it was worth it–you’ll see why soon!

Saturday morning I woke up a little early (like 8:15, which is totally not early but it is for the weekend) because I wanted to make pancakes for my lovely familia. But not just any pancakes–oh no!–I made pumpkin pancakes with dark chocolate chips! OMG, pumpkin and chocolate are a match made in heaven for sure. I love the Archer Farms pancake/waffle mixes because they have the best flavors, especially seasonal kinds. My personal fave is the double chocolate peppermint (I’ll be making those over Thanksgiving break!) but pumpkin is awesome-sauce too. I also added a scoop of vanilla protein powder, to up the protein a little and use up the powder. They turned out really good but sadly, there weren’t that many of them. The amount I used only made 15 mini pancakes, so everyone got 3 (and I froze 3 for myself for later…shhhhh!)

My dad and I ventured out to (where else?) Whole Foods. Knowing us, we also made stops at Sunflower Market and Albertson’s. Gotta stock up on food, ya know? I got bunches of yummy stuff from WF, including some new things you’ll hopefully be seeing on this bloggie soon, like purple cauliflower and dried figs. Love that store. At Sunflower, I basically took their entire bar selection ;) Just kidding, but I got soooooo many bars, like my newly beloved Clif Mojo white chocolate macadamia, Clif Kid Z-Bar full moon brownie and Pure orange cranberry. That is literally the only store near me that has that flavor of Pure bars and Clif Mojo bars, so I gotta get ‘em where I can.

Back at home I had a super late lunch and then got to work roasting my pumpkin seeds. You know the seeds are the best part, right? Of course they are. I decided to stray from the usual spice combinations and make a spicy-sweet kind. I found the recipe from here and they turned out better than I thought. I made a few tweaks though based on what I had on hand: I used Eggbeaters egg sub in place of the egg white, I used raw sugar instead of cane sugar and I used crushed red pepper flakes instead of cayenne pepper. They still ended up amazing, with just enough sweetness and heat.

So. Flippin'. Addicting.

Dinner turned out to be an (almost) family affair. My dad and I really wanted to try grilling eggplant and brussels sprouts so we fired up the grill for those. Meanwhile, my mom made dinner for the rest of the fam (minus me) while I cooked up a couple of Gardein meatless nuggets at the last minute. My sister, the only non-cook in the house, was of course the only one who didn’t participate but it was still fun. I miss being in the kitchen with everyone. It’s just such a fun, lively atmosphere. Anyways, dinner turned out great, especially the grilled veggies. I’ve had grilled eggplant before, but I’ve never done it myself and it turned out amazing. Same with the brussels sprouts. The outsides got nice and crispy and the insides were warm and smooth. So. Darn. Delicious.

The rest of the night was spent watching-slash-making-fun-of a really lame infomercial on 70s music, my dad helping me with stats (beeteedubs, I absolutely HATE stats with a passion, so this sucked but was also super helpful), me learning to enjoy hot tea (my mom got some Celestial Seasonings candy cane and sugar cookie tea bags, and they totally transformed me into being a hot tea lover) and watching reruns of SNL. I ended up staying up pretty late but it was so worth it.

Sunday, as usual, was pretty chill. Enjoying breakfast with the fam, reading the Sunday newspaper, packing up my stuff, lunch, hanging out with my sister and finally having to drive back up to school. I always hate Sundays on weekends I’m at home because it means I have to go back to school. Don’t get me wrong, I like school and my dorm and all, but I just really cherish the weekends I spend at home and it sucks when they’re over. They always seem to go by way too fast :( Back up in good old FoCo, my mom and I stopped for more groceries (I couldn’t live with nut butter, of course!) but sadly, I’ll have to be sweet potato-less for the next two weeks ’cause we couldn’t find them anywhere. We also stopped for dinner at a new-to-us place, HuHot Express. We went to HuHot once for my dad’s birthday, but this one was slightly different because it’s not all-you-can-eat. But I ended up loving what I got here better than at the regular place. I got rice noodles topped with shrimp, fresh jalapeno (spicy is where it’s at), edamame, spinach and what was called a Mongol mustard sauce. It was really delish, a little spicy, and not too overwhelming. I ended up mostly just eating the shrimp and veggies, but I would totally get it again. But the real star was the super-cool, high-tech soda machine. It had a touch screen menu so you could mix and match between all kinds of sodas and juices. Normally, I don’t drink soda but I had to try this. I got diet orange Coke mixed with diet vanilla Coke–it was like an orange creamsicle! Have you guys ever seen one of these machines? They are le-git!

Overnight oats in a jar! I basically just saved this jar and keep reusing it. Cookies 'n cream overnighters, frozen raspbs, spicy veggie sausage. Breakfast of champions right thurrrr!

I love tempeh bacon. And apples. And sriracha. Oh, and cold brussels sprouts. Don't judge me :D

Of course, it was sad to say goodbye to such a fun-filled weekend, but Thanksgiving break is in less than 3 weeks–wooooohooooo :D You know I’m looking forward to 9 days away from school!

Sweet 16 & A Half?

Happy Friday, ladies! Yay, another weekend is upon us! I am so excited for this weekend–it’s another one at home, which is always fun and busy. This one involves grocery shopping :D , possibly making dinner and…oh yeah, a trip to urgent care. Say what? Yeah, my foot still hurts when I walk or stand on it, and since I didn’t have time to get back home today to get it checked out, I have to go into the urgent care tomorrow to see what’s up with it. Probably won’t be the funnest way to spend a Saturday morning, but I wanna get it taken care of, whatever the problem is.

Sweet, I'm 16 again. So why do I have all these college-level classes?

 Ummmmmm so yeah, according to RealAge, I’m 16 and a half. Right on. I must be doing something right. Except, honestly, when I was 16 1/2, I wasn’t that healthy. That was actually the height of my eating disorder–so I was starving myself and my mind was in an awful place. So I’m psyched that my “real age” health-wise is two and a half  years younger than my actual age, but I’m glad I’m not actually 16 1/2, or I’d be so messed up. I know I haven’t talked much about my anorexia on here, but I’d really love to hear your feedback on whether or not you’d like a post or two on my ED history. I know a lot of you out there struggle with it (or have struggled with it) too, so maybe you’d like to hear my personal story. Just let me know, k?

Anywho, this is just a super-quick update before I head home. I’ll let you all know about the foot situation, what I made (fingers crossed it turns out amazing) and what else went down this weekend. Oh yeah, and it’s totally Homecoming weekend here which is ironic since I’m going home :P Last year the HC festivities were fun and all, but this year my parents couldn’t make it up here so I decided just to head back down and spend the weekend at home. But…go Rams at the game tomorrow! We will be kicking some San Jose State butt…hopefully ;)
