Friday Five: Online Shopping Addict

Hi guys! Sorry I’ve been a little absent lately–the semester’s starting to get busy and I literally have next to no time during the middle of the week for anything but sleeping and getting homework done. But I’m more thankful than ever to have three day weekends every week–it’s seriously my lifesaver.

Anyways, I didn’t want to let a whole week go by without another post so I’m throwing a little Friday Five fun in here!

Five Things I’ve Eaten Recently

  •  The best vegan restaurant pizza I’ve ever had. It’s hard to find vegan pizza in restaurants. It’s even harder to find amazing vegan pizza. I’m not one for fake cheese (don’t get the Daiya appeal) so I always go cheeseless. The other toppings are the best part anyways, especially in this case. My mom and I tried out a new-to-us restaurant in my college town called Restaurant 415. They aren’t specifically vegan, but they have plenty of gluten free and vegan options and focus on locally-sourced and organic ingredients. My kinda place for sure! I ordered The Woodland pizza sans the cheese and I was pleasantly surprised by how good it was. The crust was not too thin or too thick, and it came topped with garlic & olive oil, mushrooms, deliciously salty & crunchy kale (when do you ever see kale on a pizza?!), dried figs (ditto), caramelized onions and a balsamic glaze. The sweet and salty flavors worked together perfectly and I was in vegan pizza heaven.

  • Banana softserve…with a twist. Who doesn’t love banana softserve, aka frozen bananas all blended up until they look like ice cream? Seriously, one of my favorite blog food finds ever. Well, I also discovered a little trick recently: mix almond butter (or nut butter of choice) with a little  coconut oil and drizzle over banana softserve…homemade magic shell! You can even add cacao powder or whatever you want to make it even better. I like topping my softserve and shell with cacao nibs for the perfect healthified dessert.

  • Raw jalapeno poppers.  I’ve been eating them whole, putting them in salads…basically just loving them. I should have made more but I’ll definitely be stocking up on jalapenos this weekend!

  • Brown rice sushi from Whole Foods. I’ve mentioned before how disappointed I am in the salad bar at the WF in my college town. However, when I discovered their brown rice sushi, I just couldn’t resist. I’ve never had brown rice sushi before, let alone vegan-friendly brown rice sushi. I got the avocado carrot cucumber roll and it was great dipped in coconut aminos and as a salad topping.

  • Salads…on salads on salads. I’ve had a salad-a-day streak for at least the last three weeks, and I don’t want it to end anytime soon. I’ve discovered what makes a really great homemade salad–chopping the greens, shaking everything up to mix it around and letting it sit for at least half an hour in the fridge. It all makes for a very tasty salad. The toppings and dressings are what makes them, though.

Five Things I’ve Bought This Week

  • A set of weights. Yep, finally jumped on the strength training trend, and I gotta say, I really love it! I’m definitely not lifting heavy yet, but it’s good to start out light. And besides, I’m not so much wanting to build muscle as I am wanting to lean out. So lighter weights+more reps=(hopefully) a leaner body!

  • A geology textbook and cacao nibs from Amazon. Random, yes, but I needed to get the super saver shipping so the cacao nibs were a much-wanted add-on item. The textbook is obviously for the geology class I’m in–I took it because it’s supposedly a prereq to the meteorology program I want to get into after graduation and I don’t really love it so far (mostly because of the professor) but I have a friend in it so that helps a lot!
  • A massive iHerb order. They used to offer free shipping in the U.S. for any order over $20 or $25 I think, but now it’s for orders over $40. I hate paying for shipping so I just stocked up my online cart more than usual. I got a few new-to-me items (raw buckwheat granola, a new brand of coconut flour) and some other things I can’t get in store (namely, peanut flour). I think I’ll be set with new products for awhile…

  • Some new-to-me Whole Foods finds. Yes, I love shopping online for things I can’t get near me, but there’s nothing like a good old-fashioned shopping trip to the grocery store. On my last trip to Whole Foods, I got a bunch of new-to-me items and I’m loving them all so far. The best is the Thai coconut curry hummus by Hope Hummus–it’s a local brand, but they might have it in WFs across the country so definitely check them out if you ever see them near you. This is the best hummus flavor I’ve ever tried, period. I also got a couple new Larabar flavors, unsweetened ketchup, coconut oil spray, dark chocolate Nuttzo (it was on sale!) and WF brand pickles (because other brands have not-so-good ingredients).

Five Sites I’m Loving This Week

  • Chicnova. It’s an online store I just discovered that has a ton of cute, affordable clothes in all kinds of styles. I haven’t ordered anything (yet) but there’s quite a few things I’m drooling over.
  • Warby Parker. Notice the online shopping trend? Okay, so I haven’t bought from here either but I love the concept: you get to choose prescription glasses to try on at home, and you send back the ones you don’t like. I’m a sucker for hipster style glasses, so the next time I need a new pair, I’ll definitely be hitting up this store.
  • DAMY Health. I don’t follow their nutrition plan by any means, but the recipe section has all sorts of amazing-looking vegan, gluten free and raw desserts. I kinda want to make them all…
  • PicMonkey. The best free editing site I’ve come across. I just wish I could use all the upgraded features.
  • Weather Channel. Yep, I’m a weather nerd and proud of it (that’s why I’m going into meteorology!) Besides just the forecasts, they also have weather stories and articles that are really interesting. For example, I found out the other day that Denver is in the top 6 cities for most snowfall. I actually don’t believe it, because for the past few years we haven’t gotten much snow at all!

WIAW: Secret Nutrition Edition

I like eating healthy, but I also like to enjoy what I’m eating. If I’m not liking what I’m putting in my mouth, then what’s the point? Luckily, I’ve trained my taste buds to love nutritious things, like kale salads and raw seeds, but I still like to have fun with my food. That  being said, this week’s WIAW features a few of the meals I’ve been enjoying lately, with the ‘secret’ (or not so secret) nutrition aspect of the food too!

Breakfast: banana softserve ‘sundae’ topped with peanut flour paste, cacao nibs and PB Puffins.

Secret: Cacao nibs. These tiny dark brown bits are raw and packed with magnesium, which helps with muscle function and bone strength. They also have more antioxidants than blueberries, green tea and red wine! Cacao nibs pack a powerful healthy fat punch and can boost your energy.

Lunch: Qdoba naked taco salad with romaine, black beans, habanero salsa and guacamole.

Secret: habanero peppers and guacamole. Habaneros are one of the spiciest peppers (between 100,000-500,000 Scoville units) because of their high concentration of capsaicin. Capsaicin can help lower cholesterol, blood pressure and can even increase the body’s metabolism while consuming it. Guacamole is made from avocados, which can increase absorption of lycopene and beta carotene when combined with lettuce or spinach. Avocados are a great source of healthy fats, and their oleic acid can increase absorption of fat-soluble nutrients.

Snackplate: organic kettle corn, Way Better Snacks Simply So Sweet Chili multigrain chips, fresh pineapple, baby carrots, tamari pumpkin seeds, Chocolove peppermint dark chocolate.

Secret: pumpkin seeds and multigrain chips. Pumpkin seeds are a great source of magnesium, manganese, zinc, iron and protein. Their phytosterols can help lower cholesterol, and the seeds have anti-inflammatory benefits. This brand of multigrain chips is probably the healthiest I’ve found. All of the ingredients are real foods, and the chips are full of healthy fats in the form of sprouted flax seeds and sprouted chia seeds. The chips are also made with sprouted quinoa, stone ground corn and sprouted broccoli seeds, and are low in sodium.

Dinner: spicy mac ‘n cheez (quinoa pasta, Field Roast Mexican chipotle vegan grain meat sausage, spicy nacho cheez sauce, nooch).

Secret: nooch, spicy cheez sauce, quinoa pasta. Nooch, aka nutritional yeast, is a vegan staple for a reason. It’s a complete protein source (the brand I used has 8 grams per serving) and is full of necessary vitamins including B12. The spicy cheez sauce recipe can be found here and it’s made with simple, whole ingredients including raw cashews. Cashews provide heart-healthy monounsaturated fat and magnesium which helps with bone health. They also can prevent gallstones. Quinoa pasta is made from two simple ingredients, quinoa and corn, so it’s perfect for a gluten-free diet. It’s full of fiber and protein, so it can fill you up faster than traditional white pasta, plus it has all the benefits of quinoa.

Unsweetened brewed iced coffee from Panera.

Secret: coffee. This tropical bean is full of antioxidants, helps prevent the onset of type 2 diabetes and protects against some forms of cancer. Without any milk/cream or sugar added, it’s a very low calorie drink. To boost your iced coffee, add in unsweetened almond milk and stevia for minimal calories.

Summer (Recipe) Lovin’

Anyone catch the Grease reference? Ironically, my sister’s auditioning for it in the fall at her school since she’s really into musical theatre. I’m actually not even sure if I’ve ever seen the entire movie, but I have definitely heard some of the songs from it.

Anyways, I’ve been doing a lot of recipe experimentation lately and it’s all been pretty successful. Well, okay I did attempt to make Katie’s deep dish cookie pie and it turned out alright, except it tasted a little beany and it didn’t last very long even inside a Ziploc bag without starting to get moisture inside the bag so I had to toss them. But everything else has been not just edible but pretty delicious. Note: All of these are my own recipes, except where I gave credit to the original.

These tiny bites are addicting!

I know I said before that I’m a bigger fan of cookies ‘n cream, but I couldn’t pass up these cookie dough bites I saw on Angela’s blog. If you’ve ever wanted to eat cookie dough but didn’t want to get sick from the raw eggs, these little bites are perfect because they’re vegan, so no eggs involved! But they taste exactly like raw cookie dough and are super simple to make.

Cookie Dough Bites (vegan)

Adapted from Oh She Glows

1/4 cup raw cashew pieces

2 tbsp rolled oats

2 tbsp oat flour

sprinkle sea salt

8-10 drops vanilla stevia, to taste

2 tbsp honey vanilla agave (or plain agave)

1 tbsp semisweet vegan chocolate chips

In a food processor, blend cashews and oats until combined and flour-like in texture. Add in oat flour, salt and stevia drops until mixed. Add in agave until mixture comes together and is sticky. In a bowl, take cookie dough mixture and mix in chocolate chips by hand. Form into 8 to 10 small balls and keep in fridge until ready to eat.

This one’s so simple it’s barely a recipe but I thought I’d share it anyway because it’s so good. If you’ve ever made banana softserve before and you’re a coffee fan, you’ll love this version. Just two ingredients and it tastes almost like coffee ice cream.

Mocha Softserve (vegan, gluten-free)

banana slices, frozen

1 tsp instant coffee powder (I used Starbucks’ VIA mocha instant coffee)

Blend banana slices in a food processor or high-powered blender until the slices clump together. Add in coffee powder and process until slices form into a big scoop that’s brownish in color. Serves 1.

Trust me, your wallet and your taste buds will thank you for this bowl!

If you’ve been to Chipotle and have ever had their burrito bowls, you’ll know that they are some of the best things ever. They are always my go-to when I get around to going there (it’s been almost a year since I last went!) because I love getting a bunch of random tasty things in a bowl. But then I made this Chipotle-inspired bowl and realized that it’s even better than the restaurant’s, in both taste and nutrition. Guess I won’t be wasting any of my hard-earned money there anytime soon ;)

Better-than-Chipotle Burrito Bowl (vegan, gluten-free, high protein)

1/3 cup cooked quinoa

cilantro, chopped

lime, quartered

1/2 cup beans (I used pinto, you can use black or whatever beans are your favorite)

kale, chopped and massaged with lemon juice and nooch

spoonful salsa

spoonful guacamole

Mix quinoa with cilantro and a squeeze of lime juice until combined. Add a pinch of sea salt if needed. Top with beans, kale, salsa, guacamole or whatever burrito bowl toppings are your favorites. Serves 1. 

Almost totally homemade cinnamon rolls!

About a year ago, I attempted to make Mama Pea’s cinnamon rolls, which are completely from scratch. Now usually I like making things from scratch and most of the time they turn out. Not this time, probably because I have nada experience with making bread that has to rise. I was still on the search for an easy vegan cinnamon roll recipe when I found out that you can make them using pizza dough. I had just gotten some fresh dough from Whole Foods the other day so I decided to put some of the dough to use in almost homemade cinnamon rolls. And they were a delicious success, not to mention totally easy. If you’re scared about making cinnamon rolls from scratch, this is the perfect recipe for you. Plus they’re really healthy–no butter or oil used, lightly sweetened with a natural sweetener and packed with nutritious grains like millet and oats (if you use multigrain pizza dough). What’s better than an easy, yummy and no-guilt breakfast?

Maple Pecan Cinnamon Rolls (vegan)

half ball of fresh multigrain pizza dough

1 tbsp agave or maple syrup (I used Ohgave! honey vanilla)

generous sprinkle cinnamon

handful chopped maple or regular pecans

oat flour (to flour surface)

Let pizza dough rise in a towel-covered bowl for at least one hour. Preheat oven to 375. Roll out risen dough on floured cutting board until about 1 inch thick and rectangular in shape. Mix agave and cinnamon in a small bowl until thick and paste-like and spread on dough. Sprinkle with pecans and roll into a thick log, pinching ends. Cut into 4 small rolls with a floured knife and place in sprayed baking dish. Bake for 20-25 minutes or until starting to brown on top. Serve warm from the oven topped with icing, cream cheese or vanilla almond butter. 

Quinoa power cookie (almost raw).

We just invested in a dehydrator, thanks to my obsession with dried fruit and how expensive that habit is. So far, I’ve made dried pineapple and kiwi…and these cookies. Yep, it’s true, you can make cookies in a dehydrator, and not just any cookies, but magical ones. Like ones made from simple, healthy ingredients like quinoa and almond butter. These babies are tiny but powerful…and delicious of course. They made my house smell like peanut butter and are crunchy and chewy at the same time. Oh, and if you’re dehydrator-less, you can make these in the oven at a low temp. I can’t vouch for how they’ll turn out, but the recipe I adapted them from said you can do that. I personally think it’s cooler making cookies in a dehydrator! Oh, and each cookie has less than 80 calories, so you can totally eat a few of them at a time without feeling guilty!

Quinoa Power Cookies (vegan, gluten-free)

Adapted from Insatiably Healthy

1 cup cooked quinoa

2 tbsp almond butter (I used almond peanut cashew butter)

2 tbsp agave (I used Ohgave! honey vanilla agave) or other liquid sweetener

2 tbsp rolled oats

2 tbsp peanut flour

1 tbsp ground flax-seed

1/2 tbsp sweetened cacao nibs

1 tbsp dark chocolate chips

In a large bowl, combine quinoa, almond butter and agave. Stir in oats, peanut flour and flax until mixture sticks together. Fold in cacao nibs and chocolate chips. Form into 10 small cookies and place on dehydrator trays. Cook on 115 F for 3-6 hours or until crunchy on the outside.

Can you believe it’s already the second WIAW party of the year? Um, nope, neither can I! If the year’s already going by this fast, that’s a good sign. The first few months of the year always tend to drag on, which isn’t fun. I already can’t wait for summer break, which is pretty pathetic :P

Winner–Oikos! I’ll admit that I’m a diehard Oikos fan (the original Stonyfield organic kind, not the new Dannon variety), so all of their flavors are winners in my book, but the superfruits takes the cake!

Winner–Gardein! I actually love all these veggie burgers, but the Gardein has the most protein, 17 grams in one burger. Not too shabby!

Winner–Archer Farms almond peanut cashew butter! Obviously, almond butter is my hands-down favorite nut butter, but this one has the creamiest texture and a great mixed nuts taste.

Winner–Alexia sweet potato tots! I love these crunchy little nuggets of sweet potato goodness. They’re much healthier than typical tater tots, because they’re baked not fried and cooked in just a little olive oil. Definitely my favorite way to enjoy my favorite veggie!

Winner–peanut flour! All three of these are staples in my daily eats, but I can’t deny the amazing-ness of peanut flour. It’s a great sub for flour, is delicious as a protein powder, works well in microwave mug cakes and (my personal favorite) is beyond yummy mixed into a paste with water! It’s like a higher protein version of nut butter!

Jumping on the Bandwagon

Hi lovelies, how were all your weekends? I am beyond excited that it’s less than a week til Christmas, but I’ll save that excitement for later!

After having read a lot about NaNeFoMo (or National New Food Month) around the bloggy world, I decided to finally join in! Yes, I know it’s kinda late, but I have already made some progress and created a “bucket list” of things I’ve been wanting to try for a while.

1. Peanut flour. I finally sucked it up and ordered some online a couple of weeks back. This has changed my life, for real! I’ve had it practically on a daily basis since it first arrived in the mail (which is why I just had to order more!) and I’m definitely not sick of it yet. It makes an amazing paste, peanut sauce for stir-frys and salads, as flavoring for Greek yogurt and as a source of protein in smoothies. I even used it in place of flour in my festive garland bars. Definitely a new staple in my pantry!

2. Chocolate chips. These were (and still are) a fear food of mine, so I thought they’d be perfect to include in my list. I bought some vegan chocolate chips at Whole Foods, used them in a few recipes and now I love them! Yes, they’re still scary, so I only eat maybe a teaspoon or so per day, but I don’t want to deprive myself of dark chocolate ever again!

3. Making my own nut butter. Being home alone a week ago gave me the perfect opportunity to whip up a batch of homemade nut butter. But what kind to make? I had a bag of chopped pecans, so I mixed those up with some instant coffee powder, a little maple syrup and coffee maple pecan butter was born. You’re welcome ;)

4. Vegan marshmallows. Erm, well, not quite yet! I haven’t been able to find any in stores near me, so I decided to settle for some pescetarian marshmallows. Ummmm, say what? Yeah, marshmallows have gelatin in them, which is made from animals, but I was able to find some kosher ones, which means the gelatin is made from fish. Since I am basically a pescetarian right now, these are fine by me til I can find some truly vegan marshmallows.

5. Kombucha. This one is very scary to me. Not a fear food, in the eating disorder sense, but scary because A) they’re expensive and B) what if they taste horrible? I’ve still yet to take the plunge on this, but I’m hoping maybe I’ll get to sample it at Whole Foods or something and see if it’s worth the price.

6. More raw/vegan desserts. Every one I’ve attempted so far has turned out amazingly well (even if I am the only one who ends up eating them…oh well, more for me!) and I’d love to do more experimenting in the kitchen over the next month. Raw desserts can be kinda “scary” since they include lots of calorically-dense foods such as dates and nuts, but they taste so good and are so healthy for you compared to regular desserts. A few things I have in the works include raw salted caramel sauce, vegan peppermint bark and another variation on my raw brownies with chocolate peppermint avocado “buttercream” frosting. This month sure is looking delicious 8)

So that’s my bucket list so far–three things down, three to go! I’m proud of myself for conquering one fear food so far and I’m looking forward to trying out new things, especially the recipes. While I like to make “tried and true” type things, it’s always rewarding making something brand new and having it turn out amazing. And if it doesn’t, it’s not a huge deal!

A Very Vegan Thanksgiving

Hi peeps! Hope you all enjoyed your Thanksgiving and Black Friday (if you live in the U.S.)! I am so sad that it’s over, mostly because I’m headed back up to campus tomorrow :( I’ve had such an amazing time this past week that I can’t believe break’s almost over. However, in less than 3 weeks, I’ll be back home for a whole MONTH! I <3 college :D

I decorated my little Christmas tree, even though I won't get to see it again for a couple of weeks. Ignore the toilet in the background, I am so classy ;)

Let’s back up to the day before Thanksgiving. I’ve never gone shopping on Black Friday before–I love shopping, but can’t handle the crowds and possibility of being attacked viciously by desperate shoppers 8O My family decided to head up to Denver’s 16th Street Mall the day before Thanksgiving to try to avoid the crowds. We hit up the brand new H&M store first…where apparently a million other people also decided to go! So yeah, we did not end up avoiding the crowds. And unfortunately, the store was underwhelming. I mean, it looked cool inside, but it was packed and the clothes were kinda eh. I was definitely expecting more. I was considering buying a cute gold clutch, but I didn’t really think it was practical, so I passed. The only things I really wanted, a pair of cream knit legwarmers and a sequin skirt weren’t there or in my size so I left empty-handed. My sister and I also left Forever 21 without buying anything. They had more cute things than H&M, but I wasn’t really feeling it.

What didn’t end up being a disappointment was Pinkberry. But then again, is froyo ever disappointing? Especially peppermint froyo? My mom and sister really wanted to try their seasonal peppermint flavor, so both of them got a cup topped with peppermint bark. I also got peppermint, but topped mine with just pomegranate seeds. Weird? Yes. But also really good. Don’t knock it til ya try it ;)

Another way I've been avoiding my homework--reading my fave magazine, People StyleWatch.

After walking around the pedestrian mall to kill some time, we drove across town to our favorite mall. We seriously go there quite a few times throughout the year, even though it’s probably 60 miles from our house. Dedicated shoppers right thurrrr :P But it is such a nice mall, and pretty huge. I just realized that it has an Anthropologie store–I may have to check that out next time we go there! Anyways, my sister and I were on a mission so we ditched our parents and headed straight for Hollister and Abercrombie & Fitch. As I’ve said before, those are two of our favorite stores. I know they’re totally cliché or whatever, but we truly love them and don’t just shop there because it’s the ‘cool kid’ thing to do. We both ended up getting one thing at each store and with all the discounts we used, we ended up saving a ton of money. Love when that happens! Afterwards, we met up with our parents at the T-Mobile store. Our cell phone contract expires soon with them, so we wanted to play around with the phones and see what we might end up buying. A lot of them were really neat, but my mom ended up deciding later that we’re probably going to switch to AT&T. Fine with me, as long as they have awesome phones!

Thursday was, of course, Thanksgiving. The food of T-Day is never my favorite part–I just love being with my family. The Macy’s parade was fun to watch and it was so nice to just spend the morning and afternoon relaxing while my mom slaved away in the kitchen. One of our traditions is to have snacks in the early afternoon instead of lunch and I was looking forward to that. I filled up a turkey-decorated paper plate with some of my fave snacks and then just chilled out on the deck with my madre and padre. It was so weird that it was warm enough to sit outside on Thanksgiving–usually it’s pretty cold and sometimes snows. But Colorado is so random weather-wise, I love it. After snacks, my dad and I went on a long walk and then came back and started prepping the brussels sprouts we were going to grill for dinner.

My T-Day outfit: grey wool duster cardi (A&F), grey floral tank (HCo.), coral culotte shorts (A&F), grey polka dot tights (Target). Sorry about my weird stance, I was trying unsuccessfully to show off the tights.

Snack plate lunch: Whole Foods kettle corn, jalapeno-stuffed green olives, local salsa, Whole Foods guac, bell pepper strips, green mojo multigrain chips, artichoke hummus. I went back for more kettle corn and chips latah!

Thanksgiving dinner was pretty quiet with just the four of us, but it was nice. My dinner ended up being all vegan, but it was kinda disappointing. I tried this field grain celebration roast that tastes exactly like stuffing. Unfortunately, I hate stuffing, but the roast wasn’t awful. The best part of my dinner by far was the baked sweet potato topped with a little maple syrup and some peanut flour sauce. Mmmmm, so darn tasty! What is it about sweet potatoes that’s so addicting? The sprouts turned out way too hard and dry, which was sad because I usually love ‘em. You win some, you lose some. I tried a little of my mom’s stuffing, which she made vegan, but honestly, I still hate it. Sorry stuffing lovers! I might like a cornbread stuffing though so that may be tested out at next year’s feast. However, dessert is always the best part, hands-down. I had another piece of the festive garland bars I made (I’ve seriously had a piece of it every night since I made it on Monday–can you say obsessed?) and a slice of the pumpkin pie bars my mommy made. She also made these vegan especially for me, and they were super delicious, even better than a pumpkin pie. They were a little cakey and pretty sweet but so good.

Friday I woke up later than I have in awhile (9 am!), had breakfast and just hung out for awhile. Lunch was a strange but yummy creation I’ve been enjoying this week. I cook up some butternut squash cubes, top them with black beans and some plain Greek yogurt mixed with a little guacamole. Then I pour on some really good salsa and crush some Late July mild green mojo chips on top. It seems so weird, but it’s actually good and kinda Mexican-y. I made something similar to it over summer break, but it was on top of lettuce instead. We ran out of lettuce this week, so I decided to use squash as the veggie base and it turns out just as good. Plus I’m obviously obsessed with anything orange.

Later on, my sister and I drove out to brave the Black Friday crowds get our Starbucks fix. The ‘bucks we went to was crowded as usual, but we actually ended up getting to sit in the leather chairs in the corner, so that was a win. I got the tall skinny peppermint mocha with soy, and it was even better with the soy versus the skim. A lot creamier without being sickening. I think this will be my holiday drink go-to. Afterwards, we walked over to Ulta to goof around and try on sunglasses and smell all the lotions and stuff. I love that girl; we always have so much fun together, especially when it’s just the two of us. Surprisingly, most of the stores weren’t that crowded (except the Apple store) but then again it was almost 5 at night. I guess most Black Friday shoppers head out early.

Friday night my dad had another performance of his play, so the rest of us just stayed home and had a nice dinner of leftovers (I had a slice of the celebration roast topped with yellow mustard, which made it so much better, and some sweet tater fries) and then spent the rest of the night watching The Devil Wears Prada (my favorite movie ever!) and playing games.

WIAW: Colorado Myths & Carrot Cake Hummus

Do you ever hear people talking about the place where you live (city, state, country, whatever) and they’ve got it totally wrong? And you just want to tell them “No, that’s not what it’s like at all!” or “It’s so much better than you say it is!” or whatever? If you ever live somewhere long enough, you’ll probably get to know it pretty well–and you might even know all the myths and misconceptions about it.
 
I’m a proud [semi-native] Coloradan and since I’ve been living here since I was a little toddler, I know a lot about the state but I’ve also heard a lot of things about it that aren’t necessarily true. So without further ado, I give you Colorado Myths and Facts. Oh, and WIAW, of course! I couldn’t forget that ;)

I finally caved and tried banana soft serve. Verdict: um, I really made this? It tastes like banana froyo! Dark chocolate protein overnighters topped with soft serve and melted almond butter. Perfection in a bowl.

 Myth #1: Everyone in Colorado is either a cowboy or a hippie.

Ummmmmm, yeah, so not true! Personally, I don’t know anyone remotely like a cowboy, but I guess it’s because of all those Old West stories and stuff. There are definitely some hippies here (namely in Boulder) but I don’t have anything against hippies. In fact, I probably am kinda one, considering I love yoga and Whole Foods. Oh yeah, and I’m vegetarian/vegan. But really, most Coloradans are normal people, with lots of different interests. I’m sure there are some cowboys out there, too.

I was indecisive at lunch (when am I not?) so I went for a hodgepodge of flavors and textures. Strawberries, blueberries, iced tea. Sweet potato, half topped with Greek yogurt/spicy guac dip, half topped with agave/almond butter dip. Carrot cake hummus (new, amazing creation of mine) topped with cinnamon bunny grahams. Sweet, spicy, warm, cold, crunchy and soft.

 Myth #2: Colorado is bipolar.

Sadly, this is very true. I mean bipolar in the sense of the weather. It can go from sunny to cloudy in seconds (let’s not forget liquid sunshine–that’s when it rains when the sun is shining), it can thunder during a snowstorm…yeah, crazy stuff. It keeps us on our toes, for sure. There are a few things you can count on though: 300+ days of sunshine, winter temperatures rarely go below 30* F and summer temperatures rarely go above 95* F, it’s usually pretty dry and snow doesn’t stick around for many days. Apparently in other places, when it snows, that snow doesn’t melt for weeks!

 Myth # 3: Everyone loves the “great outdoors”.

True for me, but not for everyone. For the most part, we love being outside and being active, in all seasons. For me personally, I love for being outside in summer, early fall and late spring. Once it gets cold, no thanks. I’d like to stay warm, if at all possible.

Myth # 4: Everyone is a profesh skier.

Hahaha, if this were true, then why have I never been in the Olympics? True story, I have never been on skis in my life. I know I’m really unusual for a semi-native, but my whole family has never been into skiing/snowboarding. I honestly prefer going to all the famous ski resorts in the summer. It’s a lot cheaper, and I’ve never been a big fan of winter.

This was dinner a few nights ago. Roasted veggie vegan pizza, Greek yo/guac dipping sauce, watermelon, raisin-topped salad and carrot cake smoothie. I think I've started to OD on carrot cake.

Myth # 5: Colorado is reaaaaaaally high.

Okay, so I’m gonna ignore any drug-related references in that ( “Rocky Mountain High” anyone?) but elevation-wise, yes, we are high. Apparently, we have 75% of U.S. land over 10,000 feet in our lil’ state! The only problem with living at such a high altitude (my house is at about 8000 feet above sea level, and no, I don’t live in the mountains) is that with baking and cooking, everything has to be adjusted accordingly. So it can be a pain to find a high-altitude friendly baking recipe.

Whole Foods duplex cookies, ring of frozen mango and pineapple chunks. I freaking love these cookies, they're like a yummier and healthier version of Oreos.

I know you’ve all been drooling over that carrot cake hummus (no? It’s just me then?) so I’ll give you the recipe right now!

Carrot Cake Hummus (makes 3 big or 6 small servings)

1/2 cup chickpeas, drained and rinsed

1/4 cup nondairy milk (I used unsweetened vanilla soy milk)

1/2 scoop vanilla protein powder (I used Soytein)

2 handfuls shredded carrots

handful raisins

generous sprinkling cinnamon

sweetener, to taste (optional)

Mix first 3 ingredients together in a food processor until mostly combined. Add 1/4 cup water if needed to make smooth. Add in remaining ingredients and pulse until mixed well.

Enjoy with cinnamon bunny grahams, as a toast or waffle topper or with carrots. It tastes slightly beany, but I kinda like that flavor.
